Donut Cakcibur



DONUT CAKCIBUR

Ingredients
:

1 medium sized potato ~ cleaned
1 cup lukewarm water
5 g instant yeast
1/3 cup cooking oil (I used corn oil)
1/3 cup lukewarm water
1/4 tin condensed milk
1 tablespoon sugar
1 teaspoon salt
500g flour

Oil for frying

Method :

1. Boil potato till soft. Place the boiled potato with 1 cup of lukewarm water in a food processor. Puree.
2. Mix together instant yeast, sugar, 1/3 cup lukewarm water, cooking oil, condensed milk, salt and potato puree.
3. Add flour a bit at a time and rub using your fingers.
4. Add in the remaining flour, a little at a time till a soft dough is formed. (Note : The softer the dough, the softer the donut produced)
5. Take a bit of dough and make into small balls. Arrange on a tray sprinkled with a bit of flour. Leave to proof till double the size.
6. Heat oil in a pan. Make a hole in the middle of the dough and fry till golden brown.
7. Coat with castor sugar and ready to serve.

Biskut Coklat M&M's


BISKUT COKLAT M&M's

Ingredients :

1 egg
200 g butter
150 g cornflour
50 g grounded almonds
150 g icing sugar
200 g flour
80 g Optima flour
enough M&M chocolates for decoration
chopped almonds

Method :

1. Cream sugar and butter then add egg.
2. Add in the sifted dry ingredients : flour, Optima flour and cornflour. Add in the grounded and chopped almonds and mix well.
3. Roll into small balls. Press an M&M chocolate on top.
4. Place on a greased floured baking tray, or layer the tray with greaseproof paper, leaving enough room between them as they expand.
5. Bake in a pre-heated oven at 170 C.

Note :

1. I used margarine.
2. I don't have Optima flour so I used 280g cake flour for the (200g flour + 80g Optima flour).
3. Other than M&M, I decorate the cookies with Smarties as well.
4. My cookies didn't expand much. I am not sure whether it's because I used cake flour and didn't add baking powder or for other reason. If Mr Rozzan can clarify this, I'd appreciate it very much. But nevertheless, the taste is nice and Fatin loved it! The only thing is, she has to peel off the M&M chocolates out of the cookies as she is allergic to colors especially in Smarties.

Roti Canai Pedas

Don't really know what to do with your leftovers pharatas? Try this! Thanks to my mom!




ROTI CANAI PEDAS

Ingredients :

5 pieces leftovers pharatas/roti canai ~ shredded
5 shallots ~ minced
2 garlics ~ minced
3 tablespoon chillie paste (depends on how hot and spicy you want it to be)
salt to taste
tamarind juice
1 tablespoon sugar
2 eggs
Cooking oil

Method :

1. Heat a bit of cooking oil in a wok.
2. Add in chillie paste and fry till fragrant then add in the minced shallots and garlic. Stir.
3. Add in tamarind juice, sugar and salt.
4. Add in eggs and stir for a minute or two.
5. Add in the shredded pharatas/roti canai and stir to mix.
6. Ready to serve.

Lemon Chocolate Chips Cupcakes



LEMON CHOCOLATE CHIPS CUPCAKES

Ingredients :

1/2 cup butter
1/4 cup sugar
1 large egg
1/2 cup fresh milk
1/2 teaspoon baking powder
1 capful ( using the essence's cap) lemon essence (I used lemon paste)
1 cup Hongkong flour (I used all purpose flour)
1/2 cup large semi-sweet chocolate chips

Method :

1.Cream butter and sugar till fluffy
2. Add in the egg, mix well
3. Add in the milk, baking powder and lemon essence
4. Add flour a little at a time, mix well
5. Lastly add in the chocolate chips
6. Place mixture in 6 muffins paper cups and bake for about 15-20 minutes at 160 degrees. (I spooned the mixture into a sized 8 papercups (full) and I managed to get 12 pieces. I baked at 170 C)

Chocolate Bun


CHOCOLATE BUN

Ingredients :
Ingredients A :

500 g bread flour
30 g milk powder
20 g cocoa powder
100 g sugar
11 g instant yeast
1 whole egg

Ingredients B :

250 ml water
80 g margarine

Method :

1. Mix well ingredients A.
2. Add in water and knead till a soft dough is formed. (I called upon my antique but still reliable mixer to help me with this process!)
3. Add in margarine and knead again till soft and elastic.
4. Divide the dough into 50g balls.
5. Shape the dough to your liking.
6. Leave to prove till double the size.
7. Bake in a preheated oven at 180 degree celcius till golden brown.
8. Once out of the oven, brush some margarine on top.

Triple Treats Cookies


TRIPLE TREATS COOKIES

Ingredients :

250g butter (I used margarine)
1 cup soft brown sugar (take out 2 tablespoons)
1 cup walnut (roasted and chopped)
1 cup chopped almonds
1 cup chocolate chips
*1 cup self raising flour
*1 cup flour (I used 3/4 cup)
*1 cup corn flour (sift all the ingredients marked *)
1 egg yolk
1 teaspoon vanilla essence (I added)

Method :

1. Cream butter and brown sugar for 4 to 5 minutes.
2. Add in egg yolk and then vanilla essence
3. Add in chopped walnuts and almonds, alternately with the sifted flour.
4. Add in the chocolate chips.
5. Make small balls out of the dough and place them on a tray lined with greaseproof paper. If that's not possible. use a teaspoon. 5. Bake for 15 minutes in a preheated fan oven at 170 C

Karipap Kobis

* Kobis in English is Cabbage...




BUNGA KOBIS (DianaA)

Ingredients for skin :

300g flour ~ sifted
1 egg
75g ghee
enough water mixed with salt

Filling

Finely blend...
2 tablespoon ground corriander
1 tablespoon cummin
1 tablespoon fennel
2 garlic
3 cloves
2.5 cm ginger
2 cm cinnamon stick
salt to taste

300g minced meat
300g onion ~ sliced thinly
200g spring onion and chinese corriander (daun sup) ~ chopped
5 fresh red chillies ~ deseeded and sliced
50ml cooking oil
3 eggs
450ml cooking oil

Decoration

600g tomatoes ~ carved into flower
600g lettuce leaves


Method :

1. Skin :
Rub ghee abd egg with flour. Pour in salt water and knead till a soft and smooth dough is formed.
2. Divide the dough to 6 portions of different sizes...the second portion must be bigger from the first one, the third one bigger than the second one, so on so forth.
3. Filling : Heat 50ml cooking oil. Add the blended mixture and fry till fragrant. Add in minced meat with a bit of water. When cooked, remove from heat and put in the spring onion, chinese corriander, red chillies and stir well to mix. Set aside.
4. Slightly beat the eggs.
5. Heat 450ml cooking oil on medium heat.
6. Meanwhile, roll flat the smallest dough. Put the filling, pour a bit of beaten eggs in the middle and cover it. Fry till golden brown.
7. While that one is frying in the pan, roll flat the second dough. Put the filling in the middle and pour a bit of beaten egg. Then put the fried first dough on top of it and cover the whole thing. Fry again till golden brown.
8. Repeat the whole process with the remaining dough.
Note : It is a bit of a job, but it's worth it. My children and hubby loved them very much and so do I (come to think of it...why don't I love huh...hahaha!).

Rainbow Butter Cake

RAINBOW BUTTER CAKE

Adapted from : Bro Rozzan's Blogspot



Ingredients :

250g butter
200g sugar
5 eggs
210g flour
1/2 teaspoon baking powder
1 teaspoon vanilla essence
* 1/2 teaspoon rose essence
* food coloring : pink, yellow, green, blue
(those marked with * are the ones I added)

Method :

1. Sift flour and baing powder, trice. Set aside.
2. Cream butter and sugar till light and fluffy. I did it manually.
3. Add in eggs, one at a time and mix evenly.
4. Add vanilla essence and rose essence and cream the batter till smooth and light.
5. Fold in the flour till well blended.
6. Scoop a small portion of the batter into 4 separate bowls.
7. Add in a bit of food coloring into each bowls. Fold in to mix it evenly.
8. Scoop 2 tablespoons of yellow color onto tu center of the baking tin.
9. Top it with 2 tablespoons of pink color onto the center of the yellow batter.
10. Do the same with the green and blue color and repeat the process till all the batter are used. 11. Bake in a preheated oven at 180 C for 45 to 50 minutes.

Daging Masak Lemak Cili Api


DAGING MASAK LEMAK CILI API (NEGRI SEMBILAN STYLE)

Ingredients :

½ kg topside beef ~ sliced thinly
2 lemon grass ~ bruised
20 pcs bird eye chillie
3 potatoes (I omit these as I don't have it at home)
½ inch fresh turmeric
1 or 2 cups thick coconut milk
1 cup thin coconut milk
1 piece turmeric leaf
salt to taste
½ cup water

Method :

1. Pound the bird eye chillie and fresh turmeric until a paste is formed.
2. Add the paste, lemon grass, beef and a bit of water in a pot. Cook till the beef is tender.
3. Add in thin coconut milk and water. Add in potatoes and turmeric leaf.
4. Let it simmer until the potatoes are soft. Pour in the thick coconut milk and salt to taste.
5. Once cooked, remove from heat.

CHAPATI

Ingredients :

2 cups Atta flour (I used the mixed Atta flour ~ brown & white)
1 tablespoon Ghee/Butter/Margarine (I used margarine)
1 tablespoon cooking oil
Enough water
Salt ~ optional
Extra margarine

Method :

1. Place Atta flour in a bowl.
2. Rub in a tablespoon of Ghee/Butter/Margarine
3. Add water bit by bit until it becomes a soft dough and doesn't stick to the hand.
4. Add the cooking oil into the dough and knead till well combined.
5. The bread taste better if made few hours ahead. Make as many small balls as you can, as big as golf ball, flatten it and roll out.
6. Heat a non stick flat pan till really hot.
7. Before placing the bread on the pan, remove access flour, if any.
8. When you see the color of the bread changes to slightly darker color, turn over the other side. Gently, press the sides of the bread with a kitchen paper or a clean towel. Let the bread puffs up, then flip over, back to the first side.
9. Once cooked, remove from heat and brush a bit of margarine on top.

Note from Tillingtan :
Also when press, make sure you press on the sides first as it will encourrage the bread to puff up.

Muffin Brownies


BROWNIE MUFFINS

Ingredients A :

280g butter - melted
180g brown sugar
20g white sugar
70g cocoa powder
a pinch of salt

Ingredients B :

2 eggs ~ beaten
80g flour

Almond to sprinkle

Method :

1. Combine all ingredients in A in a pot and melt over slow fire.
2. Set aside to cool.
3. Add in the eggs into the bater and stir.
4. Add flour, a little at a time. Mix well.
5. Spoon the mixture into the papercups, 3/4 full. Sprinkle some almond chunks.
6. Bake in a preheated oven at 170 C for 30 to 40 minutes.

Mee Basah


MEE BASAH

Ingredients :

1 packet of egg noodles (500g)
2 pieces fish cake ~ sliced
fresh prawns ~ cleaned
3 tablespoons chillie paste
5 shallots ~ minced
2 cloves garlic ~ minced
2 tablespoon oyster sauce
1 tablespoon soya sauce
1 tablespoon tomato sauce
salt to taste
sugar to taste
enough water
bak choy

Method :

1. Heat a bit of cooking oil in a wok. Add in the chillie paste and fry till fragrant. Add in the minced items (garlic and shallots). Fry for another a minute or two.
2. Add in oyster sauce, tomato sauce and soya sauce. Mix well.
3. Add water, sugar and salt to taste. Put in the fish cakes and prawns.
4. Finally add in the egg noodles and bak choy. Ready to serve.

Cucur badak


CUCUR BADAK

Ingredients :

For the skin

250g sweet potato ~ boiled and mashed
3 1/2 tablespoons flour
200g medium prawns ~ do not peel the skin
a bit of salt
3 cups cooking oil

For the filling

1/2 coconut ~ scraped
100g dried shrimps ~ soak for a while and pound
1 garlic
* 5 shallots
* 7 fresh red chillies
* 1 lemon grass
* 1 teaspoon tumeric powder
* 1 cm fresh ginger
* salt zeal (ajinomoto)
2 tablespoons cooking oil

Method :

1. For the skin :
  • Mix the mashed potato with flour and salt till a soft dough is formed.
2. For the filling :
  • Pound all the (*) ingredients.
  • Heat 2 tablespoons cooking oil and add in the pounded ingredients and also the pounded dried shrimps. Fry till fragrant.
  • Add in the coconut and mix well. Once cooked, remove from heat and let it cool.
3. Take a bit of dough, about the size of a tabletennis ball, flatten it and put the filling in the middle. Cover the filling and press one prawns on top of the dough.
4. Heat oil and fry till golden brown.
Note : I didn't put any fresh prawns in the middle because there's no medium prawns available in my freezer. It doesn't change the taste though, just for presentation, I guess.

Durian Swiss Roll


DURIAN SWISS ROLL

Ingredients :

(A)
3 nos eggs
2 oz castor sugar
1/2 teaspoon baking powder
1/2 teaspoon durian paste
1/2 tablespoon ovallette
1.5 oz flour
1/2 tablespoon milk powder
a few drops of yellow coloring

(B)
2 oz butter ~ melted

(C)
Lempuk durian (it's like durian jam)

Method :
1. Place ingredients A in a mixing bowl. Beat on high speed for 5 to 7 minutes.
2. Fold in the melted butter. Mix well.
3. Spread the batter onto the tray layered with greaseproof paper.
4. Bake in a preheated oven at 180 C for 20 minutes.
5. Once baked, remove the cake from the tray onto a wire rack. Let it cool.
6. Turn the cake onto another piece of paper and spread the lempuk.
7. Slowly and carefully, roll the cake. Wrap in a clingfilm.
8. Slice and ready to serve.

Fried 'Geragau' Fritters


FRIED GERAGAU FRITTERS

Ingredients :

250g geragau (small tiny prawns)
1 onion ~ diced or sliced
1 tablespoon curry powder
1/4 teaspoon baking powder
enough flour
enough water
salt to taste
oil for frying

Method :

1. Wash and drain the geragau and place in a bowl.
2. Add in onion, curry powder, baking powder, flour, salt and enough water. Batter must not be to watery and not too thick.
3. Heat oil in a wok. Drop a spoonful of batter into the hot oil and fry till golden brown.
4. Remove from oil and place on a kitchen towel to absorb excess oil.
5. Enjoy with Thai Sweet Chillie or any sauce to your liking.

Putri Ayu or Tiwul Ayu


PUTERI AYU or TIWUL AYU

Ingredients :

180 g sugar
250 g flour
1/2 tablespoon ovalette
3 eggs
1 glass screwpine juice (I used pandan essence)
green, yellow and red coloring
fresh grated coconut + salt to taste

Method :

1. Beat egg and sugar till white and fluffy.
2. Add in ovalette and continue beating.
3. Fold in flour.
4. Pour in the screwpine juice.
5. Divide the mixture into 3 bowls and add coloring.
6. Press a bit of coconut onto the base of the mould.
7. Pour the mixture on top.
8. Steam for 10 - 20 minutes.
9. This recipe yields 30 pieces.

Irish Cookies


IRISH COOKIES

Ingredients :

A
180 g butter (I used margarine)
130 g castor sugar
20 g shortening
1 egg yolk
1 teaspoon Nescafe (I omit this)
1 teaspoon Coffee emulco/Cappuchino Emulco (I used Cappuchino)

B
1/2 teaspoon baking powder ~ sifted
200 g flour ~ sifted
100 g tapioca flour ~ sifted
40 g Nestum ( blend slightly)

Decoration : Cooking chocolate, sugar deco

Method :

1. Cream butter, shortening and sugar. Add in egg yolk and cappuchino emulco.
2. Add in ingredients B until a soft dough is formed.
3. Roll out the dough and cut using cookie cutter of your choice.
4. Bake in a pre-heated oven till done.
5. Let the cookies cooled. Drizzle with melted cooking chocolate and sprinkle some sugar deco.

Note : The Nestum can be substitute with slightly blended cornflakes

Mini Quiche



MINI QUICHE

Ingredients :

3 pieces of white bread ~ cut to fit the muffin cups
1 onion ~ finely chopped
1/2 cup shredded Swiss Cheese (or any kind of cheese to your liking)
1 cup fresh milk
4 eggs
salt to taste
a few dashes of black pepper
chicken fillet or prawn ~ boiled and cut to small pieces
curry powder or kurma powder or whatever you wish ~ optional

Method :

1. Preheat oven to 190 degrees celcius.
2. Grease the muffin trays. Arrange the bread inside it.
3. Put some diced onion, shredded cheese, diced chicken or prawns etc on top of the bread.
4. In another bowl, beat eggs. Add in milk, salt, black pepper and curry powder. Stir well.
5. Pour on top of each stuffed bread.
6. Bake for 20 minutes.
7. Serve warm.

Lemon Swiss Roll



LEMON SWISS ROLL

Ingredients :

(A)

3 nos eggs

1/2 teaspoon baking powder
1/2 teaspoon lemon paste
1/2 tablespoon ovallette
1.5 oz flour
1/2 tablespoon milk powder
a few drops of yellow coloring

2 oz butter ~ melted

(C)

Buttercream icing

Method :

1. Place ingredients A in a mixing bowl. Beat on high speed for 5 to 7 minutes.
2. Fold in the melted butter. Mix well.
3. Spread the batter onto the tray layered with greaseproof paper.
4. Bake in a preheated oven at 180 C for 20 minutes.
5. Once baked, remove the cake from the tray onto a wire rack. Let it cool.
6. Turn the cake onto another piece of paper and spread the buttercream.
7. Slowly and carefully, roll the cake. Wrap in a clingfilm and keep in the refrigerator for the buttercream to set before slicing it.

Fruit Cake





FRUIT CAKE

Ingredients A :

500 gm mixed fruit (add 2 tablespoons flour and mix well)

Ingredients B :

250 gm butter
1 tablespoon ovalette
150 gm castor sugar
5 nos large eggs

Ingredients C :

230 gm top flour
1 teaspoon baking powder
1 I/2 teaspoon bicarbonate soda
1 tablespoon Sunquick orange
1 teaspoon mix fruit paste

Method :

1. Cream butter, ovalette and sugar till fluffy. Add in eggs, one at a time.
2. Add in Sunquick orange and mix fruit paste. Mix well.
3. Sift together flour, baking powder and bicarbonate of soda.
4. Fold dry ingredients into the butter mixture.
5. Fold in the mixed fruits.
6. Pour the mixture into a prepared tin, lined with baking paper.
7. Bake in a preheated oven at 180 C for 45 minutes or until golden brown.
