CHICKEN RENDANG

Hello everyone. I am back... hopefully to stay. This blog had been hibernating for more than 2 years! Gosh! How time flies. I didn't realise that I had been abandoning my own blog for so long. Naughty naughty me!

Anyway, let's have a fresh start now and for this posting, I will share with you what I had cooked just now. I cooked Chicken Rendang, a recipe I learnt from my ex next door neighbour. She's like a sister to me and the day they moved out of here, I just can't hold back my tears. For the past 14 years, she is a sister, a friend and a good neighbour to me. We go out together or we'll just hang out by the gate to chat while hanging our clothes to dry or do the gardening. Now it is all memories that I will always treasure, Miss you Kak Ana........


CHICKEN RENDANG

Ingredients :

Shallots - sliced
garlic - sliced
ginger - sliced
chillie paste
corriander seeds - fry in the pan without oil. Let it cool and blend till fine
lemon grass, fresh tumeric and bird eye chillie - blend with a bit of water
Chicken - cut small
Thick coconut milk
palm sugar (gula melaka)
salt to taste
dried tamarind skin
a bit of sweet soy sauce (for the color)
kaffir leaves
Kerisik / Coconut butter
Turmeric leaves - sliced thinly for garnishing

Method :

1. Heat corn oil in the skillet. Once oil is medium hot, add in the sliced ingredients. Fry till the onions soften and aromatic.
2. Add in the chillie paste and the corriander powder. Stir.
3. Add in the blended ingredients and stir to mix.
4. Add in coconut milk, palm sugar, salt, soy sauce and chicken. simmer on medium heat, stirring frequently until the chicken is almost cooked.
5. Add in tamarind skin, kerisik and kaffir leaves. Lower the heat to low, cover the lid, and slowly simmer until the chicken is tender and the liquid has dried up.
6. Garnish with sliced turmeric leaves. Serve with rice, Nasi Impit , Lemang or Pulut Kuning.

Ayam Gajus




AYAM GAJUS

Bahan A:

600 gm isi ayam - dihiris
1 sudu besar tepung jagung
1 sudu kecil garam

Bahan B:

100 gm kacang gajus - #airfried
3 tangkai cili kering - dipotong kecil
1 biji bawang besar - dipotong dadu kasar 
4 ulas bawang putih - dihiris
2 inci halia - dihiris
1/4 biji lada benggala hijau - dihiris memanjang
1/4 biji lada benggalamerah - dihiris memanjang
1/4 biji lada benggala kuning - dihiris memanjang
3 sudu besar sos tiram
2 sudu besar sos tomato
1/4 cawan air 
2 sudu besar minyak masak

Cara :

1. Gaulkan isi ayam bersama garam dan tepung jagung. Panaskan sedikit minyak dan gorengkan lada kering hingga garing. Angkat dan ketepikan.
2. Dengan menggunakan minyak yang sama, goreng/panfry ayam hingga masak. Angkat dan ketepikan.
3. Tambah sedikit sahaja minyak dalam kuali. Tumis halia dan bawang putih hingga garing dan masukkan bawang besar. 
4. Masukkan isi ayam, sos tiram, sos cili dan sedikit air. Kacau rata.
5. Bila dah sebati, masukkan ketiga-tiga lada benggala. Kacau sebentar sahaja dan tutup api.
6. Masukkan kacang gajus dan kacau rata. Sedia dihidangkan.

Sambal Daging



SAMBAL DAGING MENGGUNAKAN PPC

Bahan-bahan :

Daging - dihiris
Bawang merah - ditumbuk
Cili kisar
Air asam jawa
garam secukup rasa
Air
Santan
Bawang besar - dipotong bulat

Cara :

1. Tuangkan secukup minyak ke dalam inner pot PPC. Tekan SAUTE/SEAR HIGH TEMP dan tekan START. Bila minyak dah panas, masukkan bawang merah yang telah ditumbuk. Kacau hingga naik bau. Masukkan cili kisar dan tumis hingga garing. Masukkan pula daging yang telah dihiris nipis. Kacau sebentar biar rata. Masukkan air dan garam. Kacau rata. Tekan CANCEL.
2. Tutup periuk PPC. Pusingkan tombol ke SEAL. Tekan PRESSURE COOK hingga keluar BEEF/POULTRY. Kemudian tekan START. Akan keluar nombor 15 di paparan hadapan.
3. Selepas 15 minit berakhir, tekan CANCEL. Berhati-hati pusingkan tombol ke VENT untuk mengeluarkan tekanan. Kalau nak skip step yang ini, maka tunggulah pressure dalam periuk itu menurun dengan sendiri barulah boleh dibuka tutup PPC.
4. Tekan SAUTE/SEAR HIGH TEMP dan tekan START. Masukkan air asam secukupnya, santan dan perasakan garamnya. Biarkan didih sebentar. Masukkan bawang besar dipotong bulat. 
5. Tekan CANCEL dan offkan suis. Siap untuk dihidangkan.

SAMBAL TELUR REBUS



SAMBAL TELUR REBUS

Telur rebus

Bawang merah - dikisar
Bawang putih - dikisar
Cili kisar
Air asam jawa
Gula
Garam
Serbuk perasa - optional
Bawang besar - hiris separuh bulat
Minyak

Cara :

1. Rebus telur hingga masak. Kupas kulit dan ketepikan.
2. Panaskan sedikit minyak. Masukkan bawang putih. Tumis hingga keperangan dan masukkan bawang merah. Masak hingga wangi.
3. Masukkan cili kisar dan masak hingga garing.
4. Masukkan air asam. Kacau.
5. Masukkan gula dan garam. Kacau rata.
6. Masukkan telur dan bawang ke dalam sambal. Kacau rata. Biar sebentar dan bolehlah dipadamkan api. Sedia untuk dihidangkan.

Sambal Paru

Bahan-bahan :

Paru secukupnya
Bawang putih blend
Bawang merah blend
Cili kering blend
Asam jawa Adabi
Air
Garam
Gula
Bawang besar dipotong bulat
Minyak jagung

Cara-cara :

1. Cuci dan potong paru. Tak perlu potong kecil. Masukkan ke dalam pressure cooker bersama air dan sedikit garam. Letakkan di atas api dan masak selama lebih kurang 25 minit hingga lembut. Toskan airnya dan hiris nipis.
2. Gaulkan hirisan paru tadi bersama serbuk kunyit dan garam.
3. Panaskan minyak dan gorengkan paru tadi. Toskan minyak dan letakkan di atas kertas serap minyak. Ketepikan.
4. Panaskan minyak dan masukkan bawang putih. Tumis hingga wangi dan masukkan bawang merah kisar. Kacau biar lama sedikit.
5. Masukkan cili kisar dan tumis hingga garing.
6. Masukkan pes asam jawa bersama sedikit air.
7. Masukkan garam dan gula.
8. Masukkan paru yang telah digoreng dan juga bawang potong. Gaul rata.
9. Padamkan api dan sedia untuk dihidangkan.

Pucuk Ubi Masak Lemak


PUCUK UBI MASAK LEMAK

Bahan-bahan :

1 cekak pucuk ubi
1 genggam ikan bilis - dikopek, dicuci dan direndam sebentar
2 batang serai, diketuk
1 biji bawang besar, hiris
4 ulas bawang putih, diketuk
1 biji cili merah, hiris
1.2 liter santan cair
400 ml pati santan
1/2 kiub ikan bilis (optional)
Garam dan gula secukup rasa

Kaedah penyediaan :

1. Asingkan pucuk ubi dari tangkainya. Kemudian rebus hingga lembut. Toskan dan perah sedikit (tekan dengan belakang senduk) Hiris kecil.
2. Masukkan pucuk ubi hiris dalam periuk bersama bawang besar, bawang putih, ikan bilis (toskan dan perah) dan serai. Tuang santan cair, kacau dan masak hingga mendidih.
 3. Tambah kiub ikan bilis (jika guna) dan tuang pati santan. Perasakan dengan garam secukupnya dan sedikit gula. Biar mendidih dengan api sederhana dan kacau selalu.
4. Akhir sekali masukkan hirisan cili merah. Masak sekejap dan rasa, jika ok boleh matikan api.
5. Hidangkan bersama sambal belacan dan ikan goreng atau ikan masin....selamat mencuba!

Asam Pedas Ikan Tenggiri Rasakita


ASAM PEDAS IKAN TENGGIRI RASAKITA

Ingredients :

3 pieces ikan tenggiri
1/2 onion - sliced
1 clove garlic - sliced
1/2 inci ginger - knocked
Turmeric powder
3 tablespoons Sambal Tumis Rasakita
Tamarind juice
Enough water
Kaffir leaves
1 tomato - quartered
salt to taste

Method :

1. Heat a bit of cooking oil in a pot. Add in the sliced onion and garlic and ginger. Saute till fragrant and brown.
2. Add Sambal Tumis Rasakita and turmeric powder. Stir well.
3. Add in the tamarind juice, kaffir leaves and fish.
4. When fish is half cooked, pour in enough water. Add salt and let it simmer.
5. Add in tomato and let it simmer for another minute or two. Remove from heat and ready to serve

Daging Masak Kicap Pedas

DAGING MASAK KICAP PEDAS

Ingredients :

2 medium potatoes ~ cleaned, sliced thinly and fry. Set aside.
cooking oil
1 clove garlic - minced
2 inch ginger - slice thinly
2 tablespoons chillie paste
400 g topside beef ~ sliced thinly
3 tablespoon Kicap Pedas Mahsuri
1 tablespoon tomato ketchup
1/2 cup water
1 fresh red chillie
1/2 green capsicum
1 fresh tomato
1/2 Holland onion ~ cut into 1/2. Then slice thickly.

Method :

1. In a skillet, heat a bit of oil. Add in minced garlic and sliced ginger.
2. Add in the chillie paste. Stir till fragrant then add in sliced beef.
3. Once the beef is tender, add in Kicap Pedas, tomato ketchup dan water.
4. Add in fresh chillie, green capsicum and tomato.
5. Add salt and sugar if necessary. Then finally add in the sliced onions.
6. Remove from heat and ready to serve with plain white rice.

Daging Masak Merah

Ingredients :

500g tender beef - sliced thinly
5 tablsepoons tomato ketchup
5 tablespoons chillie sauce
turmeric
salt to taste
cooking oil

Ingredients : (to be sliced)

1 Holland onion
3 garlic cloves
3 cm ginger
2 fresh red chillies
2 fresh green chillies

Method :

1. Marinate the beef with salt and turmeric. Set aside.
2. Heat oil in a skillet. Add in the beef and stir fry till beef is tender.
3. Add in the tomato ketchup and chillie sauce. Mix well.
4. Add in the sliced ingredients. Stir to mix.
5. Once the beef is cooked thoroughly, remove from heat.
6. Serve with white rice. Enjoy!

Note :


This dish was prepared quite sometimes back. I thought I had added some red food coloring to the beef but I was not so sure! Huhuhu...

Labu Masak Lemak Cili Padi


LABU MASAK LEMAK CILI PADI 
(PUMPKIN IN SPICY COCONUT GRAVY)

Ingredients :

1/2 medium sized pumpkin - peel the skin and cut into cubes
200 ml coconut milk (I used M&S brand)
2 1/2 cups water
1 piece turmeric leaf
1 piece lemon grass - bruised
1 teaspoon turmeric powder (I used 1/2 inch fresh turmeric, minced)
2 tablespoons dried anchovies
salt
zeal (optional)

To be minced :

15 bird eye chillies (you may reduce the amount if you don't want it to be too hot)
4 shallots
1 clove garlic

Method :

1. In a pot, add the minced ingredients, coconut milk, water, fresh turmeric leaf, lemon grass and dried anchovies. Bring to boil. Always stir.
2. Add in the pumpkin and keep stirring till the pumpkins are soft.
3. Add salt and zeal to taste.
4. Remove from heat and ready to serve with white rice. Enjoy!

Sambal Gangster!!!

CAKKKK!!!! Hihihihi... mama had gone missing from cyberworld! To be honest, I am still lingering in the cyberworld but just around my territory. I didn't go out of my boundary.

I am so greatful I have such lovely circle of friends, some I know in person and some just in the cyberworld. Remember last time I had mentioned about the problem with Fotopages. Well recently, it came back to life! Madiha, Mamazieza and Kak Liza actually took the trouble to inform me about it. Thank you dear ladies for your thoughts. Appreciate it very much.

However, I thought Fotopages will stay 'alive' and I didn't put enough effort to save the contents of my Fotopages until it 'vanished' again for the second time! Huhuhuhu... that was my wake up call! Alhamdulillah it came back again and this time, I didn't waste my time to continue working on my postponed project. I was actually in the midst of transfering my fotopages into a new blog (kept private for the time being). Main reason is to save all the memories of Malawi, Africa... my second home...

So if I don't appear here, you know where I am....... I am trying to get it done soonest possible and send for printing. If anything should go wrong (naudzubillah), at least I have those memories treasured in my book....

Ingredients :

3 pieces tofu - sliced and fried
1 bunch bird eye chillie (adjust to your taste)
1 onion
1 inch belacan (shrimp paste)
salt to taste
Zeal - optional
Cooking oil

Method :

1. If you are using the unfried tofu, slice and fry the tofu till slightly brownish. Set aside.
2. Minced bird eye chillie, onion and belacan (shrimp paste).
3. In a wok, heat oil and add in the minced ingredients. Fry till fragrant.
4. Add in salt and zeal to taste.
5. Last but not least, add in the tauhu and stir to mix.
6. Remove from heat and ready to serve.

Bok Choy Stir Fry with Oyster Sauce and Garlic Oil

Yesterday, I was fasting. Alhamdulillah it went well and I don’t feel hungry actually, neither thirsty.

At 5pm, I started to think, what shall I cook for Iftaar. Mr Hubby told me that he’s not going to have dinner. So now, the choice of dinner’s menu is totally up to me.

In one of my whatsapp group, Ummi had mentioned about Che Mat Gebu’s Ayam Pongteh. She was fasting too yesterday. I quickly visited Mat’s entry on that particular recipe. Wow, looks delicious (as always!!!) and best of all, quite easy to prepare. Okay, I might cook Ayam Pongteh.

At 6pm… erkkk I think I have to change the menu. Not enough time to defrost the chicken. I don’t have a microwave okay (good excuse! Hahahaha). I think I’m gonna cook Seafood Aglio Olio. Easy and fast to cook and yummy to eat…

…..I mingle here and there, swept the house, fold the clothes, bla…bla…bla…. Oops it’s 6.30pm! I can still cook Aglio Olio if I want to but then, I saw my mom’s empty room. Mom is with my brother in Bangi at the moment. Ahahhhhhh…. since mom is not around, this is the best time to cook SARDINE! Hahaha… so yes, sardine it was and ready in no time. And guess what!!! Mr Hubby even joined me for dinner! Yippeeeeee!!!!

To go with the sardine, I made omelette and this Bok Choy Stir Fry with Oyster Sauce and Garlic Oil. The Bok Choy served in this photo are the Bok Choy that we've planted ourselves using the Hydroponic System. So rest assure, my Bok Choy doesn't have dirt or whatsoever. *wink*


BOK CHOY STIR FRY WITH OYSTER SAUCE AND GARLIC OIL

Ingredients :

300 gram baby bok choy (or any greens)
salt

Oyster Sauce :

½ teaspoon oil
2 tablespoon oyster sauce
2 tablespoon water
1 teaspoon sugar
3 dash ground white pepper

Garlic Oil :

2 tablespoon oil
4 cloves garlic, minced

Method :

1. Wash and drain the bok choy to remove grit and dirt. Drain and set aside.
2. Bring a pot of water to a rolling boil. Salt generously, and add the bok choy. Once the water boils again and the bok choy turns a brighter shade of green. Start testing to see if it is crispy and tender to your liking. Once you like the texture (please, please don't let them boil for more than 3 minutes or you will end up with wimpy limpy bok choy), drain and place on a serving plate. Set aside. (Or you can shock in ice water first, then drain again and place on a serving plate).

Oyster Sauce :

Heat oil in a frying pan. Add oyster sauce, water, sugar, and ground white pepper. Stir until the sauce bubbles. Turn off heat and pour the sauce on the bok choy.

Garlic Oil :

Give the frying pan a quick clean. Heat the oil and stir fry the garlic until fragrant and garlic turns golden brown. Turn off heat and pour the garlic oil onto the bok choy. Serve immediately.

Sweet and Sour Beef

Heavy rains remind us of challenges in life. Never ask for a lighter rain. Just pray to Allah for a better umbrella. - That is attitude!

Life is not about finding the right person, but creating the right relationship, it's not how we care in the beginning, but how much we care till the very end.

Some people alwas throw stones in your path. It depends on what you make with them. A Wall or a Bridge? - Remember you are the architect of your life.

Search for a good heart, but don't search for a beautiful face. Coz beautiful things are not always good, but good things are always beautiful.

It’s not important to hold all the good cards in life. But it’s important how well you play with the cards you hold.

Often when we lose all hope & think this is the end, Remember Allah and pray, it’s just a bend, not the end.' - Have faith and have a successful life.

One of the basic differences between Allah and humans is, Allah gives, gives and forgives. But the human gets, gets, gets and forgets. Be thankful in life...

SWEET AND SOUR BEEF

Ingredients A :

500g topside beef - sliced
1 teaspoon turmeric powder
salt to taste
2 tablsepoons cooking oil
5 tablespoons tomato sauce
5 tablespoons chillie sauce
water
Fresh tomatoes - cut to wedges
zeal (optional)
spring onions

Ingredients B (to be sliced) :

1 Holland onion
3 cloves garlic
1 1/2 inch fresh ginger
2 fresh red chillies
some green bird eye chillies

Method :

1. Marinate the sliced beef with salt and turmeric. Meanwhile prepare the other ingredients.
2. Heat the wok and add cooking oil. When oil is ready, add in the marinated beef. Cook till meat is tender.
3. Pour in the tomato sauce and the chillie sauce. Add water if the gravy is a bit too thick.
4. Add in the sliced ingredients. Stir. Add salt and zeal to taste.
5. Put in the tomato and give it a quick stir for a minute or two. Remove from heat.
6. Garnish with some spring onion and serve with plain white rice. Enjoy!

Garlic Rice

Ingredients :

1 cup rice (I used Basmati rice)
1/2 inch fresh ginger - bruised
3 cloves garlic - chopped
1 tablespoon cooking oil
1 stalk lemon grass
Enough water
a pinch of salt

Method :

1. Wash rice and rinse. Add ginger and enough water. Place on the stove on medium fire, It is much easier to use a rice cooker.
2. Heat cooking oil in a small pan. Add chopped garlic. Fry till golden brown and till fragrant.
3. Pour the garlic together with the oil into the boiling rice.
4. Add salt to taste and lemon grass.
5. Leave to cook. Enjoy.
6. I've served this rice with SAMBAL AYAM BERSANTAN

Mak Chu's Beef Rendang

Hello everyone. It's been long since I last update my blog. Not only it's been long since I last update, but to be honest, it's been long since I last visited my own page! The Eid mood is getting the best of me! When I've stopped doing my routine for quite sometime, it's just so hard to get back on track. Gosh I just hate that feeling. But sometimes it's beyond control, so we'll just have to accept that. Not only my routine of updating my blog has stopped, but my morning walks routine has stopped even for a longer period. I've just got to snap out of my 'so comfortable' situation now. Gotta get back on my feet. I HAVE TO... I HAVE TO!!!!

So, how was your Eid celebrations? We had a good one alhamdulillah but not to mention a very hectic one for me. The best part is, the one that made me proud of myself, I managed to be so organised this year and I did most of the preparations by myself. It really felt good!!! I didn't know I am capable of doing what I've done. Surprise! Surprise! Hahahaha.... Sorry all, just feeling over the moon at the moment. Just ignore me okay! Hahahaha....

Anyway, guess what.... FINALLY I can confidently say to myself that I am capable of cooking tasty beef rendang. I don't need other people to say that my Beef Rendang is nice. I am happy enough when Fatin and Syahmi said, "Mom, your beef rendang is delicious!" Full stop. Made me a very happy mom and a very happy cook! #feelingpoyo#

MAK CHU'S BEEF RENDANG

Ingredients : (amount of ingredients are just estimation)

1 kg beef - cut to thin pieces
20 Shallots
6 Garlic
1.5 inches ginger
1/2 inch galangal
4 stalks lemon grass
1/2 inch fresh turmeric
2 tablespoons chillie paste
5 bird eye chillies (more if you want it hot)
2 tablespoons kerisik
Enough jaggery (gula melaka)
300 ml coconut milk (I used M&S brand)
enough water
2 pieces dried tamarind skins
6 pieces kaffir leaves
salt to taste
turmeric leaf - sliced thinly
cooking oil

Method :

1. Blend shallots, garlic, ginger, galangal, lemon grass, fresh turmeric, chillie paste and bird eye chillies with a bit of water to form paste.
2. In a heavy based pot, heat oil. When oil is hot, pour in the blended ingredients and fry till fragrant. Stir once in a while.
3. Add in the beef and stir.
4. When beef is half cooked, pour in the coconut milk and water. Continue cooking on small fire till meat is tender.
5. Add in kerisik, kaffir leaves, jaggery, salt and dried tamarind skin.
6. Continue cooking till gravy almost dried up. Remove the tamarind skin and add in sliced turmeric leaf. Stir for a few minutes and ready to serve.

BENARKAH TUHAN ITU ADA?

Ada seorang pemuda yang telah lama belajar diluar negera, dia telah kembali ke tanah air, sesampainya di rumah dia meminta kepada orang tuanya untuk mencari seorang guru agama (Ustaz), siapapun yang bisa menjawab 3 pertanyaan darinya. Akhirnya orang tua pemuda itu mendapatkan orang tersebut.

Pemuda :: (Dengan nada sombong pemuda itu bertanya) Anda siapa...??? Dan apakah bisa menjawab pertanyaan.

Ustaz :: Saya hanya hamba ALLAH & dengan izinNya saya akan menjawab pertanyaan anda.

Pemuda :: (Tetap dengan nada sombong) Anda yakin....??? Sedang kan profesor & banyak orang pintar jugak tidak mampu menjawab pertanyaan saya..

Ustaz :: Saya akan mencuba sejauh kemampuan saya....!!!

Pemuda :: Saya punya 3 buah pertanyaan...?? ?

1. Kalau memang TUHAN itu ada, tunjukkan wujud TUHAN kepada saya ?

2. Apakah yang dinamakan TAKDIR ?

3. Kalau SETAN diciptakan dari api ,kenapa dimasukan ke neraka yang dibuat dari api, tentu tidak menyakitkan buat setan, sebab mereka memiliki unsur yang sama..? Apakah TUHAN tidak pernah berfikir sejauh itu..?

Tiba-tiba Pemuka Agama tersebut menampar pipi si pemuda dengan keras.. (sambil menahan sakit) si Pemuda berkata...

Pemuda : Kenapa...??? Anda marah kepada saya...???

Ustaz :: Saya tidak marah...!!! tamparan itu adalah jawaban saya atas 3 buah pertanyaan yang anda ajukan kepada saya..!!!

Pemuda :: Saya sungguh2 tidak mengerti..???!!!

Ustaz :: Bagaimana rasanya tamparan saya..!?

Pemuda :: Tentu saja saya merasakan sakit..!

Ustaz :: Jadi anda percaya bahwa sakit itu ada ?!!

Pemuda :: Ya.. Percaya !!

Ustaz :: Tunjukan pada saya wujud sakit itu ??!!

Pemuda :: Saya tidak bisa..!!!

Ustaz :: Itulah jawaban pertanyaan pertama, kita semua merasakan keberadaan TUHAN tanpa mampu melihat wujudnya.

Ustaz :: Apakah tadi malam anda bermimpi akan di tampar oleh saya..??!!

Pemuda :: Tidak...!!!

Ustaz:: Apakah pernah terpikir oleh anda akan menerima sebuah tamparan dari saya hari ini..??!!

Pemuda :: Tidak...!!!

Ustaz :: Itulah yang dinamakan TAKDIR !!!

Ustaz :: Terbuat dari apakah tangan yang saya gunakan untuk menampar anda..??!!
Pemuda :: Kulit...!

Ustaz :: Terbuat dari apa pipi anda...??!!

Pemuda :: Kulit...!!!

Ustaz :: Bagaimana rasanya tamparan saya..??!!

Pemuda ::Sakit...!!!

Ustaz :: Walaupun setan terbuat dari api dan neraka terbuat dari api, jika TUHAN berkehendak maka neraka akan menjadi tempat menyakitkan bagi setan...

MASIHKAH ANDA MERAGUKAN KEHADIRAN 'TUHAN' DALAM HARI-HARI KALIAN???..

ACHIK AMAH'S CHICKEN CURRY

Ingredients :

1 big piece chicken thigh - clean and cut to three pieces
1/2 teaspoon fenugreek ( I don't have. I used Halba campur instead)
1/4 Holland onion - sliced thinly
3 shallots - minced
2 garlic - minced
1/2 inch ginger - minched
1 tablespoon chillie paste
1 1/2 tablespoons meat curry powder
1 stalk lemon grass - bruised
3 pieces kaffir leaves
1 medium sized dried tamarind skin
enough coconut milk
water
salt to taste
zeal (optional)
cooking oil

Method :

1. Heat cooking oil in a pot. Add in the fenugreek and sliced onion. Stir fry till onion soften.
2. Add in the minced ingredients and chillie paste. Stir till fragrant.
3. Add in curry powder and a bit of water.
4. Stir for a few minutes then add in chicken.
5. Add in coconut milk, lemon grass and kaffir leaves.
6. When the chicken is almost cooked, add in dried tamarind skin, salt and zeal.
7. Simmer for another 5 minutes or so. Remove from heat and ready to serve.

* Note :
1. Gravy musn't be thick.
2. The recipe is just my estimation. Please adjust according to your liking.

Beef Padprik


BEEF PADPRIK

Ingredients :

2 big shallots - sliced thinly
1 piece garlic - crushed
1/2 inch ginger - sliced thinly
2 - 3 bird eye chillie
1/2 fresh red chillie
1 lemon grass - bruised
2 tablespoons chillie paste
Tenderloin beef - sliced thinly
2 tablespoons chillie sauce (I used Life brand)
1 tablespoon oyster sauce (I used Nona brand)
1 tablespoon tomato sauce (I used Kimball brand)
water
3 to 4 pieces Kaffir leaves
Carrot
French beans - cut to 1 inch length
Baby corn
Small tomato - quartered
salt
sugar
cooking oil

Method :

1. Heat oil in a wok. Add in shallots, garlic, ginger, bird eye chille and fresh red chillie. Fry till fragrant.
2. Add in lemon grass and chillie paste. Stir for a few minutes.
3. Add the sliced beef and add a bit of water. Let the beef cooked then add chillie sauce, oyster sauce, tomato sauce and Kaffir leaves.
4. Add water if necessary. When the sauce is boiling, add in the vegetables, salt and sugar to taste.
5. Remove from heat once the vegetables are cooked.
6. Serve with plain white rice.

Happens for a reason.......

I believe that things happen for a reason... 
Very very true... 
These too happened for a reason...




and reason being...
MY MOM IS AT HOME! 

So the daughter has to prepare lunch for dear mom. Otherwise, we would have skipped lunch since we had a late breakfast. But to prepare the above doesn't take long actually. In less than 45 minutes, all are done and mom had her lunch at the usual time and not later. *wink*
