Eggless Moist Banana Brownies

My my....the weather today is just soooo nice today! Nice as in raining the whole day and making all eyes so droopy. It is supposed to be the best time to snuggle in bed, with a book in your hand, or just turned on the television. And after like less than 10 minutes, it will be either the book's reading you or the television's watching you. Hahaha...

But hey, I am quite impressed with myself! I was as busy as Mrs Bee since I opened my eyes in the morning. When hubby left for work, as early as 6.15am (the office is not that far but he went early to avoid the traffic jam and also to secure a parking place), I began to make these...



While waiting for the buns to bake, I tried baking the brownies that I had eyed at Along Roz's blog. And at the same time, I was busy taking photos and whatsapping a friend and a few family members and made their lives miserable with the photos I took. Hahaha... sorry you gals, I meant well okay. Take it as a MOTIVATION and not TORTURE okay, Nora, Mak Chu and Ibu Nor! Hahaha.. love you gals... muaahhhh....

Note to Along Roz : ... how come my brownies doesn't look as nice as yours? Huwaaaaaa... huwaaaaa.....

EGGLESS MOIST BANANA BROWNIES

Ingredients :

200g cooking chocolate
150g Butter (I used margarine)
400g ripe bananas - mashed
120g brown sugar
1/s teaspoon salt
2 teaspoons Vanilla Essence
150g plain flour*
4 tablespoons cocoa powder*
1 teaspoon bicarbonate Soda*
1 teaspoon baking powder* (*sifted together)
enough Chocolate Chips - to sprinkle

Method :

1. Melt chocolate and butter together. Allow to cool.
2. Add in mashed banana, sugar, salt and vanilla essence - mix well each addition.
3, Fold in sifted ingredients*. If too thick, add in 4 tablespoons fresh milk.(OMG! I didn't read this! So I didn't add any but luckily it is still okay!)
4. Line a 10" x 10" baking tray with greaseproof paper. Pour batter into the tin.
5. Sprinkle some choc chips.
6. Bake at 170C for 30 minutes or until done.
7. Slice and serve.

Brownies for Jid

Assalamualaikum to all you lovely people out there...

Hmmm... shall I say, it's good to be back online? I think I should not say that because I am not so sure for how long I will be 'back on air' this time. Though I have quite a number of reasons why I should be back, but all narrowed down to the word L.A.Z.Y, hence the 'blog full of cobwebs'!!!

Not only I am lazy to update my blogs, but I was lazy to turn on my laptop. And to make things worst, I am even lazy to turn on my oven. My oven, my mixer and all my baking stuffs are having such a wonderful vacation I guess! Hahahahaha....

What have I been doing all these while? What else.... besides doing the housework, I spent most of my time reading... mmmm that's another story as well. Though I've read quite a number of books, there is also NO updates in my other blog.

So to conclude.... i will blame it on L.A.Z.Y... hehehe....

Anyway, these were the latest 'products' from my lukewarm kitchen. Thanks to Jid for making my oven warm again... hope you are happy with the brownies.

Easy Brownies

It had been a week since I deactivated my Facebook account. To be honest, I don't miss anything, except for the circle of friends that I had made along the way. I really missed all the chats and jokes plus all the kind comments, not to mention sometimes, very funny that brought smile to my face. To name a few, Kak Wan Nita, Kak Halimah Awang, Fadzlina, Oshin Nana, Aida Abdullah, IdaB4C and many many more. To all, thank you very much for making my Facebook's wall cheerful and full of colors!

I admit, Mr Ben Ashaari, I got carried away from my main purpose of registering for Facebook. Very sorry Inspector Sahab! Tabik datuk!. A week without facebook :
  • leaves me with 3 tall empty laundry baskets! All nicely folded, ironed and arranged in the cupboard! I spent the week ironing my heart out and I'm loving it!
  • I managed to update my blog more often
  • I don't really have the urge to snap the photo of each and everything that I had cooked
  • less emails to be deleted from the mailbox
  • not glued to the chair infront of the laptop
So I guess, I'll stay that way for the time being. What's more, I think I've exposed myself too much and that's not quite a good sign. Who knows, my licence to blog will be revoked and I surely won't like that to happen. So yes, let mamafami take a rest....

When I came across Hana's lovely photos of this brownies, I just can't resist trying. And I did a few changes here and there. Thank you Hana and Wssary of MyResipi for sharing this recipe with us.


EASY BROWNIES
Adapted from : Hana Memories
(To fit a 10" x 10" tin)

Ingredients :
  • 1/2 cup margarine - melted
  • 2/3 cups white sugar
  • 1 1/3 cups brown sugar
  • 10 tablespoons cocoa powder
  • 4 eggs - lightly beaten
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon salt
  • 2/3 cup flour
  • 1/4 teaspoon (heap) baking powder - I added

Method :
  • Line a 10 inch x 10 inch tray with greaseproof paper. Preheat oven to 180 C (may differ)
  • Mix together melted margarine and both sugar.
  • Add in the cocoa powder and stir.
  • Pour in the eggs, vanilla essence and salt.
  • Finally fold in the flour and baking powder.
  • Pour the mixture into the prepared tin and bake for 25 to 30 minutes.
  • Once out of the oven, leave to cool than cut to the desired size. Ready to serve.


RESEPI BROWNIES MUDAH

Bahan-bahan : 
  • 6 sb serbuk koko
  • 1/4 cawan mentega cair
  • 1 cawan gula (hana buh 1/3cwn gula putih, 2/3cwn gula perang)
  • 1/2 sk vanilla
  • 1/4 sk garam
  • 1/3 cawan tepung gandum
  • 2 butir telur
  • 1 cawan kekacang - optional
Cara-cara
  • Panaskan oven suhu 160-170 darjah celcius.Taburkan sedikit tepung dalam loyang empatsegi berukuran 18cm - hana sapu loyang dengan butter
  • Masukkan mentega cair,koko,gula,vanilla,garam,tepung dan telur ke dalam mangkuk.
  • Gaul sebati. Masukkan kekacang jika mahu.
  • Masukkan adunan dalam loyang dan bakar lebih kurang 25-30min.

Moist Orange Mocha Brownies

I have nothing much to write as the brain is tired. Perhaps, overworked yesterday, creating one poem after another, the whole day long! Gosh, what a day! But I can't deny that I had fun doing that...

After this, I'm off to do my ironing... I miss my iron and my ironing board.....

It was Syahmi's tuition teacher, Cikgu Sherina's birthday last Tuesday. So I baked for her this brownies as a gift for her birthday and also to express our thanks for teaching and guiding my son in his subject. Thank you cikgu....

Moist Orange Mocha Brownies

MOIST ORANGE MOCHA BROWNIES

Ingredients A :

1 cup melted butter ( I used margarine )
1 cup evaporated milk ( I used fresh milk )
2 cups brown sugar
1 cup hot water
1/2-1 teaspoon Nescafe granules diluted in the hot water
2-3 tablespoons orange Sunquick

Ingredients B : Mix using a whisk

1 teaspoon vanilla essence
2 eggs (grade B)

Ingredients C : To be sifted

2 cups flour
1 cup cocoa powder
1 teaspoon baking powder
1 teaspoon soda bicarbonate

Method :

1. Preheat oven at 180 C for 10 minutes.
2. Mix ingredients A in a bowl.
3. Pour in ingredients B and mix well.
4. Finally add in ingredients C and stir to mix.
5. Pour the batter into a 10 x 10 inch tray, layered with greaseproof paper.
6. Bake for 30 minutes. (Time and temperature may differ, depending on your oven)
7. Remove from oven and let it cool. Drizzle with melted cooking chocolate and sprinkle with sugar deco.

Since there is a bit of leftover, I poured the remaining batter into my small silicone tray to produce this.....

Not bad looking huh! Hahaha.. And yes dearies... this is brownies too, and not a chocolate cake as many had guessed when I posted it in my Facebook previously!

Best Brownies (Angie)

First and foremost, a HAPPY BELATED TEACHER'S DAY to all teachers in this world...




Helped my cousin to make these cards for the teachers in her school. Actually she had asked me to google for nice wordings to be pasted on the teacher's day card she intended to do. I ended up helping her do the card instead of looking for the wordings! Hahaha... It was fun making the cards for you kak... after a long time not having the chance to play around with art. And this is my signature at the back of the card, copyright controlled..... *wink*

Last Monday, I thought of updating my blog, for the teacher's day entry, soon as I've finished doing the orders that came from ANZ, but then I got a sad news from hubby's family. One of his cousin, a former teacher, passed away. Datin Hajjah Aminah Zakaria passed away at the age of 49 after bravely fighting with the final stage cancer. May her soul rest in peace. Al-Fatihah.

I am not going to write much today. My list-to-do is still very long. So I will go straight to the recipe to share. Made these brownies for Syahmi's teachers. Besides the brownies, I had packed a chocolate chip muffin as well in the box. Thank you to all the teachers who had kindly taught my son. May all of you be blessed....

Best Brownies Angie

BEST BROWNIES

(Note : Please double the recipe for tray sized 10" x 10")

Ingredients :

1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla essence
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder

Frosting : (I didn't do this)

3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar

Directions :

1. Preheat oven to 350 degrees F (175 degrees C).
2. Grease and flour an 8 inch square pan.
3. In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla.
4. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder.
5. Spread batter into prepared pan.
6. Bake in preheated oven for 25 to 30 minutes. Do not overcook.

To Make Frosting:
Combine 3 tablespoons butter, 3 t. ablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Frost brownies while they are still warm.

Chocolate Brownies

It's not always whatever we planned will turn out the way it should be. Sometimes the result will be much better than expected but otherwise, a disastor! Good if it turned out great but if it's disastrous, then you have to think fast and be extra creative to cover the failure, if it's possible that is! Hahaha... Speaking of failure, a few weeks ago, I, for the very first time, tried using my brownies tray with cutters which I had bought quite sometime back. And using a new recipe without reading the feedback about the recipe. My brownies overflowed from the tray, not that much though but since it had rised quite a bit, so the cutters were 'buried' in the brownies. It was a job to take out the cutters, resulting to a tray of broken brownies...err can we even call it brownies? I doubt it... hahahaha...

To make things worse, I had done the brownies for my mom's visitors, our neighbour when we were very young. Aunty Asbah came with her daughter who is the same age as me and happens to be my school mate. When they arrived, I was busy in the kitchen, having a hard time handling the brownies. Managed to get a few pieces of so-called-brownies and the rest... huhuhu... undescribable! I served the few not-so-bad-looking-brownies and start thinking of what to do with the rest. Alhamdulillah, something popped in my mind and I ended up with these....



..........not bad huh??!!! Mind you, it's not the recipe to be blamed, but me, who doesn't study properly how to use the cutters.....

Well, that pleasant failure doesn't put me off. I still have the guts to try out another brownies recipe. But this time, I used the recipe recommended by Mak Lang . Thank you Mak Lang for your continuous encouragement and support. May Allah bless you....

Made this brownies for Azlina. Thank you Lin for ordering with me. I am much relieved when Lin is satisfied with the brownies... Alhamdulillah....



CHOCOLATE BROWNIES

Ingredients A ~ melted
150g butter
220g cooking chocolate ~ cut to small chunks

Ingredients B ~ mix well
260g brown sugar
2 eggs
100g fresh milk
1 teaspoon vanilla essence

Ingredients C ~ sifted
200g flour
50g cocoa powder
1 teaspoon baking powder
½ teaspoon bicarbonate of soda

Method :

1. Sift ingredients C into a bowl.
2. Melt ingredients A. Remove from heat and leave for about 2 minutes.
3. Stir ingredients B just to mix.
4. Pour ingredients B and C into A. Mix using a hand whisk.
5. Pour the mixture into a baking tin lined with greaseproof paper.
6. Bake in a preheated oven at 170 C till done. Roughly about 40 to 45 minutes. Do not overbake.





BROWNIS COKLAT

Bahan A ~ dicairkan
150g mentega
220g coklat masakan ~ dipotong kecil

Bahan B ~ digaulkan

260g gula perang
2 biji telur
100g susu segar
1sudu teh esen vanilla

Bahan C ~ diayak

200g tepung gandum
50g serbuk koko
1 sudu teh serbuk penaik
½ sudu teh soda bikarbonat

Kaedah penyediaan :

1. Ayak bahan-bahan C ke dalam mangkuk.

2. Cairkan bahan A. Padamkan api dan ketepikan, lebih kurang 2 minit.
3. Gaulkan bahan-bahan B hingga bercampur dan sekadar rata.
4. Tuangkan campuran bahan B & C ke dalam A, gaul menggunakan hand whisk
5. Tuangkan ke dalam dulang pembakar yang telah dilapik kertas.
6. Bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 170C hingga masak. Lebih kurang 40 hingga 45 minit.

Muffin Brownies


BROWNIE MUFFINS

Ingredients A :

280g butter - melted
180g brown sugar
20g white sugar
70g cocoa powder
a pinch of salt

Ingredients B :

2 eggs ~ beaten
80g flour

Almond to sprinkle

Method :

1. Combine all ingredients in A in a pot and melt over slow fire.
2. Set aside to cool.
3. Add in the eggs into the bater and stir.
4. Add flour, a little at a time. Mix well.
5. Spoon the mixture into the papercups, 3/4 full. Sprinkle some almond chunks.
6. Bake in a preheated oven at 170 C for 30 to 40 minutes.

Brownies (Diella)



BROWNIES

Ingredients :

250g butter
1 1/2 cups sugar
4 eggs
2 teaspoons vanilla essence
1/2 teaspoon baking powder
1 cup plain flour
3/4 cup cocoa powder
1/2 cup chopped nuts (I didn't put)

Method :

1. Melt butter over slow fire, turn off the fire and add sugar. Mix with whisk.
2. Add in the eggs and vanilla, continue whisking.
3. Add in flour together with baking powder and cocoa and mix well.
4. Add in nuts ( you can also add in chocolate chips into the batter or sprinkle sliced almonds on top of the batter before baking )
5. Pour into a lined tray ( 12" x10") and bake in a preheated oven for 25 - 30 minutes at 180degrees celcius.
6. Sliced into desired sizes or you can also use the tray with the cutters. Drizzle with melted cooking chocolate and sprinkle with sugar deco.

Orange Mocha Brownies



ORANGE MOCHA BROWNIES

Ingredients :

1 1/2 cups plain flour ~ sifted
1/2 cup cocoa powder
1 tablespoon coffee powder
1 cups castor sugar
250gm margarine ~ thawed
4 eggs ~ lightly beaten
1 teaspoon vanilla essence
1/2 cup orange juice
3/4 cup chocolate chips

Method :

1. In a bowl mix all ingredients except orange juice and choc chips. Beat using mixer at medium speed until well combined.
2. Pour in orange juice. Continue mixing.
3. Stir in the chocolate chips
4. Pour into baking tray, lined with baking paper overhanging from both sides.
5. Bake for about 30 minutes in a preheated oven at 170 degree celcius.
6. Remove from oven, leave in tin for 5 minutes. Remove from the tin onto the wire rack to cool.
7. Pour and spread evenly the chocolate frosting on the surface. Cut into squares.

Frosting :

200g dark chocolate bar
1/4 cup whip cream
1 tablespoon coffee powder

* Combine all in a casserole and microwave for 1 min on HIGH. Take out and stir well until you get a lovely choc frosting.
* Or just double-boil over medium heat.

Brownies




BROWNIES

Ingredients A :

1 cup evaporated milk (I used fresh milk)

1 cup melted butter
1 cup hot water
2 cups brown sugar

Ingredients B [mix well] :

2 eggs (Grade B)

1 teaspoon vanilla essence

Ingredients C [to be sifted] :

2 cups flour

1 cup cocoa powder
1 teaspoon baking powder
1 teaspoon bicarbonate soda (next time round, will lessen it to 1/2 teaspoon only)

Method :

1. Pre-heat oven at 175'C for 10 minutes.

2. Mix well all the ingredients A.
3. Pour in ingredients B and stir.
4. Add in ingredients C and stir to mix.
5. Layer a 10 x 10 inch tin with grease proof paper and pour the mixture into the prepared tin.
6. Bake for 40 - 45 minutes.
7. When cooled, pour the topping on top. Let it set slightly before cutting to small pieces.


CHOCOLATE TOPPING

Ingredients :

250g cooking chocolate

1 tablespoon butter or margarine
1 teaspoon evaporated milk (I used fresh milk)

Method :

1. Melt cooking chocholate using double boil method.

2. Add butter and mix well.
3. Pour in the milk and stir. Ready to use.

Chewy Gooey Yummy Brownies


CHEWY GOOEY YUMMY BROWNIES

Ingredients :

250g butter ~ cut to small cubes
400g cooking chocolate ~ cut to small cubes
6 eggs
340g brown sugar
2 teaspoons vanilla essence
20g chocolate emulco
80g flour
60g cocoa powder
140g walnut/pecan/almond/macadamia (optional) ~ toasted


Method :

1. Layer a 12" x 12" tray with greaseproof paper and make sure the paper is longer than the tray , so that it'll be easier to remove the brownies from the tray.
2. Melt butter and cooking chocolate using double-boiler method. Set aside till lukewarm.
3. In a separate bowl, whisk eggs, sugar, vanilla essence and chocolate emulco using the hand whisk till the sugar dissolves.
4. Pour the butter and chocolate mixture into the egg mixture. Mix well.
5. Sift flour and cocoa powder and add in the toasted nuts. Add the flour into the mixture. Do not overmix.
6. Pour the mixture into the prepared tin and bake in a preheated oven at 160 C (if using a small oven) for 1 hour or till done. The temperature and the baking time depends on your oven.
7. Leave the brownies to cool completely before cutting. For better result, leave overnight.
8. You can top the brownies with ganache, eat them with icecream or custard sauce or simply enjoy them the way they are!
