MapMyRun and why I slept late! Ngeeee....

I had been doing morning walks for the past one month now, only missing twice. The first time was when I had to go to my son's school for the report card day and the second time, it was raining. I've read somewhere that it takes 21 days doing the same thing to develop the habit. So yes, after walking for 21 days, I just find it easier to get myself to walk in the mornings. Unlike previously when I walked for 3 days, stopped for another 3 days then continue walking and stopping and finally stopped ! But one thing that I am still unable to make it a habit is to not eat rice for 21 days continuously! Oh Allah, do give me strength. But then, I am now cutting on the amount of rice taken daily. Some days I even skipped rice! Aja aja fightning mama!!!

Thanks to my dearest sister for introducing me to this MapMyRun application on the cellphone. It developed my insterest to keep walking. MapMyRun will track our fitness activities. It will record our workout details, including duration, distance, pace, speed, elevation, calories burned, and route traveled on an interactive map. You can read more about it here.

And today, I am proud to say that I walked 6.45 km in 1 hour 22 minutes and 56 seconds! That's the furthest so far... And thanks to Kak Ana for the company. If I were to walk alone, I won't be walking out of my housing area. I am just not brave enough, just yet, eventhough my neighbourhood is considered safe but we'll never know... better be safe than sorry....

As mentioned in my previous entry, I had been sleeping late for 2 days, making cupcakes and brownies. Well, I'll post the photos of the end product. I just hope my dear customers will be happy with their orders.

Thank you Sally for leaving a comment on my entry. To answer your question, I used a tray with the cutters that can be bought at any bakery supplies shops. I will bake the brownies without the cutters. Once the brownies are out of the oven, I will just place the cutters on top of the brownies and press slightly into the brownies just to leave some lines on the surface as a guide. When the brownies are cool, I will cut it with a sharp knife to give a clear cut on the brownies. Hope this helps!

Sweet Bun With Coconut Filling

As usual, I am busy with the endless housework and my duty as a driver. In addition to that, my internet connection is not so good for the last couple of days. For this entry, I'd like to share with you this lovely bread recipe that I took from Tok Mak's Facebook quite sometime ago. But I changed the recipe slightly to satisfy my tastebud... hahaha...  SWEET BUN WITH COCONUT FILLING

Ingredients : 

1 egg * 
2 tablespoon milk powder * 
300 ml iced water * (egg + milk powder + iced water = 300ml) 
50g sugar 
1 1/2 teaspoon salt 
300g high protein flour 
200g all purpose flour 
2 teaspoon instant dried yeast 
2 tablespoon margarine 

I added : 
1/2 teaspoon dough softener 
enough sesame seeds 

Glazing : 
1 teaspoon milk powder 
2 teaspoons water 

Filling (mix all the ingredients and cook in a pot till done) : 
Enough freshly grated coconut 
Enough palm sugar 
1 piece screwpine leaf - knotted 



Bread Maker method : 

1. Into the breadmaker pan, add in mixture of water, milk powder and egg. Add in sugar and salt. 
2. Top it with high protein flour, all purpose flour and instant dried yeast. 
3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine. Leave the bread maker to finish the cycle which will takes about 1 1/2 hour or so. 
4. Remove the dough from the pan and divide the dough into 20 equal portions. Roughly about 50g each. 
5. Form each portion into a ball and rest the dough for 10 minutes. 
6. Flatten each dough and spoon some filling into the centre and cover the filling with dough. Roll back to ball shape. 
7. Arrange the rolls on a baking tray and leave to prove till double the size. 
8. Brush the proved rolls with milk and sprinkle some sesame seed. 
9. Bake in a pre-heated oven at 180c for 25 minutes or till golden brown. 
10. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

Donut

I was browsing through the internet yesterday to look for something that I can make, to bring to Abang Ngah's Tahlil yesterday night. Came across this donut recipe that I've never tried before, at Rima's page which she got it from HaSue. The donuts turned out to be soft and lovely. I made it into bite sized donuts. Thank you to these two lovely ladies for sharing the recipe with us. Since I was running out of time, I just coat it with fine sugar.

Ingredients :

500g high protein flour (i used half bread flour and half all purpose flour)
1 packet of instant yeast (11g)
50g Margarine (i used unsalted butter)
1 tbsp Shortening
2 tbsp sugar
2 tbsp condense milk or milk powder
1 egg (lightly beaten)
1/2 tsp salt
200ml warm water
Fine sugar for coating


Method :

1. In a big bowl, add warm water, yeast, sugar, milk, margarine and shortening and stir using spoon lightly and let it rest for 8-10 mins.
2. Once yeast mixture starting to bubble, add half of sifted flour into bowl, add egg and salt too... continue to stir using spoon (in one direction)
3. Once mixture incorporated and not sticking to your spoon, add another half of the sifted flour, mix lightly with spoon and quickly continue to knead dough using your hand till dough no longer sticking to the bowl (you will know if dough is ready when ur dough no longer stick to your fingers)
4. You don't have to let dough rest but if you want a much much more rounder donut, you may do so for 5 to 10 mins
5. Roll dough to about 1/2" thick and cut with donut cutter
6. Heat oil and deep fry donut on medium heat till golden brown (if u prefer a much more fluffier, do rest it for 10mins or so, the more lighter ur donut is, the more fluffier it will be)
7. Once cool, coat donut using fine sugar or melted chocolate..


Bread Maker method :

1. Pour water into the breadmaker pan. Add sugar, condensed milk, egg and salt.
2. Top it with flour. Select the dough function and press start.
3. When the dough is slightly incorporated, add in margarine and shortening and leave the bread maker to finish it's process which will takes about 1 1/2 hour or so.
4. Remove the dough from the pan.
Steps 5 till the end, is similar as the above.

Chocolate Muffins

My sincere apologies for not being able to keep my promise in my previous entry. Didn't manage to post a new recipe nor update my blog yesterday as hubby and Syahmi were not feeling well and I had to run some errands. I was in and out of the house throughout the day. Sorry!

I admit... without a doubt... I am a jealous person. Halt... now now... don't get me wrong. I am not a jealous wife but I am jealous to all the individuals whom are so talented, no matter in whatever area (the good ones only ya). Whenever I go blogwalking, especially the food blogs, I always ended up with lots of 'Oohs' and 'Aahs'. I envy all the lovely photos that most of the bloggers 'served' in their blogs. I always wonder why my photos can't be like theirs. Why my food presentation can't be as superb as theirs no matter how hard I've tried.

Finally, I said to myself, I am me and I am not them. Maybe I need more time to improve and be as good as them but as of now, I must be happy with what I am doing, then only will I feel the satifaction, the happiness and the sincerity. Thats all that counts....

CHOCOLATE MUFFINS

Ingredients :

1 cup flour
1/2 cup cocoa powder
1/2 teaspoon bicarbonate soda
1/2 teaspoon baking powder
1/2 teaspoon nescafe granules
1 tablespoon milk powder
1/2 cup sugar
2 eggs - lightly beaten
1/2 cup cooking oil
2 tablespoons condensed milk
1/2 teaspoon vanilla essence
1 tablespoon juice of a Sunkist orange (I substitute with Sunquick)
1/2 cup hot water



Method :

1. Sift all the dry ingredients into a big bowl.
2. Add in sugar and mix well using a whisk.
3. In another bowl, add eggs, cooking oil, condensed milk, vanilla essence and sunquick. Stir using a whisk.
4. Pour the liquid into the dry ingredients and mix.
5. Finally add in the hot water and mix till well combined.
6. Spoon into the prepared cups, almost full.
7. Bake in a preheated oven at 180 C for 25 minutes.


MUFFIN COKLATSumber : Izahdaut

Bahan-bahan :

1 cawan tepung
1/2 cawan serbuk koko
1/2 sudu kecil soda bikarbonat
1/2 sudu kecil serbuk penaik
1/2 sudu kecil serbuk nescafe
1 sudu besar susu tepung
1/2 cawan gula
1/2 cawan minyak
1/2 cawan air panas
2 sudu besar susu pekat
1/2 sudu kecil esen vanilla
2 biji telur
1 sudu besar jus oren sunkist

Kaedah penyediaan :

1. Ayakkan semua bahan kering ke dalam mangkuk besar. Masukkan gula.
2. Gaulkan sebati. Ketepikan.
3. Campurkan semua bahan basah ke dalam bekas kecuali air panas.
4. Tuang bahan basah ke dalam bahan kering. Gaul sebentar.
5. Kemudian tuang air panas.
Bakar pada suhu 180 C slama 25 minit.

Time, why is it always to be blamed???

A week has passed.. time flies! What's more, this week, I had been very busy... slightly busier than the bee.. that's why I feel like time is being fast forwarded! If only time can be rewinded, how nice it would be... I will surely want to be in Malawi again... *grin*

Anyway, back to reality... frankly speaking, this week, I had not done much experimenting in the kitchen as time does not permit me to do so... sorry dear Mr Time, I kept blaming you! But do I have a choice? Hahaha... For now, I will just passed the recipe column. InsyaAllah will try to post a recipe tomorrow. Mind the word..WILL TRY yeah.. *grinning sheepishly*.

I will just post the photos of my recent orders from friend and cousin. After quite a while, not playing with buttercream, this is the best that I could come out with. I do hope, they are satisfied with what I had produced. Thank you for your order ya... mama jual...

Devil's Food Cakes

Two days in a row, I had said to myself, I want to take it easy. I want to relax. No hustle bustle in the kitchen. I just want to spend time dating with Miss Philips aka my iron. But it turned out the other way round. Totally opposite! I was again 'flying' in the kitchen yesterday. It all started with a phone call from my aunt. Since my mom is with us at the moment, and since she's at her daughter's place before returning to Johor Bahru today, she wanted to come and visit my mom. And me, at the same time, needs her 'service' to be the 'courier lady' for another aunt in Johor. After speaking to her on the phone, I went straight into the kitchen and there I was till my aunt and her family went back! And guess what, I managed to try 2 new recipes. Just to give you a hint, it's a bread recipe and a cupcake recipe. Not only that, I boldly tried to decorate the cookies (just 2 pieces that is) into the bride and bridegroom theme. I don't really know how they go about doing it. I just did it the way I think I should! Hahaha...












I guess, I must just not say I want to relax again or else, I won't have the chance to date with Miss Philips. So yes... I DON'T WANT TO RELAX...boleh eh macam tu? Ahahahaha....

One of the new recipes I've tried yesterday is this cupcake recipe. Got it from the book that Ida Book4Charity had given to me as a present. Thank you so much Ida for the lovely book. I've tried two recipes from the book and they turned out lovely. For those who are on Facebook, do add BookforCharity Nizida to your friends list and have a peek there. She's selling lots of books, be it story books, cookbooks, DIY and many others. The best part is, half of the profit will go to charity. So, you are not only buying books for yourself but at the same time, you're doing charity as well. Isn't that wonderful!


Anyway, I've made these cupcakes for Iddin, Syahmi's best friend for his birthday. HAPPY 16TH BIRTHDAY IDDIN!

DEVIL'S FOOD CAKES

Ingredients :

3 1/2 tablespoons soft margarine
1/2 cup firmly packed brown sugar
2 large eggs
3/4 cup all-purpose flour
1/2 teaspoon soda bicarbonate
1/4 cup cocoa powder
1/2 cup sour cream (I substitute with plain yogurt)

For the frosting : (I didn't do this)

125g semisweet chocolate
2 tablespoons superfine sugar
2/3 cup sour cream
chocolate caraque, to decorate

Method :

1. Preheat the oven to 180 C.
2. Put the margarine, sugar, eggs, flour, bicarbonate soda and cocoa powder in a large bowl.
3. Using a handheld electric mxer, beat together all the ingredients until just smooth.
4. Using a metal spoon, fold in the sour cream.
5. Spoon the batter into the souffle cups.
6. Bake the cupcakes for 20 to 25 minutes or until well risen and firm to the touch. Transfer to a wire rack to cool.

To make the frosting, break the chocolate into a heatproof bowl. Set the bowl over a saucepan of gently simmering water and heat until melted, stirring occasionally. Remove from the heat and let cool slightly, then whisk in the sugar and sour cream until combined. Spread the frosting over the tops of the cupcakes and let set in the refrigerator before serving. Serve decorated with chocolate caraque.

My method :

Using a wooden spoon, cream margarine and sugar. Then add in eggs, one at a time. Add cocoa powder, mix well. Then add in flour and bicarbonate soda. Finally fold in the yogurt.

Aza's Cupcakes and our Saturday menu

I had a very busy day yesterday. Among all the chores that I had to do was to fulfill Aza's order of a 25 pieces cupcakes. Any design in purple. Had baked the cupcakes in the morning besides doing all the other chores. I was then in and out of the house the whole evening right up till 11 pm. Once I reached home, I just slept like a log... totally forgotten about the un-iced cupcakes!

I woke up at 4am to check on Syahmi and to sponge him in order to bring down the temperature. Then only I remembered about the cupcakes. So I sat down and did the decorating... yes, at 4.15 in the morning! When everything's done, and when I checked again the message from Aza, she said she'll collect the cupcakes in the evening! Serves you right mama, next time check your sms first. But in a way, I am happy I did what I had done because then, I managed to ice the cupcakes in peace and I don't have to be a Mrs. Last-Minute-Dot-Com.

This was the end result and I hope Aza is satisfied with it.

Rainbow Cake (Chef Noraini)

Hello everyone...
Here's hoping and wishing that everyone is in their best of health. I am still recovering from my ear infection. It's just not comfortable not being able to hear properly with both ears but on top of that, syukur alhamdulillah I can still hear....

Had not been experimenting much in the kitchen lately after the hectic weekend I had, preparing the goodies for Fatin's Cafe. At the same time, fulfilling the orders made beforehand and also one adhoc order that came in at 11am and safely delivered by 4pm.

Made this cake for Watie's adhoc order. Did not have the chance to see the sliced piece as I have to pass a whole cake to Watie. If you wish to see the texture, you can take a peek here. Thanks to Ummi for sharing this recipe with us. According to Ummi, she took the recipe from a book entitled Kompilasi Hidangan Kek by Chef Noraini. Thanks to Chef Noraini too. Allow me to post the recipe here.

RAINBOW CAKE

Ingredients (round 8 inch tray) :

250g butter
220g flour *
1 teaspoon baking powder * (ingredients marked *, to be sifted together)
200 gm castor sugar
4 eggs (grade A)
5 tablespoons fresh milk
1 teaspoon vanilla essence
food coloring : yellow, pink and green

Method :

1. Line an 8 inch round pan with greaseproof paper. Heat oven to 180C
2. Cream butter and sugar till light.
3. Beat in eggs, one at a time. Add in vanilla essence.
4. Cut and fold in sifted flour alternately with milk, starting and ending with flour.
5. Divide the mixture to 3 equal portions and add the food colorings into each portion.
6. Spoon 2 tablespoons of yellow mixture onto the middle of the cake tin. Top it with 2 spoonful of pink mixture, followed by the green mixture. Repeat the process until all the mixture are used up
7. Bake for about 45 to 50 minutes till done.

Peggy's Pita Bread & Chicken Filling

Yesterday, almost everything didn't turn out as planned...
Firstly.... Syahmi and Iddin had to stay in school till 5pm. They only have a half an hour break from 2.30 pm till 3.00 pm before the sports activities starts. So I had planned to bring them packed lunch and their sports clothes to change. That, I thought would save me a trip to and fro. I brought along the lunch basket at 2.30pm. When Syahmi jumped into the car, he said that he wanted to go home and change because the changing room is locked. No choice, but to drop Iddin home and told him to be ready by 2.55pm. When we reached home, I just had to rush Syahmi to pray and get changed. Luckily he had eaten his lunch in the car. I really had to be a lady tarzan just now or he'll take his own sweet time! By 3.02pm, the boys were safely back in school. And mama didn't rempit that much okay...or...did I? Ahakss.....
Secondly... I thought I would be meeting Zai in the evening but she couldn't make it. Instead Kak Noha and her daughter Ijah, dropped by
Thirdly... I wanted to fry kue tiau for my visitors, but ended up frying instant dried noodles instead...

But at least, something did turn out according to plan. The lunch! The night before, I had google-ed for Pita Bread recipe. And I settled down with this one. It was the right choice, alhamdulillah. Thank you to Sandy of Allrecipes dot com for sharing this wonderful recipe with us. Allow me to share it once again here.

I made half the recipe and managed to get 5 good sized pita breads. I had stuffed the bread with chicken fillings and vegetables. Sounds healthy huh? Iddin just took one and the rest was history in Syahmi's hungry tummy! Yes, he ate the other 4. I just tasted a bit of the crumbs from the bread! But I am very sure, the bread must be very good judging by how Syahmi had enjoyed the bread. So if you wish to give it a try, here's the recipe.

PEPPY'S PITA BREAD

Yields : 8


Ingredients:

1 1/8 cups warm water (110 degrees F
/45 degrees C)
3 cups all-purpose flour
1 teaspoon salt 1 tablespoon vegetable oil
1 1/2 teaspoons white sugar
1 1/2 teaspoons active dry yeast

Directions:

1. Place all ingredients in bread pan of your bread machine, select Dough setting and start. When dough has risen long enough, machine will beep.
2. Turn dough onto a lightly floured surface. Gently roll and stretch dough into a 12 inch rope. With a sharp knife, divide dough into 8 pieces. Roll each into a smooth ball. With a rolling pin, roll each ball into a 6 to 7 inch circle. Set aside on a lightly floured countertop. cover with a towel. Let pitas rise about 30 minutes until slightly puffy.
3. Preheat oven to 500 degrees F (260 degrees C). Place 2 or 3 pitas on a wire cake rack. Place cake rack directly on oven rack. Bake pitas 4 to 5 minutes until puffed and tops begin to brown. Remove from oven and immediately place pitas in a sealed brown paper bag or cover them with a damp kitchen towel until soft. Once pitas a softened, either cut in half or split top edge for half or whole pitas. They can be stored in a plastic bag in the refrigerator for several days or in the freezer for 1 or 2 months.

Note :

I had followed the Step 1 and Step 2.
I heated the grill pan and place the pitas on the pan till the bottom is brown. Then move it into the grill and bake till golden brown.

Chicken Filling

CHICKEN FILLING

Ingredients :


1 tray chicken fillets ~ sliced
1 large onion ~ chopped
a few tablespoons oil
3 - 4 chopped tomatoes
Green peppers ~ chopped
2 teaspoons pounded garlic
salt to taste
paprika
chillie powder
cummin powder
black pepper ~ crushed

Method :

1. Heat oil and add garlic and fry till fragrant.
2. Add in chicken and fry till cooked.
3. Add in onion and tomatoes.
4. Add in the seasonings (salt, paprika, chillie powder, cummin and black pepper)
5. Add green pepper and mix well.
6. Remove from heat and leave to cool. Add in a bit of shredded cheese.

Garnish with :

Shredded lettuce
Shredded carrots
Shredded cheese (cheddar)
Green corriander
Mayonaise
Chillie Sauce
