Sweet Bun With Coconut Filling

T.H.E R.A.M.B.L.I.N.G.S

Dear Mak Teh

I hope this find you well. Thank you for your kind email, asking about my whereabouts and my MIA from the cyberworld.

As usual, I am busy with the endless housework and my duty as a driver. In addition to that, my internet connection is not so good for the last couple of days. Being an impatient kind of person, I just don't have the heart to waste my time waiting. So yes, I opted for not switching on the laptop hence the silence.

Thank you.

 Yours trully,
MamaFaMi

Nota kepada Izah Daut, hihi..dah serik nak email mama ke? Takut tifah tertifu lagi ke? Ahaks... peace Izah!

Ingredients :

1 egg *

1 1/2 teaspoon salt

2 teaspoon instant dried yeast
2 tablespoon margarine

I added :
1/2 teaspoon dough softener
enough sesame seeds

Glazing :
1 teaspoon milk powder
2 teaspoons water

Filling (mix all the ingredients and cook in a pot till done) :
Enough freshly grated coconut
Enough palm sugar
1 piece screwpine leaf - knotted

Bread Maker method :

1. Into the breadmaker pan, add in mixture of water, milk powder and egg. Add in sugar and salt.
2. Top it with high protein flour, all purpose flour and instant dried yeast.
3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine. Leave the bread maker to finish the cycle which will takes about 1 1/2 hour or so.
4. Remove the dough from the pan and divide the dough into 20 equal portions. Roughly about 50g each.
5. Form each portion into a ball and rest the dough for 10 minutes.
6. Flatten each dough and spoon some filling into the centre and cover the filling with dough. Roll back to ball shape.
7. Arrange the rolls on a baking tray and leave to prove till double the size.
8. Brush the proved rolls with milk and sprinkle some sesame seed.
9. Bake in a pre-heated oven at 180c for 25 minutes or till golden brown.
10. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

  8. First time here. What a beautiful blog. I would like to try the recipe for Raisin bun and sweet bun but before that wld u clear some of my doubts. Is high protein flour the same as bread flour. I wld be using my Krups to knead the dough. Do i knead to add in more water. How do u get the bread so white on the sides wherein mind wld be browned. By the way, what is ovallette. Thank u for all your good work. Allah bless u nd yr family always

    1. Thank you for visiting my humble blog Gracy. Let me try and answer your questions the best that I know ya for I am still learning myself.
      1. High protein flour is the same as bread flour.
      2. Frankly speaking, I haven't tried using a mixer to do the kneading. But I am pretty sure that you don't need to add more liquid to the recipe. Do stick to this equation : egg + milk powder + iced water = 300ml
      3. These bread of mine was particularly white on the sides because I took it out a bit too early. Should be golden brown though, so that it will stay longer. But since these buns of mine were finished the very same day, then it is not a problem :D
      4. Ovalette is cake emulsifier or cake stabilizer.
      5. Thank you for your duaas and same goes to you and your family. Take care!

  9. Hello I'm little confused about water part... is it means 300ml water itself or different number of water ml include egg and milk powder ? Please clear that up for me and thank you so much! It looks amazing recipe to try
