Madu dan Kayu Manis - siapa pernah terfikir?


LEMAH : kajian baru-baru ini menunjukkan gula yang terkandung di dalam madu adalah sangat membantu dalam mengembalikan kekuatan badan berbanding gula buatan. masyarakat yang mengambil madu dan serbuk kayu manis dengan ratio yang sama didapati lebih peka dan flexible. Dr. Milton , yang menjalankan kajian ini , mengatakan separuh sudu besar madu yang diminum bersama segelas air yang dicampur dengan serbuk kayu manis, jika diambil setiap hari selepas gosok gigi dan tengah hari (sekitar 3 petang) - akan mengembalikan kecerdasan badan dalam masa seminggu.

SUKAR BERNAFAS : penduduk di Amerika selatan berkumur dengan satu sudu madu dan serbuk kayu manis dicampur dengan air suam , sebagai rutin harian pertama pada waktu pagi , bagi membolehkan pernafasan mereka sentiasa segar sepanjang hari.

KURANG @ HILANG PENDENGARAN : Pagi hari dan malam - madu dan serbuk kayu manis diambil pada sukatan yang sama boleh mengembalikan pendengaran.

SEAFOOD PASTA AGLIO OLIO

Ingredients :

3 tablespoons extra virgin olive oil
4 cloves garlic - minced
1 teaspoon roasted chilli flakes
5 prawns - peeled and deveined
3 squids - cleaned and cut into rings
1 teaspoon capers
150g  angel hair
salt to taste

1 tsp chopped fresh parsley
grated cheese

Method :

1. To prepare the prawn stock, place the head and the shell of the prawns in a small pot and add 1/2 cup water. Bring to boil. Remove from heat and set aside.
2. Boil pasta angel hair till al dente, remove from heat and drain water. Rinse pasta under cold water and add a bit of olive oil to them so that they don't stick. Set aside.
3. In a skillet, heat about 3 tablespoons of olive oil. Saute the garlic and roasted chillie flakes till fragrant.
4. Add in the prawns, squids and capers. Add in the prawn stock.
5. Once the prawns start to change color, toss in the boiled angel hair and salt. Stir to mix. Remove from heat.
6. When serving, sprinkle some freshly chopped parsley and some grated cheese. Enjoy!

Vanellis Pasta

I have always envied people who has the ability to cook something new, just by tasting the food. I honestly do not have that ability. What I am good at is to copy a recipe and try them according to what's written. Only sometimes, will I slightly adjust the recipe so that I don't have to go out of the house to get that particular ingredients. Haha... I am a very homely kind of person and I love my house. If it is not going out dating with Mr Hubby or once in a blue moon with friends, I'd rather stay cooped up in the house. Ahhh... heaven!

Oh ok, back to what I was saying in the first place, about these special people. The first experience meeting with this talented people was when we were in Sri Lanka. Kak Hasnah is the name. A Malaysian, following hubby who is working there. We went to this restaurant for a function. They served us a very nice appetizer. She took one and ate it. Then look at me and said, this is easy to do. *Jaw dropped*. She promised to make it when she's free and she did and it actually tasted the same and looked the same! I am in awe!

And for today's recipe, I got it from Maz of Ilham Dapur, who is now residing in Bahrain with her family. Another talented lady. She created this recipe after dining at one of the restaurants in Bahrain. Though I have never been to Bahrain and never tasted the food at that outlet, but I am sure it should be nice because the recipe that Maz gave is just yummy. Thank you Maz for sharing with us. Do go and visit more outlets and start creating recipes for us so that we don't have to travel all the way to Bahrain to taste the food! Hahahaha...

VANELLIS PASTA

Ingredients :

150g penne
1/4 cup chicken fillet - cut to small chunks
1/4 cup brocolli - slice thin
1/4 cup button mushroom (I used Ayam Brand)
1/4 cup capsicums (original recipe asked for only green capsicum, but since I love colors, I mixed green, yellow and red capsicum to the amount of 1/4 cup) - cut to 2 inch size match stick
2 to 3 tablespoons Bolognaise sauce (I used Kimball brand)
1 to 2 tablespoons mushroom soup powder (I used Campbell's Mushroom Chicken with crutons)
1/2 cup whip cream
1/2 cup mozarella cheese
chilli flakes - amount to your liking

Method :

1. Boil the penne with a bit of salt and a few dashes of olive oil till al dente. Drain the pasta and keep about 1 cup of the water used to boil the penne. This will be used to do the cooking.
2. Heat a flat wok. Add the brocolli, chicken chunks and 4 tablespoons water. Cook on high heat. When the chicken starts to change color, add in the capsicums.
3. Add in the penne and stir well. Add bolognaise sauce, mushroom soup powder and whip cream. Add water if it is too thick. Note : Do not add bolognaise sauce too much. Just enough to give it an orangish colour.
4. Finally add grated mozarella cheese and sprinkle some chilli flakes. Add salt and water if needed.
5. Ready to serve. Enjoy!

Pasta Aglio Olio

Ingredients :

1/2 packet Angel Hair
4 cloves garlic - chopped
1/2 teaspoon chillie flakes (add more if you want it hot)
1 1/2 tablespoons Waitrose Green Basil Pesto
10 medium prawns - peeled and deveined
3 calamari - Clean and cut the bodies into thick ring
1 teaspoon capers
black olives
salt - if necessary
a bit of water
olive oil

Method :

1. Boil angel hair pasta till al dente. Drained and keep aside.
2. In a heavy skillet, heat enough olive oil over medium high heat. Add in the chopped garlic and fry till fragrant. Add in chillie flakes.
3. Add in the basil paste. *Be careful as oil will splutter!!*
4. Add in calamari rings, olives and caper. Stir for a while before adding the shrimps and a bit of water.
5. Last but not least toss the angel hair into the pan and season with salt.

What's for Iftaar today?

In sha Allah, I am fasting today. So far so good, though I only had a small amount of food the day before. And I had two slices of bread for sehri, with a mug of milk tea and also my medication. Alhamdulillah I am good.

Hmm, now what shall I have for Iftaar today? Any ideas?

Vegeroni Spirals Carbonara

Finally, after 2 years , I managed to finish reading I Love You, Stupid by Melur Jelita. Not to say that the story is not interesting, but I don't really have the time to sit and read. Unless I decided to forget about the world and just be in my reading world, then only I think I would be able to finish faster. But that TWO YEARS does not mean 730 days ya. I am not THAT slowcoach! Hahahaha.... Two years here means 2012 and 2013! *wink*

I am relieved I've finised reading that book. Not only it answered most of the questionmarks, but also I don't have to carry a 1.126kg book everywhere I go!

Thank you to Melur Jelita for a book well written. Hmm one question.... What happened to Matt?

VEGERONI SPIRLS CARBONARA

Ingredients :

San Remo vegeroni spirals

3 garlic cloves - chopped
3 bird eye chillie (more if want it hotter) - minced
3 pieces chicken sausage - cut to small chunks
enough frozen mixed vegies
4 pieces canned mushroom - I used Ayam Brand (washed and sliced)
1 can Prego Carbonara (blue colored can)
3/4 can water (use the Prego can) blackpepper
olive oil

Method :

1. Bring a pot of water to boil. Add in a bit of oil and put in the vegeroni spirals. Boil it for 8 to 10 minutes or till al dente. Pour the pasta into a colander to drain out the water and set aside.
2. In another pot, heat olive oil, then add in chopped garlic and minced bird eye chillie. Stir till fragrant. Add a bit of water.
3. Add in the chicken sausages. Stir for 3 minutes then add the mixed vegies and sliced mushrooms.
4. Pour in the carbonara sauce, water and blackpepper. Let it simmer for a while and remove from heat.
5. To serve, place the pasta in a bowl and pour the sauce on top! Enjoy!

Spagetti Olio

I had quite a productive day today. This morning when I went outside to hang the clothes to dry, I saw my car parked outside and thought, let me just park it inside because hubby left for work and his parking place is empty. When I went near the car, saw how dirty it was and decided to give it a bath. Done washing my car, I felt pity for Fatin's car and washed that one too. When washing her car, some of the car shampoo foam went on the floor just infront of the house main door. Done washing Fatin's car, I washed the porch as well. THEN only I hang the clothes! That is typical MamaFaMi... when she said she's going to do something, she'll ended up doing something something else, then only she will do the something that she intended to do in the first place!

Had been wanting to eat spagetti olio for quite sometime. No the one bought at the restaurants but the one that I cooked myself. Congratulations to Che Mat Gebu for making my mind kept thinking of Spagetti Olio! Haiyooooohhhh.... Lucikly he posted the recipe as well, so it's not a total torture actually. Hahaha... Thanks Mat!


SPAGETTI OLIO

Ingredients :

100 g spaghetti
1 Holland onion - diced
3 garlic - finely chopped
3 bird eye chillie - crushed
1 piece Bay leaf (I didn't put in because I can't find my Bay leaf)
1 fresh tomato - diced
1/4 yellow capsicum - diced
1/4 red capsicum - diced
mange tout peas
1/2 teaspoon dried Basil
5 green olives (I didn't put - not available)
5 black olives (I didn't put - not available)
6 prawns - cleaned
salt to taste
Freshly crushed black pepper
Olive oil

Method :

1. Bring enough water to boil, add in salt to taste and spagetti. Boil till al dente. Put through a strainer then rub some olive oil. Set aside.
2. Heat some olive oil in a pan. Add diced onion, garlic, bird eye chillie and bay leaf. Fry till onion became soft then add in diced tomatoes. Cook till tomato softens.
3. Add in the red and yellow capsicum, mange tout peas, olives and prawns. Mix well till the prawns changed color. Add in Basil, blackpepper and salt to taste.
4. Put in the spagetti and mix well for a few minutes and remove from heat. Ready to serve.

Baked Macaroni with Tuna

MERDEKA!!!!
Oh no no no... Today is not the 31st August, but today is the 27th November, 2012... the last day for my son to be a school boy. He sat for his last SPM paper today.

Last Saturday, when I was ironing his last two pairs of school uniform, I felt sad... thinking that it will be the second last time I will be ironing his uniforms. I will be ironing the last pair when he goes to school for the result but that will be next year, In Sha ALLAH.

And this morning and evening, again I felt the same, when sending him to school and fetching him home. When we left the school, I drove slowly and even looked back to see the school. I guess it is because I had been doing the same routine for the past 5 years and it's not that easy to just let it go.

Well, looking on the bright side... I no longer have to be like a thief to watch TV. Normally I will lock my bedroom door and put on a low volume to avoid my son from 'keeping me company' in front of the TV. So just now, I watched one after another programme, from Merlin to Kung Fu Panda! Hahahahaha... When I told my sister about this, she just said,"I am really confused! Who had just sat for SPM? You or your son?" Ahahahaha... macamlah tak biasa... mama kan selalu over!!!!

Syahmi had 3 sets of papers for Biology. So he had to stay back after the second paper as it is just a short interval. So I sent him lunch at 12.30 pm just now. He requested for Burgers. Besides the burger, I had tried something new today, and that was among his lunch menu today. And my son had shared the small portion with his friends. Oh how sweet.


Thank you to Kuchai for sharing this simple and yummy recipe with us. It doesn't take long to prepare and I love the taste.....


 BAKED MACARONI WITH TUNA

Ingredients :

Macaroni
onion - diced
garlic - chopped
1 achovies cube
Chilli paste
Kimball spagetti sauce
2 tablespoons flour
Fresh milk
button mushroom - sliced thinly
frozen mixed vegetable
cauliflower - cut to small chunks
salt to taste
2 cans of tuna in water/vegetable oil
cheese (any to your liking. I used kraft singles and grated mozarella cheese)
cooking oil
dash of black pepper


Method :

1. Boil the macaroni till al dente, put through a sieve and set aside.
2. Heat oil in a wok and add in onion and garlic. When the onions are soft, add in anchovies cube. Stir well.
3. Add in chillie paste. Fry till fragrant.
4. Add in spagetti sauce, Stir and add flour.
5. Pour in the milk and stir gradually.
6. Add in button mushroom, mixed vegetable and cauliflower. Cook till the vegetables are soft and the sauce thickens. Balance the taste with salt.
7. In a big bowl pour the macaroni, tuna and the sauce. Mix well.
8. Transfer the mixture into a baking dish then top with cheese and dash of black pepper.
9. Bake in a preheated oven at 170 C for 25 to 30 mins.

Hot Spagetti Carbonara



HOT SPAGETTI CARBONARA

Ingredients :

Spagetti

3 garlic cloves - chopped
3 bird eye chillie (more if want it hotter) - minced
a bit of chicken cube or 1 teaspoon chicken granules
1/2 holland onion - diced
4 pieces salami - cut to match stick size
2 hotdogs - cut to small chunks
enough frozen mixed vegies
1 can Prego Carbonara (blue colored can)
3/4 can water (use the Prego can)
olive oil

Method :

1. Bring a pot of water to boil. Add in a bit of oil and put in the spagetti. Boil it for 8 to 10 minutes or till al dente. Pour the spagetti into a colander to drain out the water and set aside.
2. In another pot, add oil and when it's hot, add in chopped garlic and minced bird eye chillie. Stir till fragrant and add in chicken granules and diced onion. Let onion turned soft.
3. Add in the salami and hotdog. Stir for 3 minutes then add the mixed vegies.
4. Pour in the carbonara sauce and enough water. Let it simmer for a while and remove from heat.
5. To serve, place the spagetti in a bowl and pour the sauce on top! Enjoy!

Spaghetti Seafood Marinara

At times, when I do my groceries, this question will pop into my head. Does other people do the same as me, counting everything that I take? For example, if I wanted to buy prawns, not only will I choose the good ones and the large ones too, I will also count the numbers of prawns that goes into the plastic. I think I am allergic to numbers.

I can still remember, when I was much younger, I used to follow my mom to the market. And when the shopkeeper is calculating (using a calculator) the total amount, I, at the same time was doing mental maths and will be very proud enough if I win. Nobody knew what I was doing and nobody needs to know. It's just for my self satisfaction! Hahahaha...

So, is there anybody as weird as me, counting almost everything that is countable? Hahahaha.....

After looking at Nor Secubit Garam's photo of her Spaghetti Marinara, I paid a visit to Ayu's blog as Nor said she took the recipe from there. And after reading the recipe and found it very easy enough to prepare as it's similar to how I normally prepare my bolognaise, I went 'fishing' in my refrigerator and in my 'cute pantry'. Yes... it's MISSION POSSIBLE! I have most of the ingredients... and wallah... it's a right decision to make. Even my mom enjoyed her bowl of Spaghetti Seafood Marinara. Thank you to Nor for 'torturing' me with your photo and to Ayu for sharing this lovely recipe with us. I'll post the recipe according to how I had done it.


SPAGHETTI SEAFOOD MARINARA

Ingredients :

1 packet spaghetti
some olive oil
salt (I omit)
water
Boil all the above till al dente and drained

Sauce :

2 garlics diced/chopped
1 big onion diced
1 tablespoon chillie paste
1-2 tomato diced/chopped
1 carrot shredded diced
1 piece celery stick - sliced thickly
1 cube chicken stock
1 bottle Kimball Traditional spaghetti sauce + 1 bottle water (same bottle) or more
some medium prawns
some squids
1 small can button mushrooms slice
1 tablespoon dried oregano
1 tablespoon dried sweet basil
salt to taste
1/2 teaspoon of sugar
olive oil

* mozzarella cheese shredded sprinkle on top
* cheddar cheese shredded sprinkle on to
* parmesan cheese sprinkle on top
(* I didn't sprinkle any cheese on top as my mom doesn't eat cheese)

Fettucine Alfredo Portobello

Fettucine Alfredo Portobello

FETTUCINE ALFREDO PORTOBELLO

Ingredients :

Fettucine ~ boiled until al dente; drain
Olive oil
3 garlic ~ minced
Mixed vegetable
2 pieces beef burger ~ cut to small chunks
3 pieces beef sausages ~ sliced
1 can Prego Alfredo Portobello Spagetti Sauce
enough water
Salt to taste - if necessary

Method :

1. Heat olive oil and add in minced garlic. Fry till golden brown.
2. Add beef burger chunks and sausages. Fry till cooked.
3. Add in mixed vegetables. Stir for another 1 or 2 minutes.
4. Then pour in the Prego Alfredo Portobello Spagetti Sauce and enough water. Add salt if necessary. Mix well. Let it simmer.
5. Finally add in the boiled pasta.

Sauce

FETTUCINE ALFREDO PORTOBELLO
Bahan-bahan :


Fettucine ~ direbus dan ditapis. Ketepikan
Minyak zaiton
3 ulas bawang putih ~ dicincang halus
Sayuran campuran
2 keping burger daging ~ dipotong dadu kecil
3 batang sosej daging ~ di potong setebal 1/2 sm
1 tin Prego Alfredo Portobello Spagetti Sauce
air secukupnya
garam jika perlu

Kaedah penyediaan :

1. Panaskan minyak zaiton dan masukkan bawang putih yang telah dicincang halus. Tumis hingga kekuningan dan naik bau.
2. Masukkan daging burger dan sosej. Goreng hingga masak.
3. Masukkan sayuran campuran dan kacau selama 1 hingga 2 minit.
4. Tuangkan sos Prego Alfredo Portobello Spagetti. Masukkan air secukupnya dan garam jika perlu. Biar merenih.
5. Masukkan fettucine yang telah direbus dan kacau sebati. Sedia untuk dihidangkan.

Fried Spagetti

I had a confession to make. I had to eat my words! Though it's not that easy to swallow, but I just had to do it. What's done cannot be undone. I registered an account with Facebook under the name MA MAMAFAMI despite being so determined NOT to signup with FB! Ish malunya... nak sorok muka kat mana eh? Eh tapi tak yah sorok pun sebab muka tak pernah terpampang kat sini.... Thanks to Ben Ashaari, Mat Gebu and Ummi!!! But rest assure, we have a solid reason and I just hope that I am taking the right choice........

Fried Spagetti


Fried this spagetti for Syahmi's tuition teacher and his friend a few weeks ago. I had prepared the spagetti according to whatever's available in the fridge that time, hence the few changes from the usual way I prepare fried spagetti.

FRIED SPAGETTI

Ingredients :

Spagetti ~ boiled till al dente
2 pieces fish cake ~ sliced
3 sausages ~ sliced
3 tablespoons chillie paste
5 shallots ~ minced
2 cloves garlic ~ minced
2 tablespoon oyster sauce
1 tablespoon soya sauce
1 tablespoon spagetti bolognaise sauce (I used Kimballs)
salt to taste
sugar to taste
enough water
red, green and yellow capsicums ~ cubed

Method :

1. Heat a bit of cooking oil in a wok. Add in the chillie paste and fry till fragrant. Add in the minced items (garlic and shallots). Fry for another a minute or two.
2. Add in oyster sauce, spagetti sauce and soya sauce. Mix well.
3. Add water, sugar and salt to taste. Put in the fish cakes and sausages.
4. Add in the cubed capsicums.
5. Finally add in the boiled spagetti. Ready to serve.

Gnocchi with Bolognaise Sauce



When Syahmi left with Iddin yesterday morning, and hubby as usual, as early as after Fajr prayers, I thought of lazying around, again! But then, I said to myself, enough is enough... mustn't be a lazy bum or I'll be tired the whole day. That explains the two entries on my blog, in one day!!! It's just out of the norm, for me that is! So, enjoy while it last! Hahaha......Then in the evening, I did some ironing. Oh how good it felt after a long time not doing it. I miss my iron and my ironing board! Did quite a bit and will continue ironing this evening too...

For my lunch yesterday, I tried this Potato Gnocchi recipe from Auntie Umi's Fotopage. Saw this recipe a long time ago, while I was still in Malawi. And only yesterday I managed to try it out. A bit tedious but worth taking the challenge as the taste is lovely if you're into Italian food. Thank you auntie for sharing this recipe with all of us...

Ingredients for Gnocchi :

1 kg potatoes
30 g butter
2 cups plain flour
2 eggs beaten
Parmesan cheese - grated

Method :

1. Peel potatoes and diced. Boil in a covered pot till tender. Drain and mash until smooth.
2. Stir in butter, eggs and flour. Set aside to cool.
3. Turn the cooled dough onto floured surface and divide into two portions.
4. Roll the dough into along sausage shape. Cut to 1/2 inch size dough.
5. Press with the back of a fork to give it the traditional gnocchi pattern.
6. Bring water to boil in a large pot. Add gnocchi and cook till the pieces rise to the surface.
7. Using slotted spoon, drain the gnocchi. Place in the serving bowls.
8. Pour the sauce on top and sprinkle some freshly grated Parmesan Cheese. Enjoy.


Bolognaise Sauce

My Bolognaise Sauce

Olive oil
4 garlics ~ chopped
1 onion ~ diced
4 pieces beef burger ~ thawed and crumbled
2 large tomatoes ~ diced
Kimball Spagetti Sauce
Dried sweet basil
Red, yellow and green capsicum ~ diced
Sugar
Salt

Method :

1. Heat olive oil in a pot. Add chopped garlic and fry till golden brown.
2. Add in diced onion and still till translucent.
3. Add in beef burger and stir till half cooked.
4. Add in diced tomatoes. Stir and put on the pot's lid. Leave to cook.
5. Add in the Kimball Spagetti Sauce, salt, sugar, sweet basil and capsicums.
6. Let the sauce simmer for another 5 minutes, covered.
7. Remove from heat and ready to serve with gnocchi.
