Easy Banana Muffins

T.H.E R.A.M.B.L.I.N.G.S

"When I was clearing my......"

That sentence spells... danger! danger! danger!Hahaha...

If the sentence ends up with "cupboard", then my family members are the chosen victim! It is a normal thing, when you tidy your cupboard once in a blue moon (mine perhaps, blue, green, yellow and all the other colors you could think of!), you tend to find lots of 'treasures'. I will snap the photos and whatsapp it to the Family Group and we will have a good laugh... hahahaha....down memory lane....

BUT....

If that sentence finishes with 'email', that means, there is a big possibility I ended up buying something from the online shops. Though it is not THAT often this situation occurs, but the possibility is still there!

If not with the online shop, then it will definately ends up with me printing or copying something from the net and into the kitchen I go...IF.. I am in mood to do some experiments in the kitchen.

And yesterday, it was not the shopping, but the experimenting that took place... phew... I am so relieved I didn't do any online shopping. It's the waiting for the courier services that actually tense me up! :)

T.H.E R.E.C.I.P.E

As I was saying... When I was clearing my email, I came across email from Allrecipes featuring The 25 New Recipes of 2013. I scrolled down and decided to click on the Easy Banana Muffin. Since I have some over riped bananas in the fridge, I thought, why not try this one out and I think I've made the right decision...

Muffins and muffins

Very clever of me! Two days before leaving for my previous vacation, I had bought a tray of eggs. Not the small tray but the big tray with 30 eggs on it! To finish 30 eggs in 2 days...you've got to be kidding me! Then why buy? The answer is "absentminded"! Can't find any better reason to give. Hahaha...

Anyway, in order not to let the eggs stay freezing cold in the refrigerator, I've decided to bake things out of it and distribute them among my sister, friends and neighbours. And these were what I managed to bake, despite the very short time I had. Only managed to finish packing for our vacation, almost midnight and we were off to the airport the next day by 6.30am. Complaining? Oh no, not at all. When it comes to vacation, MamaFaMi never complaints! Hahahaha....

PANDAN MUFFINS << Please click on the title for the recipe

I didn't realise that I've baked this recipe before. Only when I checked in my blog and compare it with my printout, just before updating this entry, that I know, I've baked it before! Anyway, this time, it's a simpler version, without the toppings. Nevertheless, the taste still remains the same... yummy!

COFFEE BREAKFAST MUFFINS

I am not sure if omitting the raisins will give a big impact to the taste or what but if not, then some adjustments need to be done to this recipe. Since I was running out of time, I just followed the recipe. In future, whoever wishes or taking the challenge to try out this recipe, please adjust the recipe to your taste, especially the sugar part.... trust me, it needed more... ;). Anyway I will just post the recipe here and will keep the source anonymous.

Ingredients :

3 cups self raising flour
1 cup brown sugar
1/2 cup raisins (I omitted)
2 tablespoons nescafe
2 eggs
80g butter, melted
1 1/4 cups milk
2 teaspoons vanilla essence

Method :

1. Preheat oven to 180°C. Prepare the muffin cups and layer with the paper liner.
2. Combine flour, sugar and raisins in large bowl.
3. Whisk together Nescafe and remaining ingredients, pour onto flour mixture, stir until just combined
4. Spoon mixture evenly into muffin tin, almost to the tip and bake for 20-25 minutes until cooked.
5. Cool slightly before removing from pans. Serve with cream cheese if desired.

The other cake that I had baked was a butter cake. That will be updated in my future entries ya. Till then, take care and have a nice day!

Coffee Chocolate Muffin

T.H.E R.A.M.B.L.I.N.G.S

Is it true that it takes 21 days to develop a habit? You can read more about it at  Steven Aitchison's blog.

Well, maybe I had had this 'planted' in my brain ever since someone emailed me an article on this topic quite sometime back, that I really believed it. And when I tried it out, it worked well for me. But in order to do something that you're not so keen of doing for 21 days without fail, is quite a challenge!

What did I do for 21 days and now, still doing it for the past 3 months? .......
Excercise in morning for at least half an hour, doctor's advice! For the first 1 1/2 months, I just walked around the neighbourhood. But now, I cycle every morning. And this morning I broke my record by cycling 3 rounds which is 7.24km for 42.54 minutes with average pace of 5:55min/km and average speed of 10.12km/h. And calories burnt for today is......tha dhaaaa...728.. according to MapMyRun. Yes mama bebeh... aja-aja fighting!!!!

Blueberry Muffins

T.H.E R.A.M.B.L.I.N.G.S

8 days without any updates! Wahhhh, that long! ... showing the award winning shocked face.... lol... I was actually fully occupied.

Last Sunday, we had a bread class at my house, conducted by Mamazieza. Just me and my neighbour Saerah. We had so much fun, mainly because we are the happy go lucky bunch! Hahaha... Thank you Mamazieza for having so much patience with both your students and for all the knowledge that you've passed on to us. All the breads were just lovely. Soft texture and lovely taste. Unfortunately, I won't be able to share the recipe with all of you, in order to respect my sifoo. But worry not, you can always go to Mamazieza's classes. You can either visit her facebook or her her blog for more information.

T.H.E R.E.C.I.P.E

This recipe was introduced to me by my neighbour Saerah. She had given me some lovely warm muffins to taste and I loved it. I had asked for the recipe which she kindly passed on to me. Made half the recipe yesterday. Thank you dear neighbour for sharing and also to Elise for recipe.

BLUEBERRY MUFFINS
Yield: Makes 12-16 muffins
Posted by MamaFaMi
Source : Elise of Simply Recipes

Ingredients :

3 cups of all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
10 tablespoon unsalted butter (1 1/4 stick), softened
1 cup sugar
2 large eggs
1 1/2 cup plain yogurt
1 teaspoon grated lemon peel
1 1/2 cups blueberries
1 tablespoon flour (if using defrosted frozen berries)

Method :

1. Adjust the oven rack to the middle-lower part of the oven. Preheat oven to 375°F.
2. Whisk together the flour, baking powder, baking soda, and salt and set aside.
3. In a large mixing bowl, cream butter and sugar together, beating until fluffy. Add eggs one at a time, beating until incorporated after each one. Beat in the grated lemon peel.
4. Beat in one half of the dry ingredients until just incorporated. Beat in one third of the yogurt. Beat in half of the remaining dry ingredients. Beat in a second third of the yogurt. Beat in the remaining dry ingredients and then the remaining yogurt. Again be careful to beat until just incorporated. Do not over beat. Fold in the berries. If you are using frozen berries, defrost them first, drain the excess liquid, and then coat them in a light dusting of flour.
5. Use standard 12-muffin muffin tins. Coat each muffin cup lightly with olive oil or grapeseed oil using a pastry brush, or with a little butter. Or use one of those convenient vegetable oil sprays. Distribute the muffin dough equally among the cups. Bake until muffins are golden brown, about 25 to 30 minutes. Test with a long toothpick (we use a thin bamboo skewer) to make sure the centers of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin and serve slightly warm.

Coffee Pecan Muffin

T.H.E R.A.M.B.L.I.N.G.S

In case any of you are wondering, why I had been missing from the cyberworld, here are the few excuses reasons that I can think of.

1. Towards the end of the school term, the whole family was not keeping well. Infact Syahmi didn't go to school on the last day of the term because he was down with flu. I had to pump myself with lots of liquid, vitamins and whatever possible suppliments in order to avoid myself from catching the virus.
2. I went for a minor lipoma removal operation at KPJ Selangor last 21st November. Stayed at the hospital for 3 days. Thank you to Dr Askandar, Dr Suraya, all the staffs at the 5th floor and also those at the admin and X-Ray section. Alhamdulillah, at the moment, I am still taking it easy on everything, though many didn't think so! Hahaha...

3. And while being in this situation, I took the opportunity to read as many novels as I can. Some I've managed to upload on my other blog, MamaFaMi's Journey of Life.

COFFEE PECAN MUFFIN

Ingredients :

180g all-purpose flour
195g superfine flour
5 teaspoons baking powder
1/2 teaspoon salt
210g castor sugar

2 large eggs, lightly beaten
300ml milk

3 tablespoons instant coffee powder
130g butter, melted and cooled

200g pecans, toasted and chopped

Method :

1. Preheat oven at 200 degC. Line muffin tray with paper cups.

2. Sift flours, baking powder and salt into a mixing bowl. Add sugar into the flour mixture. Use a whisk to lightly blend the mixture.

3. Dissolve instant coffee powder in milk.

4. In another mixing bowl, combine egg, coffee solution and melted butter.

5. Make a well in the middle of dry ingredients. Add the wet ingredients and mix just until all the flour is moistened. Fold chopped pecans into batter. The batter should look lumpy. Do not overmix.

6. Divide batter into 12 muffin cups. Reduce temperature to 180degC and bake muffins for 25-30 minutes or until well risen.

7. Transfer to wire racks to let cool.

Note :

1. Chewy texture is undesirable in the preparation of muffins. Therefore, only minimum mixing is required to produce tender products. There are two methods in the preparation of muffins, namely the muffin method and the creaming method.

•The muffin method - Dry ingredients and wet ingredients are prepared separately in two mixing bowls. They are then mixed until the dry ingredients are just moistened by the wet ones. This method is easier and faster than the creaming method. However, there is a tendency of overmixing the batter which results in tough texture.

•The creaming method - Fat, sugar and salt are creamed until light and fluffy. Eggs are than added, one at a time. Add liquids and finally fold in flour and baking powder. Mix until just smooth. Although this method is time consuming, possibility of overmixing is actually low.

2. Basic baker's percentage of muffins:

•Flour 100%
•Sugar 60%
•Baking powder 6%
•Salt 1.25%
•Egg 20%
•Milk 80%
•Fat 30%

Strawberry Muffins

T.H.E R.A.M.B.L.I.N.G.S

I am not a good driver. But I am not a bad one either. I do think of others whenever I am driving. I don't think I am THAT selfish. I think I have courtesy when I am behind the wheels.

Yesterday I experienced three situations that really makes me wonder how inconsiderate a person can be! The first incident, hubby was driving. We were about to cross the road (from the third lane) to take the first lane when this one Kancil just drove past us and stopped which makes us stuck in the middle of the second lane. There was enough space for him to move further infront so that we can at least not block the second lane, but did he care? Nope... he didn't move an inch till the traffic lights turned green! As we were about to move, another car behind, a lady driver just hooted at us and shook her head and maybe swearing at us. Very 'sweet' of her to give us that gesture where else we didn't do it on purpose.

And at night, when I went to fetch Syahmi from his tuition, I was struggling to reverse the car out of the car park, just because someone, a lady again, simply parked her car just across my car and not in the proper parking lot. She was in the car. I had to move forward and reverse the car, I think more than 4 times, and did she move her car? Nope! She just sat in her driver's seat and look. Well, I think, it must be very entertaining to see other people struggling! Luckily I was driving Fatin's car, a Myvi. And that also took me 4 times. If I were driving my car, I think, I will just park the car back at it's place and wait for the Majesty to move her car!! Haishhh..... sabar mama sabar, bulan puasa ni... rasa macam nak makan orang je ni .... Astaghafirullahalazim.... sabor sabor....

Chocolate Muffins

N.O.T.E

My sincere apologies for not being able to keep my promise in my previous entry. Didn't manage to post a new recipe nor update my blog yesterday as hubby and Syahmi were not feeling well and I had to run some errands. I was in and out of the house throughout the day. Sorry!

T.H.E R.A.M.B.L.I.N.G.S

I admit... without a doubt... I am a jealous person. Halt... now now... don't get me wrong. I am not a jealous wife but I am jealous to all the individuals whom are so talented, no matter in whatever area (the good ones only ya). Whenever I go blogwalking, especially the food blogs, I always ended up with lots of 'Oohs' and 'Aahs'. I envy all the lovely photos that most of the bloggers 'served' in their blogs. I always wonder why my photos can't be like theirs. Why my food presentation can't be as superb as theirs no matter how hard I've tried.

Finally, I said to myself, I am me and I am not them. Maybe I need more time to improve and be as good as them but as of now, I must be happy with what I am doing, then only will I feel the satifaction, the happiness and the sincerity. Thats all that counts....

Apple Muffins

T.H.E R.A.M.B.L.I.N.G.S

Hello everyone! I'm back! But still, can't write much because I am chatting with my close friend, Angelin in Toronto via skype. And being in a tired mode, my brain cannot just split into 2. I just can't think 2 things at a time... age is catching up on me huh? Haha...

Anyway, let me just skip the ramblings for today and go straight to the recipe to share okay...

T.H.E R.E.C.I.P.E

I was cleaning the fridge and came across some green apples. Er.. by the way, my fridge can 'breathe' at ease now since I've cleared most of the 'congested' areas! Hahaha...

So I flipped through one of the books in my collection to see how I can 'dispose' the apples in a good way and at the same time enjoying it! I managed to give some to Saerah, Sherina and Ustazah Rohani. The feedback that I got, some said nice, some said ok and if you asked me, well, I'll say it's ok ok la......

Anyway, let me just share the simple to prepare recipe and you judge yourself...

T.H.E R.A.M.B.L.I.N.G.S

Mode : In my own dreamland........
Imagine... having a house.... not too big... not too small.... but justtttt nice.. and a cosy one too... preferably the cottage style... on top of a hill, surrounded by nature, still green, full of fresh air and of course lovely scenery...

In the evenings... sitting outside with dear hubby, sipping a cup of tea with goreng pisang panas and enjoying the breeze and the sound of nature... mmm .. heaven on earth.......

Took this recipe from Izahdaut's blog after I can no longer bear to see her lovely looking muffins. When I was baking these muffins, I was actually hoping to get something similar to Izah's muffins but I guess I failed. Anyway, Izah had kindly passed me some tips which Nor Secubit Garam taught her. Maybe in my next experiment, I'll try to follow those tips. Thanks to all for sharing this recipe.
