News up to date : Still working on my blood pressure reading, which I can say, not much improvement since that day. Plus so many things happened, that contributes to my failure in achieving a better reading. I am still trying and struggling at the same time.

What I've tried so far :

1. celery + green apples
2. Tamarind skin with hot water
4. A few suppliments
5. Reduce sodium intake (actually I don't use much salt in my cookings)
6. Kiwi

I think the best thing to do right now is not to think too much.... but will I be able to? Aja aja fighting mama!!!

SWEET BUN RAISINS

Ingredients :

1 egg *
2 tablespoon milk powder *
250 ml iced water * (egg + milk powder + iced water = 300ml)
50g sugar
1 1/2 teaspoon salt
300g high protein flour
200g all purpose flour
2 teaspoon instant dried yeast
2 tablespoon margarine

Enough raisins

Glazing :
1 teaspoon milk powder
2 teaspoons water


Bread Maker method :

1. Into the breadmaker pan, add in mixture of water, milk powder and egg. Add in sugar and salt.
2. Top it with high protein flour, all purpose flour, instant dried yeast and raisins.
3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine. Leave the bread maker to finish the cycle which will takes about 1 1/2 hour or so.
4. Remove the dough from the pan and divide the dough into 20 equal portions. Roughly about 50g each.
5. Form each portion into a ball. Arrange the rolls on a greased baking tray and leave to prove till double the size.
6. Brush the proved rolls with milk.
7. Bake in a pre-heated oven at 180c for 25 minutes or till golden brown.
8. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

Chocolate Chiffon Cake

I am stranded in my own world. Not by choice though. Had not been blogwalking and had not been visiting my own blog! Thanks to the not -so-good internet connection in my room. Hubby had moved the Unifi box to the hall upstairs. It used to be in my computer room before but he moved it there so that my mom's room will have better signal for the Unifi TV.

Besides that, I am not in my best state of health. My blood pressure reading is quite high, especially the Systolic reading. I am starting to worry now. If you have any traditional remedy that I can try, I will be so grateful if you could share it with me. Thank you...

For this entry, I will share with you this Chiffon Cake. A recipe passed down to me by my aunt via her son, Yed. Thank you Yed for the recipe. And since this is quite an antique recipe, it had used this Softasilk Flour. I was pretty excited when I managed to get a box at Jaya Grocer, The Empire Subang Jaya but for a price to pay. As long as I managed to get one box, I am a one happy lady :)


CHOCOLATE CHIFFON CAKE

Ingredients A:

8 oz softasilk flour
6 oz castor sugar
4 oz corn oil
3 teaspoons baking powder
1/2 teaspoon cream of tartar
2 teaspoons vanilla essence
1/2 teaspoon salt
1 oz cocoa powder mixed with 5 oz warm water to form paste
7 egg yolks

Method :

1. Mix well all the ingredients except egg yolks.
2. Lastly add in the egg yolks and stir well.

Ingredients B:

7 egg whites
6 oz castor sugar


Method :

1. Beat egg whites in mixer on high speed until stiff peak. It should not fall out when you turn the mixing bowl over.
2. Add in sugar, a little at a time and continue beating till the mixture thickens and light.
3. Scoop 1/2 the egg whites into the ingredients A. Fold lightly. Add the rest of the egg whites and keep folding till all the mixture is well combined.
4. Pour into the chiffon cake tin and bake for 40 to 45 minutes.
5. Remove from the oven and turn the tin upside down. Leave to cool completely before removing the cake from the tin using a sharp knife. Slice and serve.

Blueberry Muffins

8 days without any updates! Wahhhh, that long! ... showing the award winning shocked face.... lol... I was actually fully occupied.

Last Sunday, we had a bread class at my house, conducted by Mamazieza. Just me and my neighbour Saerah. We had so much fun, mainly because we are the happy go lucky bunch! Hahaha... Thank you Mamazieza for having so much patience with both your students and for all the knowledge that you've passed on to us. All the breads were just lovely. Soft texture and lovely taste. Unfortunately, I won't be able to share the recipe with all of you, in order to respect my sifoo. But worry not, you can always go to Mamazieza's classes. This recipe was introduced to me by my neighbour Saerah. She had given me some lovely warm muffins to taste and I loved it. I had asked for the recipe which she kindly passed on to me. Made half the recipe yesterday. Thank you dear neighbour for sharing and also to Elise for recipe.


BLUEBERRY MUFFINS
Yield: Makes 12-16 muffins

Ingredients :

3 cups of all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
10 tablespoon unsalted butter (1 1/4 stick), softened
1 cup sugar
2 large eggs
1 1/2 cup plain yogurt
1 teaspoon grated lemon peel
1 1/2 cups blueberries
1 tablespoon flour (if using defrosted frozen berries)


Method :

1. Adjust the oven rack to the middle-lower part of the oven. Preheat oven to 375°F.
2. Whisk together the flour, baking powder, baking soda, and salt and set aside.
3. In a large mixing bowl, cream butter and sugar together, beating until fluffy. Add eggs one at a time, beating until incorporated after each one. Beat in the grated lemon peel.
4. Beat in one half of the dry ingredients until just incorporated. Beat in one third of the yogurt. Beat in half of the remaining dry ingredients. Beat in a second third of the yogurt. Beat in the remaining dry ingredients and then the remaining yogurt. Again be careful to beat until just incorporated. Do not over beat. Fold in the berries. If you are using frozen berries, defrost them first, drain the excess liquid, and then coat them in a light dusting of flour.
5. Use standard 12-muffin muffin tins. Coat each muffin cup lightly with olive oil or grapeseed oil using a pastry brush, or with a little butter. Or use one of those convenient vegetable oil sprays. Distribute the muffin dough equally among the cups. Bake until muffins are golden brown, about 25 to 30 minutes. Test with a long toothpick (we use a thin bamboo skewer) to make sure the centers of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin and serve slightly warm.

Daripada tak de....

Semalam, telah berlangsung operasi 'spring clean' di dapur mama. Tu dia eh... clear almari makanan kat dapur. Sorry to say, ada juga yang go to waste sebab tak perasan benda tu terperesok kat belakang. Ada tu expired tahun 2009! Ish mama... tak senonoh betul kan?! Sekarang ni, dah susun elok-elok sikit, dah bolehlah nampak apa yang disumbat disimpan di dalam almari. Malam tadi, lepas selesai semua kerja, mama pun duduklah menulis senarai barang yang perlu dibeli untuk menyemakkan balik stok dalam almari.

Pagi tadi, pergi ke Mydin bertemankan Kak Ana. Alhamdulillah rasanya segala hampir semua keperluan mencukupi. Kalau boleh, tak mahu pergi kedai lagi, boleh? Huhuhu... kalaulah boleh... alangkah kayanya! bahagia! Hehehe...

Sampai rumah dah pukul 12.30 tengahari. Alhamdulillah sempat juga memasak sebab anak bujang dah beritahu apa dia nak makan. Jadinya, mama tak payah nak termenung pikir panjang menu apa nak dimasak...


Setiap kali masak kari, mesti teringat kat Ummi Kuantan. Manalah Ummi ni tak update update blog dia? Harap Ummi sihat-sihat je hendaknya...


Petang pulak, bila suami balik pejabat, masakkan menu dia pulak. Dia koreng sikit tang ayam ni...



Malam ni tadi, mama makan 2 keping roti bakar dengan satu mug hot chocolate yang dicampur dengan oats. Cayaaalah mama... boleh telan rupanya benda macam tu... satu pembaharuan! Chaiyok chaiyok mama.....

Hmmmmm bila pulak nak operasi 'spring clean' almari pinggan mangkuk dan containers ni. Adoi letihlah...

Kuey Teow Soup


KUEY TEOW SOUP

Ingredients :

Kuey teow (flat rice noodles) - washed, rinsed and keep aside
1 onion - sliced
3 garlic cloves - chopped
1/2 inch fresh ginger - julienned
Topside beef - sliced thinly
celery - chopped
enough water
salt to taste
blackpepper
1 teaspoon Maggi Secukup Rasa
a few dashes of fish sauce
Carrot - julienned
Kai Choy (sawi) or any vegetables of your choice
eggs
oil for cooking

To garnish :

crispy fried onion
spring onion
fresh red chillie

Method :

1. In a saucepan, heat some cooking oil. Add in the sliced onion, chopped garlic and fresh ginger. Stir till soft.
2. Add in the sliced beef and cook till tender.
3. Pour in enough water. Add in carrots.
4. When the carrots is slightly soft, add in celery.
5. Add salt to taste, blackpepper, fish sauce and Maggi Secukup Rasa granules. Let it oil.
6. Crack the eggs slowly into the soup and let it cooked.
7. Add in kai choy and last but not least the kuey teow
8. Dish the kuey teow soup in a bowl. Garnish with crispy fried onion, spring onion and fresh red chillie.
9. Serve immediately.

Mengapa dikau kerepot??
Walaupun rasamu sedap... rupamu itu...mengerikan...


Siapa boleh tolong ajar mama cemana nak dapat kuih pau yang tak kerepot cam ni? Shian mama tau... nak kata kuih ni ngikut tukang buatnya... rasanya mama ni baru kerepot tahap 1... belumlah tahap 4 macam ni... huwaaa....

Jom CSI...
...adakah kerana....
1. Mama tambah shortening kepada resepi asal yang tak ada shortening?
2. Adakah kerana mama menggunakan air sejuk untuk menguli doh?
3. Adakah amaun air yang mama masukkan terlebih?
4. Adakah doh mama terlebih naik?
5. Adakah mama terlebih masa kukus? Masa yang diberi oleh resepi adalah 10 hingga 15 minit, api besar. Mama kukus 15 minit.... salah juga ke?

Nak kata tak pernah buat pau, mama pernah buat pau dah banyak kali. Tak percaya, cuba tengok sinisinisinisinisinisini dan sini. Berapa banyak siiiiiniiii daaaaa.....

Betik (Papaya) Masak Bening

This morning, I thought of going back to sleep after Fajr prayers but then Mr Hubby requested for fried rice. Since he is not well, still recovering from his viral flu, I don't have the heart to say no. Furthermore, he lost his appetite these couple of days and I am totally not happy with that. How can I not be, he just ate a few spoonfuls of my food! All the time and effort is like... wasted. Can't wait for him to be his old self again!

For lunch I just cooked porridge for him and for my son and me, just sardine and this Betik Masak Bening. Cooked this papaya dish two days in a row because I just love it. Thank you Mat for sharing this easy yet delicious dish.

BETIK (papaya) MASAK BENING

Ingredients :

1/2 unripe medium sized papaya
1/2 onion
2 garlic cloves
1 tablespoon dried anchovies
1/2 anchovy cube (I used Maggi brand)
1 piece turmeric leaf
enough water
salt to taste
sugar to taste (I omit this)
enough black pepper

Method :

1. Clean the papaya, quartered and slice to 1/4 inch thick. Set aside.
2. In a pot, add in sliced onion, bruised garlic, dried anchovies, anchovy cube, turmeric leaf and enough water. Bring to boil.
3. Add in papaya, salt, sugar and black pepper to taste.
4. Remove from heat, once the papaya is tender. Enjoy!

Surpriseeeee!!!

I had the intention to update my blog much earlier. I was thinking of 4.30 pm but time was not on my side today. I had been busy the whole morning... and afternoon too. Hmm infact, till late evening after my last shift as a driver at 10.30 pm. To make a long story short, I was busy the whole day today as I've told Kjee, I will be 'flying' in the kitchen. And my mom as usual, stayed away from my danger zone to avoid any brutal collision! InsyaAllah, I will post whatever I've made today in my coming entries. 


Seen these somewhere before? Hmmm think hard.... where did you see these? Anyway, I am so happy that these are mine!!! Thank you so much Kjee for the lovely present though it's not my birthday just yet. I'll make use of it the best possible way, insyaAllah. Mmmm... macam nak buat pizza je esok... ahaks... tetiber je... Mat, you follow??? 

When I called Kjee to let her know that I've received her gift, she was on her way to class. And she sounded so busy. At that moment, I was thinking to myself... do I sound this way each time somebody called me for I am forever busy... hahaha... now I know the feeling! 


Later in the evening, I received these lovely and yummy egg tarts from my dearest neighbour, Saerah.

Kuih Lopes II

Ask me why I don't like to bloghop that much nowadays. I'll tell you why! I tend to get carried away and waste so much of my time, where else my list-to-do everyday is not getting shorter!

Firstly I'll say to myself, well, let's just have a peek here... and while 'peeking', the eyes got diverted to the sidebars... and oh... this looks good, why not peek there too, just for a tiny second... and the 'oh this looks good...that looks good' will carry on and on and on... and the last thing I know... 2 to 3 hours wasted! It's not a total waste actually, because along the way, I will start 'copy and paste'-ing the recipe and print them out. But will there be anything from the kitchen? HARDLY! Hahaha... What's left... bundles and bundles of printed out recipes! Mama ohhhh mama!!!

Today I am sharing with you another version of Kuih Lopes. According to my mom, this tasted more like the traditional Kuih Lopes. I think the coconut milk makes the difference in taste. For the Lopes part, I had followed Ummi Zaihadi's recipe with slight changes too, to suit my laziness! Hahaha... Thank you so much Ummi for the recipe... muaahhh...


KUIH LOPES II

Adapted from : Ummi Kuantan

Ingredients :

3 cups glutinous rice
** screwpine leaves juice (10 pieces screwpine leaves blended with 2 cups of water)
pinch of salt
freshly grated coconut + a bit of salt - mix together and steam for 3 minutes

** Note : I am just too lazy to blend the screwpine leaves. Instead, I mix 2 cups of water with a few drops of green food coloring and pandan essence. Simple though not that original! Hahaha.... 

Palm Sugar Syrup :

1 block pure palm sugar
1 piece screwpine leaf - knotted
enough water

Method :

1. Wash the rice and rinse. Soak the rice with water, green food coloring and lime water for 3 hours.
2. After 3 hours, put the soaked rice through the strainer. Pour the rice into a tray together with the pandan juice. Steam for 30 minutes or till the rice is shiny.
3. I had used the egg ring and the base of my measuring cup to shape the lopes. Place a piece of plastic under the egg ring. Spoon enough rice into the ring. Cover with plastic and press using the botton of the measuring cup or you can use the bottle cover, whichever convenient.
4. Remove from the ring and coat the shaped rice with freshly grated coconut.
5. Place the lopes on a plate and top with Palm Sugar Syrup. Enjoy!

Method for Palm Sugar Syrup :

Combine palm sugar (jaggery),  screwpine leaf and water in a pot and boil over moderate heat until sugar dissolves. Strain.

Lauk transformasi????

Kerja rumah belum selesai, tapi rasa macam nak upload gambar yang tak berapa cantik di mata orang tapi cantik di mata mama... ahahaha.. apalah poyo bebenor bunyinya... Ini lauk yang dikitar semula dari lauk semalam. Ayam goreng tu ditransformasikan menjadi Ayam Masak Kicap. Sambal ikan bilis ada lagi... gandingkan aje bersama dengan sayur kobis. Alhamdulillah syukur....

Sorrylah ye Watie, hari ni tak ada sambal udang... hehehe....
