Pau (Sis Jun)

Ingredients :

1 kg Hong Kong flour
8g yeast
18g baking powder
100g sugar
30g shortening
10g bread improver
2 teaspoons ovalette
500g lukewarm water

Filling : (Of your choice/liking)

Red bean
Currypuff filling

Method :

1. Sift flour and baking powder in a mixing bowl. Add in yeast, sugar, bread improver and ovalette. On the mixer.
2. Pour lukewarm water a bit at a time until just mixed.
3. Add in the shortening and continue kneading till a soft and smooth dough is formed. Add more water if needed.
4. Make into small balls and leave to prove till double the size.
5. Flatten the doh and place the filling in the middle. Cover the filling with dough.
6. Place on a piece of paper and arrange them on the steamer. Let them prove till double the size.
7. Steam in the prepared steamer for 15 minutes on high heat. Once done, do not open the steamer's lid for at least 10 minutes.
