Simply Delicious Red Bean Buns

What will your response be when your daughter said....
"Ish ish ish... kenapaaaaalah sedap sangat roti mama ni?"
Translation : My goodness, why is mama's buns so delicious?

Mine was....
"Sebab mama memang pandai buat roti".
Translation : Because mama is clever at baking bread.

Now now.... think positive ya... I am not boasting here, but take it as I am being confident. Hahaha.... If you know me well, I will only boast to my family and not to others. Because in my family, I think I am among those who can bake quite well. But in public, I am still an amateur, with a long way to go.

I didn't cook today. I was out of the house by 9.15 am and was only back home just before noon. So I had 'cooked' these in two different 'kitchens'.

I baked these simply delicious buns on the night of the Earth Hour day. Was in a hurry to go out, I didn't manage to snap more photos. So we'll have to make do with just these two photos ya. But what I can say, the name of the buns that I had given, explains the taste! Thank you again and again Ixora II.

SIMPLY DELICIOUS RED BEAN BUNS

Ingredients :

150-200ml water
2 nos eggs
90g castor sugar
1/2 teaspoon salt
1 tablespoon dough softener
500g high protein flour
4 tablespoons milk powder
1 tablespoon bread improver
11g instant dried yeast
3 tablespoons margarine
enough red bean paste
sesame seeds

Method :

1. Pour water, egg, sugar, salt and dough softener into the bread maker pan. Top it with flour, milk powder, bread improver and yeast.
2. Set the breadmaker to Dough function.
3. Once the dough is just combined, add in margarine. Leave the Breadmaker to continue doing it's job. This process will take about 1 1/2 hour including prooving.
4. Divide the dough into 20 equal portions. Form each dough into a ball and rest for 10 minutes.
5. Flatten the dough and place the red bean filling in the middle and wrap the filling with the dough. Arrange on a baking tray.
6. Cover the buns and let it rise until double in size (it takes another 30-40 min). Brush the buns with some egg wash and sprinkle with some sesame seeds..
7. Bake in a pre-heated oven at 180 C for 20 - 25 minutes or until golden brown.
8. Once out of the oven, brush with a bit of margarine. Place on a wire rack to cool. Keep in an airtight container.

HAPPY BIRTHDAY DEAREST FATIN

18 years ago... on this date, at around 9 am, hubby drove me to The Straits Hospital in Malacca. It was during Eid-Ul-Fitr. I am due to give birth to our first child. Yes, I had the privilage to choose the date as my girl was a week over due! The doctor asked us to choose a date and I chose 30th March. What's with 30th March? It is my best friend's birthday. She's my best friend when we were together in Form One till Form Three.

Alhamdulillah syukur, I had quite an easy delivery. The process didn't take long, to the doctor's surprise! I went in the labour room at 10.30 am and was out by 2 pm, with a healthy, chubby baby. Alhamdulillah.... I am very sure she is my child because she's the only rose among the many thorns in the baby's room! Ahaks...

Pucuk Pegaga Udang

PUCUK PEGAGA UDANG
Disediakan oleh : MamaFaMi
Sumber : Majalah Saji Oktober, 2010

Bahan-bahan :

1/2 cawan santan kelapa
1/2 cawan udang sedang
1 ikat pucuk pegaga
2 keping asam gelugur

Bahan tumbuk :

4 sm kunyit hidup
10 tangkai cili api

Kaedah penyediaan :

1. Masukkan santan dan udang ke dalam periuk. Masak hingga mendidih. (Nota : Mama hanya didihkan santan dan hanya masukkan udang kemudian sebab tak mahu udang kecut)
2. Kemudian masukkan bahan yang telah ditumbuk dan kacau kuah sehingga agak pekat.
3. Selepas itu, masukkan asam gelugur dan pucuk pegaga.
4. Akhir sekali, masukkan garam secukup rasa.

I've always love challenges dan kalau boleh, mesti nak menang. Siapa yang tak nak menang, ye tak? Mama akan berusaha sehabis daya untuk menang atau untuk mencapai target mama. Ada kalanya, benda-benda tu semualah yang menambahkan kepenatan mama ni. Tapi nak buat macam mana kan... dah hobi. Macamlah gosok baju gak... memenatkan, tapi sebab dah hobi...ku redah jua... ahaks...

A few days ago, I came across this contest at Topsy Turvy Mum's Blogspot. I said to myself, I'm gonna try win myself that 24 Cupcakes Caddy. Actually I am determined to win that thing. It just sounded so tempting. I don't want to buy because I think my house is full of stuffs, infact hoping to get rid of some, just to make some space...nope... not for new stuffs but just to leave it empty... lapang sket mata memandang... haha.... But then, if I can just win it, then why not. Jadi mama pun memulakanlah misi melawat TTM. Saban hari melawat... oo nombornya jauh lagi. Sekali tu, pagi tadi bila masuk, tengok dah dekat ya amat ke nombor 265,000. Wah, semangat mama pun makin berkobar-kobar. Sambil makan potato bun cicah teh tarik, mama pun tekan lagi. Ate, TTM tulis situ TEKAN DAN MENANG bukan CLICK DAN MENANG, so mama kenalah TEKAN dan bukan click... hahaha...just joking. Okay... habis 2/3 bungkus mama makan bun sambil menekan... nombor yang keluar 264998...fuh suspen giler..... dengan berdebar-debar dan lafaz بِسْــــــــــــــــــمِ اﷲِالرَّحْمَنِ اارَّحِيم mama pun TEKAN lagi.... sekali keluar........

265002!!!!

Huwaaaaaa makan haaaaatiiiiiii!!!!! Rasa nak meraung ala ala Tarzan je! Tapi sib baik sedar diri cepat... kita kena percaya pada qada dan qadar dan rezeki dari Allah....

Tak pe tak pe, mama pujuk hati, we'll go for the next number sebab TTM telah bermurah hati buat 2 give aways sekali gus. Kali ini, nombor 265265. This time tak main-main lagi. Memang monitor nombor tu. Sekali tu, bila keluar 265264, mama dah putus harap. Mana mungkin mama dapat 265265 sebab mama tahu ramai kat luar nun, yang dok menekan. Tapi ma terus gak tekan... sekali keluar yang ini.......


YABEDABEDOOOO!!!! ALHAMDULILLAH... tak sia sia menekan! Hahaha....

But then, bila mama check kat shoutbox TTM, erkkk...ramai ler pulak dok yahoo bagai, kata diorang dapat nombor 265265.... uiks, tak leh jadi ni... mama pun terus Print Screen dan hantar email kat TTM. Lepas send email tu, mama dok termenung seketika... muhasabah diri kot... Bila mama tengok kat hadiah yang bakal diterima kalau ditakdirkan terpilih, hadiah Stanley Rogers 4 Piece Silicone Bakeware Set... I said to myself. Why must I be so greedy. I have some silicone bakewares already. Though it's not Stanley Rogers, but they are still silicone bakewares. Rather than terima hadiah tu dan kemudian disimpan tanpa digunakan, baiklah mama forgo my chances of winning. Biarlah mama beri laluan kepada yang lain untuk menang hadiah tersebut. And I think, I've made the right decision. I am happy enough to win my own challenge that is to get the targeted number....

Moral of the story : MamaFaMi hanya suka menang je... tak de hadiah pun tak apa... hahaha!

Tapi kan, kemenangan-kemenangan sebelum ni, semua hadiah mama dapat ye... Mengimbau kembali kenangan lalu... mama pernah menang contest yang dianjurkan oleh :

Kek Alunan Kasih

Alhamdulillah... we meet again today. How was your weekend? Mine was busy..

Firstly thank you to Aza for the order. I do hope you're happy with the cupcakes and enjoyed the brownies. It's my pleasure to prepare all of them for you.



Hubby's nephew came by our place and I had served him these puffs (with curry puff filling), together with the cake which I will post the recipe later on.


Last Saturday was Earth Hour day. So, did you off the lights in your homes? I did...but not 100% of the house's lights. Mom refused to switch off the lights and TV in her room. Hahahaha....

I came across this recipe a couple of times at a few blogs when I was bloghopping. Sounds challenging.. So I decided to give it a try yesterday. Made half the recipe. Thank you to Puan Mastura Yasak, Ummi and Am-Flora for sharing the recipe and also the tips. Allow me to re-post it here for others to view. Thank you.


KEK ALUNAN KASIH

Ingredients :

1 1/2 cups (250g) margarine or butter
2 cups castor sugar (I took out about 2 tablespoons)
5 nos eggs
1/2 teaspoon vanilla essence
1/2 teaspoon rose essence (I added)
1/.2 cup evaporated milk
2 1/2 cups flour
1 teaspoon baking powder
enough cocoa powder for dusting
food coloring, of your choice

Method :

1. Cream margarine/butter with sugar.
2. Add eggs, one at a time and beat till light.
3. Add essence and evaporated milk. Mix well.
4. Fold in flour and baking powder. Divide the mixture into 3 equal portions.
5. Add a bit of coloring into each portion.. Stir to mix.
6. Pour the first mixutre into the prepared tray. Level it.
7. Dust some cocoa powder on top of the layer.
8. Pour the second mixture evenly on top of the cocoa layer. Dust with cocoa powder and finally pour evenly the third mixture.
9. Bake in a preheated oven at 180 c for 40 to 45 minutes.


KEK ALUNAN KASIH
Resepi : Puan Mastura Yasak (Kongsi Resepi FB)
Sumber: Am-Flora

Bahan:-
(bagi 1/2 adunan, akak guna loyang 3 1/2 x 8 in)

5 Biji Telur
1 ½ cwn (250 gm) planta atau butter
2 ½ cwn tepung gandum *
1 sudu kecil baking powder (*diayak bersama)
2 cwn gula halus (boleh kurangkan)
½ cwn susu cair (utk separuh kek, akak letak +- 1/2 cwn jgk)
1 sudu kecil esen vanila
*Serbuk koko (secukupnya)
*Pewarna ( citarasa masing-masing)

Cara-Cara:

Pukul planta dan gula smpai kembang.
Masukan telur satu persatu, pukul lagi sampai kembang
Masukan *esen vanilla, susu cair, gaul hingga sebati dan masukan tepung sedikit demi sedikit.
Bahagikan dua bahagian, campurkan pewarna pink dan satu bahagian pewarna hijau (*akak letak 3 kaler, biru, oren dan pink)

Griskan loyang dan tabur sikit tepung..masukkan adunan biru, ratakan dlm loyang dan ayak serbuk koko menutupi lapisan biru tersebut - ayak nipis-nipis jer.

Kemudian masukkan adunan lapisan oren dan ratakan, ayak lagi serbuk koko dan seterusnya tuangkan lapisan pink dan ratakan perlahan-lahan. (jangan sampai serbuk koko di lapisan-lapisan tadi terangkat).
Bakar lebih kurang 45min. pada suhu 160 Degree ikut oven masing-masing (untuk separuh adunan akak bakar 35 minit sahaja)

Nota Am-flora :

Utk membuat lapisan kaler2 tu biar tebal sbb bila kita melapis & meratkan adunan tersebut serbuk koko tak akan terikut sama. Tapi bila adunan yg nak kita lapiskan itu agak nipis/sikit bila nak meratakan lapisan tu, serbuk koko akak tertarik sama - nanti corak tak akan jadi cantik.

Stuffed Tofu

Jumaa Mubaraq to everyone..

When I woke up this morning to the sound of my handphone's alarm, I felt slightly wobbly. Oh oh.. that's not a good sign. I had a restless night actually. It was so warm and I can't on the air-condition nor the fan because as much as possible, hubby had to avoid those two or he'll start sneezing. When I can't take the heat any longer, at 2.45am, I went to Syahmi's room and slept there. After sometime, I went back to my room. So I think, that contributes to the wobbly me this morning. But the best part is, no matter how many times I woke up during the night, when my head touches the pillow, I will doze off instantly. Lucky me huh!

I can't afford to be sick today. I have cupcakes to bake and to ice. I have brownies to prepare. Fatin's documents to get photocopied, house to sweep, clothes to wash, lunch to cook... bla bla bla...endless... Hopefully, in the middle of doing all the chores, I'll forget totally that I woke up feeling wobbly! All the best mama...chaiyok....

For yesterday's lunch, since I've just fried rice for my mom, I thought it'd be nice to serve it with something else. And just my luck, I came across this tofu recipe from Dayang Jack's Blogspot. Thank you Dayang for sharing this nice recipe with us. My mom likes it. Allow me to post it here for the reading pleasure of my visitors and also for my future reference. Thank you....

STUFFED TOFU

Ingredients :

2 pieces tofu - rub with a bit of salt
4 medium prawns - boiled for a few minutes and peel off the shell
1/2 onion - diced
1 inch carrot - julienned
1/2 teaspoons ground blackpepper
1/2 fresh red chillie - chopped
2 pieces (?) spring onion
1 teaspoon pepper
salt to taste
1 egg - lightly beaten


Method :

1. Boil the prawns for a few minutes. Peel off the shell and diced.
2. Fry the tofu till golden brown. Cut into half and 'dig' out the tofu meat. Keep aside.
3. Mash the tofu meat and add the prawns, diced onion, julienned carrot, red chillie, spring onion, black pepper and salt to taste. Mix well.
4. Stuffed the tofu shells with the filling.
5. Heat enough oil.
6. Beat the egg with pepper. Dip the stuffed tofu into the egg and fry till done.
7. Remove from heat onto a kitchen towel. Serve with chillie sauce.

Assorted Buns Ixora II

What would be your answer when your child asked you this question...
"Mom, if I have a child later on, and if I am not happy with her exam result, must I just tell her the truth?"

I was asked the same question by my daughter yesterday. Alhamdulillah she got through all her subjects but she wasn't happy with her result. Frankly speaking, I did not put too high hopes knowing that she's really struggling with her Bahasa Malaysia and half of the subjects that she had to sit for SPM are in Bahasa Malaysia. Nevertheless she made it through, alhamdulillah...

I just told her what is done can't be undone. There is no point regretting. Now don't look back but look forward for a brighter future. Strive harder and you'll taste the sweetness of victory. All the best my child....

Back to the question asked.... what will be your answer?

When I looked at Ixora II's parade of buns, I just can't resist to try out the LOVELY recipe. Her buns looked soooooo soft...dengan kedut-kedut yang jelas kelihatan... that I feel like pinching them! Haha.. Sorry Ixora for being so brutal! Haha... And thank you for sharing the recipe with us. Allow me to re-post the recipe here. Thank you...


ASSORTED BUNS IXORA II

Ingredients :

500g high protein flour
90g castor sugar
4 tablespoons milk powder
1/2 teaspoon salt
1 tablespoon bread improver
1 tablespoon dough softener
11g instant dried yeast
2 nos eggs
3 tablespoons butter
150-200ml water
1tablespoon gluten/ wheat gluten (I didn't put)
enough cocktail sausages

Method :

1. Place all ingredients except water and cocktail sausages in the mixer bowl and mix well.
2. On the mixer with the dough hooks on and pour water, little at a time till you get a soft dough. Knead for at least 20 minutes. The longer the better.
3. When the dough is smooth, remove from the bowl and divide into 25g each. Make into small balls and let it rest for 10 minutes.
4. Roll each ball into a strip and wrap around the sausage. Arrange on a floured baking tray.
5. Sprinkle with a bit of water and wrap the tray with a clean plastic bag to proof.
6. When the buns are double the size, egg wash and sprinkle with a bit of sesame seed.
7. Bake in a preheated oven at 180 C for 25 minutes.
8. Once out of the oven, brush with a bit of margarine for a shiny look.
9. Once cooled, keep in an airtight container.

Note : As usual, I used my darling Breadmaker to do the job for me!

Strawberry Cream Cheese Butter Cake

Yesterday evening, when I was typing the previous entry Wakaf Al-Quran, I was about to click on the PUBLISH button when my doorbell rang. It was Tini, my dear neighbour, Saerah's helper. She came to give me these...


...thank you Tini for being the delivery girl and thanks to Saerah for remembering me...

All I could utter when I looked at the container was MASYAALLAH. ALLAH is just great. I had not yet done the good deed (promoting the Wakaf Al-Quran's blog), but HE had rewarded me! Thank you ALLAH.

I visited Jun's Blog yesterday afternoon and saw her Blueberry Cream Cheese Butter Cake. Looks yummy to my eyes. I have all the ingredients except the blueberries. Asked the kids to accompany me to Giant to get some, but no one is willing to accompany mama and that made mama just too lazy to go as well. But since I just feel like trying out the recipe, I just used up whatever's available at home. Wallah, I found some frozen strawberries in my freezer. Pity pity strawberries..all frozed up! Let me just warm you up! Hahaha... So yes, I've transformed the recipe into something else. Thank you to Cook Republic for the idea and Jun for leading me to the site. Thousand apologies for the transformation though... :D

My only mistake when baking this recipe is I had used the wrong sized tin hence the not so nice looking cake. Since I've made just half the recipe, I think the best tin to use is the loaf pan. The recipe posted is the full version.

STRAWBERRY CREAM CHEESE BUTTER CAKE
Adapted from : Cook Republic

Ingredients :

1 1/2 cups caster sugar
1/2 teaspoon vanilla essence
1/2 teaspoon strawberry essence
150g strawberries, fresh or frozen - diced
2 1/4 cups self-raising flour, sifted
250g butter, softened
250g tub Cream Cheese (I used Tatura)
1/3 cup Nestle Strawberry flavoured milk
3 eggs

Method :

1. Beat butter, sugar and vanilla in an electric mixer until light and fluffy.
2. Beat in eggs one at a time until fluffy. Add both the essence.
3. Add the cream cheese and milk. Beat until smooth.
4. Fold in the flour until mixed and then fold in the strawberries.
5. Pour the bater into the prepared tin and bake in a preheated oven at 180 for 35 to 40 minutes or till done.

Wakaf Al-Quran

Assalamualaikum buat semua...

Mama terbaca kat blog Ben tadi tentang projek mewakaf Al-Quran. Lepas tu, Ben pun ada tulis, kalau sudi, sila panjang-panjangkan... Mmm mama bukan takat sudi je Ben, tapi sangat teruja dan sangat gembira nak tolong panjang-panjangkan. Manalah tahu, boleh juga dapat serba sikit pahala nak buat top up mana yang kurang tu kan...

Jadinya, kepada sesiapa yang sudi untuk mewakaf Al-Quran tu, keterangan lanjut dan cara-caranya bolehlah melawat blog berkenaan di sini ye WAKAF AL-QURAN

Semoga usaha-usaha kita mendapat keberkatan Illahi. InsyaAllah.

A : Hellooooo.... I have not finished my sentence okay... I am just lazy to update the blog but that does not mean I am lazy to do other things! I can wear a smile on my face now that I had such a lovely date with my darling Miss Philips and Miss Acer. Two days ironing while watching Safa and Marwah on my laptop is the best way to spend my weekend! Hubby was out golfing again... after a two months break due to his back pain. That gave me ample time to date with my two darlings!
Q : Oh I see...
A : Moral of the story .... jangan potong cakap orang tua-tua...... erk....... dah tua ke?


T.O.D.A.Y's B.R.E.A.K.F.A.S.T M.E.N.U

Actually I wanted to share something else today but I can't seem to find the recipe. Must have misplaced it somewhere. Will try to find out where the recipe is hiding. Meanwhile, I'll just serve you with this... one of my favourite menus... The recipe is just a rough estimation. So do adjust according to your instinct and tastebuds ya...


ASAM PEDAS DAGING

Ingredients :

500g sirloin beef - slice thinly
1 onion
2 cloves garlic
1 inch fresh ginger
3 tablespoons chillie paste
1/2 inch shrimp paste
1 teaspoon kerisik
1/2 inch fresh turmeric
enough tamarind juice
enough water
salt to taste
zeal ~ optional
tomato ~ quartered
oil for cooking

Method :

1. Boil the sliced beef till tender with a bit of salt. Set aside.
2. Place onion, garlic, ginger, fresh turmeric, chillie paste, shrimp paste, kerisik and a bit of water in a blender and blend to form paste.
3. Heat oil in a pot and add in the blended paste.
4. Fry till fragrant.
5. Pour in the tamarind juice and stir well.
6. Add in more water if necessary. Let it boil.
7. Add in the tender beef.
8. Add in salt, zeal and tomato. Let it simmer for a while.
9. Ready to serve.

Devil's Food Cakes

Two days in a row, I had said to myself, I want to take it easy. I want to relax. No hustle bustle in the kitchen. I just want to spend time dating with Miss Philips aka my iron. But it turned out the other way round. Totally opposite! I was again 'flying' in the kitchen yesterday. It all started with a phone call from my aunt. Since my mom is with us at the moment, and since she's at her daughter's place before returning to Johor Bahru today, she wanted to come and visit my mom. And me, at the same time, needs her 'service' to be the 'courier lady' for another aunt in Johor. After speaking to her on the phone, I went straight into the kitchen and there I was till my aunt and her family went back! And guess what, I managed to try 2 new recipes. Just to give you a hint, it's a bread recipe and a cupcake recipe. Not only that, I boldly tried to decorate the cookies (just 2 pieces that is) into the bride and bridegroom theme. I don't really know how they go about doing it. I just did it the way I think I should! Hahaha...

One of the new recipes I've tried yesterday is this cupcake recipe. Got it from the book that Ida Book4Charity had given to me as a present. Thank you so much Ida for the lovely book. I've tried two recipes from the book and they turned out lovely. For those who are on Facebook, do add BookforCharity Nizida to your friends list and have a peek there. She's selling lots of books, be it story books, cookbooks, DIY and many others. The best part is, half of the profit will go to charity. So, you are not only buying books for yourself but at the same time, you're doing charity as well. Isn't that wonderful!


Anyway, I've made these cupcakes for Iddin, Syahmi's best friend for his birthday. HAPPY 16TH BIRTHDAY IDDIN!

DEVIL'S FOOD CAKES
Source : Easy Cupcakes book

Ingredients :

3 1/2 tablespoons soft margarine
1/2 cup firmly packed brown sugar
2 large eggs
3/4 cup all-purpose flour
1/2 teaspoon soda bicarbonate
1/4 cup cocoa powder
1/2 cup sour cream (I substitute with plain yogurt)

For the frosting : (I didn't do this)

125g semisweet chocolate
2 tablespoons superfine sugar
2/3 cup sour cream
chocolate caraque, to decorate

Method :

1. Preheat the oven to 180 C.
2. Put the margarine, sugar, eggs, flour, bicarbonate soda and cocoa powder in a large bowl.
3. Using a handheld electric mxer, beat together all the ingredients until just smooth.
4. Using a metal spoon, fold in the sour cream.
5. Spoon the batter into the souffle cups.
6. Bake the cupcakes for 20 to 25 minutes or until well risen and firm to the touch. Transfer to a wire rack to cool.

To make the frosting, break the chocolate into a heatproof bowl. Set the bowl over a saucepan of gently simmering water and heat until melted, stirring occasionally. Remove from the heat and let cool slightly, then whisk in the sugar and sour cream until combined. Spread the frosting over the tops of the cupcakes and let set in the refrigerator before serving. Serve decorated with chocolate caraque.

My method :

Using a wooden spoon, cream margarine and sugar. Then add in eggs, one at a time. Add cocoa powder, mix well. Then add in flour and bicarbonate soda. Finally fold in the yogurt.

Pandan Raisins Bread

What's with the RM10... Well to some, this note is just worth ten ringgit, but to me, this particular ten ringgit note is priceless... it was given to me by my daughter, Fatin, out of her allowance.

Fatin had worked with her Mak Chu for two weeks. The first week she came back with her first allowance, she had given her grandmother a piece of the red note. The grandma was so happy. I told Fatin, for that, she'll be remembered forever, as the first grandchild to give her money. The amount doesn't matter but the thoughts that counts.

From her second week's allowance, she had given her dad and mom a taste of it. Thank you my darling girl. Hugs and kisses......

PANDAN RAISINS BREAD
Source : Chef Khoo See Yew

Ingredients :

A :

350g high protein flour
5g milk powder
2.5g bread improver

B :

50g castor sugar
1/2 teaspoon salt
30g egg
200g cold water
6g instant yeast
few drops pandan essence
green food coloring
20g santan powder

C :
30g butter
150g raisins (soak for 1 hour, drained)


Method :

1. Combine all B and add in A.
2. When it forms almost a dough, add in butter and knead till it forms soft and smooth dough. Add in soaked raisins, mix well.
3. Cover and prove for 30 minutes.
4. Divide into 50g each and arrange in a baking tray.
5. After the dough had doubled the size, brush with egg wash and sprinkle some dessicated coconut on top.
6. Bake in a preheated oven at 180 C for 20 to 25 minutes or till golden brown.

Note :
I used my bread maker to do the job!

Fish and Chips

Alhamdulillah... I am still breathing, still standing and mental wise, still sound. Hahaha... It was just too hectic for me these past few days. With visitors, wedding invitation,orders to fulfill and lots more. The peak was last Sunday. I really forced myself to the max. At one time, I felt like I just can't go on because my patience was wearing thin, but Alhamdulillah with Allah's help, I managed.

To all bakers out there, I salute you! It takes such strong will power, patience and talent to be a good baker. And trust me, I am not in that category! I am not being humble but I am talking about reality. I only had to do a set of 25 pieces cupcakes. It was just that the fondant went soft in my hands (yeah right... I'm HOT bebehhhh... ahaks!!!) instead of hardening. That makes the cutting of fondant alphabets is near to impossible as it kept sticking to the cutters. Thank God I still have patience or otherwise, God knows what will happen to the cutters! Hahaha.... So yes, no thank you to owning a bakery shop! Rest my case! Haha...

Anyway, here are the few things that I had made these couple of days. Thank you Nora and Midah for trusting in me with your orders. I just hope that both of you are satisfied....

One fine morning, I went to the Pasar Tani near our house with my dear hubby. When we reached the stall selling all kinds of frozen stuffs like beef polony (Pizza Hut), 1901 sausages, frozen lasagne (Pizza Hut), Turkey slice, white sauce, blackpepper sauce and many many others, hubby was extra interested in the latest product by them, which is Talapia fillets. With the fillets, I've tried Kak Liza's recipe from her 1Hari 1Resipi book. She had used the spiced flour to coat the fish. In my second attempt, I had used just the plain flour. My family prefers the one with the plain flour. I will post both recipes. The one posted in English is my version.


FISH and CHIPS
Adapted from : Kak Liza's 1Hari 1Resipi Book

Ingredients :

2 Talapia fillets
1 teaspoon lemon juice
1 teaspoon pepper
1 cup all purpose flour
1 egg white
enough bread crumbs
enough cooking oil for frying

Method :

1. Wash the fish and pat with kitchen towel. Coat the fish fillets with lemon juice and pepper. Then coat the fillets with flour.
2. Heat the oil.
3. Dip the fish fillets in the egg white and coat with bread crumbs.
4. Fry until golden brown.
5. Drain on kitchen paper and serve with fried chips and coleslow.


The Bahasa Malaysia version is Kak Liza's recipe without any adjustments made. Thank you Kak Liza!

FISH AND CHIP
Dicilok dari : Buku 1hari 1resepi Kak Liza

BAHAN - BAHANNYA :

A :

2 keping ikan Dory
1 sudu teh jus lemon
1 sudu teh serbuk lada sulah
100g brokoli (dipotong kecil)
200g kentang goreng
1 cawan tepung serbaguna berempah
1/2 cawan serbuk roti
1/2 cawan minyak masak

B : (Untuk Sos Lemon)

1 sudu makan mentega
1 biji Lemon (diambil jusnya)
1 sudu teh tepung jagung - dibancuh dengan 1 sudu makan air

KAEDAH PENYEDIAAN - FISH AND CHIP :

1. Goreng jejari kentang hingga kuning keemasan.
2. Sapukan serbuk lada sulah pada permukaan ikan.
3. Tuangkan jus lemon pada ikan dan ratakan pada seluruh permukaan ikan.
4. Gaulkan ikan dengan tepung serbaguna dan ratakan.
5. Sapukan ikan dengan serbuk roti.
6. Panaskan minyak dan goreng ikan hingga kuning keemasan. Angkat dan letakkan di dalam pinggan hidangan.
7. Kemudian rebus brokoli dan tuskan.

KAEDAH PENYEDIAAN - SOS LEMON :

1. Panaskan mentega. Kemudian masukkan jus lemon dan bancuhan tepung jagung. Kacau rata dan tutupkan api.
2. Hidangkan brokoli dan kentang goreng di dalam pinggan berisi ikan.
3. Hidangkan dengan sos lemon.

Alhamdulillah beres sudah segala tugasan ku. Walaupun dengan penuh kepayahan dan dugaan, namun tetap ku gagahi jua...

Kami berbangga dengan anda! Mama stayed up awal pagi semalam semata-mata nak saksikan perlawanan hebat dua jaguh badminton ni. Permainan kedua-duanya amat hebat sekali. Tapi di waktu yang sama, mama berdoa, janganlah rubber set, sebab..... mata dah ngantuk! Hehehe...

Red Bean Bun

Excited? Yeah I am at the moment. But I can't reveal it at the moment because IT is still not with me. Until then, I will just pray that it'll turn out the way I'd love it to be.....

Tried this recipe quite sometime back. It's from one of my many bread books collection. I have a very bad habit when it comes to books on bread. I just can't resist buying them. How can I get over that habit when hubby is also on my side. Everytime I hold a book, and tried hard to decide whether to buy or not, hubby would say, just buy it! At times, he's the one who'll pass me those irresistible books! Huwaaaaa.... honey, you're not helping!!!... but... I LIKE! Ahahaha....


RED BEAN BUN
Source : Chef Khoo See Yew

Ingredients :

A :
230g high protein flour
5g instant yeast
170g water
1/8 teaspoon bread improver

B :
20g egg
60g castor sugar
1/4 teaspoon salt
25g cold water
2.5g instant yeast

C :
30g butter
100g high protein flour


Method :

1. Mix A till even and rest for 1 to 1 1/2 hour.
2. Add in B to A, mix well till smooth dough, add in C. Knead to form a smooth dough. Rest for 15 minutes.
3. Divide into 60g each and wrap in red bean, shape them into balls, let them rest for 5 to 10 minutes. Roll into cylinder.
4. Cut into 4 parts without cutting off totally. Fold in accordingly.
5. Place on to greased tray. Prove until double in size. Egg wash and sprinkle sesame seeds.
6. Bake at 180 C for 10 to 15 minutes.

Note :
I used my breadmaker to do the job!
