Chicken Pie

Saturday, the day that I said I am going on a cookie rally, only started baking in the evening. Why? I had to tag along with hubby to settle quite a number of things outside. Hubby sent his car to the garage to get his SRS thingy checked as the indicator lights kept showing and he's not happy with that. I had to follow him in my own car. So, two trips to the garage. Then we went to settle a few more things at a few other places. It was tiring, but am really glad, we managed to settle everything so smoothly. Alhamdulillah.

Sunday, really had my cookie rally as early as after Sehri. Had to ask mom's help (which actually what she's been waiting for because all these while I don't actually allow her to help me around. I prefer to do all my chores by myself) to arrange the baked cookies into the bottles. Thanks mak for speeding up my job. So in two days time, I managed to bake roughly 6 bottles of London Almond, 3 bottles of Tapak Kuda cookies, 2 bottles of Biskut Kelapa and 3 bottles of pineapple tarts. There are some balance as well, not enough to fill one bottle full. Will fill them up soon, insyaAllah...

And today... I am going on my cookie rally again. Hope to bake as much as possible... wish me luck!

Chicken Pie


CHICKEN PIE
Adapted from : Makcik Kantin

Ingredients :

Filling :

1 packet chicken fillet - chopped
1 sachet mushroom soup powder (I used Vono)
300 gm mixed vegetable
300 gm onions, diced
2 tablespoonful of butter
2 tablespoon plain flour mix with 1/2 cup water
salt
black pepper crushed

Method :

- Heat butter in a pan & saute diced onions till soft.
- Add chicken, stir to break the lumps and cook till all the chicken turns white.
- Add in a sachet of mushroom soup powder. Stir.
- Add in the mixed vegetable.
- Add enough water. Season with salt and black pepper.
- Add in flour that has been mixed with water. This is to thicken the filling.
- Cook at slow fire.

Cut the small readymade puff (I used the small Kawan readymade puff) into 4 equal size.. Spoon enough filling in the middle, cover the top with another piece of pastry. Make 3 slits in the middle of the puffs with a sharp knife, Brush the top with some egg yolk.

Bake @ 160 deg C for about 25 mins or until done. Preferably, using fan oven for a flaky puff crust.

Mini Quiche (KOG)

Yesterday morning, while waiting for the traffic lights to turn green, I looked at both my thumbs. Gosh... they are different in size! Asked Syahmi if they do look like that or was my eyes deceiving me? Syahmi confirmed the 'tragedy'! I don't really know whether to laugh or to feel sad! I guess a bit of both. My right thumb was slightly swollen actually, that explains the difference in size. After finished doing another batch of 250 pieces, I just put the balance of the dough aside. Rub a bit of Deep Heat onto the thumb and took a nap... er...sejam setengah, boleh panggil nap ke? Hehehe.... Woke up feeling much better...alhamdulillah.......

When I saw the photo of the mini quiche and the recipe that KOG had done, I am tempted to try. Why? Because it required such little ingredients and less effort... I like! Hahaha... So, Lin, thank you to you and Ah Poh for the recipe. Allow me to post my version here.

Mini Quiche


MINI QUICHE

Ingredients :

4 eggs
1/4 cup fresh milk
1 teaspoon pepper
1 piece chicken sausage (I used chicken luncheon) - cut to small pieces
1 piece sliced cheese ~ cut to thin strips
Chives
a bit of mayonaise

Method :

1. Beat eggs using a whisk. Add fresh milk, pepper, mayonaise and chives. Continue whisking.
2. Add in sausages and cheese.
3. Grease the mould with a bit of butter.
4. Pour batter into the mould.
5. Bake in a preheated oven at 180 C for 8 minutes.



Besides, asam pedas ikan tenggiri for hubby and my son, I made some fried mihun for my mom. Made extra to give Saerah as well...

Air Tembikai Laici

Spent the whole morning doing the tart casings. Would have done more if I didn't run out of ingredients. Had to go to the shop and buy before I can continue. And this morning, I did the tart casings while watching television. The TV must be wondering, why did this lady kept me on for a long time not like always, she won't even look at me... not a glimpse! Hahaha... Yeah, this morning, I watched the sinetrons, one after and also some game series! Among all, I fell in love with Cinta Kirana. I had told myself not to start watching these sinetrons any more after Benci Bilang Cinta, but did I hear my warning? No I didn't. I watched. And the same episode, trice! Why? I like to see Galang (Randy Pangalila). Ahaks... sorry abang.. jangan jeles ye.. hihihi....eleh...ada dia kisah!!!! Muahahaha.... When will this newly founded misery will end? Huhuhuhuhu.....

Prepared this drink yesterday for Iftaar. Much liked by Syahmi. Got the recipe from Majalah Rasa. But before that Maz did mention about it. Didn't try it out as I was just lazy to buy the watermelon. But day before, Iddin's mom gave us some watermelon, so I decided to give it a go. And I am not disappointed.

Air Tembikai Laici


AIR TEMBIKAI LAICI
Source : Majalah Rasa, August 2008

Ingredients :

(A)

1/2 watermelon
4 tablespoons sugar
50ml chilled water

(B)

1 canned lychee and syrup
ice cubes
enough chilled water (I added)

Method :

1. Place ingredients A in a blender and blend till fine.
2. Pour into a jug and add in Ingredients B. Stir to mix well.
3. Serve chill.

Sambal Daging

Yesterday, I cooked for Iftaar. A simple dish of Sambal Daging and hardboiled salted egg. When everyone were seated at the table, hubby had said,"Wah sedapnya. Lama tak makan masakan mama" Translation would roughly be....wow yummy...had been quite a while since we eat mama's cooking.... And would you believe it, it was only the day before that I didn't cook! Haha... hubby misses his dear wifey's cooking already! But the way the boys enjoyed their Iftaar yesterday, made me really happy! Thank you boys for making my day.....

And for sehri, we had Mamee Goreng Indonesia... yumm.....

Will share this Sambal Daging recipe that I got from hubby's late grandma. Her cooking was simply superb. I remembered those good old days when she's still around... how I really enjoyed her cooking especially her Sambal Daging and Asam Pedas. The taste is just so yummilicously srumptious.... mmmm... Really miss uwan so much.. May her soul rest in peace.. Al-Fatihah...


Sambal Daging


SAMBAL DAGING
Source : Uwan

Ingredients :

4 tablespoons chillie paste
4 shallots - minced
1 cm shrimp paste (belacan) - minced together with shallots
1 onion - sliced
2 tablespoons tamarind juice
1/2 cup coconut milk
salt to taste
zeal - optional
cooking oil
Beef (preferably topside) - boil in a bit of water and a bit of salt till tender

Method :

1. Heat oil and add in the chillie paste. Fry till fragrant.
2. Add in minced shallots and belacan. Stir.
3. Add in the tamarind juice.
4. Put in the tender beef, coconut milk, salt and zeal. Mix well.
5. Lastly, add in the sliced onion. Stir for a minute or two and remove from heat.

Sirap Bandung

It's 2.10pm now. I am exhausted. This morning I had planned to iron the clothes after saying my namaaz but when I saw the basketful of folded clothes still in the basket, I decided to arrange them in their proper closet. When I opened Syahmi's closet and saw the 'unwanted view' inside, I started to put it back in order. Once done there, my eyes came upon the messy study table and cleaned that one too. Not only did I arrange but wiped them sparkling clean as well. From the table to the bed. Done with Syahmi's room, I went to Fatin's room, the upstairs hall and finally the master bedroom and the attached room. Since I've done quite some dust removing activity, surely I need to sweep. So why not I just finish it up with mopping.... Yeah... there goes my ironing. Being a hot sunny day today, of course you can imagine what state I am at this moment....... coooobaaannnnn.....

Sirap Bandung


SIRAP BANDUNG

Ingredients :

2 cups sugar
1 cup water
pandanus leave - knotted
Pink food coloring
Evaporated milk
Enough ice
Enough water

Method :

1. Boil water, sugar, pandanus leave and pink food coloring till sugar dissolves. Remove from heat and leave to cool.
2. Add in enough evaporated milk and water to taste.
3. Lastly add enough ice cubes.

Note :

If you want to add in icecream soda, you may do so. It'll taste nicer but I always failed when adding the soda. The drinks and the soda seem to separate... tips anyone?

Durian Pillow

Alhamdulillah, yesterday I managed to stick to my mission. My mission is to get away from this L.A.Z.Y virus. Infact yesterday I think I was overdosed with the 'antibiotics', which made me a little bit more energetic and hardworking. Huhu..it's not that good for my health though because towards the night, I was totally drained out. I don't have the energy to go upstairs to my room. I just slept downstairs till 4.30 am! Hahaha.....

In the morning, I made a trip to Bake with Yen, together with Kak Ana and Maz. I just bought the plastic bottles for the cookies, almonds and tapioca flour. But the other two ladies were busy shopping for their baking stuff. On the way back, stopped by the Fresh Market to get some fish. Reached home around 12 noon, brought in the laundry and hanged the next load. Then went off to fetch Syahmi and Iddin from school. After that, I started cleaning the fishes and thought of cooking straight away but then Iddin came with the mom. The boys had their tuition at my place and since Iddin's mom stayed over, so we chat for a while. Had to change plan. No time to cook. At 3 pm, Kak Ana and me left for Shah Alam. Stuck in the traffic jam around 5 and to make things worse, the petrol indicator showed only one green and a red. That makes me very uneasy and felt like going out of the car and be the traffic police at that time! Hahaha... But alhamdulillah, by the time we reached home, the green line is still there! So I stressed out for nothing! Hahaha... When we reached home around 6, I performed my namaaz and then started cooking! I was amazed with myself actually. I still cook for iftaar despite feeling exhausted. Wow... mama was such a good girl yesterday! ...layankan aje mama ni ha..masuk bakul angkat sendiri...asal ma bahagia..... hehe... Had a simple Iftaar of Singgang Ikan , sambal belacan and fresh petai. Alhamdulillah.... hubby enjoyed his meal very much...good boy abang.. hehehe..

Mamazieza had mentioned to me about this Durian Pillow and I just couldn't resist to try it out. So I googled for the recipe and arrived at Cik Manggis's Blog. Thank you Cik Manggis for sharing the recipe with us. Since I don't have coconut milk in the house, I had to make do with fresh milk.



DURIAN PILLOW
Adapted from : Cik Manggis

Ingredients :

250g flour
3 eggs
*500 ml fresh milk
1/2 teaspoon salt
a few drops of yellow food coloring

Fresh durian filling
Whipped cream

Note :
* Original recipe calls for coconut milk instead of fresh milk. If using coconut milk, mix 100ml thick coconut milk to 400ml water. Stir.

Method :

1. Place flour, eggs, fresh milk, salt and food coloring in a blender. Blend till well mix and put through a sieve.
2. Keep the batter for at least 15 minutes.
3. Heat a non stick pan and pour a ladle of batter onto the pan. Spread the batter by turning the pan around.
4. Cook just for a minute or two. Remove from heat. Repeat the same procedure till all the batter had been used up.
5. To assemble, place a dollop of fresh cream and top it with durian filling on top of the thin pancake and roll it like a pillow.
6. Ready to serve.

Cornflakes Crunchies (Jaja)

It's Friday... 10th Ramadhan... time flies. The next thing you know, it'll be Eid. At the thought of that, I can start panicking a bit. Why? Because the preparation so far is only about 10%! But insyaAllah I will manage... because I work better when under pressure! ....haha confident je!. A few friends had asked me if I've started baking the cookies. Well, I wanted to but then I still haven't bought the plastic containers to keep the cookies. Hmm when shall I go? Just too lazy to do anything today.... somebody help me!!!

Cak had requested for a Cornflakes cookies recipe. Since I haven't started doing any cookies just yet, I will re-post the recipe that I had tried years back, when we were still in Malawi...those good old days.... The recipe was emailed to me by Jaja. Thank you Jaja for sharing the recipe with me and allowing me to publish it in my Fotopages.



CORNFLAKES CRUNCHIES (Jaja)
Ingredients :

105 g butter (I used margarine)1 cup sugar
3/4 cups self-raising flour ~ sifted
1/4 cup flour ~ sifted
1 egg yolk
raisins ~ chopped and drizzle a bit of flour to avoid the raisins from sticking to each other
cornflakes ~ crushed

Method :

1. Cream butter/margarine with sugar.
2. Add in egg yolk (if doing more than 1 recipe, the egg yolk must be added one at a time). Continue beating till fluffy.
3. Add in the sifted dry ingredients, bit by bit.
4. Fold in raisins and crushed cornflakes.
5. Scoop a bit of the soft dough and place it in a bowl of slightly crushed cornflakes. Roll the dough with cornflakes and shape into a small ball.
6. You can either place them in papercups or just arrange them on a tray.
7. Bake in a preheated oven at 170 c for about 20 - 25 minutes. Make sure you don't overbake them.

Note :

1. Sorry Jaja, I added some green and red cherries for extra color.
2. You can actually reduce the amount of sugar by 2 tablespoons.
3. I used my homemade self raising flour : 150g flour + 2 level teaspoons baking powder + a pinch of salt, to be sifted trice.

Tom Yam Campur

We had a lovely feast yesterday at BIG PLATE, 27 Jalan Alfa F U6/F, Subang Permai, 40150 Shah Alam, Selangor. Hubby had Rib Eye Steak, I had pan fried fish and Ami had Kelang Steak. And for the drinks, all three ordered watermellon juice. The food was as delicious as always with very reasonable price. Promosi baik punyah ni... kot ler leh dapat free meal ke... ahahaha... We broke our fast at home with a glass of water and some dates. Performed our Maghrib prayers, then only we headed for Big Plate. When we reached there, they were serving buffet which we were not that keen on. Don't get me wrong, it's not that the food wasn't appetizing enough. It was and infact they had such variety of food served in the warmer, all looking yummiliciously good! But because our minds were set on having those western kind of food, so the buffet was out of the story. We asked one of the waitress if we could have the ordered menu and she had kindly enquired from the kitchen. Yes we may, she said! Alhamdulillah... so we waited patiently for our food to be served which doesn't take that long actually. Too bad, I didn't bring my camera along, so there'll be no photos to share of what we feasted yesterday. But just imagine, me, having 4 pieces of pan fried dori, with grilled potato wedges, a small pancake, brocolli, cauliflour, sweet corn, cherry tomato, sliced brinjal, shredded purple cabbage and the lovely sauce... all in one plate.... mmmmmmmmmmmmmmmm......

Ibu Nor had requested me to tag her on Facebook if I posted any Tom Yam recipe. So to fulfil my promise to her, today I shall post this Tom Yam recipe which I had tried 4 years back when I was still in Malawi. This Tomyam recipe is from Forum Cari, posted by Joi-ah. Thank you Joi-ah for sharing the recipe with us. I shall also share the tips that was given to me by these two lovely ladies, Imah and Kak Yong as how to produce better taste Tom Yam. Thank you dear ladies..... I wonder, where is Kak Yong now. Can't visit her fotopages anymore as she had locked her webpage. Where ever you are sweet Kak Long, hope life is treating you well....



TOM YAM CAMPUR

Ingredients :

Lemon grass (serai)
kaffir leaves (daun limau purut)
galanggal (lengkuas)
lime (limau nipis)
bird eye chillie
fresh tomatoes
Tom Yam paste or cube
chicken and beef fillet ~ cut to small pieces
prawns
onion ~ cut into rings
cauliflour ~ cut into florets
carrots
salt ~ if necessary
zeal (aji-no-moto) ~ optional

Method :

1. Boil water with kaffir leaves, lemon grass, galanggal till fragrant.
2. Add in the tomyam paste or cube.
3. Add in salt and zeal (if necessary. I didn't add any). Let it boil.
4. Add in the beef fillet, then chicken and lastly prawns.
5. Add in tomato, onion rings and bird eye chillie.
6. Lastly squeeze some lime juice for an extra tangy taste.

Tips for a better taste Tom yam :

From Imah :
Add 1 or 2 tablespoons of coffeemate or creamer into the soup. And if you're cooking beef soup or oxtail soup, add some coke into it.

From Kak Yong :
Add a few tablespoons of fish sauce into the Tom Yam.

Biskut Bintang Hazel (Sis Rossya)

Mama had been missing from her blog for these past few days. Is this because of Facebook? Well, not 100%, but it had it's share in it! Haha.. Well, last weekend we were busy with the children. Sending our son to tuition and then headed straight to our daughter's hostel to visit her and not forgetting to 'top up' her cupboard with foodstuff! And one of the food requested...brownies. Only this time, I didn't snap the photo to share. Guess you guys had enough with my brownies photos huh? Hahaha...

Besides that activity, we watched the Korean movie Stairway to Heaven. It was such a heartbreaking story that I ended up with sore eyes and somebody else ended up with 'sinus'. Hahaha... But what a relief, it was a happy ending. At least I am happy with the ending and I don't have to make my own ending for the story, like what I did with Summer Scent! Hahahaha.....

BISKUT BINTANG HAZEL (Sis Rossya)

Ingredients :

100 g peanut butter
80 g icing sugar
200 g butter
1 egg yolk
60 g cornflour
1 tablespoon rice flour
230 g flour
60 g Horlicks with chocolate flavour (I don't have Horlicks, chocolate flavour, so I used Ovaltine)
40 g Hazel nuts ~ grinded finely
1 - 2 egg yolks ~ for brushing (I just used the leftover egg white because I'm stingy! Hihihi!)
chocolate rice/vermicelli ~ to sprinkle

Method :

1. Cream peanut butter, sugar, butter and egg yolk.
2. Add in cornflour, rice flour, Horlicks and ground Hazel nuts.
3. Add in flour, little by little till a soft dough is formed. Need not finish the whole amount of flour. Just use whatever's needed.
4. Roll to about 4 mm thick and cut using a star shape cutter.
5. Arrange on a tray.
6. Brush some egg yolk on top and sprinkle with a bit of chocolate rice/vermicelli.
7. Bake in a preheated oven at 160 C for 15 - 20 minutes or till done.

When I posted this photo in my Facebook, a few had asked for the recipe. I had seen my abah making this before and the way we love his sambal belacan is beyond words... We miss you dearly, abah....

But I made a slight adjustment to abah's version by adding the cherry tomatoes.


Sambal Belacan


SAMBAL BELACAN

Ingredients :

2 fresh red chillies
2 shallots ~ sliced
1 garlic ~ sliced
1 inch Belacan
3 cherry tomatoes
Salt - if necessary
a bit of sugar

Method :

1. Fry the Belacan, chillies, shallots and garlic separately.
2. Place the fried ingredients except belacan into a stone mortar.
3. Pound the ingredients. And once they are mashed up, add in belacan, cherry tomatoes, salt and sugar to taste.
4. Remove from the mortar and ready to serve.

Singgang Ikan

Whenever I said that I am not confident to cook Pindang or Singgang, I'll get simillar feedbacks....Laa senang je ma, nak masak singgang tu. Main lebur je... Translation : It's very easy to cook Singgang. Just chuck everything in the pot! Huhuhu... if only before this, I am that confident, then it'll be a different story now.

Anyway, finally I braved myself to cook Singgang last week. At first nobody touches the Singgang as I had served dinner with sambal and a few other dishes. Hubby ate rice with sambal. Then when he's done eating, he took a sip of the Singgang. A sip after another till 70% of the Singgang is gone! Wahhhh, that makes me a very happy wife! Hahaha... the Singgang wasn't perfect though because I had put in too much salt. Hmm how can that be because I am normally not a salty person! I guess, because I am just nervous.... hahaha..baikkk punya cover line.... Thanks to Kak Liza for the simple yet delicious recipe. I took it from her Senangnya Memasak cooking book....



SINGGANG IKAN
Ingredients :

Ikan selar
3 cloves garlic ~ sliced
2 cm galanggal ~ sliced thinly
2 cm fresh turmeric ~ sliced thinly
5 pieces dried tamarind skin (depends on size)
4 cups water
salt to taste
Bird eye chillie (I had used red chillie)

Method : (my way)

1. Place all the ingredients in a pot, except the fish.
2. When the soup starts boiling, add in the fish.
3. Once the fish is cooked, remove from heat.
4. Ready to serve.

Ben Ashaari agen cari jodoh?


Ben Ashaari jadi agen mencari jodoh? Biar betul? Sejak bila? Beroperasi di mana?

Hishhhh banyaknya soal? Pelan-pelanlah tanya... one at a time bak kata omputih..

Sebenarnya, Ben bukan jadi agen cari jodoh untuk manusia, tapi untuk blogla. Dia memperkenalkan sistem Feed. Cuba tengok kat blog mama ni, di penjuru atas sebelah kanan tu, yang bertulis A POCKETFUL OF SUNSHINE dan di bawahnya tertera 5 entry terbaru. Haa itu bukan hasil nukilan mama. Tapi blog tu adalah blog Izah...pasangan bahagia mama...ehhh silap... pasangan bahagia blog mama... hehehe... Blog kami telah di'ijabkabul'kan oleh 'Pak Imam Ben' minggu lepas. Chocolate Buns with Chocolate Fillings

Things happened for a reason. And in my case, it's for a very good cause!
Had been annoyed with my space bar key, which went totally kaput yesterday morning. Had to update the blog using all the dashes till Ida said, it's like reading the soldier's code. Hahaha... Really sorry you guys. That's the best I can do that time.

I took Fatin's laptop only to find out that she had put a password to her laptop. Since I am not good at cracking password, so I just had to give up... bertuah punya anak!!!. To take Boboy's laptop downstairs, I was just too lazy. So I said to myself, just ignore the emails that are pouring in and just ignore the FB, like I haven't got one. Well I did survive without one all these while, didn't I. Hahaha.. So what did I do?

I put on the Korean movie CDs which Ibu Nor had kindly lend to me. I watched Full House starting episode 11. And I tell you, this time, I really enjoyed watching the movie. I don't have to keep opening parts after parts of each episode. Guess what, I had tears welling out of my eyes when the actor and the actress didn't shed any! Hahaha... mama terlebih sudahhhh! But rest assure, I didn't just waste my time watching the movie. I was doing my ironing at the same time. I managed to clear 3/4 of the loads! See, that explains the phrase 'things happen for a reason'. If my space bar key is still working, I think, I will add another 3/4 load of clothes to the existing ones instead of doing otherwise! Hahaha... in a way, I have to be grateful to my dead spacebar key!

Made these buns to fulfil my promise to Mak Su. Modified the recipe from Sweet Bun Kak Liza. Halal ye Kak Liza...







CHOCOLATE BUNS WITH CHOCOLATE FILLING

IngredientS A :

450g high protein flour
50g cocoa powder
25g milk powder
75g sugar
10g instant yeast
1 teaspoon bread softener
1 egg
1/2 teaspoon salt

Ingredients B :

250ml water
75g margarine

Ingredient C :

Chocolate filling (from the bakery)

Method : (Bread Maker)

1. Pour water and salt into the bread maker pan. Add in egg. Top it with flour, cocoa powder, milk powder, sugar, yeast and bread softener.
2. Set the breadmaker to Dough function.
3. Once the dough is just combined, add in margarine and leave the Breadmaker to continue doing it's job. This process will take about 1 1/2 hour including proving.
4. Divide the dough to 40g each. Shape into a ball. Leave to rest for another 10 minutes.
5. Flatten the dough, place a teaspoonful of chocolate filling in the middle and roll into a ball.
6. Arrange the dough on a baking tray. Let it prove till double the size. Sprinkle with a bit of water before putting the tray into the oven.
7. Bake in a preheated oven at 180 degree celcius till golden brown.
8. Once out of the oven, brush some margarine on top.

Mama Carries (Noni)

MAMA CARRIES

Ingredients :

300 g butter
400 g flour (I took out 1/4 cup)
130 g cornflour
100 g icing sugar
1/2 teaspoon vanilla essence

Topping :

1/2 egg white ~ beat till fluffy
90 g icing sugar
1 tablespoon cornflour

To scribble :

Scoop a bit of the topping above and mix with cocoa powder or you can also use chocolate emulco

Method :

1. Sift flour and cornflour. Set aside.
2. Beat butter and icing sugar till well combined. Add in vanilla essence.
3. Add in flour, bit by bit till soft dough is formed.
4. Roll dough 1/2 cm thick and cut using a heart shape cookie cutter. Arrange on a tray.
5. Using your finger, spread the topping on top of each cookie.
6. Use a clean toothpick and dip into the cocoa mixture and scribble on top of the white spread.
7. Bake in a pre-heated oven at 150 C. Just use the bottom heat to ensure the top doesn't browned that much. Bake for about 15 to 20 minutes.

What I did...

1. I used margarine.
2. There's a lot of balance for the topping. I normally use 3/4 recipe for the topping, and that should do it.
3. For the cocoa mixture, I added a few drops of brown coloring to give it a darker color. If only I have chocolate emulco....hmmm.....
