Mee Jawa I



MEE JAWA

Ingredients :

Condiments :

500g fresh noodles ~ blanched
250g bean sprouts
2 stalks spring onions ~ chopped
3 fresh red chillies ~ sliced
3 hard boiled eggs
3 limes
crispy fried onions

Gravy :

To be grinded/blended :

6 garlic
8 shallots
1 lemon grass small piece ginger small galanggal
100g dried shrimps
1 tablespoon chillie paste
400g sweet potatoes ~ peeled, boiled and blended
1 tablespoon meat curry powder
300g prawns ~ boiled, skinned and blended
1.5 to 2 litres water
2 tablespoons cornflour mixed with a bit of water
salt to taste
sugar to taste
cooking oil

Method :

1. Heat oil in a pot and add in the blended ingredients and curry powder. Fry till fragrant.
2. Pour in water. Stir once in a while till boiling.
3. Add in the blended sweet potatoes, blended prawns and cornflour mixture.
4. Let it simmer till gravy thickens. Add in salt and sugar.
5. Serve with the condiments.

Pineapple Tart (Baya)




PINEAPPLE TART

Ingredients :

226g butter, at room temperature (I used margarine)
1 egg yolk
1 teaspoon vanilla essence
1 tablespoon sugar
2 tablespoons (heap) cornflour
2 1/2 tablespoons (heap) custard powder
1 tablespoon milk powder
2 1/2 cups flour

Topping :

1 egg yolk
a few drops of yellow coloring

Filling :

I used the ready made pineapple jam

Method :

1. Cream butter, egg yolk, vanilla essence and sugar. I didn't use my mixer.
2. Add cornflour.
3. Add custard powder.
4. Add milk powder.
5. Finally add enough flour until a soft dough is formed.
6. Place a bit of dough into the cookie press mould. Pipe out the dough about 2 inches length.
7. Place the filling on top and roll. Arrange on the baking tray.
8. Bake in a preheated oven at 175 C for 20 - 25 minutes.

Orange Cookies


ORANGE COOKIES

Ingredients :

250g butter (I used margarine)
130g castor sugar
1 egg yolk
1 teaspoon vanilla essence
1 tablespoon orange paste (since I don't have, I substitute with orange emulco)
1 teaspoon orange coloring
chocolate chips ~ for deco

To be sifted :

300 g flour
50 g self-raising flour
50 g custard flour
50 g cornflour

Method :

1. Cream butter and castor sugar.
2. Add in egg yolk and vanilla essence and continue beating. I did it manually.
3. Add in the coloring and the paste.
4. Add in the sifted ingredients till a soft dough is formed.
5. Place a bit of dough into the Dahlia mould and piped onto the baking tray. 6. Place a chocolate chip on top.
7. Bake in a preheated oven at 175 C for 20 -25 minutes.
8. Once cooled, keep in an air tight container.

Chocolate Cookies



CHOCOLATE COOKIES

Ingredients :

400g butter (I used margarine)
1 egg white
200g icing sugar (might need more if you're not putting any topping on top)
1/2 teaspoon vanilla essence
500g flour
50g cocoa powder

Method :

1. Cream butter and icing sugar.
2. Add in egg white and vanilla essence and continue beating. I did it manually.
3. Add in cocoa powder.
4. And finally add in enough flour till a soft dough is formed.
5. Roll to about 1 cm thick and cut using the cookie cutters of your choice.
6. Bake in a preheated oven at 175 C for 20 -25 minutes.
7. Once cooled, decorate as you like.

Roti World





ROTI WORLD

Ingredients : (I made into 3 buns)

170ml lukewarm water
1 1/2 cups flour
2 tablespoons majerin
3 teaspoons sugar
1/2 teaspoon salt
2 tablespoons milk powder
1 1/2 teaspoon instant dried yeast

For the soup : I used Campbell's Instant Cream of Chicken Soup!

Method :

1. Place flour, sugar, salt, milk powder and instant yeast in the mixing bowl. 2. Turn on the mixer and pour the lukewarm water a bit at a time till just incorporate.
3. Add in the margarine and continue kneading.
4. Pour more water if necessary and continue kneading till a soft and smooth dough is formed.
5. Make the dough into 3 round balls and place it in a bowl sprinkled with a bit of flour. Wrap the bowl with a clean plastic bag and let the dough prove till double the size.
6. Punch down the dough and knead slightly. Arrange on the baking tray. I let the dough rise just a little more (though the recipe doesn't require a second proving).
7. Bake in a preheated oven till golden brown. I used the small oven, so I set the temperature at 175 C for 25 minutes on middle rack.
8. Once out of the oven, brush with a bit of margarine.

Yummilicious Bun


CHEESE AND ONION BUNS BUN

*184g bread flour
* 46g cake flour
3g instant dried yis
12g sugar
4g salt
23g honey
18g egg yolk (1 egg yolk)
35g butter (I used margarine)
138ml fresh milk ~ lukewarm

Note :
* I used multi purpose flour

TOPPING

Margarine
Bombay Onion ~ diced
Spring onions ~ chopped
Mozarella cheese ~ to sprinkle
1. Cream the margarine.
2. Add onion and spring onion. Mix well.

Method :

1. Place flour, instant yeast, sugar, salt honey and egg yolk in a mixing bowl. 2. Turn on the mixer and pour the lukewarm milk a bit at a time till just incorporate.
3. Add in the butter and continue kneading.
4. Pour more milk if necessary and continue kneading till a soft and smooth dough is formed.
5. Make the dough into a round ball and place it in a bowl sprinkled with a bit of flour. Wrap the bowl with a clean plastic bag and let the dough prove till double the size.
6. Punch down the dough and divide into a 50g balls each. Arrange on the baking tray. Make a slit on top using a sharp knife. Wrap the tray with plastic bag and let the dough rise again.
7. Put the topping and sprinkle with mozarella cheese.
8. Bake in a preheated oven till golden brown. I used the small oven, so I set the temperature at 175 C for 25 minutes on middle rack.

Japanese Souffle Cheese Cake

JAPANESE SOUFFLE CHEESE CAKE

Ingredients :

200g cream cheese (room temperature)
50ml fresh milk
3 eggs (seperated)
100g castor sugar
30g cornstarch
2 tablespoons lemon juice
1/2 teaspoon cream of tartar

Method :

1. Preheat oven at 175C. Line 18cm cake tin with grease proof paper.
2. Soften cream cheese in large bowl. Add milk and continue mixing on medium speed.
3. Add 1/2 of the castor sugar, egg yolks, cornstarch, lemon juice and cream of tartar, combined together.
4. Whisk egg whites in seperate large bowl until stiff peak formed. Add the remaining sugar little by little until mixture stands in stiff peak.
5. Fold half of egg whites mixture into cream cheese as gently as possible. Fold the remaining eggs gently but thoroughly.
6. Water bath bake for 45 mins on the lower shelf.
7. Leave in the tin until cool enough to handle.

Homemade Kaya Balls



KAYA BALL

Ingredients :

250g flour
1 teaspoon baking powder
a pinch of salt
125g butter (I used margarine)
75g castor sugar
4 eggs
200ml fresh milk
1/2 teaspoon vanilla essence
Enough serikaya

Method :

1. Sift flour, baking powder and salt. Set aside.
2. Cream butter and sugar. Add eggs and continue beating.
3. Add in vanilla essence.
4. Add 1/4 milk into the mixture, mix well. Then add 1/4 of the sifted ingredients. Repeat the procedure till finished.
5. Grease the pan with a bit of cooking oil. Fill in the mould halfway with the bater. Place a dollop of serikaya and cover with more mixture.
6. Heat the oven at 145 C and bake for 10 - 12 minutes or till skewer comes out clean.

Apam Eno (zara_klate)


APAM ENO
Yields 40 - 50 pieces

Ingredients :

300g rice flour
8 - 10 tablespoons white sugar (I think it'll taste nicer if you add another 2 to 3 tablespoons sugar)
1 tablespoon instant dried yeast
280 - 300 ml water
3 teaspoon plain ENO for 3 different colors (1 teaspoon for each color)
red food coloring
green food coloring

Method :

1. Mix flour and water, a little at a time. Then add yeast and sugar. Mix well. 2. Leave the mixture to ferment overnight.
3. Divide the mixture to 3 parts and add coloring. Leave 1 part plain.
4. Add in 1 teaspoon ENO to each part. Stir till it bubbles.
5. Prepare the steamer. Once the water starts to boil, steam the empty cups for a while. Remove from the steamer and pour the mixture into the steamed cups. Place them back on the steamer and steam till done. It will be about 15 minutes.
6. Serve with white grated coconut, preferably steamed for a few minutes. Add a bit of salt to the coconut.

Ikan Potong Cili Bawang

IKAN POTONG CILI BAWANG

Ingredients :

a few piece of fish ~ fried
2 red and green chillies ~ seeded and sliced
1 onion ~ sliced
2 cloves garlic ~ sliced
a bowl of tamarind juice
salt and sugar to taste

Method :

1. Heat the wok and add a bit of cooking oil.
2. Fry chillies, onion and garlic till fragrant.
3. Pour in the tamarind juice.
4. Add salt and sugar to taste.
5. Add in the fish.
6. Once boiled, remove from heat.

Bean Sprouts

BEAN SPROUT

1. Wash and soak 2 tablespoons of Mung Bean (kacang hijau) for 2, 3 hours. 2. Rinse the seeds into a container. Spread them nicely.
3. Cover them with adequate water. Keep them in a dark place.
4. The next day, rinse the seeds twice a day, morning and evening.
5. Repeat the same procedure for 4 to 5 days until they are ready to harvest

Baked Bean Chicken

BAKED BEAN CHICKEN

Ingredients :

1 can baked bean
300g chicken fillet ~ diced
3 tablespoons oil
3 tablespoons tomato sauce
1 onion ~ sliced
2 cloves garlic ~ chopped
3 red chillies ~ chopped salt to taste sugar to taste
1 bunch corriander leaves ~ chopped
fried potatos if prefer

Method :

1. Heat oil and put in the chopped garlic and sliced onion. Fry till fragrant.
2. Add in diced chicken fillets. Put the lid on to let the meat to cook faster.
3. Add in tomato sause.
4. Pour the baked beans and mix well.
5. Sprinkle with chopped coriander leaves and remove from heat.
6. Serve with toast, garlic bread or rice.

Note : Instead of chicken, I used Ayamas Koktel Sosej.

Orange Cake

ORANGE CAKE

Ingredients :

125g butter
125g margarine
250g sugar
5 eggs
1 teaspoon orange emulco/paste
grated orange rind
200 g self raising flour
65 g superfine flour
1 teaspoon baking powder
1 teaspoon salt

Method :

1. Sift both flour, baking powder and salt. Set aside.
2. Cream butter, margarine and sugar. Add in eggs, one at a time.
3. Pour in the orange emulco or orange paste and add in grated orange rind. Mix well.
4. Fold in the sifted dry ingredients.
5. Bake in a preheated oven at 180 C for 40 - 45 minutes.

Note :
The cake is slightly dry, so in case I were to try this recipe again, I'd add either milk or orange juice...just my suggestion though....

Strawberry Bread



STRAWBERRY BREAD

Ingredients :

(A)

320g bread flour
80g plain flour
50g sugar
1 teaspoon salt
1 tablespoon milk powder
1 tablespoon instant yeast

(B)

2 egg yolks
210ml water
(C)

35g butter

(D)

Some strawberry jam
*80g chopped dried apricots
*80g chopped prunes

(* I substituted both ingredients with raisins, green cherries and red cherries)

Method :

1. Mix (A) till well blended. Add (B) and knead to form a dough.
2. Add (C) and continue to knead to form a smooth and soft dough.
3. Let it prove for 50 - 60 minutes or till it doubles in size.
4. Divide dough into 2 equal portions and mould them into balls. Make 2 loaves.
5. Leave them to rest for 10 minutes, then roll them into rectangles (L 30cm x W 20cm).
6. Spread them with strawberry jam, sprinkle with chopped dried apricots and prunes then roll them up like a Swiss Roll, about 30 cm long.
7.Cut into 8 pieces. Put them into a round 20 cm diameter baking pan, greased and lined with greaseproof paper.
8. Leave to prove for 45 minutes or till they double in size.
9. Brush with egg wash and sprinkle some extra chopped driend apricots and prunes on top.
10. Bake in a preheated oven at 175 C on a low shelf for 25 - 30 minutes.
11. Remove from the baking pan immediately when baked and glaze with apricot gel. Serve.

Peach Cheese Cake

PEACH CHEESE CAKE

Preparation time : 1 hour

Ingredients :

Base
20pcs Marie biscuit
150g butter

Filling
2 bars (500g) Philadelphia Cream Cheese
1 cup sugar
1 teaspoon vanilla essence 3 peach halves ~ diced

Method :

Base
1. Crush the biscuit. If you like it fine, then roll using a rolling pin.
2. Add in butter and mix well. Mixture must not be too dry or too wet.
3. Line the tray with aluminium foil. Press the base onto the aluminium foil.
4. Put in the fridge while preparing the filling. 5. Boil the water in the steamer.

Filling
1. Beat Philadelphia Cream Cheese.
2. Add in sugar. If you prefer sweet, you can add more sugar, ex 1 mug instead of 1 cup.
3. Add in vanilla essence. Mix well.
4. Add in the diced peaches.
5. Pour the mixture onto the base.
6. Cover the baking pan with aluminium foil.
7. Steam for 45 minutes.
8. Remove from heat and let it cool. Keep in the fridge for at least 2 hours before cutting. The longer the better.
9. Enjoy!

Note :
1. I don't have Marie biscuits, so I just used whatever biscuit available.
2. I made using only 1 bar of Philadelphia because that's the only bar available in the freezer.
3. I didn't add more sugar. I used 1 cup.
4. I put extra peaches to give it a more tangy taste.
5. Just in case your steamer ran out of water while steaming, add HOT water.
