Chicken Floss Bun

Ingredients :

135ml fresh milk (I used Dutch Lady Full Cream)
35g caster sugar
1/2 teaspoon salt
1/2 egg, lightly beaten
1 teaspoon instant dried yeast (I used Saf Instant)
250g high protein flour - sifted
30g margarine - softened

Filling :
Cold butter - diced

Topping :
1 tablespoon mayonaise
1 tablespoon condensed milk
Chicken Floss



Breadmaker Method :

1. Pour the fresh milk into the Breadmaker pan with the hook attached.
2. Add sugar, salt, egg. Sprinkle the yeast on top.
3. Add in the flour. Place the pan into the Breadmaker machine. Turn on to the dough setting. For my Empress Breadmaker from Cosway I used the number 13 setting.
4. After about 3 minutes or till the dough is just incorporated, add in the soften margarine and leave the Bread maker to do it's job. The process will takes about 1 1/2 hour.
5. Once done, remove the dough out of the pan and onto your working area. Divide the dough into 25g balls. Leave covered with damp clean cloth for 10 minutes.
6. Flatten each dough and place a dice of butter in the middle. Cover it nicely and place it in a papercup and arrange it in a tray. Leave to rise till double the size. Brush with a bit of milk powder and water mixture.
7. Bake in a preheated oven at 180 C for 25 minutes or till golden brown. Remove from oven.
8. Mix the mayonaise and condensed milk together. Brush the mixture on top of the buns and sprinkle with enough chicken floss.
9. Ready to serve. Enjoy!

Eggless Donut Muffins

Ingredients :

1 cup flour
1 teaspoon baking powder
1/4 teaspoon ground nutmeg
1/2 cup caster sugar
1/4 cup melted butter
1/2 cup fresh milk (I used Dutch Lady Full Cream Milk)
3 tablespoons plain yogurt

For coating :

1/4 cup melted butter
1/2 cup caster sugar
1 teaspoon ground cinnamon (add more if you prefer stronger cinnamon taste)

Method :

1. Sift flour, baking powder and ground nutmeg into a big bowl. Set aside.
2. Mix together sugar, melted butter, fresh milk and plain yogurt. Stir to mix well.
3. Pour the wet ingredients into the dry ingredients. Cut and fold but make sure you do not overmix it.
4. Spoon into the prepared tins lined with papercups. For me, I had used the silicone moulds, so no papercups are needed. And no greasing too! I just love the silicone cups!
5. Fill the cups to 3/4 full.
6. Bake in a preheated oven at 180 C for 20 t0 25 minutes, depending on your oven.
7. Remove from the oven and let it cool for at least 5 minutes.
8. Meanwhile prepare the coating. Mix together the caster sugar and ground cinnamon.
9. Dip the muffins into the melted butter and roll them in the mixture of caster sugar and cinnamon.
10. Ready to serve. Enjoy!

Daging Masak Kicap Pedas

DAGING MASAK KICAP PEDAS

Ingredients :

2 medium potatoes ~ cleaned, sliced thinly and fry. Set aside.
cooking oil
1 clove garlic - minced
2 inch ginger - slice thinly
2 tablespoons chillie paste
400 g topside beef ~ sliced thinly
3 tablespoon Kicap Pedas Mahsuri
1 tablespoon tomato ketchup
1/2 cup water
1 fresh red chillie
1/2 green capsicum
1 fresh tomato
1/2 Holland onion ~ cut into 1/2. Then slice thickly.

Method :

1. In a skillet, heat a bit of oil. Add in minced garlic and sliced ginger.
2. Add in the chillie paste. Stir till fragrant then add in sliced beef.
3. Once the beef is tender, add in Kicap Pedas, tomato ketchup dan water.
4. Add in fresh chillie, green capsicum and tomato.
5. Add salt and sugar if necessary. Then finally add in the sliced onions.
6. Remove from heat and ready to serve with plain white rice.

Chocolate Sponge Cake (Sis Juncupcakekasih)



CHOCOLATE SPONGE CAKE

Ingredients :

A:

250 g eggs
125 g caster sugar
110 g cake flour
15 g cocoa powder
50 ml fresh milk
15 g ovallete
65 g corn oil

B:

1 tsp vanilla essence
65 g corn oil

Method :

1. Line and grease 9" cake tin.
2. Preheat oven at 180°c
3. In a mixer whisk at high speed all the ingredients A. Mixture should be thick and fluffly
3. Turn to low speed and add in ingredients B and mix until just combined.
4. Pour batter into cake tin and bake for 35 - 40 min.
5. Invert cake for 5 min before turning over to cool completely.
6. Slice cake into two.
7. Spread the frosting and add on fresh fruits or anything to your liking on top.




Note :

1. I used a three 6 inch pan to do the cake. Makes a one tall cake, huhuhu... luckily it stayed intact by the time it reached it's destination. Hahaha....

Soft White Rolls

Ingredients :

250g bread flour
30g skimmed milk powder
30g butter
20g sugar
200g whole milk
3g salt
3g dry yeast

Method :

1. Knead everything together and proof until double in size.
2. Punch out gas and cut into 10 even balls of dough. Leave to rest for 15mins.
3. Shape the dough into round balls. Proof until about double in size.
4. Brush the top of the rolls with mixture of a teaspoon milk powder and a bit of water.
5. Bake in a preheated oven at 180 C for 20 minutes.
6. I brush with a bit of margarine once the rolls were out of the oven, hence the yellowish colour.

Kuih Lompang

Ingredients :

1/2 cup soft brown sugar (gula merah)
1/2 cup granulated sugar (gula pasir)
2 cups water
3 pieces screwpine leaves
1 1/2 cups rice flour
1 tablespoon tapioca flour
1 teaspoon limewater (air kapur)

Topping :

Freshly grated coconut (just the white part)
a pinch of salt
1 piece screwpine leaf

Mix all the ingredients together and steam for 5 minutes. Remove the screwpine leaf and ready to use.

Method :

1. In a pot, add soft brown sugar, granulated sugar, screwpine leaves and 1 cup of water. Bring to boil until sugar has dissolved complete. Put through a strainer and leave to cool.
2. Into a bowl, sift together rice flour and tapioca flour. Add limewater and 1 cup of water into the dry ingredients. Stir.
3. Pour in the cooled syrup and stir to mix well.
4. Prepare the steamer. Arrange the small cups in the steamer and steam for about 5 minutes.
5. Fill the cups with the prepared batter. Place them back on the steamer and steam for 10 minutes.
6. Remove from heat and leave to cool.
7. Remove the kuih using a spoon and top it with the grated coconut. Enjoy!

Jackfruit Fritters

Ada seorang gadis menyewa rumah bersebelahan dengan rumah seorang ibu miskin dengan 2 anak.Satu malam tiba-tiba bekalan elektrik terputus. Dengan bantuan cahaya handphone, gadis itu ke dapur mahu mengambil lilin, tiba-tiba ada yg mengetuk pintu. Ternyata seorang anak miskin yang disebelah rumahnya.

Anak itu bertanya dengan risau : "Kakak, ada lilin tidak?"
Gadis itu berfikir : "JANGAN PINJAMKAN" nanti jadi satu kebiasaan untuk terus-terusan meminta.
Maka si gadis menjawab : "TIDAK ADA!!".
Lalu si anak miskin berkata riang : "Saya sudah agak kakak tidak ada lilin, ini ada 2 lilin saya bawakan untuk kakak. Kami khuatir kerana kakak tinggal sendirian dan tidak ada lilin." Si gadis merasa bersalah, dalam linangan airmata, dia memeluk anak kecil itu erat-erat.

PENGAJARAN BUAT KITA.....

Jangan menilai keburukan orang lain hanya kerana mereka kelihatan MISKIN / TIDAK MAMPU. Ingat! kekayaan tidak bergantung seberapa banyak yang kita PUNYA, tetapi seberapa kita MAMPU untuk BERBAHAGI kepada mereka yang TIDAK MAMPU. Miskin bukan bererti tidak PUNYA APA APA dan KAYA bukan bererti PUNYA SEGALANYA.

Hindarkan sikap buruk sangka...bersangka baik senantiasa...

JACKFRUIT FRITTERS

Ingredients :

jackfruits - sliced thinly
1 1/2 cups flour
1 tablespoon milk powder
1/2 teaspoon baking powder
3 tablespoons sugar (depends on the sweetness of your jackfruits)
1/4 teaspoon salt
enough water
enough oil for frying


Method :

1. Sift flour and baking powder.
2. Add jackfruit, sugar, salt and milk powder. Mix well.
3. Add water. Mixture must neither be too soft nor too hard.
4. Heat oil and spoon a spoonful of batter gently into the oil.
5. Fry till golden brown.
6. Remove from oil, onto a kitchen towel. Ready to serve.

Buttermilk Banana Blueberry Bread (oven baked and Airfried)


BUTTERMILK BANANA BLUEBERRY BREAD

Ingredients :

1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, at room temperature
1 cup sugar
2 large eggs
1/4 cup buttermilk
1/2 teaspoon vanilla extract
3 ripe bananas, mashed
1 cup blueberries

Credit to my hubby's nephew for this photo. I gave them these to try..


Method :

1. Preheat oven to 350 degrees F.
2. Lightly coat four 5 3/4-inch mini loaf pans with nonstick spray.
3. In a large bowl, combine flour, baking powder, baking soda and salt.
4. In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium-high until light and fluffy, about 2-3 minutes.
5, Beat in eggs, buttermilk and vanilla until well combined.
6. Beat in bananas until well combined.
7. Gradually add flour mixture to the sugar mixture at low speed, beating just until incorporated.
8. Add blueberries and gently toss to combine.
9. Scoop the batter evenly into the loaf pans.
10. Place into oven and bake for 30-35 minutes, or until a tester inserted in the center comes out clean.
11. Remove from oven and let cool for 15 minutes before inverting the cake onto a wire rack.



Baking in Phillips Airfryer :

Set the temperature to 160 C and turn on the Airfryer to 10 minutes. When the light indicator goes off, remove the Airfryer basket and place the baking pan into the basket. Place it back into the Airfryer and turn the timing knob to 20 minutes. After 20 minutes, remove the basket from the Airfryer. Cover the cake pan with a piece of aluminium foil. Shiny side down. Place it back in the Airfryer and set to another 5 minutes or so. When the timer goes off. Just leave the cake in the airfryer for another 5 minutes before removing to cool on a wire rack.

Garlic Bread

Ingredients :

1 1/2 tablespoons margarine (I used Planta Margarine)
2 cloves garlic - minced
A dash of dried oregano

Method :

1. Slice the french baguettes. Make sure do not cut through. Place it on an aluminium foil.
2. In a small bowl, mix margarine, garlic and dried oregano.
3. Spread the mixture onto each sides of the sliced baguettes.
4. Wrap the baguettes.
5. Airfry the garlic bread for 8 minutes on 160 C. Remove from the Airfryer and open the foil. Airfry for another 2 minutes or so. Ready to serve.

* Note : I used Phillips Airfryer. You can also bake these in the oven.

Homemade French Baguettes

T.H.E R.A.M.B.L.I.N.G.S

Yesterday, I had to hear to my daughter's nagging for a number of reasons.

1. Ma, why don't you rest? Why are you still in the kitchen? You are making me tired just by looking at you working non-stop.
2. Ma, why are you continuously experimenting new recipes? And why do they have to be so yummy?
3. Ma, why are you stuffing me with food? I think I am going to be fat if I stay longer in this house. THIS IS TORTURE!
4. Ma.... eat now and stop playing with your phone! (this was when her patience is running thin, waiting for me to eat and mama was busy trying to update her Instagram! Hahaha)

That was what I had to hear yesterday. And what did I do....continue baking and cooking! Hahaha...

Since her toothache is healing well after the minor surgery she had last Tuesday, I had prepared soft diet for her. Yesterday, I made these baguettes for her (Miss Bready). Made these baguettes into garlic bread to be enjoyed with homemade mushroom soup. Recipe to follow later on. I was in the kitchen doing the dishes when she had her dinner with her dad. And I could hear the umppssss and ahhhsss from the dining. And finally, she said... ma, it's delicious. Thank you!

HOMEMADE FRENCH BAGUETTES

Ingredients :

3/4 cup lukewarm water
1 tablespoon honey
1 teaspoon salt
5g instant dried yeast (I used Saf Instant)
2 cups all-purpose flour, plus more for dusting
1 teaspoon margarine (I added)

Breadmaker (BM) method :

1. Pour lukewarm water into the BM pan. Add honey and salt. Sprinkle the instant dried yeast on top.
2. Add flour. Place the BM pan into the breadmaker. Set to dough setting and turn on the BM.
3. Once the dough is just incorporated, add in margarine. Continue kneading and check the dough. If it is sticky, then add enough flour till you get a soft and smooth dough.
4. After the BM has finished doing it's job, which will roughly takes about 1 1/2 hour (kneading and proving), remove the dough from the BM onto a floured surface.
5. Divide the dough into two portions. Let them rest for 10 minutes.
6. Shape into 2 baguettes. Place on a baking tray. Cover with damp clean cloth and allow the dough to double in size.
7. Make deep diagonal slits 1/2 inch deep on top of the baguettes.
8. Bake in a preheated oven at 180 c for 20 minutes until golden brown.

Sunnyside Egg

Haiiii.... I'm back. Was away for a long weekend. We went back to Melaka, our hometown. Yeah you read right, OUR. Both hubby and me are from Melaka Bandaraya Bersejarah. Melaka forever! Hahaha... 

The two of us had a swell time in Melaka. It's like being tourists at our own hometown. We visited so many places and do lots of stuffs together. If only our kids were with us, we would have enjoyed it more. Maybe next time okay kids, though we miss both of you loads... Hmmm can't wait for the next get together, just the four of us..... #feelingexcitedgiler! Hahaha... (semenjak berIG ni, dok main hashtag semanjang!)

Anyway, for this entry, I will just post something VERY SIMPLE YET DELICOUS to make for breakfast. And yes.... nice plate! Hahaha... I get that just too often... 


All you need is two sausages of your choice. I used Ramly Beef Frankfurter. 1 egg and a pinch of chillie flakes (or paprika).

Boil 1 1/2 cup water in a small pot. Thaw the sausages. Cut one side of the sausage. Bend it carefully and join both the sausages using a clean toothpick to create a ring shape. Place in the pot of boiling water for 3 minutes or so. Remove the sausage ring and place on a small saucepan on medium heat. 

Pour 2 teaspoons of olive oil into the ring. Carefully crack an egg into the ring. Sprinkle some chilli flakes or paprika in the middle. Cover the small pan till done.

Ready to serve and enjoy!
