Baked Donuts

I've received a few comments in my entries, saying that the photos in my blog do take time to appear. I am not so sure about this, because I have not come across this problem when I open my blog at home. So I would be grateful if you could at least let me know, if you are facing similar problems like my other visitors. Perhaps then, I could figure out how to overcome the problem. Thank you.


Came across this recipe at Gert's kitchen quite sometime back but only tried it out last Monday. It was soft and yummy. Thank you Gert for sharing the recipe with us. Allow me to post it here for the reading pleasure of my dear guests.

Baked Donuts

Ingredients :

1 cup of flour
1/4 cup of sugar
3/4 teaspoon of baking powder
3/4 teaspoon of baking soda
pinch of salt
1 egg
227g plain yogurt
1 tablespoon melted butter
1 teaspoon vanilla
2 teaspoon of lemon juice

castor sugar for dusting

Method :

1. Pre-heat the oven to 180 degree C and coat the donut pan with non-stick spray and dust it with some powder sugar.
2. In a small bowl, combine all the dry ingredients.
3. Combine egg, yogurt, melted butter, lemon juice and vanilla until well mix.
4. Stir in dry ingredients into the egg mixture until well combined. Do not over mixed.
5. Divide the batter evenly into the baking pan and bake for 12-15 min or until golden brown.
6. Cool in pan for 5 min before removing it into the cool rack.
7. Roll it with castor sugar or glazes.

Mama D's Italian Bread

Last Sunday, I received a text message in my handphone from my dearest neighbour, Saerah. She had asked me if I am at home. And luckily I was because, ten minutes after that, my door bell rang. The always cheerful Tini was at the gate, bringing 'ole-ole' from Madamme Sae. Mmmm something smell nice! Tha dhaaa.......

When I posted the Lemon Rosemary Chicken on my Facebook wall, I received quite a number of comments. Among them, ideas as how I can enjoy the chicken besides eating it just like that. And I fell for one....Chicken Sandwich.

I remembered Fatin always brag about the Italian Bread from Subway. So I think, I'll challenge myself and bake my own Italian Bread. Went on the internet and settled for this recipe from Allrecipes dot Com. I will post the recipe here with a slight addition. Here goes nothing.....

Ingredients :

1 1/2 cups warm water (110 degrees F/45 degrees C)
1 teaspoon white sugar
1/2 tablespoon salt
1/2 tablespoon active dry yeast
3 1/2 cups all-purpose flour
1 teaspoon bread softener (I added)
2 tablespoons olive oil (I added)

Method : (using Bread Maker)

1. Pour the warm water into the bread maker pan. Add sugar and salt.
2. Top it with flour. Add active dry yeast and bread softener.
3. Set the breadmaker to Dough function.
4. Once the dough is just combined, add in olive oil and leave the breadmaker to continue doing it's job. This process will take about 1 1/2 hour including prooving.
5. Divide the dough into 5 equal portions. Form each into a ball and let it rest for another 10 minutes.
6. Take a dough and roll flat. Roll like a swiss roll and place on a baking tray.
7. Cover the buns and let it rise until double in size (it takes another 30-40 minutes).
8. Mist with a bit of water and bake in a preheated oven at 200 C for 20 to 25 minutes.
9. Once out of the oven, brush with a bit of margarine or butter.

With the chicken and the bun, this was what I had for breakfast... and I had a happy full tummy that last me till tea time!

Roasted Blackpepper Chicken

Made this for kid's dinner last Friday and I got a very positive feedback from the two of them. Alhamdulillah. Thank you Noor for sharing this simple yet yummy recipe with us. Allow me to copy and paste it here for the reading pleasure of others.

Roasted Blackpepper Chicken

Ingredients :

1 whole chicken, medium size - cleaned
2 cloves garlic - minced
3 tablespoons sweet soy sauce
3 tablespoons oyster sauce
2 tablespoons blackpepper sauce
2 - 3 tablespoons honey
blackpepper corns - crushed
1 tablespoon butter
salt to taste

Method :

1. Mix the above ingredients.
2. Rub the chicken inside out with the above paste. Place it in a baking tray or casserole.
3. Marinate for at least 3 hours.
4. Roast the chicken in the oven for 1 hour or till golden brown and done. Oven temperature, 170 Celcius. I roasted my chicken on the stove using the Korea King Multi Cooker from Cosway.
5. Remove the chicken and keep the juice.

GRAVY : (I didn't do this)

Add 1 cup or water or more into the casserole. Stir. Pour the mixture into a pot. Add 2 teaspoons flour and simmer on slow fire till thickens. Add salt to taste or chicken granules. Remove from heat, pour onto the roasted chicken and ready to serve.

1 ekor ayam saiz sederhana
2 ulas bawang putih - ditumbuk halus
3 sdb kicap manis
3 sdb sos tiram
2 sdb sos lada hitam
2-3 sdb madu - boleh ganti dgn gula
lada hitam biji - ditumbuk kasar secukupnya
1 sdb mentega
garam secukupnya

Cara :

Cuci ayam dan toskan.
Perap ayam dgn semua bahan diatas selama sekurang2nya 3 jam
Panggang dlm oven pd suhu 170C selama 1 jam atau lebih bergantung kpd saiz ayam
Bila dah masak angkat ayam, simpan jus dlm loyang pembakar.


Cara :

1. Masukkan 1 cawan air atau secukupnya ke dalam loyang pembakar ayam tadi. Kacau sikit.
2. Pindahkan campuran air tadi ke dalam periuk.
3. Tambah tepung gandum 2 sudu kecil, kacau atas api perlahan sehingga agak pekat. Rasakan garam secukupnya. Jika suka boleh masukkan serbuk ayam ssedikit tapi akak tak letak pun.
4. Angkat dan sedia utk diguna.

Seri Muka

Seri Muka

Ingredients :

Bottom layer

300g glutinous rice - soak for 20 minutes
300 ml coconut milk
1 teaspoon salt

Method :

Mix together the above ingredients and pour into a baking tin, layered with cling film. Steam for 15 minutes. Cover the steamer's lid with towel to avoid water dripping into the tin.

Top Layer

125g sugar
50g custard powder
400ml coconut milk
1 large egg
a bit of pandan paste
1/8 lime water
1/4 teaspoon salt
green food coloring

Method :

1. Mix all the ingredients together except sugar. Stir to mix and put through a sieve. Add sugar and cook on medium heat till slightly thickens (texture similar to condensed milk)
2. Pour the mixture onto the bottom layer and steam for another 20 minutes.
3. Remove from steam and leave to cool.
4. Cut using a plastic knife and ready to serve.

Seri Muka

Bahan-bahan :

Lapisan Bawah

300g beras pulut - rendam dulu 20 minit
300 ml santan
1 sudu kecik garam

Kaedah penyediaan :

Satukan semua bahan-bahan dan kukus selama 15 minit (tutup penutup pengukus dengan kain/towel) - loyang dialas dengan 'cling wrap' supaya senang nak keluarkan dari loyang bila dah masak. Tutup loyang dengan aluminium foil, jadi tidak perlulah membungkus penutup kukus dengan kain/tuala

Lapisan Atas

125g gula
50g tepung kastard
400ml santan
1 biji telur (gred A)
sedikit paste pandan
1/8 sudu kecil air abu (mama gantikan dengan air kapur)
1/4 sudu kecil garam
sedikit pewarna hijau

Cara-cara :

1. Satukan semua bahan-bahan kecuali gula. Kacau sebati dan tapiskan dalam periuk.
2. Masukkan gula dan masak atas api sehingga naik wap (pekat sedikit macam susu pekat tu)
3. Tuang ke atas lapisan pulut tadi dan kukus selama 30 minit.
4. Keluarkan dari pengukus dan sejukkan dulu sebelum dipotong. Kuih kena betul-betul sejuk, barulah dipotong menggunakan pisau plastik. Sedia untuk dihidangkan.

Surprise Curry Bun

When I published my Chicken Curry photo on my facebook, Mamazieza had put her kind comment on that particular entry. She had said, why not put the curry in a bun. That rings a bell because I've came across this kind of recipe before. Only thing is, I can't recall where I've seen this recipe. So, I just have to 'do' it as I please. And I remembered coming across Gert's recipe that I've been wanting to try for quite sometime.

I copied down the recipe and set to work. Oh oh.... I ran out of bread flour. Well, then I'll chuck in something else... hahaha.. sorry Gert, I did quite a few changes to the recipe you posted actually, according to what's available in my larder. And this was what I came out with. Thank you Mamazieza for inspiring me and Gert for the recipe. May God bless you both.

Surprise Curry Bun

Adapted from : Gert's Japanese-Style Sweet Bun Dough

Ingredients :

250g bread flour
225g superfine flour
35g milk powder
55g caster sugar
3/4 teaspoon salt
2 1/2 teaspoons instant dry yeast
1 egg, lightly beaten
170ml (approx.) lukewarm water – adjust according
40g butter, cubed

1 egg + a bit of fresh milk (for egg wash the buns)
a bit of butter for glazing

Method :

1. Fit the mixer with the dough hook attachment. Sift bread flour, plain flour, milk powder, caster sugar and salt the mixing bowl. Add in the yeast and mix well. Add in the water roux and beaten egg. Turn on the mixer and slowly add in the lukewarm water until the dough form into a nice ball of dough. (You might not need all the water. I used only 130 ml of it)
2. Continue to knead for 10 minutes and add in the butter. Continue to knead until all the butter is incorporated into the dough and the dough is smooth and elastic. Take the dough out from the mixing bowl and give it a final few kneading by hand. Form it into a round ball and let it to rise until double in size in a large greased bowl. Cover the bowl with a wet towel or cling wrap (It took me an hour to proof the dough but it all depend on the weather and environment on the day you make the bread)
3. Punch down the dough gives it a few knead and divide the dough into 3 equal portions. Form each into a ball and let it rest for another 10 minutes.
4. Wrap the chicken curry in a foil and shape it into a ball.
5. Take a dough and roll flat. Place the foil in the middle and cover with dough. Cover the buns and let it rise until double in size (it takes another 30-40 min) Brush the buns with some egg wash.
6. Bake in a pre-heated oven at 200 C 15-20 minutes or until golden brown.
7. Once out of the oven, brush with a bit of butter. Carefully cut the bun and ready to serve.

Bread Maker method :

1. Pour water, egg, sugar and salt into the bread maker pan. Top it with both flours, milk powder, yeast and water roux.
2. Set the breadmaker to Dough function.
3. Once the dough is just combined, add in butter and leave the Breadmaker to continue doing it's job. This process will take about 1 1/2 hour including prooving.
4. Divide the dough into 3 equal portions. Form each into a ball and let it rest for another 10 minutes.
5. Wrap the chicken curry in a foil and shape it into a ball.
6. Take a dough and roll flat. Place the foil in the middle and cover with dough. Cover the buns and let it rise until double in size (it takes another 30-40 min) Brush the buns with some egg wash.
7. Bake in a pre-heated oven at 200 C 15-20 minutes or until golden brown.
8. Once out of the oven, brush with a bit of butter. Carefully cut the bun and ready to serve.

Water-Roux Paste/Tang Zhong :

25g (just under 2 tbsp) bread flour
125ml (1/2 cup) water

Preparation for the Water-Roux :

1. Mix the flour and water in a small saucepan. . Cook over low to medium heat, stirring continuously until it reaches 65ºC. It should have thickened to a paste at this stage, which is when you stir you can see the bottom of the pan. Remove from heat; place a cling film over the paste and leave until lukewarm, or room temperature, before using. (Alternatively if you don’t have a thermometer, cook as before until it starts to thicken, then continue to cook for about 1 more minute before removing from heat.)

Note: This water roux can be kept in an airtight container after cooling in the refrigerator for 1 day if not used immediately. However DO NOT USE if it turns grey in color, that means it has gone bad.

Fettucine Alfredo Portobello


Salaam. I was shocked to receive the sad news of Mat Gebu's brother who passed away peacefully on the morning of 8th December, 2010 from Mamazieza. May ALLAH give him eternal rest and may his soul rest in peace! To Mat and his family, please accept our condolences and be strong.


Fettucine Alfredo Portobello


Ingredients :

Fettucine ~ boiled until al dente; drain
Olive oil
3 garlic ~ minced
Mixed vegetable
2 pieces beef burger ~ cut to small chunks
3 pieces beef sausages ~ sliced
1 can Prego Alfredo Portobello Spagetti Sauce
enough water
Salt to taste - if necessary

Method :

1. Heat olive oil and add in minced garlic. Fry till golden brown.
2. Add beef burger chunks and sausages. Fry till cooked.
3. Add in mixed vegetables. Stir for another 1 or 2 minutes.
4. Then pour in the Prego Alfredo Portobello Spagetti Sauce and enough water. Add salt if necessary. Mix well. Let it simmer.
5. Finally add in the boiled pasta.


Bahan-bahan :

Fettucine ~ direbus dan ditapis. Ketepikan
Minyak zaiton
3 ulas bawang putih ~ dicincang halus
Sayuran campuran
2 keping burger daging ~ dipotong dadu kecil
3 batang sosej daging ~ di potong setebal 1/2 sm
1 tin Prego Alfredo Portobello Spagetti Sauce
air secukupnya
garam jika perlu

Kaedah penyediaan :

1. Panaskan minyak zaiton dan masukkan bawang putih yang telah dicincang halus. Tumis hingga kekuningan dan naik bau.
2. Masukkan daging burger dan sosej. Goreng hingga masak.
3. Masukkan sayuran campuran dan kacau selama 1 hingga 2 minit.
4. Tuangkan sos Prego Alfredo Portobello Spagetti. Masukkan air secukupnya dan garam jika perlu. Biar merenih.
5. Masukkan fettucine yang telah direbus dan kacau sebati. Sedia untuk dihidangkan.

Came across this yummy looking good cake photo at Ayu's Blog and I just can't resist to give it a try. When the cakes were out of the oven, I had tasted the crust and at first I thought it was a bit too sweet for me. I didn't actually eat the cake until I brought an oval sized cake to my brother's house. My sis-in-law cut the cake and served to us (boleh eh cam tu...buruk siku ler plak! Hahahaha). When I tasted it, well...just forget what I had mentioned earlier ya. The cake is justtttt nice! Otherwise, hubby won't take two pieces of it! The cake was half gone in half an hour's time! Though my cake does not look as nice as Ayu's and Rima's but I don't mind as long as the taste is good.

Ingredients :

240g good quality butter
60g sugar
1/2 teaspoon salt
304g condensed milk
3 teaspoons vanilla paste
240g cake flour (I used multipurpose flour)
1 1/2 teaspoons baking powder
4 large eggs

Method :

- Sift cake flour and baking powder together. Set aside.
- Cream butter and sugar together till light and fluffy.
- Add in salt and vanilla paste and cream well.
- Pour in condensed milk and cream till well combined.
- Using the mixer on low speed, add in flour in 3 additions. Mix till batter is smooth.
- Add in eggs one at a time. Make sure it's well mixed and smooth.
- Bake at 175 degrees for 1 hour - I baked mine at 170C for 45 mins

240g mentega (mama guna majerin Planta je)
60g gula kastor
1/2 sudu kecil garam (mama tak masukkan)
304g susu pekat manis
3 sudu teh esen vanilla
240g tepung kek (mama guna tepung gandum saja)
1 1/2 sudu kecil serbuk penaik
4 biji telur (size besar)

Kaedah penyediaan :

- Ayak tepung dan baking powder. Ketepikan.
- Pukul mentega dan gula hingga kembang dan ringan.
- Masukkan garam dan esen vanilla. Pukul lagi.
- Tuangkan susu pekat manis dan kacau sebati.
- Perlahankan kelajuan mixer anda dan masukkan tepung sedikit demi sedikit hingga adunan sebati.
- Masukkan telur satu per satu dan terus memukul hingga sebati.
- Bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada 180 C selama 45 minit. Jangkamasa pembakaran mungkin berbeza bergantung kepada ketuhar anda.

My oven, My breadmaker & Step-By-Step Shaping Buns

A very good day to all....

Today, there'll be no recipe to be shared. But I will share with all of you, how do I go about shaping the buns. And also, the photos of my Bread Maker that I am using right now and my oven as well. All these are to fulfill my visitors request. Hope these photos helps.

These were the buns that I had made yesterday for the purpose of taking the step by step photos. The buns landed in 4 different houses. Alhamdulillah... hope they enjoyed eating them as much as I had enjoyed preparing the buns.

Soft Butter Bun (Channel2004)

As promised, here is the recipe for the Buns that I had showed in my facebook yesterday morning. Thanks to Noor Masri for bringing up the recipe again. I had tried this recipe long time ago when I was still in Malawi. Had made it into potato bread back then. Thanks to Channel2004 for sharing this lovely recipe with us.

Soft Butter Buns

Ingredients :

140 ml water
1 egg
30g caster sugar
1 teaspoon salt
1/2 teaspoon bread softener (I added)
250g high protein flour
50g superfine flour
2-1/2 tablespoons milk powder (I used Fernleaf)
1-1/2 teaspoon dried instant yeast
30g margarine, at room temperature
enough sausages
enough chocolate filling
red cherries and sesame seeds for decoration

For glazing :

1 egg + 1 tablespoon fresh milk
margarine - for brushing after the buns are out of the oven

Method (using bread maker) :

1. Pour water, egg, sugar, salt and bread softener into the bread maker pan. Top it with high protein flour, superfine flour, milk powder and yeast.
2. Set the breadmaker to Dough function.
3. Once the dough is just combined, add in butter and leave the Breadmaker to continue doing it's job. This process will take about 1 1/2 hour including prooving.
4. Divide the dough to 55g each and shape into small balls.
5. Let them rest for 10 minutes.
6. Ready to be shaped. Let rise until almost doubled in volume.
7. Before baking, brush the dough with egg wash.
8. Bake for 20 - 25 minutes in a preheated oven at 200 C, or until the bread is golden in color.
9. Once out of the oven, brush with a bit of margarine.
10. Let cool. Keep in an airtight container.
Soft Butter Buns

1/2 sudu kecil pelembut roti (mama tambah)
250g tepung high protein
50g tepung superfine
2-1/2 sudu besar susu tepung (mama gunakan susu tepung Fernleaf)
1-1/2 sudu kecil yis kering
30g majerin, pada suhu bilik
sosej secukupnya
Chocolate filling
Buah ceri untuk hiasan
Bijan untuk hiasan

Utk Sapuan:

1 biji telur + 1 sudu besar susu - campur
sket mentega

Kaedah penyediaan :

Campurkan semua bahan kecuali mentega dan uli sehingga membentuk doh. Masukkan mentega dan uli lagi sehingga licin dan elastik. Perap doh selama 1 jam atau sekali ganda.
Tumbuk doh dan bahagikan kepada 55g setiap satu bahagian.
Ambil satu bahagian doh, gentel memanjang dan gulung pd sosej yg telah direbus.
Susun di dalam loyang yg dilenser skit mentega.
Biarkan naik 2 kali ganda, sapu atasnya dgn campuran telur dan susu kemudian taburkan atasnya dgn keju cheddar.
Bakar pd suhu 170C selama 20 min. Bila masak sapu dgn sket mentega.

Wet Chocolate Cake & JJCM

Made this chocolate cakes for Fatin and Mak Chu when we went to visit them last Saturday. Made just half the recipe and managed to get two of these.

Ingredients :

375 gm butter
600 gm caster sugar
6 eggs
600 gm water
500 gm flour }
100 gm chocolate powder *
1 tea spoon baking powder * (* sift together )
1 tea spoon soda bicarbonate *
2 teaspoons vanilla essence (I added)

Method :

a. Beat butter and sugar till creamy.
b. Add in egg one at a time, then vanilla essence. Fold in flour and lastly water.
c. Pour into the prepared baking tins.
d. Bake in a pre-heated oven at 180 C for about 40 - 45 minutes. Baking time may differ according to your oven.

Bahan-bahan :

375 g mentega
600 g gula kastor
6 butir telur
600 g air
500 g tepung *
100 g serbuk koko *
1 sudu kecil serbuk penaik * (* ayak sekali )
1 sudu kecil soda bikarbonat *
2 sudu kecil esen vanilla (mama tambah)

Kaedah penyediaan :

1. Pukul mentega dan gula hingga kembang.
2. Masukkan telur satu per satu. Masukkan esen vanila.
3. Kaupbalikkan bahan kering yang telah diayak.
4. Masukkan air dan kacau rata. Tuang di dalam loyang yang telah dialas dengan kertas minyak.
5. Bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 180 C. Bakar selama 50 hingga 1 jam atau hingga kek masak. Jangkamasa pembakaran mungkin berbeza bergantung kepada ketuhar anda.

Simple Lunch!!

Ubi Goreng & Sambal Kicap

Ingredients :

1/2 kg tapioca (peel off the skin, washed and cut into wedges)
1 inch fresh turmeric
3 cloves garlic
2 tablespoons corriander
sea salt to taste
Enough oil for frying

Method :

1. Place the turmeric, garlic, corriander and sea salt in a mortar. Pound the ingredients to form a paste.
2. Rub the paste onto the wedges till well mixed.
3. Heat the wok and add in oil.
4. When the oil is hot, add in the tapioca and fry till golden brown.
5. Serve with sambal kicap


Ingredients :

1 clove garlic
10 bird eye chilles (less if you don't want it too hot or just substitute with fresh red chillies)
sugar to taste
sweet soya sauce to taste
salt (optional)

Method :

1. Place garlic and chillie in a mortar. Pound the ingredients to form a paste.
2. Add in sugar and soya sauce to taste. If needed, add salt.

Sambal Kicap

Bahan-bahan :

1/2 kg ubi kayu (dikupas kulit, dicuci dan dipotong bentuk baji)
1 inci kunyit hidup
3 biji bawang putih
2 sdu besar ketumbar biji
garam kasar secukup rasa
Minyak masak untuk menggoreng

Kaedah penyediaan :

1. Tumbuk kunyit hidup, bawang putih, ketumbar dan garam hingga lumat.
2. Gaul rata bersama ubi.
3. Panaskan minyak di dalam kuali dan goreng ubi hingga perang keemasan.
4. Hidang bersama sambal kicap.


Bahan-bahan :

1 biji bawang putih
10 biji cili padi (lkurangkan jika tidak mahu terlalu pedas atau gantikan sahaja dengan cili hidup)
gula secukupnya
kicap manis secukupnya
garam (jika perlu)

Kaedah penyediaan :

1. Tumbuk bawang putih dan cili padi.
2. Tambahkan gula dan kicap manis. Jika perlu, masukkan sedikit garam.
