Beef Dalca


Oh me oh my, I really took my own sweet time to update on the 'partner' of my Nasi Bukhari that day. Thousand apologies to everyone. To say that I am very busy, I don't think so because I still have time to play the Bubble Game at the end of this page! Hahaha... I always love to play games like these. Other than Bubbles, I love to play Tetris and Doctor Mario!

I first started to like these sort of games when hubby brought home the Brick Game thingy. That time, I was like 7 months pregnant with Fatin. I really got carried away playing and the game will always be by my side. Hahaha... you guys must be saying, no wonder the kids are addicted to games. But mind you, the one who is addicted to PSP, PS3 and of it's kind is Syahmi, not Fatin! So the blame is not on me! Hahahaha....

Anyway, to cut short my nonsense, let me just post the recipe that I cooked to go with the Nasi Bukhari. Whether it's the right combination or not, one thing for sure, both the rice and the gravy are no longer to be seen! Thank you Kak Liza for the lovely recipe of Dalca. I made a slight adjustment to the recipe. I used beef instead of mutton. I am sure she'll be more than willing to entertain you....


BEEF DALCA

Ingredients A :

600g topside beef
1/2 cup dhal ~ boil till soft
4 cups coconut milk (from 1/2 coconut)
3 tablespoons beef curry powder
1 tablespoon ghee (I used butter)
3 tablespoons cooking oil
salt to taste

Ingredients B : Cut to small pieces

3 potatoes
5 pieces long beans
1 carrot
4 green chillies
2 tomatoes
1 onion
2 round brinjals

Ingredients C :

4 shallots ~ sliced
2 cloves garlic ~ sliced
3 cm ginger ~ sliced
2 cm cinnamon stick
3 star anise
5 cloves
3 cardamons
3 stalks curry leaves


Method :

1. Marinate beef with beef curry for at least 1 hour.
2. Heat cooking oil and ghee/butter in a pot. Add in C and saute till fragrant.
3. Add in the marinated beef and stir well.
4. Add in enough water and leave the beef to cook.
5. Once the beef is tender, add in the coconut milk, dhall, the vegetables and salt to taste.
6. When the vegetables are soft, remove from heat.

What is my weight?


Yes I know, it's way past my bedtime but just this once (ye ke tu ma? Muahaha... diam diam sudah lerrr). I am still up and the time is showing 0.04 am. If I were Cinderella, I will be left with the ragged clothes. But that's alright, though in rags, Cinderella is always beautiful!

Ok ok mama straight to the point. I am just excited today. I managed to deco my Barbie Doll cake for hubby's cousin. She's sponsoring an event, TEKA BERAT SAYA, at her school's carnival. She had asked me to bake a cake and I, without hesitating, told her that I am going to make for her a Barbie Doll cake. Hahaha...yakin boleh je ma...hantam ja!

So here's the result! Anybody care to guess the weight? No questions asked about the cake okay or you guys will end up guessing the weight without any difficulty! Hahaha....

Nasi Bukhari


Time really flies. Without me realising it, I have been blogging for 2 years now. Yesterday was the exact date but I was pretty occupied to post an entry. Anyway, Happy Belated 2nd birthday to my Blogspot.... and thanks to all my visitors, whether you're the silent ones or the 'chatterbox' ones... I appreciate and honour each and every one of you.... thank you for your continuous support. It makes me feel that I am contributing something...no matter how tiny it is.... alhamdulillah.....

At the moment, hubby had imposed a new rule on me. I have to log off by 10.30pm and go to bed! Thanks to my culprit BP that's been showing odd readings lately! Before this, I had made that '10.30pm bedtime' rule for Syahmi, but now, I have to follow the same rules and regulations! Hahaha... maybe the idiom...What goes around comes around...is true after all... hahahaha... serves me right!

Let me just post the entry before my curfew time is up! I've tried two recipes today, for lunch but will only post one first for the time being. Thanks to Kak Liza for promoting her Nasi Bukhari the previous day. But I didn't follow her method. Instead I used Kak Noha's simple method of cooking other than plain rice. I love Kak Noha's way as it leaves very little crust. Thanks to Kak Liza for promoting and thanks to Kak Noha for the lovely method.



NASI BUKHARI
Ingredients
:

2 cups Basmathi rice ~ washed
Enough water
Salt to taste
Topside beef ~ sliced thinly and boil till soft
3 shallots ~ sliced
2 garlic ~ sliced
1/2 inch ginger ~ sliced thinly
1 big fresh tomato ~ puréed
2 tablespoons Bukhari powder (I used Faiza)
Cooking oil
1 tablespoon butter


Method :

1. Prepare the rice like how you prepare your plain rice.
2. In a wok, heat cooking oil and add in the butter. When the butter melts, add in all the sliced shallots, garlic and ginger. Sauté until fragrant.
3. Add Bukhari Powder and tomato puree, sauté until it turns oily
4. Add in the water or beef broth. Bring to boil and salt to taste.
5. Pour into the rice when the water starts to bubble.
6. Stir and add in the beef. Let it cook.
7. Serve with pickles and salad.

At the same time, I made these for Roha as a surprise for her dearest hubby on their 5th anniversary. Hope you like them Roha and thanks for letting me have the pleasure of attempting to deco the cupcakes using edible image. I do hope you guys will enjoy the cakes as much as I enjoyed preparing them for you. HAPPY 5th ANNIVERSARY and may there be many more happy years of togetherness for both of you. Amin.....

Black pepper chicken

So many things had happened since the last time I updated this page. Chea chea chea...baik punya excuse kan! Hehehe.... Fatin was home for a 5 days homevisit since last Wednesday. When we went to pick her up, I brought these cupcakes for Fatin's best friend Farahin, for her birthday. Hope she likes it.


On Thursday, I took the kids to the cinema, just for a treat... on me! And that Thursday, I considered to be my best achievement day! Hahaha... poyo betul mama ni!

First achievement : I learnt how to go into the Golden Screen Cinema website . I was pretty excited then.
Second achievement : I drove to IOI Mall just with the kids. That was my first time driving to IOI Mall.
Third achievement : Managed to park the car at IOI Mall car park by reverse parking....Syahmi is my guide actually.. hahaha.. no tips though! Ahakss...
Fourth achievement : Clever to purchase the show tickets at the cinema
Fifth achievement : Dare to wade through the traffic jam at Puchong area.
Sixth and biggest achievement : Managed to drive home safely without taking any wrong turns! Hahaha....

Well to some, the above can't be considered as ACHIEVEMENTS but to me, they were. At least I am a step better than I was before. Bravo to me! Hahaha.....Fatin wanted to watch Harry Potter but when we reached there, it was 3.20 pm and the show had already started 20 minutes. So we had to settle for Transformers which was much enjoyed by the kids and me.

On Friday, I made these cupcakes for Ayu 's cute baby Amjad's birthday. Happy birthday big boy!


Saturday was not my day at all. I was down with headache. My blood pressure was haywire. The systolic reading was quite high while the diastolic was slightly low. It really makes me feel wobbly. That night, Fatin wanted to dine out at Chops N Steak in Puchong. I don't have the heart to say no to her though the head is throbbing. I just ate mushroom soup and a bit of french fries and a bit of onion rings. But we made the right choice to go there that night as they will be closing that outlet the next day. We like the food there and the price are very reasonable. I wish them all the best in their other outlets. Keep up the tasty quality!

Sunday, we sent Fatin back to her hostel. Stopped at the T.A.I.L.O.R shop, then went straight home. What happened at the T.A.I.L.O.R shop? InsyaAllah will write later on.... hahaha....

So that's about all, and till today, I am still trying to stabilize my blood pressure reading....

Recipe to share today is a recipe from one of Kak Liza's book. Don't worry, I had seek Kak Liza's permission to publish the recipe here. Though I don't really have to buy books as I can always surf her blog, but I prefer to get the whole set. Why? We can't surf the net while lying down on our bed right? And I like to flip thorough books and magazines before going to bed. And what's more, we must support Kak Liza's effort.

Ok ok..here's the yummy recipe and very easy to prepare...do give it a try...


BLACK PEPPER CHICKEN
Source : Senangnya Memasak with Chef Hanieliza

Ingredients A :

500g chicken
1 carrot ~ cut to small pieces
1 tablespoon thick soya sauce
2 tablespoon oyster sauce
1 tablespoon cornflour/maziena mixed with 1/2 cup water
2 tablespoons blackpepper ~ crushed
3 tablespoon cooking oil
salt to taste

Ingredients B ~ to be sliced :

5 shallots
2 garlic
1 inch ginger
1 onion

Ingredients C :

2 sprigs spring onions
2 sprigs Chinese Celery
1 tomato ~ quartered
2 fresh red chillies


Method :

1. Remove the chicken skin, washed, rinse and cut to small pieces.
2. Heat oil in a wok and add in ingredients B. Saute till soft and fragrant.
3. Add in chicken and blackpepper. Stir. Leave chicken to cook.
4. Add in cornflour mixture, dark soya sauce and oyster sauce.
5. Leave to cook till the gravy thickens. Add in ingredients C and stir to mix.
6. Serve with rice or bread.

Blueberry Cheese Tart


I don't feel like writing much today. I am just in such a L.A.Z.Y mode today. Now it's 11.30 am and I still haven't eaten my breakfast. I'm just feeling lazy to eat. Oh no, don't worry, Syahmi went to school with breakfast, a bowl of cereals. That's what he takes every morning. And Mak, well, she's not around. She's at my brother's house till tomorrow. So I think, I might as well enjoy the 'lazy feeling' to the most, while I can... hahaha....

Let me just share with you this Blueberry Cheese Tart recipe that I've tried last Saturday for Mak Chu to bring back. It's the combination of two recipes. Thank you to both of them.


PASTRY

Ingredients :

160g butter
80g castor sugar
1 teaspoon vanilla
a pinch of salt
1/2 egg
250g flour


Method :

1. Beat butter and castor sugar till well combined. Add in egg, vanilla and salt.
2. Add in flour and mix till a soft dough is formed.
3. Keep in the regfrigerator for about 30 minutes.
4. Press into the tart shells moulds and prick some holes onto the pastry.
5. Bake for 20 minutes or until golden brown in a preheated oven at 180 C

FILLING

Ingredients :

250g Philadelphia Cream Cheese
60g castor sugar
20g butter
1 egg (grade B)

Method :

1. Cream the above ingredients. Place in the piping bag.
2. Pipe the filling onto the tart shells.
3. Place a bit of blueberry pie filling on top and using a toothpick, make a pattern on top.
4. Return to the oven and bake for another 10 minutes, using the bottom heat only.

Mee Rebus Mudah (CMG)


Many of you who had been following my websites, especially my Fotopage will realise how much I have NOT been writing over these past two years period. My apologies for that matter. I realised it myself but nowadays, the mind is pretty occupied with other things that it left so little space for the idea to make it's way out. I can still remember when I was in Malawi. Ideas kept pouring into my brain until at times I feel like I can't catch up with it's pace. It will just pop into the head at any time, while I'm doing my morning walks, or while I'm cleaning the house, or while cooking... it was just so easy. And when I start writing, I don't feel like stopping, doesn't matter if the tenses are wrong or right....langgar je!!! The most important thing to me is my own satisfaction.

I never regreted starting the Fotopage and the blog. Infact, I am so thankful to Kak Liza for persuading me to start blogging. Now that I am back in Malaysia, I can still recall all the sweet memories of Malawi and everywhere that I have been, by reading my own blog. Psstt... here comes the poyo statement... I actually like reading my own writing! Muahahaha.... Shhhh....

Last Saturday, Mak Chu came to spend the day with us. Hubby was out golfing early in the morning. Actually Mak Chu had planned to take us to the movie and we offered mak, if she wants to tag along. Her answer was,"Baiklah aku tidur kat rumah, lagi sedap!" (Translation : I prefer to sleep at home!). So we had to choose ICE AGE 3: DAWN OF THE DINOSAUR over TRANSFORMERS as Ice Age 3 is only about 1 1/2 hour show. We dare not leave mak alone for a long period of time...And yes, the three of us had a swell time there. The way we laughed, it's a stress relief therapy! Hahaha.... Thank you Mak Chu *biggggg huggggg*

Back from the movies, I spent all evening in the kitchen. I told Mak Chu she must wait this time until I got all the things I wanted to bake for her, ready to be taken home. It's been lots of time lately, when I planned to bake or cook for her something, she didn't manage to bring them back just because she's always in a hurry (doesn't the white rabbit of Alice in the Wonderland, come to mind? I'm late I'm late I'm late! Hehehe). I prepared 4 menus which 3 of them are new recipes! And just today, I've tried another two. So at least, I have another 5 recipes waiting in the line to be posted! Stay tuned everyone.... hahahaha... as if people are interested to wait mama! Wake up! Hahahaha.... tak apalah, berangan je!

Okay, enough ramblings for today, one of the recipe to be shared today is kidnapped from Che Mat Gebu's lovely blog. Whoever visited his blog without drooling, must get an eyes check-up! Hahaha... Thanks Mat for this yummy and easy to prepare recipe.
Mama juga dengan gagah perkasanya telah mencuba resepi Mat yang amat menyelerakan. Terima kasih bebanyak ye Mat. Mintak halal kopipes ye... bukan kopi gula... ahakss....


SIMPLE MEE REBUS

To prepare the gravy :

500 g sirloin beef ~ sliced thinly, washed and drained
1 inch ginger ~ bruised
3 ulas bawang putih, chopped
300 g sweet potato ~ cleaned, boiled and mashed
1/2 cup ground nuts ~ fried and blended
1 tablespoon tomato puree
3 tablespoons black bean sauce
2 tablespoon beef curry powder
1 inch galangal ~ bruised
1 fresh tomato ~ quartered
Salt and sugar to taste
1 onion*
5 shallots*
5 garlic*
1 inch ginger*
2 lemon grass ~ sliced thinly*
1/3 cup dried shrimps ~ soak for 10 minutes and drained (keep the water)*
1 cm fresh turmeric*(blend finely all that are marked with *)
Enough water (approximately 1 litre)

Other ingredients :

Egg noodles ~ rinse, blanch and put through a sieve
Bean sprouts ~ cleaned, blanck and put through a sieve
Tofu ~ fried and sliced
Fresh red and green chillie ~ sliced
Spring onions ~ sliced
Crispy fried onion
Calamansi ~ halved
Hard boiled eggs ~ halved


Method :

GRAVY :- Heat oil in a pot and add in the blended ingredients together with galangal. Fry till fragrant then add in curry powder and tomato puree. Stir till aromatic then add in beef and black bean paste. Let it boil then add in the mashed sweet potato, blended groundnuts and tomato. Let it simmer over low heat. If it's too thick, add more water. Add salt and sugar to taste.

TO SERVE : Place enough egg noodles in a bowl, add bean sprout and pour the gravy on top. Garnish with the other ingredients and squeeze the calamansi before enjoying your plate of noodle.


MEE REBUS MUDAH

BAHAN KUAH :-)
500 g daging tetel, kerat2, cuci bersih dan toskan*
1 inci halia, dititik*
3 ulas bawang putih, dititik*(*rebus hingga tetel lembut)
300 g keledek, kupas, rebus hingga lembut dan lecek halus
1/2 cawan kacang tanah, goreng dan kisar halus
1 camca besar tomato puree
3 camca besar tauco, cuci dan tumbuk halus
2 camca besar rempah kari daging
1 inci lengkuas, diketuk
1 biji tomato, belah 4
Garam dan gula secukup rasa
1 biji bawang besar*
5 biji bawang merah*
5 ulas bawang putih*
1 inci halia*
2 batang serai, hiris halus*
1/3 cawan udang kering, rendam 10 minit, toskan*
1 cm kunyit hidup*(*dikisar halus)
Air secukupnya (anggaran 1 liter)

BAHAN LAIN :-)
Mee kuning, cuci dan celur sekejap, toskan
Taugeh, buang ekor, cuci dan celur sekejap, toskan
Tauhu, goreng dan hiris
Hirisan cili hijau dan merah
Hirisan daun bawang dan daun sup
Bawang goreng
Belahan limau kasturi
Telur rebus, dibelah dua

CARA MEMBUATNYA :-)

UNTUK KUAH :- Panaskan minyak dalam periuk, tumis bahan kisar bersama lengkuas hingga harum, masukkan rempah kari dan tomato puree. Masak hingga garing, gunakan api kecil. Masukkan tetel bersama2 air rebusannya dan tauco tumbuk. Biar mendidih dan tambah keledek lecek (masukkan sekali air rebusan keledek), kacang tanah kisar dan tomato, kecilkan api dan masak hingga pekat (tambah air jika perlu) . Tambah garam secukup rasa dan juga gula (biasanya kuah mee rebus memang sedikit manis). Masak 4 - 5 minit lagi dan sesuaikan rasa, jika ok boleh matikan api. Hidangkan bersama mee kuning dan bahan2 lain.
UNTUK MEE REBUS MUDAH :- Ambil mee secukupnya dan isi dalam mangkuk sesuai, letak taugeh dan tuang kuah bersama isi2nya. Hias dengan bahan lain dan perahkan limau kasturi sebelum dimakan.....Selamat mencuba dan selamat menjamu selera....

French Baguette & Garlic Bread

Mood : Haywire and sleepy!



Everything is created in pairs. So the other half of my previous entry should be the garlic bread. I made some French Baguette that was then transformed into garlic bread to go along with the delicious Mushroom Soup. Got the recipe from my reliable bread book, Home Bread by Chef Khoo See Yew. Thank you...


FRENCH BAGUETTE

Ingredients :

(A)
*250g high protein flour
*50g plain flour
2.5g bread improver
(* I used multipurpose flour)

(B)
5g salt
200g cold water
4g instant yeast


Method (using Bread Maker):

1. Sift ingredients A.
2. In the bread maker pan, pour the cold water and add salt.
3. Add ingredients A, salt and instant yeast.
4. Set to the QUICK DOUGH programme and let the BM does it's job. Repeat the process for at least 3 times, which should take about 15 to 18 minutes, until a soft and smooth dough is formed. Let it rest for 25 minutes.
5. Divide the dough into 3 portions. Mould them into balls and let them rest for another 10 minutes.
6. Shape into long strips and arrange on the baking tray.
7. Prove till double in size.
8. Slash the top with a sharp knife. Pipe butter on top.
9. Bake in a preheated oven at 180 C for 20 to 25 minutes.





To make into Garlic Bread, my stlye :

1. Mix well minced garlic with butter and mixed herbs (actually you use Parsley, but since it's not available in my stock, I just use the mixed herbs).
2. Slice the French Baguette into diagonal slices.
3. Spread garlic butter filling onto slices.
4. Cover with aluminium foil and heat for 15 minutes.

Cream of Mushroom Soup


Everything happens for a reason... that's what I told Syahmi in the car yesterday evening when sending him to his tuition class. I guess, that time I was thinking how grateful I am now that I can drive without much fear.

I had my driving licence since somewhere in the late 1980s. Actually I had asked my parent's permission to learn driving soon as I finsihed my SPM in 1983. When I asked abah, abah told me to ask my mom. When I turned to my mom, she said, go ask your dad. So I said to myself... just forget it. After all, I am not the kind that likes to go out of the house, so what's the use of having a driving licence.... hahaha... doesn't that sound something like the Fox and The Sour Grape story! It's only until I've finished college that my parents had offered me to get my driving licence and I didn't fail them. I got through in my first test! And what's more, that day, when it was my turn, I was actually doing a solo performance! Normally there'll be three students to be tested at one time. The slope, the parking and the three point turn. But when it was my turn, I was the only one driving and imagine, all the eyes were on me the car with me on the wheels! Luckily all went well and wallah... I passed!!! After I got my licence, I drove abah's Fiat 124, only for a short while. Why? Because everytime I came back and parked the car in the garage, abah will start inspecting the engine and bla bla bla... That sort of makes me uneasy and scared at the same time. If anything should happen to the car, I don't want to be blamed. ..

After I got married in 1991, hubby had asked me to drive his car, a Proton Saga, without any practise or whatsoever, I took the keys and started the engine. I can still remember the first 5 minutes driving the car... how the car 'hiccupped'! Hahaha.... Driving a Fiat and a Proton is a two different thing. One is under the catagory of heavy weight and the other in the light weight category. That explains the hiccup theory! But I drove hubby's car only for two days and after that, I prefer to go to work by bus, where I can just enjoy the ride while cross stitching! Then came the 10 long years of 'Life Abroad', where we were given personal driver. So my licence is just like how my friends use to call it..'Tanggung Kerajaan'. Hahaha... Well, we must enjoy life while we can, right! Hahaha...

But everything started to change when my parents came to stay with us. I was responsible to send my abah to SMC for his dialysis treament, trice a week. Followed by visits to Serdang Hospital to look after my mom who was admitted for a month. These things happened all of a sudden which left me no time to think twice whether I can or cannot drive. I just have to go for it and alhamdulillah, Allah Maha Pengasih Maha Penyayang, I am how I am now. Syukur....

Thanks to my ex-car.....you'll always be remembered and your service is much appreciated.....





Recipe to share today was something that I made on my birthday. The recipe was taken from Madamme Kacip's Blogspot . Thank you Kacip for the recipe which is much enjoyed by us especially my daughter Fatin.


CREAM OF MUSHROON SOUP

Ingredients :

2 onion ~ diced
150g fresh button mushroom ~ sliced
2 pieces shitake mushroom ~ soaked and diced (I added this)
2 tablespoons corn flour ~ mixed with a bit of water
1 piece chicken cube
3 cups UHT Milk
salt to taste
1 teaspoon blackpepper powder
1 tablespoon margarine/butter
cooking oil


Method :

1. Heat oil in a pot and add in butter/margarine. Add in diced onion and stir till soft. Reduce the heat.
2. Add in mushrooms and cook till soft.
3. Pour in the milk followed by chicken cube. Add in the cornflour mixture. Bring to a boil over a moderate heat, stirring occasionally. If the gravy is too thick, you can add water to make it thinner. Add salt and black pepper to taste.
4. Using a hand blender, purée the soup.
5. Return soup to the saucepan and cook over a gentle heat.
6. Once bubbles appear on the surface of the soup, remove saucepan from heat. Serve with garlic bread.


SUP CENDAWAN BERKRIM

Bahan-bahan :

2 biji bawang besar kuning - didadu
150 gm cendawan butang putih segar - dihiris
2 sudu besar tepung jagung - dibancuh dengan sedikit air
1 kiub pati ayam
3 cawan susu UHT
garam
1 sudu kecil serbuk lada hitam
1 sudu besar mentega/marjerin
minyak masak

Cara-cara :

1. Panaskan periuk dan masukkan minyak masak dan mentega. Cairkan mentega kemudian masukkan bawang yang telah didadu. Kacau bawang sehingga layu dan agak kekuningan. Jangan sampai garing, perlahankan api.
2. Masukkan cendawan dan kacau sehingga terbit air dan cendawan layu.
3. Tuang susu ke dalam periuk diikuti kiub pati ayam. Biar mendidih sekejap kemudian perasakan dengan garam dan serbuk lada hitam.
4. Dengan menggunakan hand blender, blend sup tadi tetapi pastikan jangan sampai cendawan hancur. Blend sekejap sahaja sudah memadai. Biarkan sup mendidih dan pekat, bolehlah ditutup api dan dihidangkan dengan kepingan roti bawang putih.

Rich Chocolate Moist Cake (Zack)


I didn't realise that I am that daring courageous! I bravely accepted another challenge from my sifoo Kak Liza . We were chatting on Yahoo Messenger when she asked me if I could bake for her a chocolate cake to be delivered to her son in Shah Alam, as a surprise birthday cake for her daughter Azlina. I have doubt at first, as I have never before successfully decorate a cake with chocolate ganache. But then, I said to myself, if I don't try it now, when will I try it then? And if I don't dare to try, how am I supposed to know that I am capable or not! What's more, I mustn't let all the tips that Ana had kindly taught me, go to waste! On top of that, the cake that Kak Liza requested came from a well known sifoo in baking, non other than RinnChan who took the recipe from a talented lady in baking, Zack aka Mrs Zairul in Japan. As you can see read, all the names mentioned above are all BIG names in this baking world. That means, the recipe should be nice, insyaAllah. I will bake another cake for us to taste... when? Don't ask....

RICH CHOCOLATE MOIST CAKE

Ingredients A :

170gm butter
300gm castor sugar
3 eggs

Ingredients B :

2 teaspoons Nescafe granules
1 tablespoon lukewarm water
1 teaspoon Vanilla essence
1 teaspoon Chocolate emulco

Ingredients C :

225gm flour
65gm cocoa powder
1/2 teaspoon salt
1 teaspoon bicarbonate soda
1 1/2 teaspoons baking powder

180ml chilled water from the refrigerator


Method :

1. Beat butter and sugar on high speed till light.
2. Add eggs, one at a time and continue beating.
3. Mix well ingredients B and pour a little at a time into the batter. Beat a few minutes more.
4. Sift ingredients C. Cut and fold ingredients C into the batter alternately with chilled water, starting and ending with flour.
5. Grease a 9 inch round tin or lined it with greaseproof paper. Pour the batter into the tin and bake in a preheated oven at 175 C for 40 minutes or till done.

TOPPING

1 can condensed milk
90gm cocoa powder
100ml corn oil or melted butter
1 teaspoon Vanilla Essence

In a small pot on slow fire, heat the milk (make sure the milk doesn't get burnt!). Add in sifted cocoa powder and stir to mix. Add in vanilla essence and corn oil/melted butter. Stir to mix well and shiny, about 5 minutes. Once lukewarm, pour onto the cooled cake and decorate as you wish.

RICH CHOCOLATE MOIST CAKE

Bahan-bahan :

BAHAN A:
170gm butter
300gm gula castor
3 biji telur

BAHAN B :
2 tsp serbuk nescafe segera
1 tbs air suam
1 tsp esen vanilla
1 tsp choc emulco

BAHAN C :
225gm tepung gandum
65gm serbuk koko
1/2 tsp garam halus
1 tsp soda bicarbonate
1 1/2 tsp baking powder

180ml air sejuk dari petiais

CARA-CARA:
1. Gunakan mixer dengan kelajuan tinggi, putar Bahan A sehingga kembang.
2. Masukkan telur satu demi satu dan terus putar.
3. Campur sebati semua bahan B dan titiskan ke adunan butter tadi. Putar seketika dan hentikan putaran.
4. Ayak Bahan C. Masukkan berselang-seli dengan air sejuk bermula dengan tepung dan berakhir dengan tepung. Gunakan spatula untuk mengkaup balik adunan. Jangan putar.
5. Alas dan gris loyang bulat 9". Bakar pada suhu 175 darj cel selama 40min atau sehingga kek masak.

TOPPING
1 tin susu pekat
90gm serbuk koko
100ml minyak jagung atau butter cair
1 tsp esen vanilla

Di dalam periuk, panaskan susu sebentar. Ayakkan serbuk koko ke dalam susu, terus kacau rata. Masukkan minyak/butter cair dan vanilla. Kacau sehingga rata dan berkilat, lebihkurang 5 minit. Biarkan suam baru tuang atas kek yang telah sejuk. Hias ikut suka.

Vanilla Cupcakes, Strawberry Cupcakes, Chocolate Cupcakes

Well, it's not that time does not permit me to do so sooner, but it's just me who doesn't know how to manage time. Wah... this time, mama is blaming herself and not the time... mama, are you okay? Ahaks...

Anyway, let's move on to the cupcake's story. In my previous entry, I had said that I felt like I am not going anywhere with my cupcakes design, and actually I still have that feeling till now. But when I read all the nice comments left behind on that entry, it sort of lifted up my spirit. And as if it was 'nicely arranged', Nora called me up and asked me to bake for her 3 boxes of cupcakes for her daughter, Hanis Maisarah's birthday. Hmm... I can't let her down as she had ordered from me a few times already. So yes, Nora, I'll do it for you and what's more, she gave me full freedom as of how to decorate the cupcakes. Then when I checked my email, in came Mas's order for a box of cuppies. No specific theme on the deco! Wow and double wow.... Alhamdulillah, Allah Maha Kaya Maha Mengetahui dan Maha Mengasihani...... Thank you to both lovely ladies for trusting in me despite what I had written in my previous entry. Mama jual ye...
Shabana had written an email to me, asking if I had tried the Vanilla cupcake recipe she had given me quite sometime back. Oh gosh, I had forgotten all about it...naughty mama! Pepani Shabana..... When she emailed me the recipe again, I tried it straight away. Not only that Shabs, I modified it into 3 different flavours! Thank you so much Shabs for sharing the recipe with me so that I can share it with others.....



VANILLA CUPCAKES

Ingredients :

500g cake flour
250g butter
250g castor sugar
2 teaspoons baking powder
2 teaspoons vanilla essence
260ml fresh milk
5 eggs

Method :

1. Sift flour and baking powder. Set aside.
2. Cream butter and sugar till fluffy. Add eggs one at a time.
3. Add vanilla essence.
4. Add flour, alternately with milk, starting and ending with flour.
5. Spoon the batter into the prepared muffin pan lined with papercups.
6. Bake in a preheated oven at 175 C for 22-25 minutes.





STRAWBERRY CUPCAKES

Ingredients :

250g cake flour
1 teaspoon baking powder
125g butter
125g castor sugar
2 large eggs
1 teaspoon strawberry essence
1/2 teaspoon strawberry paste
red food coloring
130ml fresh milk

Method :

1. Sift flour and baking powder. Set aside.
2. Cream butter and sugar till fluffy. Add eggs one at a time.
3. Add strawberry essence, strawberry paste and red food coloring.
4. Add flour, alternately with milk, starting and ending with flour.
5. Spoon the batter into the prepared muffin pan lined with papercups.
6. Bake in a preheated oven at 175 C for 22-25 minutes.



CHOCOLATE CUPCAKES


Ingredients :

220g cake flour
30g cocoa powder
1 teaspoon baking powder
125g butter
125g castor sugar
2 large eggs
1 teaspoon vanilla essence
130ml chocolate flavoured milk

Method :

1. Sift flour, cocoa powder and baking powder. Set aside.
2. Cream butter and sugar till fluffy. Add eggs one at a time.
3. Add vanilla essence.
4. Add flour, alternately with chocolate flavoured milk, starting and ending with flour.
5. Spoon the batter into the prepared muffin pan lined with papercups.
6. Bake in a preheated oven at 175 C for 22-25 minutes

To be continued........

I am typing this entry with my eyes half closed. Before I start typing with both eyes shut, I'd rather not type at all. For the time being, I'll just post the photos of these cuppies that I made yesterday and today. InsyaAllah, I will write more about it tomorrow if time permits. I will also share the recipe for this cupcakes which I got from Shabana in Malawi.... Thanks Shabs! I finally made it!
