Cupcakes for 4Life Research


Salam everyone.. Here's hoping that everyone is in their best of health. Life had been pretty hectic for me lately. But alhamdulillah I managed to handle it the best way I could. Will try to write more later on but now, let me just upload the latest cupcakes that I've made for Puan Norazizah Ruslan of 4Life Research. She sent me a text message, for a last minute order of 100 pieces of cupcakes. And since she had given me the full freedom to deco the easiest way possible, so I agreed to take the order. It's not that I'm being fussy or that sort but I am not a professional cake baker, so the speed may most likely to be the speed of a kereta lembu. If she were to ask for a complicated design, then I would have surrendered!

Actually there are more story to this but I will save it for next time...maybe... Anyway, my grateful thanks to Puan Norazizah for trusting me with these cuppies. Mama jual seadanya.

Custard Cheese Bun

Why is mama so quiet? Is it because Akim didn't manage to be the Juara AF7? Well, yeah...sort of... hahaha... That's not the real reason actually. I was again feeling down these couple of days. Last week was just not my week. Things, and not only one thing but so many things, just didn't turn out the way I had planned. That, sort of made me depressed and I am still in my healing mode... self-healing!

Let's just talk a bit about Akim, since I've brought that topic up on my previous entry. Frankly speaking, I think he performed very well that night and he deserves better. Maybe his rezeki is just at the 3rd place in the competition. Hopefully what's waiting him in the real world will be more deserving. So, all the best Akim in your future....



The above was written a good 4 days back. I just wasn't in the mood to finish writing. Anyway, things are much better now since all the three experiments I did recently wasn't a failure anymore. Yes, THREE. So you can expect at least another three new recipes from me... watch this page! Hahaha...

Let me just post the latest experiment first. I am pretty excited about it. It had been quite a while since I last bake good breads. So I am just so looking forward to it after watching/reading Rinn baking one bread after another....mana tahan kena godak macam tuuu!!! I chose Rinn's Custard Cheese Bun, to break the ice... CUSTARD CHEESE BUN
Source : Chef Khoo See Yew (Home Bread)

Ingredients A :

230g High Protein Flour (bread flour)
1 1/2 teaspoons Mauripan instant yeast
170g chilled water
1/8 teaspoon bread improver

Ingredients B :

1/2 egg
60g castor sugar
1/4 teaspoon fine salt
25g chilled water
1 teaspoon Mauripan instant yeast

Ingredients C :
30g butter
100g High Protein Flour (bread flour)

Custard Filling :
15g sugar
15g custard powder
25g fresh milk
225g fresh milk

1. Mix sugar, custard powder and 25g fresh milk in a bowl.
2. Bring to boil 225g fresh milk. Then add in the above mixture. Stir till thick on low heat.
3. Set aside to cool.

Topping :
Sugar
Sliced cheese

Method :
1. Mix all the ingredients in A till well incorporated. Rest it for 1 to 1 1/2 hour.
2. Add ingredients B into A. Knead till a smooth and soft dough is formed. Add in C and continue kneading till the dough is soft and elastic. Rest the dough for 15 minutes.
3. Make into small balls weighing 60g each and rest for another 10 minutes.
4. Roll the dough into oval shape. Leave to rise till double the size.
5. Pipe the custard onto the oval dough. Sprinkle with a bit of castor sugar and cheese.
6. Bake in a preheated oven at 190 C for 20 minutes or until buns are golden brown.





BAN KASTAD KEJU
Sumber : Chef Khoo See Yew (Home Bread)

Bahan A :
230gm tepung roti (Tepung berprotein tinggi)
1/2 packet yis segera mauripan
170gm air sejuk
1/8 tsp bread improver

Bahan B :
1/2 biji telur
60gm gula castor
1/4 tsp garam halus
25gm air sejuk
1 tsp yis segera mauripan

Bahan C :
30gm butter
100gm tepung protein tinggi

* Custard filling, gula dan cheese slice secukupnya untuk topping.

Cara-cara :
1. Adun Bahan A hingga rata dan perap selama 1 jam ke 1 1/2 jam.
2. Campurkan Bahan B ke Bahan A dan uli sehingga menghasilkan doh yang lembut. Masukkan Bahan C dan terus uli untuk menghasillkan doh yang lembut dan elastik. Rehatkan selama 15 min.
3. Bulat2kan doh seberat 60gm setiap satu dan rehatkan lagi 10min.
4. Leperkan doh berbentuk bujur. Biarkan ia naik 2 kali ganda.
5. Paipkan custard filling, tabur sedikit gula dan cheese di atas doh.
6. Bakar pada suhu 190 darj cel selama 15min atau sehingga bun keperangan.

Oatmeal Muffin



OATMEAL MUFFIN
Source : Amy Beh (The Star Newspaper)


Ingredients :

120g self-raising flour
1 tsp baking powder
70g castor sugar
1/8 teaspoon salt
50g quick cooking oats
30g currants
75g butter, melted
1 egg
250ml milk

Method :

1. Sift the flour and baking powder together.
2.Grease a 12-hole muffin tray lightly with corn oil and preheat oven to 200°C.
3. Put sifted dry ingredients in a mixing bowl. Stir in sugar, salt, currants and oats.
4. Combine milk, egg and melted butter in a small bowl.
5. Add to the flour mixture. Mix in quickly and thoroughly with a wooden spoon.
6. Spoon mixture into prepared muffin tray.
7. Bake for 15-25 minutes or until muffins are well risen and golden brown. Serve the muffins hot.

Chicken Kurma



CHICKEN KURMA

Ingredients :

1 chicken ~ cleaned and cut to small pieces
5 tablespoons meat kurma powder (mix with a bit of water to form a paste)
3 potatoes (peel the skin and cut into 4 pieces)
1 onion (cut into 4 pieces)
1 tomato
2 cups thick coconut milk
tomato ketchup
2 tablespoons margarine
cooking oil
salt to taste

To pound/blend :
5 shallots
3 cloves of garlics
3 cm fresh ginger

Method :

1. Heat cooking oil and margarine in a pot. Fry the pounded ingredients till fragrant.
2. Add in the kurma paste and stir well.
3. Pour in the coconut milk and let it boil.
4. Add in the chicken pieces and potatoes. Leave to boil and slightly thick.
5. Add in salt and tomato ketchup. Reduce the heat.
6. Add in the green chillies, onion and tomato and leave to cook.
7. Serve with white rice.

Note :

1. I didn't put in tomato and chilli, not available.
2. Instead, I add carrots

Egg Tart

Salaams to everyone....

Yes... yes I know.... I have been missing in action again, haven't I? Just posting the photos and the recipes without any stories, be it interesting or boring... hahaha.... Well, take this as an excuse or good reason or whatever, but here is what I have to say...

There are times in my life when I feel like doing absolutely nothing! If only it's possible, I just want to stare at the big blue sky and let my mind be free. But that is totally not possible as I have responsibilities to carry out. So when the mood is down, it's almost impossible for me to write something. How can I write something when I can't even think straight?!! Huhuu.... dah bunyi macam orang mereng la pulak....hahahaha.... But alhamdulillah that didn't last long. Just A COUPLE OF DAYS..... huhuhu... a horrible couple of days! And while bloghopping, I came across one blog who's owner was having the exact same thing as what I was feeling at that moment.... that came as a relief to me as I know now that I am normal! Hahahaha.....

This week, I was so into Akim AF7's two video clips, I'm Yours and Larut. Both video clips can be viewed at my other blog. I even downloaded those two songs into my laptop and also into my MP3. Gosh I just love his voice, his gestures, his showmanship, his new look, his romantic-ness, his... oh me oh my, I can go on forever...... In short... I adore Akim....
AFUNDI AKIM, come on everyone....
Mesti penyokong 4 pelajar yang lain marah kat ma ni... hahahaa... I do hope if he can't be the Juara (but I wish so much that he will be! Amin!) , at least he will be in a good place. From my point of view (not being bias but reality), Akim has transformed a lot, from so many aspects. All the best Akim!!!





Recipe to share today is this Egg Tart.




Made the pastry from Mr Alex Goh's recipe and the filling recipe is from Kak Liza . Thank you to both of you for the wonderful combination. Speaking of Kak Liza, she'll be at Mid Valley this Sunday, 17th May, 2009 for a cooking demo in conjunction of the launching of her books. Will try to be there for you kak, insyaAllah...

CUSTARD (filling)

1 cup evaporated milk
4 eggs
1 cup sugar
1 cup tap water
1 tablespoon custard powder
1/2 teaspoon vanilla essence
a bit of yellow coloring

Method :

1. Mix well all the ingredients
2. Pour into the 1/2 cooked tart

Sardine Roll



SARDINE ROLL
Source : Kak Teh

PASTRY

250 gm cold butter
500 gm flour
A pinch of salt
Chilled water from the refrigerator

Method :

1. Rub butter and flour with a pinch of salt till it resembles breadcrumbs.
2. Add in chilled water until a soft dough is formed.
3. Cover the dough with cling flim and keep in the refrigerator while you prepare the filling.

FILLING

1 can of sardine in tomato sauce
! onion ~ diced
Red chillie ~ diced
Lemon/Calamansi juice
Salt to taste

Method :

1. Mashed the sardines and mix with the diced ingredients.
2. Add in a bit of tomato sauce if you find it too dry.
3. Squeeze some calamansi juice.

TO PREPARE THE ROLL

1. Place a portion of the dough in between two plastic sheets.
2. Roll the dough thinly.
3. Cut to small squares.
4. Place the filling in the middle.
5. Roll it and arrange on the baking tray.
6. Egg wash the rolls.
7. Bake in a preheated oven at 170C for 4o minutes or till golden brown.




SARDINE ROLL
Sumber :
Kak Teh

Pastri

250 gm mentega sejuk
500 gm tepung gandum
Secubit garam
Air sejuk

Kaedah penyediaan :

1. Gaulkan mentega dan tepung dengan tangan sehingga menjadi seperti breadcrumbs.
2, Masukkan garam dan air sejuk dan uli sehingga menjadi doh.
3. Balutkan doh dengan plastik dan sejukkan di dalam peti ais sementara membuat fillingnya.

Filling

1 tin sardin dalam sos tomato
Bawang besar dicincang
Hirisan cili
Perapan limau/lemon secukup rasa
Garam secukup rasa

Kaedah penyediaan :

Hancurkan ikan sardin dan masukkan bahan-bahan lain.

Kaedah penyediaan Sardin Roll

1. Keluarkan doh dari peti ais. Gelekkannya dengan rolling pin hingga nipis. Potong kepada bentuk segiempat tepat.
2. Letakkan filling di atas doh dan roll.
3. Hiris-hiriskan bahagian atas doh (jangan sampai putus) sebelum sapu telur kuning di atas doh tersebut.
4. Bakar selama 40 minit dalam kepanasan 175 C

My Failure Day! Gosh I hate it!


Today, I celebrate, my FAILURE DAY. Gosh, what went wrong, I wonder! To say that I didn't shower, I did! Mmm takkan nak kena mandi air bunga kot.....

It all started in the morning... yeah, AGAIN I didn't manage to start my morning walk. I woke up in a good time and managed to prepare mom's breakfast, clothes in the washing machine and opened the windows before sending Syahmi to school, also in good time. When I reached home, Kak Ana's door is still not opened. Oh oh.... bad sign! Called her handphone and true enough, she's fasting and doesn't feel like walking. There goes my third attempt!

In the morning I just ironed as many clothes as I could. For lunch, mak and Syahmi just had the leftovers from yesterday's. Alhamdulillah both of them are not fussy at all. Infact it was mak who told me to finish up whatever's in the fridge. While clearing whatever needed to be cleared, I saw the leftover rice and decided to make Apam Salju. Though I wasn't really in the mood to do anything, but I just forced myself. Prepared the mixture and leave it to ferment. Then I saw this one cake recipe and again, let aside the not-in-a-mood feeling and start preparing the cake. Both turned out a failure. But mind you, it's not the recipes to be blamed. It was just me I guess. Reason being, I've made this Apam Salju a couple of times before and they came out nice, but why this time? Maybe the word FORCE just doesn't go with MamaFaMi.

Moral of the story : If you're feeling lazy, then continue being lazy and don't try to act 'smart'! Hahahaha....

Just to show that MamaFaMi is just one ordinary lady who does go through failures, I 'proudly' post my 'master piece'! Hahaha.....

Lemak Kobis & Sardin


If you're not meant to do something, then there must be something that will stop you from doing it. For instance, last Sunday when I was having a 'mesyuarat pagar' (gate meeting) with Kak Ana while hanging the clothes to dry, we had talked about starting our morning walks again. So, we had unofficially said that MAYBE we'll start on Monday morning. And yesterday, I overslept! Gosh the way I jumped out of bed (yes I know, it's bad for the heart but do I have a choice!!! Hahaha)! Luckily Syahmi woke up on his own and got ready fast and the way mama 'rempit' to school... well, Syahmi made it on time!

Pesanan penaja : Merempit hanya dibenarkan bila perlu.... muahaha ..... apa punya penaja daaa.....

When I reached home after sending Syahmi, Kak Ana was ready with her jogging attire. With an innocent look on the face, I said to Kak Ana....come let's go to the market. My freezer is almost empty! Hahaha... and Kak Ana, being an angle, accompanied me to the market though she has nothing to buy! What will I do without you kak! Bodek ler tu! Ahakss.... There goes one day or our 'supposed-to-start-morningwalk' thingy....

And today... no no no.... I did not oversleep okay...come on.. I'm not THAT sleepy head! Woke up at good time, sent Syahmi at good time. Only rushed a bit to get mak's breakfast. Once all done, wore my jogging shoes and off we went for our morning walk...BUT.... We walked for less than 300m, then all of a sudden, the rain started pouring! We were soaking wet by the time we reached home. Of course we were wet, because we didn't run, but we were jive walking in the rain...tu la, kecik kecik selalu kena marah main hujan. Ada peluang ni ha.... kami mainlah hujan sepuasnya.... hehehe.....There goes our second day of the 'supposed-to-start-morningwalk' thingy....

We'll see what awaits us tomorrow.....



As for today, I prepared these dishes for Mak and Syahmi's lunch....

CHINESE CABBAGE IN COCONUT MILK

Ingredients
:

Shallots ~ sliced
Garlic ~ sliced
Red chillie ~ sliced
Dried anchovies
Chinese Cabbage
Thin Coconut milk
Thick Coconut milk
Salt to taste
Zeal (optional)

Method :

1. Place shallots, garlic, dried anchovies and thin coconut milk in a pot and let it boil.
2. Add in red chillie, salt, zeal and thick coconut milk. Continue stirring until boiling.
3. Add in the vegetable for a few minutes and remove from heat.






SARDINE

Ingredients
:

Shallots ~ sliced
Garlic ~ crushed
Onion ~ cut into rings
A bit of chillie paste
A bit of lime juice
1 can of sardine in tomato sauce
Cooking oil

Method :

1. Heat oil in a pot and add in the chillie paste. Add in the shallots and garlic and fry till fragrant.
2. Put in the sardine together with the sauce.
3. Squeeze a bit of lime juice, if needed.
4. Just before removing the pot from the heat, add in the ring onions.
