Kuih Bakar Pisang

Yesterday evening, I drove my daughter's car... ok, nothing new... 
I drove the speed limit... erk, this is getting spooky... 
The drive home was so peaceful, no noise from this 'radio rosak' mouth of mine... HAH??? Mama are you sick? 

Usually when I drive, the car will be noisy and the noise is normally made by yours trully unless she is not well. My kids will start giving me quizzical look if I am quiet. They will then ask... excuse me, are you our mom? If not, we want our mom back! Hahahahahaha..... 

Anyway, why was I so 'good' and 'behaving well' yesterday while driving? 
Because....MR HUBBY IS SITTING IN THE PASSENGER SEAT!

KUIH BAKAR PISANG

Ingredients :

 6 medium size ripe bananas ~ mashed
1 cup flour
3/4 cup sugar
1 cup coconut milk
1 cup evaporated milk
1 egg
2 tablespoons butter (I used Planta margarine)

I added :

1/4 teaspoon banana essence
1/4 teaspoon baking powder

 extra butter to grease the baking tray

Method :

1. Place flour, sugar, coconut milk, evaporated milk, sugar and butter in a blender and blend till well mixed. 
2. Pour the blended mixture into the mashed bananas. Fold in the mixture till well combined. 
3. Pour into the greased baking tray. 
4. Bake in a preheated oven at 180 C for 1 hour or more to get a crispier surface. 
5. Remove from oven, let it cool before slicing.

As usual, I am busy with the endless housework and my duty as a driver. In addition to that, my internet connection is not so good for the last couple of days. Being an impatient kind of person, I just don't have the heart to waste my time waiting. So yes, I opted for not switching on the laptop hence the silence.

For this entry, I'd like to share with you this lovely bread recipe that I took from Tok Mak's Facebook quite sometime ago. But I changed the recipe slightly to satisfy my tastebud... hahaha...  SWEET BUN WITH COCONUT FILLING

Ingredients : 

1 egg * 
2 tablespoon milk powder * 
300 ml iced water * (egg + milk powder + iced water = 300ml) 
50g sugar 
1 1/2 teaspoon salt 
300g high protein flour 
200g all purpose flour 
2 teaspoon instant dried yeast 
2 tablespoon margarine 

I added : 
1/2 teaspoon dough softener 
enough sesame seeds 

Glazing : 
1 teaspoon milk powder 
2 teaspoons water 

Filling (mix all the ingredients and cook in a pot till done) : 
Enough freshly grated coconut 
Enough palm sugar 
1 piece screwpine leaf - knotted 



Bread Maker method : 

1. Into the breadmaker pan, add in mixture of water, milk powder and egg. Add in sugar and salt. 
2. Top it with high protein flour, all purpose flour and instant dried yeast. 
3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine. Leave the bread maker to finish the cycle which will takes about 1 1/2 hour or so. 
4. Remove the dough from the pan and divide the dough into 20 equal portions. Roughly about 50g each. 
5. Form each portion into a ball and rest the dough for 10 minutes. 
6. Flatten each dough and spoon some filling into the centre and cover the filling with dough. Roll back to ball shape. 
7. Arrange the rolls on a baking tray and leave to prove till double the size. 
8. Brush the proved rolls with milk and sprinkle some sesame seed. 
9. Bake in a pre-heated oven at 180c for 25 minutes or till golden brown. 
10. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

Sausage Rolls (Ayin)

Though time wasn't on my side yesterday, I still did these rolls just because I can't resist Ayin's bread photos. When the dough was ready, I didn't shape it right away because I had to rush to Bangi to fetch my mom, accompanied by Kak Ana. So I had to chuck the dough together with the bread maker pan into the fridge. By the time I got back after 2 hours, the dough had proved again in the fridge! Hahaha... now this is what I called, triple proving! Hish marah cikgu-cikgu roti sebab memandai-mandai je buat method sendiri... sket baik roti mama tak kerepot sangat!!!!! Ahahaha...

SAUSAGE ROLLS (AYIN)

Ingredients :

500 g high protein flour
100 g sugar
30 g milk powder (I used Fernleaf milk powder)
11 g instant dried yeast
2 eggs
225 g fresh milk - chilled
80 g margarine
2 teaspoons salt

20 pieces beef sausages
sesame seeds

Glazing (mix well) :
1 tablespoon milk power
1 1/2 teaspoon water



Bread Maker method :

1. Into the breadmaker pan, add in fresh milk, sugar, eggs and salt.
2. Top it with flour, milk powder and instant dried yeast.

4. Remove the dough from the pan and divide the dough into 20 equal portions. Roughly about 50g each.

6. Roll each ball into a long rope and wrap around the sausages.
7. Arrange the rolls on a baking tray and leave to prove till double the size.
8. Brush the proved rolls with milk and sprinkle some sesame seed.
9. Bake in a pre-heated oven at 180c for 25 minutes or till golden brown.
8. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

Note :

I still need to work on the look of the sausage rolls. Mine was not as nice as Ayin's. Anybody care to give a helping hand... or a helping link perhaps??? Much appreciated.... thank you.

Mama's back, showing off her baby girl!


So many things happened these last few weeks. I am just tired... exhausted.. frusterated... tortured and I don't really know what else. I just hope that I will be strong enough to go through whatever awaits me in future...


O Allah, I ask that You help me for I am weak
And will only grow stronger by Your strength,
So Allah please strengthen me....


After being silent for quite a while, I thought MamaFaMi was totally forgotten but she wasn't actually. Thank you to Puan Azlita for highlighting my blog with her wonderful looking Apam Indon and not to mention to others who had contributed to my blog's traffic. I can't thank you enough.....

And to Izah of Izah Muffin Lover for emailing me personally asking about my absence. Not to mention those who left comments in my previous entry. Thank you so much for still staying by my side... I am trully touched....

I read in Izah's blog, mentioning about my baby girl. Yeah, I got a baby girl after more than 9 months waiting.... finally she arrived.... not to worry... I will introduce her at the end of this entry... saving the best for last....

Blossom Steamed Cake

I was down with flu on Friday night. I didn't go to any clinics but I knew I was having flu because I can feel the pain at my joints. I took hubby's flu pill, pasted the Kool Fever on my forehead and off to Dreamland. But as you know, the effect of taking the flu tablet last for quite sometime. The next day, I felt like dragging myself everywhere! Dragging here meant.... I went to Subang Parade, to Puchong and also Cyberjaya! Hahahaha..... terbaekkk punya dragging! Weekends are the days where I enjoyed going out with dear hubby, and I won't miss it for anything... hahaha...

Yesterday,... I lost my voice! I was croaking, but definately mine sounded much nicer compared to the toad that is... hahaha... But the way my sister and my son laughed at me when I speak... noty Mak Chu and noty Boboi! I was tired everytime I speak, but being a Mrs Chatterbox, I just won't stop... kinda like that 'rock steady' sound effect! Hahaha....

Made this easy to prepare recipe yesterday. Fell in love with the colors when I saw this recipe at Paty's Kitchen and decided to give it a try. I liked it. Thanks to Paty and Dapur Ipoek for sharing the recipe with us and allow me to do the same here. Thank you dear ladies...


BLOSSOM STEAMED CAKE

Ingredients :

1 large egg
115g sugar
125g flour
1/2 teaspoon double action baking powder
1/2 teaspoon ovalette
75ml evaporated milk
a few drops of rose essence (i added)
Food coloring of your choice

Method :

1. Heat up steamer and ensure you have sufficient water
2. Insert papercups in the mould.
3. Combine all ingredients in a mixing bowl and beat (using the balloon beater) on high speed for about 10 minutes till fluffy.
4. Divide mixture into 3 portions and add the food coloring. Mix well.
5. Spoon some mixture from each color into the papercups till 80% full.
6. Steam for 10 to 15 minutes.
7. Remove from heat and ready to serve.
