Mushroom Soup & Garlic Bread

I had a hectic weekend. You can read the story at MamaFaMi's Journey of Life

These are my express way to prepare all the menu that I had served to Syahmi's tuition teacher and Syahmi's friend last Sunday....




MUSHROOM SOUP

Ingredients :

1 can Campbell Mushroom Soup
1 can water (use the same can)
A bit of blackpepper

Method :

1. Pour the whole can of mushroom soup into a pot.
2. Add water and let it simmer.
3. Add blackpepper and stir. Let it simmer for a while before serving.


GARLIC BREAD

Ingredients :

1 French loaf
Garlic ~ minced
Spring onion ~ chopped
Buter

Method :

1. Mix well, garlic, spring onion and butter.
2. Slice the loaf. Spread with butter mixture.
3. Wrap in aluminium foil.
4. Bake in the oven for 15 minutes or so.

Bread Pudding

I bought a RM800.00 pair of shoes.............



........in my dreams! And woke up feeling very tired.
Why?
Because, I was thinking too much in my dreams.
What were you thinking?
How to pay for the shoes?
What came to mind?
I think I have to start selling cupcakes, fruit tarts, blueberry tarts and perhaps chiffon cakes in major scale. Because with the existing amount of sale, which shall I say, roughly about RM40 per month...ye you read right...PER MONTH, I will take like 20 months to settle the bill, without any interest that is! Gosh...by that time, I think the shoes are worn-out! Hahaha... But then again... syukur alhamdulillah... it's just a dream!!!! Phewww....

Yesterday evening, I tried this pudding recipe which I came across at Mas's Blog Thank you Mas for sharing the recipe with us and allow me to post it here for my future reference. Though my pudding doesn't look as lovely as hers, but then again.... apa ada pada rupa... wah.. cover line baikkk punya!!!

Bread Pudding

BREAD PUDDING
Source : Mas

Ingredients :

1 packet agar-agar strip (25g)
1.4 litre water
1 1/2 cup sugar
1 can evaporated milk
6 pieces white bread ~ cut to small cubes
1 nos egg ~ lightly beaten
3 food coloring
1 teaspoon vanilla essence

Bread Pudding

Method :

1. Soak the bread in evaporated milk and egg. Pour into a blender and blend. Set aside.
2. Cut the agar-agar strips to an inch size and soak for 10 minutes or so. Then boil with 1.4 litre water till agar-agar dissolved. Put through a sieve and pour back into the pot. Add sugar and stir till sugar dilutes.
3. Pour the blended bread mixture into the agar-agar and stir on low fire for a while.
4. Divide to 4 portions. Add a color to each portion and leave one portion as it is.
5. Pour one color at time onto the centre of the tray.
6. Place the tray in the refrigerator to set.
7. Cut and serve.

Japanese Style Sweet Bun Dough (Gert)

Japanese Style Sweet Bun


JAPANESE-STYLE SWEET BUN DOUGH
Adapted from : Gert of My Kitchen Snippets
(Makes 16 buns )

Ingredients :

475g flour
35g milk powder
90g caster sugar
3/4 teaspoon salt
8g instant dry yeast
1 egg, lightly beaten
150ml (approx.) lukewarm water – adjust according
40g butter, cubed
4 tbsp Water Roux
1 egg + a bit of water (for egg wash the buns)

Method : (Bread Maker)

1. Pour water, water roux and salt into the bread maker pan. Add in egg. Top it with flour, milk powder, sugar and yeast.
2. Set the breadmaker to Dough function.
3. Once the dough is just combined, add in cubed butter and leave the Breadmaker to continue doing it's job. This process will take about 1 1/2 hour including prooving.
4. Divide the dough to 60g each. Shape into a ball.
5. Arrange the dough on a baking tray. Let it prove till double the size.
6. Egg wash the top sprinkle with coarse sugar. Bake in a preheated oven at 180 c for 25 minutes.

Pepper Filling

Had enough of my Chiffon huh? Well, let's take a break then, though in a week's time, I had baked 5 different flavoured chiffons! Meanwhile, let's settle with this.....




Monday, 21st June, 2010 is the first day of school after the long school holidays in Malaysia. 2 weeks to be precise. I bet, not only the kids dread this day, but the parents too. We'll be able to hear the 'tarzan' of the house waking up the kids and rushing them to get ready for school. Unless you have kids that are matured enough to do all those things without being told and 'directed'. How many lucky parents out there doesn't have to become Tarzan every morning, please put up your hands? I, for sure, is one of them who will put my hands down! Hahaha....

Anyway, this morning, on our way to school, the road was pretty empty. Many shops were still closed. And not many cars were parked in front of the shops. Besides that, it was foggy this morning. I asked Syahmi,"Adik, are you sure school re-opens today? Are you sure today is Monday and not Sunday? And are you sure we are not in Malawi?". Syahmi just answered,"Yes ma, school re-opens today because today is Monday. And no... we are not in Malawi, we are in Malaysia!!!" Huhuuhuhu....

Let's leave mama to dream on and move on to the recipe to share. I came across this lovely looking dessert at CMG Sedenak Delights ....muahahaha... sesukakkk haaaati je bagi nama kat 'rumah' orang! Ampun Mat... ya ampun..... Anyway, I only cilok'ed his lovely idea of assembling the puff pastry. For the filling, I had used the Pepper Filling, recipe courtesy of my dearest Sis Lynne. Thank you for sharing it with me and allow me to share it with others.



PEPPER FILLING
Ingredients :

Onion ~ diced
Potato ~ cleaned and diced
Minced meat/chicken
White pepper
Black pepper
Salt
Spring onions
Oil for cooking

Method :

1. Heat a bit of oil in a wok and add in onion and potato. Fry till potato softened.
2. Add in the minced meat / chicken and mix well.
3. Add in white pepper, black pepper and salt. Stir to mix.
4. Once meat is cooked, just before removing from heat, sprinkle some spring onions.

To assemble, please refer to the step by step photo below.

To answer Deliah's question, I baked the puffs in a fan oven at 160 C for 25 minutes. This is the pastry puff that I had used.

Pandan Chiffon Cake (Nyonya Food)



Last Wednesday, as early as 9.30 am, I went to Nilai 3 with Maz Bahrain, the proud owner of the blog Ilham Dapur . She wanted to get something for her house and asked me to accompany her which I gladly accepted. And I had to pay a price for my willingness! I ended up buying curtains for my house, just the downstairs. Anyway, I think hubby will be happy because then, he won't have to bring me to shop for curtains for Eid! Hahaha... We had a swell time there, especially when we have Noni, my friend, with us to be our tourist guide. Noni is staying at Seri Putra and she's very familiar with Nilai 3. Thank you so much Maz for asking me out and Noni for your kind assistance. We shall do this activity more often, don't you think so? *wink* *wink*

And since Maz really enjoyed the Orange Chiffon that I had given her the day before, I just had to bake this Pandan Chiffon and gave her a some... It's the exact recipe from Nyonya Food. Thank you so much dear for this lovely recipe and allow me to post it here for others to share. Again, the cake doesn't look perfect, but the taste is! Don't believe me, try baking it yourself!


Pandan Chiffon

PANDAN CHIFFON CAKE
Source : Nyonya Food

Ingredients

Step 1:


8 medium egg yolks
2oz fine sugar
2oz Pandan Juice ( I mixed water, pandan essence, coconut pandan paste and green food coloring)
3oz corn oil or olive oil
5oz self raising flour

Method:

Beat egg yolk and sugar lightly with a hand whisk till sugar dissolve.
Stir in pandan juice and corn oil.
Fold self raising flour into egg mixture.
Set aside.

Step 2:

Ingredients:


8 egg whites
5 oz fine sugar
pinch of salt

Method:

Beat egg whites till frothy. Slowly add in sugar and pinch of salt while beating at high speed.
Beat until the egg white is stiff and shining but not dry. ( About 3 minutes)

Step 3:

Preheat oven at 175 degrees Celsius.
Use a spatula and gently fold egg yolk mixture into the egg white mixture(meringue).
Pour into an ungreased 25cm tube pan.
Bake for 40-45 minutes.
Once cake is cooked, remove cake from oven immediately and invert pan onto wire rack. Let it cool before removing cake from pan

Note :
I made half the recipe and baked it in an ungreased 18cm tube pan.

And these were the cupcakes ordered by my aunty's friend.

Orange Chiffon Cake (Nyonya Food)

Orange Chiffon

ORANGE CHIFFON CAKE

Step 1:
Ingredients


8 medium egg yolks
2oz fine sugar
1oz Sunquick Orange
1oz water
3oz corn oil or olive oil (I used corn oil)
5oz self raising flour

Method:

Beat egg yolk and sugar lightly with a hand whisk till sugar dissolve.

Set aside.

Sup Tulang



SUP TULANG

1. Wash the steak bones/oxtail/ribs/shins. Put into the pressure cooker with some water and spices wrapped in a muslin cloth or you can just use the 'sup bunjut' from Malaysia. Sup bunjut is a readymade wrapped spices.
2. Pound some shallots together with ginger and garlic. Heat the oil and fry the pounded ingredients till fragrant.
3. Pour into the pressure cooker. Secure the lid and put on the stove.
4. When the pressure cooker starts releasing the steam (plus the LOUD noise ), leave it like that for about 20 minutes or so. Then off the fire, let the steam out and open the lid.
5. Add in potatoes and boil till potatoes are slightly soft. Add salt, tomatoes, sliced onion and green chillies.
6. When serving, sprinkle some chopped spring onions and fried onions. Nice to eat either with bread or rice! What can be simpler and tastier than that!

Sweet Dinner Rolls (Donna West @ AllRecipes)

Fever?
No, I am not having fever at the moment, but FIFA 2010 fever.... maybe! Since Friday, hubby and me had been sleeping downstairs infront of the TV. It's either we were watching the football match or the TV is watching us. But I only watched the first two games. I hardly watch the 2am games. I am not so into football actually but more to keep hubby company. If you ask me, which team is my favourite? The answer will be, any team from Africa region! 7 years in Malawi, do have some effect on me, I guess! Hahaha...

And yessss.... Ghana won the match aginst Serbia 1 - Nil. Well done guys! And though Nigeria didn't win when playing against Argentina, but they gave a good match. I must say, Nigeria's goal keeper, Vincent Enyeama is very good.

Okay, now to answer the above question. It's not a sandwich from Subway but it's the giant sandwich from MamaFaMi's kitchen. Fatin went out with her friend Ain to Mid Valley last Friday. And they had their lunch at Subway. When she came back, she was bragging about Subway's Sandwich. And dear mama, took that as a challenge. So I went on the internet to browse for a nice bread recipe. Finally I'm satisfied with a recipe posted by Donna West at AllRecipes dot Com. Thanks Donna and AllRecipes for the recipe. I made half the recipe which yields 2 loaves of rolls. Allow me to post the original recipe here for others to refer.

SWEET DINNER LOAVES

SWEET DINNER ROLLS/LOAFS

Ingredients :

1/2 cup warm water (110 degrees F/45 degrees C)
1/2 cup warm milk
1 egg
1/3 cup butter, softened
1/3 cup white sugar
1 teaspoon salt
3 3/4 cups all-purpose flour
1 (.25 ounce) package active dry yeast
1/4 cup butter, softened

Directions :

Place water, milk, egg, 1/3 cup butter, sugar, salt, flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough/Knead and First Rise Cycle; press Start.
When cycle finishes, turn dough out onto a lightly floured surface. Divide dough in half. Roll each half into a 12 inch circle, spread 1/4 cup softened butter over entire round. Cut each circle into 8 wedges. Roll wedges starting at wide end; roll gently but tightly. Place point side down on ungreased cookie sheet. Cover with clean kitchen towel and put in a warm place, let rise 1 hour. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
Bake in preheated oven for 10 to 15 minutes, until golden.

SWEET DINNER LOAVES

How I prepared my loaves :

I only used the 1/3 cup butter and omit the 1/4 cup butter as mentioned in the recipe above. Let the bread maker do it's job. Once the dough has doubled it's size, I took it out of the Bread Maker and divide the dough into 2 portions. Make into balls and let it rest for 10 minutes. Roll each ball flat, then roll it up like a sandwich. Place in the baking pan and let it prove till double the size. Sprinkle with a bit of water and bake for 20 minutes till golden brown. Once out of the oven, brush with butter. Place on a wire rack to cool. Keep in an airtight container to avoid it becoming hard and dry.

How Fatin prepared her so-called Subway Sandwich...

Cut the bread in half. Arrange some lettuce, then three slices of fresh tomatoes, two pieces of Turkey sliced (grilled slightly), a piece of smoked cheese slice and finally with some lettuce. Enjoy!

Moving out?

Not really... haha... actually I had to hire this truck to help me carry all the awards that these couple of ladies had kindly passed to me quite sometime back. My sincere apologies for the delay in collecting as I was pretty tight up lately. Too many things to do in too little time...

5. Love experimenting with food. Experimenting does not mean eating as well ya... *wink*

6. Love doing cross stitch but had lessen that activity just because I don't like to wear reading glasses! Why don't I like wearing them? Because they kept slipping down my nose! Hahaha....

7. Love travelling and visiting new places.

8. Love to watch cartoons or fairy tales movies. Why? Because it's more relaxing!

9. I can be such a chatterbox when online, but when it comes to meeting in person, then will see the situation. If the other person is far more chatterbox than I am, I tend to slow down!

10. I love colors! I guess everybody knows that! *Wink*

Ketam Masak Lemak Cili Padi



At the moment, I am strucked by the L.A.Z.Y virus, to the scale of 4 out of 5. It was 5 previously but I think, I am getting much better in fighting it. Wish me luck in my battle of the virus! Hahaha....

I wasn't kidding when I said the above. I had to cook because my mom is with us at the moment. Otherwise, the kids will have to make do with all those simple and effortless menu. Poor kids!!! But I don't think they'd mind because Fatin is not a rice kind of person. And Syahmi, well that boy is easily pleased, which makes the mama 'naik lemak!!! And dearest hubby...he's very simple. Anything will do. Am I the lucky one or not! Muahhh...love you guys with all my heart!

Anyway, before the virus gets the best of me, let me just post this crab recipe I had tried a few weeks ago. We went to Bagan Lalang, just to see the place after hubby's friend told him about it. On our way back, we came by the stall selling fresh fish, crabs and prawns. Since it had been quite a while I didn't eat crabs, we bought just 2 pieces. And the best thing is, the lady helped to clean the crabs and the fishes. All I have to do when we got home was just to wash it with lime and ready to cook! So this was the end result of the crabs.... yummy! Thanks Rinn!


Ketam Masak Lemak

KETAM MASAK LEMAK CILI PADI
Source : Rinn

Ingredients :

4 medium crabs, cleaned and halved
5 shallots ~ minced
3 cloves garlic ~ minced
1 inch fresh turmeric
1 inch ginger
5 bird eye chillies (more if you prefer it hot) ~ minced
enough coconut milk
1 piece dried tamarind
lemon grass ~ bruised
Tomatoes ~ quartered
salt to taste
cooking oil

Method :

1. Heat cooking oil in a pot. Add in the minced ingredients till fragrant. Add in lemon grass.
2. Stir for a while then pour in the coconut milk.Keep stirring.
3. When the gravy starts boiling, add in crabs. Leave for a few minutes before adding the dried tamarind and tomatoes. If you have sliced pineapple, add in as well.
4. Add salt to taste and leave to cook.
5. Remove from heat.

An evening by the seaside...


Salaam to everyone....

Hope all of you are in the best of health. Happy holidays to all the school children in Malaysia. May you have a wonderful and safe holiday. To the parents though it may be quite handful to have a full house, but nevertheless, do make the best of it ya...



Sorry for the long silence. We went back to Malacca last Saturday. Had a wonderful time back home. We left home at around 12 noon and was caught in a traffic jam just before Nilai. So we turned into Bandar Bukit Mahkota and took the Highway Lekas till Seremban tol. It was our first time going through that highway and I must say, the scenery along the way, reminds me of Malawi...

That night we went for ikan bakar treat at Crystal Bay. We've tried eating ikan bakar at a few places besides Melaka, but everyone in my family agrees that Melaka's ikan bakar is still the best! Hahaha... no offence! No photos of food taken as we were just too eager to dig in! We had ikan siakap, crabs, prawns and cockels. Not forgetting the lovely otak-otak! Mmmmmm....

Hubby's favourite activity whenever we are back in Melaka is to go by the seaside and watch people fishing. And who will obediently tag along? Non other than yours trully! Whenever we asked the kids to come along, they simply refused. They prefer to stay at home. Fatin even said, let mama and ayah go dating! Hahaha...what a sport my daughter is! In the afternoons after lunch, we'll be near the Masjid Selat and at night, we'll be near the Eye On Malaysia. These were the few photos that I managed to snap while sunset near The Masjid Selat. I still have to learn a lot, how to use this camera of mine.... as for now, these are the best that I can manage.....

Dragon Fruit Bun (Majalah Saji)

Dragon Fruit Bun

I thought, all these while I had treasure, but the truth is, just loads of junks!

I was in the mood to do some spring clean in my kitchen this morning. I only did like 1/6th of the kitchen but I ended up with 3 big garbage bags... full of... of course garbage! Hahaha... I wonder, if I were to do the whole kitchen, then people will think that I'm moving out of the house! Hahaha....

At the moment, I'm taking a half an hour break and will soon resume spring cleaning till let say, 12.15 noon. Then will have to take shower, judging from the 'lovely odour' from all the sweating! I sweat a lot, which I hope is something healthy and not otherwise....

Okay, not to waste more time, let me just post this recipe that I had tried from Majalah Saji May 2010.

Dragon Fruit Bun

DRAGON FRUIT BUNS

Ingredients :

(A)
*200g bread flour
*50 g all purpose flour
25g castor sugar
25g butter
8g instant dried yeast
5g bread improver
25g milk powder
1 medium egg

(B)
100ml chill water

(C)
75g dragon fruit (red color) ~ finely diced

* Note :
1. I used more than 250g all purpose flour as I don't have bread flour.
2. More sugar should be added as the bun is slightly tasteless unless you manage to get a sweet dragon fruit to use in this recipe.
3. If I had used the Water Roux, the result would be better, I think.

Method : (Magazine)

1. Combine all ingredients in A then pour in ingredient B. Knead till springy.
2. Add in C and continue kneading till soft and smooth.
3. Let the dough rest for 10 minutes.
4. Divide the dough to 60g each. Shape into a ball.
5. Arrange the dough on a baking tray. Let it prove till double the size.
6. Egg wash the top and bake in a preheated oven at 180 c for 15 minutes.

Method : (Bread Maker)

1. Pour ingredient B into the bread maker pan. Add in egg. Top it with flour, sugar, bread improver, yeast and milk powder.

Sedih? Sedap? Sempoi?

We can never deny the fact that internet has strong influence towards human life. If it's for the better, than you're lucky but if otherwise, than you have to snap out of it soonest possible.

Reason why I wrote the above is because, I am one of the 'victim' of the internet influence! Had been visiting KOG's blog quite frequently nowadays and had been following her S.M.S series... now featuring episode 7 already. What does S.M.S stands for? Well, according to KOG, it's SIRI MAKAN SEDIH. But as days go by, I find her photos do not tally with the name of the series. What's more appropriate would be either....

(i) SIRI MAKAN SEDAP
or
(ii) SIRI MAKAN SEMPOI

Well this morning, after going through 7 tortures from her, I ended up with this for breakfast! Just can't wait till lunch! That's how strong the torture is! I had combined S.M.S 4 and S.M.S 6. Mine can be in this category because....
(i) I used LEFTOVERS rice
(ii) I used less anchovies and more onions
(iii) I used the free gift plate...if not mistaken, when I bought the toothpaste long time ago....

But all that does not matter. What matter the most is, I had a wonderful breakfast..... thanks KOG for the idea....
