Creamy Hot Cocoa (Jeanie Bean)

Hello everyone...
How's your Sunday so far? Hope all are well, enjoyable and fun, not to mention safe as well. Mine had been quite a good one so far. Managed to do most of the house chores by morning which allows me to do my ironing as well. I miss my iron actually. Weird, I know. But when you like it, you just like it! Haha...

Syahmi had his tuition with Iddin at our house just now. And after the class, I just served them with some Roti Boy which I bought yesterday and also a cake from the wedding gift. Then I went on AllRecipes dot com to look for any drinks that I can serve them and stumbled upon this Hot Chocolate Drink which I think is the best to serve my visitors. I wasn't wrong. All of them loves the Creamy Hot Cocoa. Thank you to Jeanie Bean of AllRecipes dot com for coming to my rescue. Allow me to post the recipe here, with a slight changes to suit my taste, so that many others could enjoy your lovely recipe.

Creamy Hot Chocolate

Serving : 4

Ingredients :

1/3 cup unsweetened cocoa powder
1/2 cup white sugar
a pinch of salt
1/3 cup boiling water
3 1/2 cups milk
1/2 teaspoon vanilla essence
enough whipping cream
a bit of cocoa powder to sprinkle (optional)

Method :

1. Combine the cocoa, sugar and pinch of salt in a saucepan.
2. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch.
3. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil!
4. Remove from heat and add vanilla.
5. Divide between 4 mugs.
6. Add the cream to the mugs of cocoa to cool it to drinking temperature. Sprinkle with a bit of cocoa powder.

Blueberry Pancake (Rach15689)

Hufff and pufff... I am just exhausted.... will leave you guys with this.....

Blueberry Pancakes

Was bloghopping the other day, to find any simple recipes that I can prepare for Syahmi, Iddin and the tuition teacher to enjoy after class. And it must not a time consuming job as I was in the 'laziest-mode-ever' at that time... Infact, I am still 'suffering' from it till now, only a little better I can say. Why did I say that? Because for today's lunch, I made Chicken Cordon Bleu for the kids and Asam Pedas Ikan Parang for dearest hubby! It's not everyday you find me this productive you know... so, enjoy while it last! Hahahaha.....

Opps.. back to my story. After much bloghops and since time was running out, I have to stop at this blueberry pancake recipe from AllRecipes. Well, the taste is not bad. Perhaps next time, if I were to do it again, I'll add a bit more milk as the pancake is a bit dry if eaten just like that. Unless you eat them with Icecream, then the recipe is fine. That's just my opinion. Perhaps others will think differently then. So thank you Rach15689 and AllRecipes for the recipe...

Blueberry Pancake Allrecipes

Ingredients :

2 large eggs, separated
5 tablespoons milk
100g (4 oz) self raising flour
4 tablespoons caster sugar
pinch salt
100g (4 oz) blueberries (I used blueberry pie filling)
1 tablespoon vegetable oil

Method :

1. Place the egg yolks and milk in a medium bowl and mix thoroughly. Sift over the flour, caster sugar and salt and combine well.
2. Whisk the egg whites in a glass or metallic bowl until they form soft peaks, then fold into the flour mixture gently. Carefully fold in the blueberries.
3. Heat the oil in a frying pan over medium high heat. Drop 2 tablespoons of the mixture into the pan for each pancake, and cook for 2 minutes or until golden brown.
4. Flip and cook for a further minute on the other side.
5. Enjoy!

Banana Muffins (Joy of Baking)

Assalamualaikum and a very good day to all of you....

My apologies for neglecting my blog these couple of days.... (urgh.. I am apologising to who now? Hahaha... maybe to my blog!)
I was tensed, but at the same time, not trying that hard to get over it, infact I've been creating more tense for myself.... I think I'll write about it in MamaFaMi's Journey of Life because that's what the blog is suppose to be about....


Before I move on to the recipe to share, let me just congratulate Shahir for being the Juara AF8. You surely didn't let down your voters. We're happy for you. Wishing you all the best in your future. Same goes to all the other AF8 Stars.


Frankly speaking, I liked Adira's performance, when she sang her new single, Ku Ada Kamu. True like what Adlin had said... that is a performance of a star! All the best Adira... Infact, I liked all the new songs for the finalists... well done to the composers...

I've watched 7 Akademi Fantasia so far. Didn't manage to watch the first one because we were still in Malawi and my sister didn't manage to get the VCDs for me. Infact, for the second, third and forth Akademi Fantasia concert, I just managed to watch them on VCDs. Only the fifth till to-date, I really followed. But I must say, among all, my favourite is still FARAH BREEP BREEP!!!

Without further ado, let me just post the recipe for the above muffins that I had tried a couple of days before. Went looking for banana recipes, not because I went bananas, but because I have some ripe bananas which need to end their misery! Hahaha....After bloghopping here and there, I finally arrived to Joy of Baking. Copied the recipe and off to the kitchen... Thanks to Stephanie Jaworski for the lovely recipe shared. Allow me to re-post it here, with the few adjustments that I had made, for the viewing pleasure of my visitors.

Banana Muffins JoyOfBaking

Ingredients :

1 cup (115 grams) walnuts or pecans ~ toasted and coarsely chopped (optional)
1 3/4 cups (230 grams) all-purpose flour
1/4 cup brown sugar
1/2 cup granulated white sugar
1 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
2 large eggs, lightly beaten
1/2 cup (113 grams) unsalted butter, melted and cooled
3 ripe large bananas (approximately 1 pound or 454 grams) ~ mashed well (about 1-1/2 cups)
1 teaspoon pure vanilla essence
1/2 teaspoon banana essence

Method :

1. Preheat oven to 350 degrees F (180 degrees C) and place the oven rack in the middle of the oven. Arrange the muffin cups on a baking tray.
2. Place the nuts on a baking sheet and bake for about 8 to 10 minutes or until lightly toasted. Let cool and then chop coarsely.
3. In a large bowl combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nuts.
4. In a medium-sized bowl combine the mashed bananas, eggs, melted butter, banana essence and vanilla.
5. With a rubber spatula or wooden spoon or a whisk, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky. (The important thing is not to over mix the batter. You do not want it smooth. Over mixing the batter will yield tough, rubbery bread.)
6. Spoon the batter into the muffin cups, almost full.
7. Bake about 20 - 25 minutes or until a toothpick inserted in the center comes out clean.
8. Place on a wire rack to cool for five minutes and then remove muffins from pan. Serve warm or at room temperature.

Note :

1. Original recipe requires 3/4 cup (150 grams) granulated white sugar but I changed it to the above.
2. Made half the recipe and managed to get 10 muffins of this size.

Best Brownies (Angie)

First and foremost, a HAPPY BELATED TEACHER'S DAY to all teachers in this world...

Helped my cousin to make these cards for the teachers in her school. Actually she had asked me to google for nice wordings to be pasted on the teacher's day card she intended to do. I ended up helping her do the card instead of looking for the wordings! Hahaha... It was fun making the cards for you kak... after a long time not having the chance to play around with art. And this is my signature at the back of the card, copyright controlled..... *wink*


Last Monday, I thought of updating my blog, for the teacher's day entry, soon as I've finished doing the orders that came from ANZ, but then I got a sad news from hubby's family. One of his cousin, a former teacher, passed away. Datin Hajjah Aminah Zakaria passed away at the age of 49 after bravely fighting with the final stage cancer. May her soul rest in peace. Al-Fatihah.

I am not going to write much today. My list-to-do is still very long. So I will go straight to the recipe to share. Made these brownies for Syahmi's teachers. Besides the brownies, I had packed a chocolate chip muffin as well in the box. Thank you to all the teachers who had kindly taught my son. May all of you be blessed....

Ingredients :

1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 teaspoon vanilla essence
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder

Frosting : (I didn't do this)

3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar

Directions :

1. Preheat oven to 350 degrees F (175 degrees C).
2. Grease and flour an 8 inch square pan.
3. In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla.
4. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder.
5. Spread batter into prepared pan.
6. Bake in preheated oven for 25 to 30 minutes. Do not overcook.

To Make Frosting:
Combine 3 tablespoons butter, 3 t. ablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Frost brownies while they are still warm.

Ayam Panggang Peri-Peri Rosemary

Jumaa Mubaraq to every one...

This morning, I woke up feeling much better than yesterday. So after taking my shower and performed my Fajr namaaz, I started ironing some clothes till it's time to send Syahmi to school. Before sending him, I managed to put the dirty clothes in the washing machine. When I reached home from school, and feeling quite alright, I took the sponge and started washing the car. Finished with that and feeling happy that my car is 'bedak sejuk' free, I went inside to take out the laundry from the washing machine to hang. Done with that, that's when I don't feel good anymore! Oh oh... I overdid myself, have I? Anyway, I am satisfied and happy enough, I was able to do something this morning!

Little experiment in my little kitchen....

Ayam Panggang Peri-Peri Rosemary

Tried this quite sometimes back. So please don't ask for a piece or so because regret to say, it's all gone! Hahaha.... Came across the yummy looking roasted chicken at MaDiHaA's Blog. According to her, she took it from Shima. Thank you to both chefs for the lovely recipe. But why didn't mine look as yummy as MaDiHaA's? Huhuhu....

Ayam Panggang Peri-Peri Rosemary

Ingredients :

1/2 chicken ~ cleaned and halved
1 teaspoon salt
1 tablespoon tobasco sauce (I didn't put, not available)
2 tablespoons Nando's Extra Hot Peri Peri Sauce
1 tablespoon BBQ sauce
1 tablespoon honey
1 tablespoon olive oil
1 teaspoon dried rosemary ~ pounded slightly
a bit of fresh rosemary (I didn't put, not available)

Method :

1. Marinate the chicken with all the ingredients for at least an hour or so. The longer the better.
2. Heat the oven at 200 C.
3. Roast the chicken till golden brown, turning over the chicken every 8 to 10 minutes to get an evenly roasted chicken.

These were what I did last Tuesday....

Sup Ayam Istimewa (Tulip77)

I am down with fever at the moment. Felt really hopeless, not having enough energy to do the house chores. For the past two days, all I did was sleep and sleep and again sleep. If it's only the body that is weak, I think I can still handle it, but then the head decided to join in the 'fun' and it's the headache that really gets to me! This morning, I took a big glass of Hor Yan Hor tea with one 'asam boi', 2 panadols and 1 clarityne. And that's to Dreamland with a 4kg dumbell on my head! But before that, managed to hang the first batch of laundry out to dry....

When I woke up, I received this.....

Sup Ayam Istimewa

Ingredients :

1 chicken ~ cleaned and cut to 16 pieces
1 onion
2 cloves garlic
1 inch ginger
cinnamon stick
4 cloves
2 star anise
3 cardamons
2 potatoes ~ peeled and quartered
1 carrot
1 bowl of boiling water
enough chicken stock (I just diluted chicken cube + water)
spring onion ~ chopped
cripy fried onion

Method :

1. Soak the cloves, star anise, cinnamon stick and cardamons in the boiling water till the water cools down. Remove the spices and keep the stock.
2. Mince the onion and garlic. Pound the ginger.
3. Slice the carrot to 1.5cm thick.
4. Heat a bit of oil and add in the minced onion. Fry till fragrant. Add in ginger and the spices.
5. Add in chicken and stir to mix for about 10 minutes.
6. Pour in the spices stock plus another bowl of water. Add more water if you want more soup.
7. Add in the potatoes and carrots and let it boil.
8. When chicken is tender, add in chicken stock, salt, zeal and pepper to taste. Let it boil for a while.
9. Once done, remove from heat and add in the spring onion and crispy fried onion. Close the lid of the pot for 20 minutes before serving.
10. Enjoy!
