No Bake Peach Cheesecake

MasyaAllah, it's Friday already. Time really flies or was it me who are wasting too much time? I hope whatever time that I had wasted are for a good cause...

Frankly speaking, I don't have the confidence to bake or make a cheesecake. I don't know why though many of my friends said, to bake or make cheese cakes are very easy. Maybe because the ingredients are quite costly, so I dare not try, fearing I'd let all the ingredients go to waste if I failed. But then, two days ago, I dare myself to try making one. That was because, Fatin is into cheesecakes nowadays. Alhamdulillah, it came out nice. Thanks to Along Roz for sharing the recipe but I had changed her MANGO Cheesecake to my PEACHES Cheesecake because I don't have any mangos at home. Allow me to share the recipe here ya Along Roz. Thank you...

p/s : By the way, another breaking news (lol Fatin), my girl helped me wash my car yesterday evening, that's why early this morning it rained! Hahahaha.... jangan mare Long... hehehe..



NO BAKE PEACH CHEESECAKE

Adapted from : Along Roz's Mango Cheesecake

Ingredients :

CRUST

110g butter
2 tbs brown sugar
200g Digestive biscuits - crushed
50g Cornflakes - crushed coarsely

Method :

1. Melt butter with brown sugar.
2. Mix in the rest of the ingredients.
3. Press into the cheesecake tin.
4. Chill for at least 30 minutes.


FILLING

250g cream cheese (I used Tatura brand)
1/2 cup castor sugar
200ml cream (I used Emborg whip cream)
3/4 cup peaches puree (used the sliced peaches in syrup. I mix some of the syrup when I puréed the peaches)
1 tablespoon gelatine - dilute in 1/4 cup water and heat up until melted

Method :

1. Cream the cream cheese and sugar until smooth.
2. Add in whip cream and continue to beat until thicken.
3. Add in peaches puree and stir well.
4. Pour in the gelatine mixture.
5. Pour onto the chilled crust.
6. Chill overnight until set.
7. Remove the cake from the tin. Arrange some sliced peaches on top. Ready to serve.

Cream Cheese Mexico Buns

If we are watching a movie, our companion plays a big role. Trust me! The day we were in Tambun at our friends' house, they had put on a Hindi movie entitled WE ARE FAMILY. As you all know, Hindi movies can make you cry (unless you have a dry heart... hahaha... I have a 'soaking bad' heart! Hahaha). But then when I watched with them, since both the husbands (mine and the host's) are the jovial and joker type of person, we ended up laughing till my head aches! They just have something to say that triggers our laughter and it's not just any kind of laughter.. it's the kind that can make you ended up feeling exhausted!

Not satisfied, I asked my children to download the movie into my memory stick and a few days ago, while ironing, I watched again the movie on my laptop. You know what... I had my bathing towel right on my shoulder all the time.... get what I mean?

Moral of the story : Do find the right companion for the right movie! Hahahahaha.....

CREAM CHEESE MEXICO BUNS

Dough
Ingredients :

60 g castor sugar
120 ml water
10 g instant dried yeast
325 g High Protein Flour
1 teaspoon bread improver
1/2 teasppon salt
1 1/2 tablespoons milk powder
1 egg
45 g margarine

Method :

1. Mix sugar, yeast and water. Set aside till foamy.
2. In the mixer bowl, mix all the dry ingredients.
3. Make a well in the middle and pour in the yeast mixture. Knead till the dough is elastic and smooth.
4. Prove dough for 45 minutes or till double in size.
5. Divide dough into 18 portions of 40g each and shape it into a ball. Rest the dough for 10 minutes.
6. Flatten the dough and place a spoonful of filling in the middle and cover with dough.
7. Arrange on a tray and prove dough for 45 minutes or till double in size.
8. Pipe the mexican topping on top in a swirl mode.
9. Bake in a preheated oven at 180 C for 15 to 20 minutes.

Note :

I used my breadmaker to do the kneading job for me...


Cream cheese filling
Ingredients :

120 g Cream cheese
30 g icing sugar
1/2 teaspoon vanilla essence

Method :

Cream all the above ingredients. Ready to use.

Mexico Topping
Ingredients :

75 g margarine
60 g icing sugar
1/2 teaspoon vanilla essence
1 egg, lightly beaten
75 g cake flour (I used plain flour)
1/2 teaspoon Nescafe granules

Method :

1. Cream margarine and icing sugar.
2. Add in egg and continue beating. Add vanilla essence and Nescafe granule.
3. Fold in flour and beat till well mixed.
4. Place the mixture into a piping bag and ready to use.


B.R.E.A.K.I.N.G N.E.W.S.... hahaha

Yesterday, my girl decided to bake a cake and I had asked her to do it all by herself with very minimum supervision from me. She did 95% of the job. Here's Fatin's first cake ever... cherish the moment okay girl... hahaha...well done and  hopefully there'll be more to come after this! Amin...

Queen Cupcakes, News about Halaal Status

Tried this recipe from one of the recipe books that I have.

QUEEN CUPCAKES

Makes 18

Ingredients :

8 tablespoons butter, softened
generous 1/2 cup castor sugar
2 large eggs, lightly beaten
3 teaspoons lemon juice
scant 1 1/4 cups self-rising flour
3/4 cup raisins
2 - 4 tablespoons milk, if necessary

Method :

Preheat the oven to 180 C. Put 18 paper cases in 2 muffin pans or put 18 double-layer paper cases n 2 baking sheets.

Put the butter and sugar in a bowl and beat together until light and fluffy. Gradually beat in the eggs, then beat in the lemon juice with 1 tablespoon of the flour. Using a metal spoon, fold in the remaining flour and the raisins, adding a little milk if necessary to give a soft dropping consistency. Spoon the batter into the paper cases.

Bake the cupcakes in the preheated oven for 15 - 20 minutes, or till done. Transfer to a wire rack and let cool.

Journey to Tambun, Ipoh, Perak

Last weekend, we went to Tambun, Ipoh, Perak. Not to The Lost World but to an old time friend's house who stayed somewhere inside the Sunway area. We had a swell time.... chatting, eating, laughing till late! It had always been that way everytime all of us meet up, no matter where.

Anyway, that was not what I wanted to write about in this post. What hubby doesn't know that time was, deep down,  I was actually feeling so sad. Why? It's neither because of the friend's family nor mine but the scenery along the highway. Full of greenery, full of mountains which reminds me a lot of Malawi, Africa.... if not because of the smooth road ride and if it's not because of the number of cars on the road, I will surely think that I am in Malawi... I really really really miss Malawi so much... and the feeling was unbearable that time...

Nostalgic ride...unbearable....

Sigh.... will I be able to visit Malawi again? Only Allah knows...........................

Wonderfully Soft Bread

Heard Mat Gebu at Radio ERA this morning? One thing for sure,.I was right next to the laptop speaker listening to Mat and at the same time talking to Mak Lang Azie on the phone. Don't blame her, it's me who called her. Hahaha... I'll get excited when my friends go on air or appear in any magazines or TV shows and will try to share the excitement with as many as possible. That's me, the Kecoh Mamafami!!!

WONDERFULLY SOFT BREAD

Ingredients :

310g bread flour
60g cake plain flour
40g Nestle CoffeeMate milk powder
115ml skim milk (fresh milk)
20g condensed milk
55g castor sugar
3g salt
7g instant yeast
1 egg + 2 egg yolks (I used 2 large eggs)
40g butter (room temperature)

Egg Glace : 1 egg lightly beaten with 1 teaspoon water fresh milk


Method :

1. Sieve flour mixture into a large mixing bowl.
2. Make a well in the middle of flour mixture and add in all the rest of ingredients except butter.
3. Mix till a dough is formed and knead in the butter till you get a smooth dough.
4. Prove dough for 50 minutes or till double in size.
5. Divide dough into 12 portions of 60g each and shape it or wrap in the filling. Prove for another 50 minutes or till double in size.
6. Brush with egg wash and bake at 190C for 15 minutes or till cooked.

Note :

I used my breadmaker to do the job for me...

Apam pisang

Hello all... still remember me? I know I've been missing from the blog world these few weeks. I was pretty tight up with the unfinished chores and towards the end of the day, I am just too tired to be infront of the laptop. My priority is my beauty sleep! Well, if looking from the positive side, I had been behaving very well lately. Slept not later than 11 pm! Surprise surpriseee.... :D

Syahmi had started attending tuition classes at nights. So nowadays, I have less time at home. We are out most of the nights during weekdays. The days that Syahmi had only an hour tuition, we will just park the car somewhere near the tuition centre and there we wait for him to finish. There are times, we even fell asleep while waiting. But rather than driving to and fro and waste our time and not to mention petrol, we'd rather wait.

And I have to admit, I had not been doing much baking or other experiments in the kitchen. Believe me if I said, my oven had a good one week rest! It must be wondering, what's wrong with my owner? Retired? Hahahaha...

Anyway, I'll be posting whenever I have something to share and whenever time permits ya. To all, thank you for not giving up on me... love ya....

APAM PISANG

Ingredients :

150 g ripe bananas
1/2 teaspoon bicarbonate of soda
pinch of salt
2 eggs (medium size)
100 ml corn oil
1/2 cup brown sugar
a few drops of banana essence
1 cup flour*
1/2 teaspoon baking powder*(* sift together)

Method :

1. Grease the baking tray with a bit of oil. Set aside.
2. Mash bananas with bicarbonate of soda and a pinch of salt. Set aside.
3. Beat eggs, corn oil and brown sugar till creamy.
4. Add in the mashed bananas and the banana essence. Mix well.
5. Fold in the sifted flour.
6. Pour into the prepared baking tray and steam for 15 minutes or till done. Serve with fresh grated coconut.

Chocolate Rice Muffins

CHOCOLATE RICE MUFFINS

Adapted from Vanilla Muffin by KatakPisang of Forum Cari

Ingredients :

2 cups all purpose flour
2 tablespoons baking powder
1/2 teaspoon salt
1 cup sugar
1 cup fresh milk
4 tablespoons margarine - melted
1 large egg - lightly beaten
1/2 tablespoon vanilla essence
Enough chocolate rice


Method :

1. Sift flour, baking powder and salt. Add sugar and stir with a whisk to mix.
2. In another bowl, add fresh milk, melted margarine, egg and essence. Mix well using a whisk.
3. Pour the mixture into the dry ingredients and mix using a mixer. Do not over mixed.
4. Spoon the mixture into the prepared tin lined with papercups till 3/4 full.
5. Bake in a preheated oven at 180 C for 20 minutes.

Potato Bread (Saerah)

Thank you to my dear neighbour, Puan Saerah, for sharing this recipe with me. I am so sorry as I don't do justice to your recipe. Just look at how ugly my buns turned out to be. The recipe is lovely actually because I've tasted the buns that she made out of this recipe. Fatin said the same too. That was because, I've got carried away with the house chores and had left the shaped dough to prove far too long. InsyaAllah I will try to bake it again and hopefully it will turn out pretty!


Chicken Floss Buns
 POTATO BREAD

Ingredients:

250g bread flour
150g plain flour
100g potato flakes
350ml water
80g sugar
50g margarine
1tsp salt
2tsp instant yeast


Plain Buns
 Method:

1. Place kneading blade into bread pan.
2. Pour water in.
3. Add in sugar, margarine, salt and potato flakes.
4. Add in both flours.
5. Lastly add in instant yeast.
6. Knead dough for 30 minutes.
7. Remove and rest dough for 15 minutes.
8. Make into 15 balls (weighing roughly about 70g each) and fit into pan.
9. Let proof for 30 minutes or until it doubles.
10. Bake in preheated oven at 190*C for 30 minutes.

Note :
Made the dough into 3 different buns. Plain buns, sugar buns and chicken floss buns.

FAMEkids

Baru sahaja selesai post entry Ketagih Laman Web, mama terbaca pulak entry di Blog Mat Gebu tentang FAMEkids, Mat pulak dapat berita ni dari jiran sepagarnya Ben Ashaari. Jadinya mama pun ingin kongsikan bersama di sini, tentang progrem anjuran FAMEkids ni di sini ye. Mama copy paste je la ye....

Nama saya Lyna, saya merupakan pemilik Scriptory Box di Puchong. Kami akan mengadakan pelancaran FAMEkids, iaitu sebuah kumpulan sokongan anak-anak istimewa (OKU). FAMEkids diasaskan oleh saya sendiri bersama seorang teman, Puan Watie yang juga mempunyai anak istimewa. Untuk pengetahuan anak saya mengalami kecacatan di kaki (kudung) dan tangan (kudung jari dan bertaut) manakala anak Puan Watie mengalami keistimewaan pada bahagian tangan (tangan tiada tulang).

Oleh itu kami merasakan tanggungjawab untuk memberi kesedaran kepada masyarakat bahawa golongan OKU tidak sepatutnya dipandang sebelah mata, dan memberi sokongan kepada ibu-bapa kepada anak2 OKU. Ini memandangkan masyarakat kita masih dibelenggu mitos2 tentang kecacatan yang melanda terutama kepada bayi2 yang baru lahir. Apa yang ingin kami timbulkan ialah perasaan bahawa anak2 OKU sama saja seperti anak2 lain, mereka berhak untuk mendapat peluang yang sama seperti orang lain.
Oleh yang demikian, kami amat berbesar hati sekiranya Ben sudi untuk turun memberi sokongan kepada program ini.

Ketagih laman web

Salam sejahtera buat semua...
Semoga kalian diberikan kesihatan yang baik, dipermudahkan segala urusan dan diberkati kehidupan.

Mama baru sahaja selesai menonton progrem Selami Jiwa oleh Dato' Dr Fadzilah Kamsah. Tajuk yang dibincangkan adalah Ketagihan Laman Web dan tetamu undangan beliau adalah saudara Irfan Khairi dan juga saudara Ahmad Azfar. Mama titipkan Youtube rancangan tersebut di sini untuk sesiapa yang ingin menontonnya ya. Sayangnya, hanya Bahagian 1 sahaja yang mama berjaya perolehi dari YouTube.



Mama akui, suatu masa dulu, mama juga boleh dikatakan ketagih laman web kerana sanggup menghabiskan separuh hari di hadapan laptop. Mama rasa masa berlalu amat pantas. Banyak kerja yang tertunda dan segala kerja yang ada, dibereskan tergesa-gesa kerana kesuntukan masa. Tidur malam juga tidak kecukupan gara-gara tidak sanggup untuk logout dari internet. Justeru itu, kesihatan kerap terganggu dan tidak dinafikan, kerja-kerja di rumah banyak yang tidak selesai. Rasa macam tiada kehidupan yang bermakna. Tapi kini, alhamdulillah, sedikit demi sedikit, mama mengurangkan masa di hadapan laptop. Hanya jika mama ingin update blog, menggosok baju atau kebetulan ada masa santai, itulah masa mama mengadap internet. Alhamdulillah kini mama rasa lebih selesa.

Mama tidak sama sekali menyalahkan internet itu sebenarnya. Tapi lebih menyalahkan diri sendiri kerana gagal mengawal diri. Sebenarnya banyak kebaikan melayari internet ini, tidak dinafikan. Cuma kita harus tahu diri. Tahu menilai apa yang baik untuk dilayari dan apa yang perlu ditinggalkan. Contohnya, laman web tentang masakan, tentang fakta kesihatan, motivasi, semua itu adalah amat berguna dan boleh membantu kita di dalam pelbagai aspek. Apa-apa pun, kawalan kendiri adalah yang utama....
