Potato Rolls

Jumaa Mubaraq to all.
The recipe that I am going to share with you today is recommended to me by Sharifah Aliyyah Albukhary, a friend I met in Facebook. Thank you Aliya for recommending. It's a lovely recipe and much enjoyed by the family. Nanti share lagi ek... :D

Ingredients :

1 (.25 ounce) package active dry yeast (1 1/4 teaspoons)
4 tablespoons white sugar
1/2 cup canned sweet potato puree (please refer to NOTE)
1/2 cup warm water (110 degrees F/45 degrees C)
3 tablespoons margarine, softened
1 teaspoon salt
2 eggs
3 1/2 cups all-purpose flour


2 tablespoon custard powder
3/4 cup fresh milk
3 tablespoons sugar

Method for Custard :

1. Put all the ingredients for custard in a small pot. Mix well.
2. Place the pot over low heat and keep stirring till the mixture thickens.
3. Set aside.

Method :

1.Dissolve yeast, warm water, and 1 tablespoon sugar in a mixing bowl. Let stand 5 minutes.
2.Add remaining sugar, sweet potato, butter or margarine, salt, and slightly beaten eggs. Stir to mix well. Stir in 3 cups of flour. Turn out on a lightly floured surface. Knead 2 to 3 minutes, adding just enough of remaining flour to prevent sticking. Do not knead too heavily; when smooth, shape into a ball. Place in an oiled bowl, and turn to coat the surface. Cover, and let raise about 1 hour or longer.
3.Punch down, and allow dough to rest for 2 minutes. Divide into 16 to 20 balls, and place on a greased cookie sheet or in a 9x13 inch pan. Allow to rise until doubled.
4.Bake at 375 degrees F (190 degrees C) for 12 to 20 minutes. Serve warm.


1. I used my breadmaker to do the kneading. For the breadmaker method, you can just refer to my previous posts on bread. Thank you.
2. Potato puree : Peel one medium sized potato. Cut to cubes and boil till soft. Remove from heat and straight away mash it. Ready to use.

Lepat Pisang


22nd February will always be a special date for our family. It used to be happily celebrated by the whole family. Either we eat out or be it just a big takeaway then celebrate at home. With the reciting of duas, the cake cutting, the birthday song... but the best among all is ABAH's happy face. The memories remain deep in our heart for ABAH is no longer with us. May his soul rest in peace. Al - Fatihah.


I had been wanting to make some Lepat Pisang since a few weeks ago when hubby and me went out to get our breakfast takeaways. He had asked me to buy some lepat pisang. I took two pieces but in my mind was saying... I can do lepat pisang! And insyaAllah I will do it for him myself! After that, I bought bananas a couple of time but all ended up something else besides lepat pisang. Only yesterday, I finally transformed the bananas into Lepat Pisang. Had followed Che Mat Gebu's recipe with a few changes here and there. Thank you Mat for the idea. The Lepat Pisang is lovely and hubby helped himself to 4 pieces. Alhamdulillah, mission accomplished!

Ingredients :

350g ripe bananas
70g palm sugar - finely chopped
1/2 teaspoon baking powder
3/4 cup flour
1 tablespoon milk powder
a pinch of salt
enough dodol - cut to small chunks
Enough banana leaves cut into suitable size

Method :

1. Mash bananas with palm sugar, salt and baking powder. Add milk powder and flour, little at a time. Add in dodol. Mix well.
2. Spoon 2 tablespoons of banana mixture onto the banana leaves and fold the leaves to secure the mixture.
3. Arrange on a tray and steam in the prepared steamer for 20 minutes.
4. Remove from heat, leave to cool before serving.

Dicilok dari : Blog Che Mat Gebu


350 g pisang yang ranum
70 g gula melaka - dihancurkan
1/2 sudu kecil serbuk penaik
3/4 cawan tepung gandum
1 sudu besar susu tepung
Secubit garam
Dodol secukupnya - dipotong kecil
Daun pisang secukupnya - cuci dan layur hingga lembut, potong ikut saiz yang sesuai


1.Pisang dilecek bersama gula melaka, garam dan serbuk penaik hingga hancur. Tambah susu tepung dan tepung sedikit demi sedikit sambil digaul, hingga habis. Masukkan dodol. Kacau rata.
2.Sudukan 2 camca besar adunan tadi atas daun pisang yang telah disediakan. Rata dan bungkus seperti membuat lepat biasa. Buat hingga siap (menghasilkan kurang lebih 8 - 10 biji kuih, ikut saiz daun pisang memasing).
3.Kukus atas air mendidih selama 20 minit. Sejukkan kuih sepenuhnya sebelum dihidangkan untuk minum petang atau sarapan pagi.

Apam Polka Dots & Jalur


To my dearest Pak Busu... you are the best Uncle in this whole wide world!


It is known as Apam Dot Dot. After seeing one after another blog serving this cute looking Apam, I just had to try it out myself. When I mentioned the name to my sister, she had asked, why must you call it dot sounded like the movie... Perempuan Isteri dan dot dot dot. Hahaha... Mak Chu and her funny ideas. So I said, let me just change the name slightly and call it Apam Polka Dots... happy now Mak Chu?

I had copied the recipe from Madamme Hana's Blog. Thank you Hana for sharing and thank you to whoever first created this recipe. Allow me to copy and paste the recipe here for my future reference. Thank you...

Ingredients :

3 egg - from the fridge
275g flour
220g castor sugar
150g fresh milk
3 teaspoons baking powder
1 teaspoon ovalette
1 teaspoon vanilla essence

Blueberry filling - put in a piping bag
Food coloring

Method :

1. Place all the above ingredients except the filling and food coloring in a mixer bowl. Beat at maximum speed for 6 to 8 minutes.
2. Divide the mixture into a few equal portion depending on how many colors you intend to use. Add color to each portion. Mix well.
3. Pour the mixture into separate piping bags.
4. Pipe the mixture into the apam cups lined with paper cups. Pipe half the cup. Then pipe some filling in the middle and top it with more mixture till 3/4 full. Then dot it with a different color.
5. Steam in the prepared steamer (make sure the water is boiling) for 10 to 15 minutes on medium heat.

Bahan-bahan :

3 biji telur - dari peti sejuk
275 gm tepung gandum
220 gm gula halus
150gm susu segar
3 sudu teh baking powder
1 sudu kecil ovallete
1 sudu teh esen vanilla

Filling blueberry secukupnya (masukkan ke dalam piping bag)

Kaedah penyediaan :

1. Masukkan semua bahan apam ke dalam mangkuk mixer dan pukul kelajuan maxima selama 6 - 8 minit.
2. Bahagikan adunan kepada beberapa bahagian & titiskan pewarna mengikut citarasa.
3. Masukkan setiap warna ke dalam piping bag (atau beg plastik yang bersih).
4. Picitkan sedikit adunan ke dalam mangkuk kertas yang telah disusun di dalam acuan lompang.
5. Picitkan blueberry filling secukupnya.
6. Picitkan lagi adunan yang berlainan warna sehingga ¾ penuh.Kemudian dot dot kan dengan warna pilihan.
7. Kukus didalam kukusan yang telah dipanaskan selama 10-15 minit.

Nota dr Hana:
Jangan buka api besar semasa mengukus. Guna api sederhana je yer! Kalau tak nanti pecah aka kembang mekar setaman! jadik ler kang apam mekar! hihi.. (berdasarkan pengalaman..:D).
Buh esen vanila utk mengurangkan bau telur.

Asam Pedas Ikan Parang

Yesterday, I received an email from Kamelia Hisham the sister of Wan Hafidz aka abgbotak. The mention of abgbotak makes me recall those good old days in Malawi. He was active in his fotopages back then when he was still studying in the UK. His shots were all superb. But what made me remember him is the way he had teased me in one of his entries. In that particular entry, he was putting up some sort of an event (be it real or just joking, I am not so sure). He had listed his committee. And among them is MAMAFAMI! I was incharge of food! Hahahaha... where on earth did I fit in that committee! I am way in Malawi, Africa and they are in the UK. Hahaha... but that really made my day! Thank you Hafidz or shall I say Dr Hafidz for the cheerful memories that you've given to this ol' MamaFaMi. Just wondering, where could you be at this moment....where ever you are, may Allah bless you and your family.

And as for Kamelia, I am not sure if this recipe suits your hubby's tastebuds but I've learnt how to prepare this from my hubby's late grandmom. Of course the taste is not as lovely as his grandmom's cooking, but nevertheless, it's not disappointing... i hope! Hehehe...


Ingredients :

2 pieces ikan parang
6 shallots
2 cloves garlic
1/2 inch ginger
1/2 inch fresh turmeric
2 tablespoons chillie paste
1 teaspoon shrimp paste
1 teaspoon kerisik
enough tamarind juice
enough water
salt to taste
zeal ~ optional
tomato ~ quartered
3 pieces kaffir leaves
oil for cooking

Method :

1. Clean the fish with lemon juice, rinse and set aside.
2. Mince onion, garlic, ginger, turmeric, shrimp paste and kerisik to form paste.
3. Heat oil in a pot and add in the blended paste and fry till fragrant.
4. Add in chillie paste and continue frying. Add in kaffir leaves.
5. Pour in the tamarind juice and stir well. Add in the fish.
6. Let it boil. Flip over the fish.
7. When the fishes are half cooked, add more water.
8. Add in salt and zeal and let the fish cooked.
9. Add in tomato and let it simmer for a while.


Bahan-bahan :

2 keping ikan parang
6 biji bawang merah
2 biji bawang putih
1/2 inci halia
1/2 inci kunyit hidup
2 sudu besar pes cili
belacan sebesar ibu jari
1 sudu besar kerisik
air asam secukupnya
air secukupnya
garam secukup rasa
serbuk perasa - jika perlu
2 biji tomato - dibelah 4
3 keping daun limau purut
minyak masak untuk menumis

Kaedah penyediaan :

1. Bersihkan ikan dengan air asam, bilas dan ketepikan.
2. Tumbuk bawang putih, bawang merah, halia, kunyit, belacan dan kerisik hingga menjadi pes.
3. Panaskan minyak di dalam periuk dan masukkan pes tadi. Tumis hingga naik bau.
4. Masukkan pes cili dan goreng hingga wangi. Masukkan daun limau purut.
5. Tuangkan air asam jawa. Kacau rata dan masukkan ikan.
6. Biarkan mendidih dan terbalikkan ikan.
7. Bila ikan telah separuh masak, masukkan air secukup kuah yang diingini.
8. Perisakan dengan garam dan serbuk perasa. Biarkan didih hingga ikan masak.
9. Masukkan tomato dan biarkan didih sebentar. Siap untuk dihidangkan.

Marbled Chiffon


To my dearest sister, Mak Chu... you are the best sister anyone could ask for.... HAPPY BIRTHDAY SNOOCUM SNOOCUM CUPPY CAKE...


Tried this recipe last week. Infact I made two versions. The first one, I made exactly according to this recipe. Thank you so much Florence for sharing this recipe with us and allow me to copy and paste it here so that others who are interested, can also try your recipe.


Ingredients :

3 egg yolks
pinch of salt
30g sugar
40g warm corn oil
50ml warm milk
1/2 tsp vanilla essence
1 tsp orange zest (optional)
75g sieved cake flour

4 egg whites
1/4 tsp cream of tartar
40g sugar

Chocolate paste :

30ml milk
20g sugar
5g flour
10g cocoa powder
5g butter

Method :

1. Mix all ingredients in the chocolate paste together and double boil till sugar dissolved and you get a homogeneous chocolate mixture. Sieve chocolate mixture if lumpy. Leave aside for use later.
2. Cream egg yolks, vanilla, salt and sugar till creamy.
3. Add in the warm oil, warm milk, orange zest and rum, mix till well-combined.
4. Sieve in the flour and mix till batter is lump-free.
5. Beat egg white with electric beater until big bubbles formed. Sprinkle in cream of tartar and beat until it is white in colour. Add in 40g sugar 3 times (a little at a time) and beat till stiff perks formed.
6. Pour 1/2 egg white into flour mixture in (4) and blend well.
7. Pour flour mixture into the rest of the egg white and fold till just blended. Remove 1/4 of the batter and mix it with the chocolate paste, blend well.
8. Pour the 2 batters into ungreased tube pan using your imagination and create your own marble effect. Bake at 170 - 180C for 35 - 45 minutes or till cooked.
9. Invert the cooked cake during cooling process.

Notes :
Orange zest is really optional. I added it as it would enhanced the flavour of the chocolate mixture.

Deutshe Kekse

Have you ever experienced feeling lazy to do anything but at the same time craved to bake something? I always have that kind of 'syndrome'. That's when I start looking for something very simple to do, to fulfill both categories. When you're lazy, you will surely want to finish off whatever you do as fast as you can. So at the same time, you bake! And this is one of the recipe that falls in that category. Because of it's simplicity and not to mention the lovely taste, I've made twice this recipe two days in a row. It's hasslefree, trust me. And yesterday was even better. Syahmi helped me with the shaping of the cookies. I was running out of time and who should walk into the kitchen.. Syahmi. Hahaha.. perfect timing boy! Thank you for helping mama... do walk into the kitchen anytime okay... hahaha...

I have to thank Rima for the lovely recipe and not to mention her lovely photos that makes me feel like going straight into the kitchen to prepare whatever I saw in Bisous À Toi. If you don't believe me, do have a peek here.

Ingredients :

125g butter - (I used Planta margarine)
40g icing sugar (sieved)
125g potato starch
80g superfine flour

Method :

1. Beat butter and icing sugar till fluffy and lighter in colour.
2. Sift in potato starch and superfine flour, mix to form a soft dough.
3. Roll into small balls (about 7g each) and arrange on lined baking tray (Rima used 1/2 tbsp to get the same size).
4. Press the tip of the fork onto the cookie dough.
5. Bake in preheated oven at 170 deg C for 15 mins

125 gram mentega berkualiti tinggi (mama guna majerin Planta)
125 gram tepung kentang (boleh beli kat kedai baking)
80 gram tepung halus
40 gram gula aising, diayak


1. Satukan tepung kentang dan tepung halus, ayak dan ketepikan. Putar mentega dengan gula aising hingga sebati. Masukkan tepung sedikit demi sedikit hingga menjadi doh yang lembut.
2. Ambil sedikit adunan, kemudian bulat2kan dan susun atas dulang pembakar. Tekankan hujung garfu di atas bebola tadi hingga sedikit leper dan membentuk corak. Buat hingga siap.
3. Bakar dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 170C selama 15 minit (mat tambah lagi 5 minit untuk mendapat biskut yang sedikit garing).
4. Sejukkan atas jaringan sepenuhnya sebelum disimpan dalam bekas kedap udara.

Polony Pizza

Please accept my apologies for not updating this blog yesterday as I had said I would. Yesterday I just got carried away doing new experiments in my kitchen, one after another, beyond control! And as usual, dear mom will just peep from far and shake her head. She'd rather keep herself at a safe distance from me because she knows this one daughter of hers 'flies' in the kitchen! Hahaha...

Anyway here's the recipe of the pizza, as promised, in my Facebook that is...


Ingredients :

190g bread flour
10g milk powder
20g margarine
15g castor sugar
110ml lukewarm water (maybe more)
1 teaspoon instant dry yeast

Bread Maker method :

1. Pour water into the breadmaker pan. Add sugar.
2. Top it with flour, milk powder and yeast.
3. Set the bread maker to DOUGH function. After about 3 minutes kneading, add in the margarine. Let the bread maker continue kneading.
4. After about 20 minutes, turn the bread maker off and remove the dough from the pan.
5. Punch down to release the air. Cut the dough into two and shape into balls. Leave to rest for 10 minutes.
6. Roll to a round thin shape. The thickness depends on how you want your pizza base to be.
7. Place on a tray. Using a fork, prick the surface of the dough.
8. Grate a bit of cheese on top. Then spread the pizza sauce on top. Arrange the polony and whatever topping you like. Grate more cheese on top.
9. The dough doesn't take long to rise. Once it has risen enough, bake in a preheated oven at 190 C for 25 minutes.

Ingredients :

1/2 large onion ~ finely chopped
2 large tomatoes ~ chopped
1 teaspoon garlic paste
1 tablespoon tomato sauce
a pinch of sugar
salt to taste
Extra-virgin Olive oil

Enough polony
Cheddar cheese ~ grated
Mozarella cheese ~ grated

Method :

1. Heat a bit of extra-virgin olive oil. Add in garlic paste.
2. Add in chopped onion and fry till fragrant.
3. Add in chopped tomato and stir well.
4. Add in tomato sauce, sugar and salt.
5. Let it simmer for a while and remove from heat. Ready to be used.

Kangkung goreng

Hari ni kan, mesti Mak Chu tabik spring dengan mama tau. Dua kali I tell you, I update this blog! Kagumest ek Mak Chu... hahaha... Bukan apa, tadi masa mama post gambar lunch combo kami semalam, Nor Hasni ada mintak resepi Kangkung goreng. Bukanlah apa sangat resepinya, tapi sebab nak bagi Mak Chu kagum dengan mama, mama pun tulislah kat blog! Ish, bukan selalu dapat mengagumkan Mak Chu ni... hahaha... so enjoy while it last ye....

Sayur kangkung ni memang kegemaran mama sebenarnya. Teringat dulu, masa kami masih anak-anak kecil, Mak Nah selalu suap mama dan adik lelaki mama (Mak Chu lom ada masa tu eh...jangan mare, nama tak naik!) nasi putih panas, ikan selar goreng, kicap dan kangkung goreng. Mak ai, bukan main laju lagi kami dua beradik menganga mulut. Lauk macam tu dah cukup sedap buat kami....

Inilah cara mama menyediakan kangkung goreng as per photo tu ye... jangan gelak dah ler...

Bahan-bahan :

2 ikat kangkung
3 biji bawan merah
2 biji bawang putih
2 batang cili hidup
2 sudu besar udang kering - direndam sebentar
garam secukupnya
serbuk perasa - jika mahu
minyak untuk menumis

Kaedah penyediaan :

1. Potong sayur kangkung. Rendam sebentar di dalam air yang bercampur dengan garam. Toskan dan lalukan air untuk menghilangkan segala kotoran atau tanah yang terlekat. Ketepikan.
2. Tumbuk bawang merah, bawang putih, cili hidup dan udang kering hingga lumat.
3. Panaskan minyak di dalam kuali dan masukkan bahan-bahan yang telah ditumbuk lumat. Tumis hingga wangi. Masukkan sedikit air , jika perlu dan perisakan dengan garam dan serbuk perasa.
4. Akhir sekali, masukkan kangkung dan kacau hingga rata. Tutup api.
5. Sebelum menghidang, taburkan sedikit bawang goreng di atasnya.

Ingredients :

1 cup ripe jackfruit - diced
1 1/2 cups flour
1 teaspoon baking powder
2 teaspoons milk powder
1/2 cup sugar (depends on how sweet is your jackfruit)
1/2 teaspoon salt
1 cup water
oil for frying

Method :

1. Place all the above ingredients in a big bowl. Cut and fold till the mixture is well combined. Set aside.
2. Heat oil in a wok. Spoon a tablespoon of mixture into the oil and fry till golden brown.
3. Remove from heat and ready to serve.


1 cawan isi nangka yang masak ranum - dipotong dadu atau disiat-siat
1 1/2 cawan tepung gandum
1 sudu kecil serbuk penaik
2 sudu kecil susu tepung
1/2 cawan gula (bergantung kepada kemanisan buah nangka)
1/2 sudu kecil garam
1 cawan air
minyak untuk menggoreng


1. Satukan kesemua bahan-bahan di atas, kecuali minyak, ke dalam mangkuk besar.
2. Kaupbalikkan hingga adunan sebati.
3. Panaskan minyak. Sudukan sesudu besar bancuhan ke dalam minyak dan goreng hingga perang keemasan.
4. Angkat dan toskan lebihan minyak. Sedia untuk dihidangkan.

Sardine Rolls

This morning Mak Chu asked me, why is my blog not updated for quite a long time. She said, "Mama ni malaslah". Oh boy, if only that is possible, I mean to be 'malas', it'll be great! Haha... I was pretty tight up with chores and not to mention, receiving visitors. I only had a few hours before bedtime to clear my emails. So that explains.

Anyway, during my 'journey' in the cyber world, I came across this recipe at Nazian Nasir's Facebook wall and thought of giving it a try. Thank you Nazian for sharing the recipe with us. It's easy to prepare and nice to enjoy with a cup of tea.. Allow me to post the recipe here for my future reference and who knows, maybe there are others who are interested to try.

1 small can of sardine in tomato
1 onion - diced
2 cloves garlic - minced
1 tablespoon chillie paste
1 fresh red chillie - chopped
sugar and salt to taste

Method :

1. Heat a bit of oil in a wok. Add in garlic and fry till fragrant.
2. Add in chillie paste and continue stirring. Then add in diced onion and chopped fresh chillie.
3. Add in sardine together with the sauce. Cook till the sauce is slightly dried. Add in salt and sugar to taste.
4. Stir well and remove from heat. Leave to cool.


3 cups flour
1 teaspoon instant dried yeast (Mauripan)
1 egg
2 tablespoon cooking oil
1/2 cup chilled water
1 teaspoon salt
1 tablespoon sugar

'GLUE' : Add a bit of water to 1 teaspoon flour to form a thick paste


1. Mix yeast and sugar to 1/2 cup of water. Stir well and keep aside.
2. Place flour in a big bowl. Add in egg, oil and salt. Mix well. Pour the yeast mixture a little at a time till a soft and smooth dough is formed.
3. Divide the dough into a 25g balls.
4. Roll thin each dough. Place a bit of filling on top and roll tight. Secure using the 'glue'. Repeat the procedure till all the dough are used up. Arrange on a tray dusted with flour.
5. Heat oil in a wok and fry the rolls till golden brown. Remove the rolls from the oil onto a kitchen towel. Ready to serve.

1 tin kecil sardin
1 biji bawang besar
2 biji bawang putih
1sudu besar cili kisar
1 biji lada merah -dicincang
gula dan garam secukup rasa

Kaedah penyediaan :
Tumis bawang putih yang ditumbuk. Masukan cili kisar, bawang besar yang dipotong nipis dan lada merah. Masukkan sardin dengan sosnya sekali. Tumis sampai kering sosnya dan masukan gula serta garam. Kacau sebati dan matikan api. Ketepikan.


3 cawan tepung gandum
1 sudu teh yis (Mauripan)
1 biji telur sejuk
2 sudu besar minyak masak
1/2 cawan air mineral sejuk
1 sudu teh garam
1 sudu besar gula

GAM : Campurkan 1 sudu teh tepung gandum dengan sedikit air sehingga menjadi pes pekat.


1. Masukkan yis dan gula dlm 1/2 cawan air. Kacau sebati dan biarkan sebentar.
2. Masukan tepung yang telah diayak ke dalam mangkuk besar. Masukkan telur, minyak dan juga garam. Gaul sebati dan kemudian tuangkan air bercampur yis sedikit demi sedikit sehingga doh yang lembut dan tidak melekat di tangan terbentuk.
3. Bahagikan doh kepada bebola kecil seberat 25g.
4. Gelekkan doh menjadi nipis dan letakkan sedikit inti di atasnya. Gulung kemas dan letakkan sedikit gam di hujung supaya gulungan tidak terbuka bila digoreng. Picitkan sedikit di hujungnya.
5. Panaskan minyak dan goreng hingga perang keemasan. Toskan minyak dan sedia untuk dihidangkan.
