Kek Kukus Berinti Ayam


Tried this interesting recipe which I kidnapped from Rinn's the same day she posted it in her Fotopages . But I changed the filling from beef to chicken. Thanks Rinn for sharing...
kira halallah ye, mama copy and paste the recipe in Malay ye... kot kalau kena taip balik pun, mama taip benda yang sama kan... so jangan membuang masa... Allah tak suka kita membazir... ahakss... baik punya alasan for M.A.L.A.S!



STEAMED CAKE WITH CHICKEN FILLING
Source : Chef Zubaidah Chepa

Ingredients for cake :

3 eggs grade B
20g castor sugar
a pinch of salt
100g cake flour (I used multipurpose flour)
1/4 teaspoon baking powder

Method :

1. Beat eggs, sugar and salt till smooth and creamy on high speed for 8 minutes.
2. Sift flour with baking powder. Cut and fold gently into the egg batter using a spatula.

Ingredients for Filling :

250g minced chicken
1 onion - diced
1 teaspoon pepper
2 tablespoon grated cheddar cheese
salt to taste
1 tablespoon flour
1/2 teaspoon Corriander powder
1/4 teaspoon cummin powder

To garnish :
Spring onions
Fresh red chillies

Method :

Heat oil in a wok and add in diced onion, pepper, corriander powder, cummin powder and minced chicken. Saute till chicken are cooked. Add in
cheese, flour and salt to taste. Remove from heat and set aside.



Preparing the steamed cake

1. Get the steamer ready.
2. Grease the mould with a bit of butter. Sprinkle with a bit of spring onion and sliced red chillie. Spoon the filling in the middle and lastly add enough cake batter on top.
3. Bake for 15 to 20 minutes. Remove from steamer, leave to cool slightly before removing from the mould.




KEK KUKUS BERINTI DAGING
(Nama asal : Kek Kukus Lapis Daging)

Bahan-bahan utk kek:
3 biji telur gred B
50gm gula castor ( ...mungkin elok dikurangkan sedikit. Agak manis utk savoury cake.. )
Secubit garam
100gm tepung superfine (tepung kek)
1/4 sudu kecil serbuk penaik

Cara-cara:
1. Pukul telur, gula dan secubit garam sehingga gebu dan pekat. Guna kelajuan tinggi selama 8 min.
2. Ayak tepung bersama baking powder. Kaupbalikkan ke dalam adunan telur menggunakan spatula. Jangan diputar.

Bahan-bahan untuk inti daging :
250gm daging kisar (Boleh diganti dengan ayam)
1 biji bawang besar, dipotong dadu
1 sudu kecil lada putih
2 sudu besar cheddar cheese (Atau apa2 cheese yg boleh bagi rasa cheese.. )
Secubit garam
1 sudu besar tepung gandum
* Rinn tambah sedikit serbuk ketumbar dan jintan
* Daun sup, daun bwg dan hirisan cili merah utk hiasan

Cara-cara:
1. Panaskan sedikit minyak utk menumis. Tumiskan bawang, masukkan lada putih dan daging. Tumis hingga daging masak dan agak garing. Masukkan cheese dan tepung. Perisakan dengan sedikit garam.
2. Sementara itu panaskan pengukus.
3. Sediakan acuan aluminium foil kecil. Sapukan sedikit butter. Taburkan hirisan daun sup, daun bwg dan cili merah. Bubuh inti daging dan tutup dengan adunan kek.
4. Kukus selama 15min - 20min. Sejukkan seketika, keluarkan dari foil dan terbalikkan kek supaya intinya berada di atas. Sedia untuk dihidang.

*Nota:
Sekiranya anda ingin melapis kek ini. Sila gunakan loyang 7" x 7". Lengser dengan sedikit butter. Tuang separuh dari adunan kek dan kukus selama 20 minit. Setelah masak taburkan inti daging dan tuangkan baki adunan kek. Kukus lagi selama 20 minit. Sejukkan seketika dan bolehlah dipotong seperti kek biasa.

Donut (Erna's MIL)



For today's recipe to share, I'll post a Donut recipe that was given to me a long time ago. Infact, I've tried it before but since I didn't snap any photos of it, I have to postponed posting the recipe in my blog. Only recently I tried again this lovely recipe and were really enjoyed by those who had the chance to taste them. Thanks Erna a.k.a Mommy Brownies and her mother-in-law for sharing this recipe with us. You may want to halve of quarter the recipe when trying.

DONUT

Ingredients :

550g water
* 300g bread flour
* 700g multipurpose flour
10g baking powder
20g milk powder
5g bread improver
20g instant yeast
10g dough softener
80g sugar
1 egg
10g salt
100g margarine

Note (*) : I used multipurpose flour (tepung gandum) for both.






Method : (the easiest way==>> Use your bread maker!)

1. Pour the water into the bread maker pan.
2. Add in the flour followed by all the other ingredients except for margarine.
3. Set to the BASIC DOUGH programme and let the BM does it's job.
4. After about 5 minutes or until the dough is well incorporated, add in the margarine and let the BM continue kneading until a soft and smooth dough is formed. Let it rest for 30 minutes.
5. Punch the dough to let the air out. Roll to the thickness of 1 cm and cut using the donut cutter,
6. Place a piece of plastic on a tray and arrange the cut donuts on it.
7. Leave the dough to prove.
8. Fry until golden brown. Coat with castor sugar or with chocolate, anyway your heart desire! Enjoy!

Yesterday evening, around 5.10 pm, I received a pleasant surprise at my doorstep. The sweet Suzinor came to deliver me a lovely maroon box filled with yummy chocolates with a little card on top. And who sent me this lovely surprise? Let's have a look.....

Custard Roll

Hubby and me went to visit D.A.A.L.I.A who just had an operation on her right hand due to the 'Trigger Thumb Tightened A1 Pulley'... mak ai panjangnya nama sakit awak ni... kelakar pun ye.. kita dok imagine ada Tigger, kawan cik Pooh... pas tu ada la pulak Thumbelina, ada rolly polly.... hihihi... jangan marah ye wak... kita gurau je!.. She's looking well and SHOULD BE resting, but what was she doing? Only me and those who were there knew... ahakss.....

Anyway Lea, speedy recovery to you and take it easy on that hand ya... Kesian dia, dah mogok pun, awak still nak kerjakan dia lagi! Hehehe...



I tried another bread recipe today, and again from Chef Khoo See Yew's book. I think Rinn must have passed to me the 'bread baton'! Now who must I pass this baton next? Please put up your hands!!! Hahaha... Anyway, here's the recipe if anyone cares to try.... and oh... thanks Chef and thanks dear hubby for buying me that book! Love it very much! Many many more recipes to try, makes MamaFaMi a happy lady!



CUSTARD ROLL
Source and adapted from : Chef Khoo See Yew

Ingredients :

60g condensed milk
15g egg (about 1/2 an egg)
170g cold water (from the refrigerator)
2.5g salt
2.5g bread improver
5g instant yeast
300g high protein flour (I used multi purpose flour)
20g butter
5g milk powder


Method : (I used my breadmaker to do this job! Cheating, but it works! Hahaha)

1. Pour the cold water into the bread maker pan.
2. Add in the flour followed by all the other ingredients except for butter.
3. Set to the BASIC DOUGH programme and let the BM does it's job.
4. After about 5 minutes or until the dough is well incorporated, add in the butter and let the BM continue kneading until a soft and smooth dough is formed. Let it rest for 30 minutes.
5. Divide the dough into 50g each. Make into small balls and let it rest for another 10 minutes.
6. Shape into long strip and arrange on the baking tray.
7. Prove till double in size.
8. Pipe the custard topping.
9. Bake in a preheated oven at 180 C for 25 to 30 minutes.

CUSTARD TOPPING (my version)

15g custard powder
15g sugar
250ml fresh milk

Method :

Thoroughly mix custard powder, sugar and 25ml milk, while 225ml milk is being brought to boil. Add boiling milk to mixture, stirring well. Return to low heat, stirring continuously until it thickens. Set aside.

Butter Cream Filling (I didn't do this)

*125g butter
*75g margarine
*50g shortening
125g icing sugar - sifted twice
1/2 teaspoon vanilla essence

Method :

Beat ingredients marked * till smooth. Add in sifted icing sugar and vanilla. Whisk till light and fluffy.

Grilled Lemon-Rosemary Chicken




Last 21st June, 2009 was Father's Day. Though it has already past, let me just wish all the fathers a HAPPY FATHER'S DAY. Better late than never. But to me, everyday is Father's Day because I am sure, everyday we'll love our dad more and more, right.

Though abah is no longer with us, I still feel his presence, his love and the memories will stay fresh forever in my heart. My abah is the best in the world. He's so loving, so gentle, so caring, so soft spoken and he has the heart of a gold. At times when I am baking alone in the kitchen, I feel as if he's there with me, accompanying me as he used to do before. Abah likes to stay in the kitchen when he knows that I am up to something. He'll sit patiently at the kitchen table, watching me 'playing' around with the flour and will wait until the end result is produced and served to him. I really miss all those good ol' times. I am sure, if he's still with us, I won't be loosing my 'semangat' like what I am experiencing now....... Miss you abah.... miss you oh so dearly.......



Latest update on the tailor... Yesterday, on the way back from Subang Parade, we dropped by the tailor's shop. The last time we went, he had asked for another 3 days. We gave him more than a week. I didn't even bother to get out of the car this time! And as I well predicted, dearest hubby came back empty handed! I felt sorry for him...

In the previous entry, some had suggested me to call first before paying him a visit. How can I do so when the number he gave was someone else's number. Another had said, keep bothering him until he get bored seeing our face.... Well I think that won't work with this guy! He'll 'selamba-ly' makes promises after promises. Once hubby had said, maybe he has the intention of getting away with our money and material. He'll keep doing this until we're fed up and will just leave him alone.... I said to myself, maybe because hubby is soft with him. What if hubby has that 'Ah Long' look... I bet he'll work night and day to get the trousers done!!!

Oh God help me...



D.A.A.L.I.A came over to my place last Saturday to collect her chocolates. And see what she brought for me???




Yummy looking isn't it? How lucky I am to be appointed as her Black Forest Cake tester! Hahaha... Thanks Lea for the cake.... kalau nak suruh test apa-apa lagi...anto ler yek.... daku sedia berkhidmat! Muahahaha....



Okay, enough of my 'luahan rasa', we'll move on to the recipe to share today. Tried this chicken recipe when Fatin was at home during the school holidays. The way she eats, just makes me hungry. She has the same 'talent' as my mom. Whenever she eats, we feel like eating as well! Sorry, the photo is not so tempting as I was in a hurry. And other reason is, I don't know how to make a better presentation! That's the truth! Hahaha...



GRILLED LEMON-ROSEMARY CHICKEN

Ingredients:

4 chicken breasts, boneless and skinless
2 tablespoons extra virgin olive oil
2 tablespoons, fresh lemon juice
1 tablespoon, fresh rosemary, minced
2 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper


Method :

Place chicken breasts in a shallow glass dish or resealable plastic bag. Combine rosemary, garlic, black pepper, olive oil, and salt in a small bowl. Pour mixture onto chicken, cover or seal, and place in refrigerator for 15-20 minutes. Preheat grill for medium-high heat. Place chicken breast on a lightly oiled grill rack and allow to cook for 7 minutes per side. When chicken is no longer pink and juices run clear, remove from heat and serve.

Puding Roti Marble


I am now in the 'house-spring-clean' mode. So I will spend less time infront of the laptop and more time sweating! Though it's a tiring job, but the end result is satisfying, to me, at least! Hahaha....

Straight to the point now as I need to stretch my back, or rather my eyelids.... I'd love to share with all of you, this pudding recipe that I got from Madamme Jun's Blog . Made this on the 21st May, 2009, a day after Jun posted the recipe in her entry. And yes, only now I am posting it in my blog. Why? Hmmm... dunno! Anyway, according to Jun, she got the recipe from hana@ina of MyR. So thank you to both of you lovely ladies for sharing this easy to prepare recipe.


BREAD MARBLE PUDDING

Ingredients :

4 pieces of white bread
2 eggs
1/2 cup condensed milk
170 ml evaporated milk
8 g agar-agar powder
1/2 cup sugar
2 tablespoons butter/margarine ~ melted
3 1/2 cups water
2 tablespoons cocoa powder (you can also use chocolate emulco)



Method :

1. Bring to boil, 3 cups water, agar-agar powder and sugar.
2. In the food processor or a blender, blend together bread, eggs, evaporated milk and 1/2 cup of water.
3. Pour the blended ingredients into the agar-agar mixture.
4. Add in the melted butter/margarine and stir well. Remove from heat.
5. Divide the mixture into 2. Add cocoa powder/chocolate emulco into one bowl and leave the other as it is.
6. Spoon a ladleful of plain mixture into the mould/tin. Then a ladleful of the chocolate mixture. Repeat the procedure until all the mixture are used up. You have to work fast!
7. Let it set in the refrigerator for at least 1 hour.

Cerita 3 Bab


PART 1



In case you don't know, I was on a 'no-rice diet' for a month, for the whole of May to be precise. Alhamdulillah I managed to fulfill my mission. It wasn't easy I tell you, especially during the first week. Imagine, you are the one preparing the meals and rice. Then you have to sit at the same table but only to watch others enjoying their rice! You have to make do with bread or cereals or quaker oats! Being an Asian, that does not help at all! But since MamaFaMi loves challenges and she had boldly accepted HER OWN challenge, so by hook or by crook, she has to go for it... hahaha...bolehlah eksen cakap cam ni sebab dah berjaya kannnn... ahakss...

Okay mama, enough blabbering... we want to know the result!
The result? Well, sorry to disappoint all of you... but MamaFaMi still can't wear Kebaya and she's not even close to that size! She's still a size 50! Hahaha... but that never puts me off. Maybe a 'no-rice-diet' on it's own is just not the right way for me to loose weight. It has to go with excercise as well and yes, I didn't do it. Challenge myself again? Hmmm... not in this near future.... hahaha.....

Okay Lee Lin , I hope this answers your question ya... don't worry, mama tak ngelat tau, janji tetap janji... hihihi....

PART 3



Last May, we sent 4 pieces of trousers material to a tailor somewhere in USJ. Hubby had kindly paid more than half the amount. He said he purposely paid more with hope that this guy will sew the trousers at good time. After the promised date of 3 weeks, we went to collect the trousers but the tailor said they're not ready just yet and had asked for another week. So yes, we gave him another week. Still not ready. Everytime we went there, he'd say the button holes are not ready. After another 2 trips there, he finally told us that he had sent the materials to another tailor to sew them and they still haven't come back! Why must he lie? Why can't he just tell us the truth instead of us having to travel all the way there and not only once, twice or trice... I think it had been more than 5 times! I lost count!! We wasted our time and fuel going that side for nothing! My patience has it's limit. After the third visit, when I followed hubby to the shop, I will stop a few shops away from his shop as I am afraid my blood will go upstairs!!! And gosh, I thought I have loads of patience!!!!

But what surprises me is hubby's patience towards this guy! After all these trips and all the tailor's lies, hubby can still take it where else I am boiling inside! Now let me ask you guys a question, if you were in our position, what will you do?

Tuna Twist



Assalamualaikum and a good day to everyone. I'm taking this opportunity to thank all of you, my kind sweet friends for the birthday wishes and duaas. Amin amin ya rabbal alamin. Yes, I turned a year older and hopefully wiser! Not sillier! Would love to write more but time does not permit me to do so as of now. Got loads of house chores to be done. Wish me luck!



I will post another bread recipe that I've tried last week.It's from the same book and the taste is yummy. Not that difficult to prepare, but the method is surely something new to me. If you care to give it a try, here's the recipe.....



TUNA TWIST
Source : Chef Khoo See Yew (Home Bread)

Ingredients :

(A)
*230g high protein flour
5g instant yeast
170g water
1/8 teaspoon bread improver

(B)
20g egg
60g castor sugar
1/4 teaspoon salt
25g cold water
2.5g instant yeast

(C)
30g butter
*100g high protein flour

FILLING - to be mixed evenly

*300g Tuna (drained)
100g onions (chopped)
30g cheddar cheese
*100g mayonnaise
a bit of white pepper
a bit of salt
a bit of sugar

Note (*) :
1. I used all purpose flour (tepung gandum).
2. I used Tuna with mayonnaise in the can.





Method :

1. Mix A till even and rest for 1 1/2 hour.
2. Place A into the bread maker and add in B. Press the BASIC DOUGH setting.
3. When the dough is well incorporated, add in C and let the bread maker continue kneading till a soft, smooth and elastic dough is formed.
4. Divide in 40g each, knead into long strip. Shape into number '8'.
5. Place onto baking tray and let it prove till double in size.
6. Put filling on top.
7. Bake in a preheated oven at 190 C for 20 minutes.
8. Once out of the oven, brush with a bit of butter to give it a shiny look.

Egg on Toast


Okay, here's the continuation of yesterday's bread story....

Once upon a time, there was a lady, named MamaFaMi who has a lot of house chores to do, but will always steal time to be infront of her laptop to visit her cyber friends' blogs. And that explains why her house is always in the state of tongkang pecah! Luckily the family doesn't have to suffer from hunger due to her excessive diverted attention from her responsibilities. Hahaha.... ...hok aloh, teruk sangat pulak bunyiknya ye... hihii...

One day, she came across Mamasya's Fotopage . She fell in love with the Egg in Toast, and especially because of the colorful bread. Mamasya is a Malaysian staying in Brunei. How on earth is MamaFami who is now staying in Malaysia, going to get hold of the colorful bread? Then she remembered a bread book that she had bought ages ago and flipped through the pages. She came across the sandwich loaf recipe and without further ado, decided to try out the recipe and at the same time, tried to bake a colorful bread. And walla...she did it... With that bread, on the same day, she made her Egg in Toast. She shared the toast with her dearest husband and they live happily every after......... the end....




EGG IN TOAST (or as some may call Egg in the Basket)

Ingredients :

2 slices of bread
1 piece of cheese
1 egg
a little knob of butter

Method :

1. Using a cookie cutter, cut the middle of 1 slice of bread.
2. Divide the 1 piece of cheese into 4 strips.
3. Place the (uncut) slice of bread on toaster tray. Line the strips of cheese on top the 4 sides of bread. Stack the other slice of bread (the one with the cut-out shape) on top. Press the sides a little.
4. Gently, break the egg into the centre cut square. Put a little butter on the yolk.
5. Toast for about 10 minutes, done! Add some white or black pepper if you like.
