Banana Chocolate Chips Cupcakes


BANANA CHOCOLATE CHIP CUPCAKES

Ingredients :

1/2 cup castor sugar
1/4 cup brown sugar
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/8 teaspoon cinnamon
1 pinch salt
3 grade B eggs
1/2 cup butter - melted and cooled
3 very ripe mashed bananas - mashed
3/4 teaspoon banana essence

Method :

1. Preheat oven to 170 C. Line 15 muffin tins with paper liners; set aside.
2. Combine the castor sugar, brown sugar, flour, baking soda, baking powder, cinnamon and salt in a bowl. Whisk to mix.
3. In a separate bowl combine the eggs, melted butter (you can microwave it), banana mash and banana essence. Whisk to mix.
4. Pour the wet mixture into the dry ingredents and stir ONLY until you can no longer see the dry ingredients.
5. Gently mix in the chocolate chips.
6. Drop batter into the 15 cups, filling each almost full.
7. Bake cupcakes for 25 minutes or till an inserted toothpick comes out clean.
8. Remove cupcakes from tins and let cool.

Rancangan Bersama MamaFaMi - Episode 3

Assalamualaikum semua...

Alhamdulillah masih dipinjamkan umur kepada Mama untuk terus bersama kalian dalam Rancangan Bersama MamaFaMi. Hari ini, kita tak akan belajar memasak ye. Hari ini kita belajar cara menggosok baju pulak. Hidup kita bukan hanya berkisar pada makanan sahaja, tetapi mencakupi lain-lain bidang kerja juga dan salah satu darinya ialah menggosok (hihihi...favourite mama ni!).

Okaylah, untuk tidak membuang masa lagi.... kita terus aje ke rancangan kita ye. Ilmu ini telah diturunkan kepada mama oleh Allahyarham abah mama yang tercinta dan ilmu itu akan kekal di dalam ingatan mama, selamanya.... terima kasih abah..







Sekian untuk kali ini. In Sha Allah kita ketemu lagi di lain rancangan, salam sayang dari mama untuk semua...

DIFITNAH????

DIFITNAH??

Siapa yang difitnah ni? Ce citer ce citer?
Hah? MamaFaMi difitnah? Bila? Siapa? Pasal apa?
Cuba tengok ni.....




Laaaaaaaaa kalau yang ini... bukanlah FITNAH namanya. Ini namanya PROMOSI. Hihihi... Taaanjat gegirl!

Mat Gebu kan memang suka buat gempak. Mentang-mentanglah mama tak ada FB... kalau tak kerana ada orang lain yang 'trigger', mama tak tahu apa pun yang jadi kat dalam FB.

Ada satu hari tu, dapat message kat whatsapp mama dari Kak Wan Nita Ferial. Dia kata CONGRATULATIONS. Oh, apa kes pulak ni? Bila mama selidik, Kak Wan kata, patutlah mama senyap aje kat whatsapp, rupanya sibuk kendalikan rancangan memasak overseas! Hok aloh... blur achik kejap! Rupa-rupanya ada orang sudah bikin berita gempak kat FB. Hahaha... seronok juga perasan sekali sekala ni... hahaha...

Anyway, terima kasihlah bebanyak Mat sebab naikkan traffic mama untuk hari tu ye. Bolehlah buat selalu ye... mama rela... hik hik hik....

Bercakap tentang 'Rancangan Masak Memasak' mama tu kan, ini dia bukti kerberkesanannya.... chewah...

Chocolate Marbled Bread Pudding


CHOCOLATE MARBLED BREAD PUDDING

Ingredients :

3 1/2 cups water
10g agar-agar powder
1/2 cup sugar (I added a tablespoon more)
4 pieces white bread - cut to small squares
2 eggs
1/2 cup condensed milk
170ml evaporated milk
2 tablespoons butter or margarine - melted (I used margarine)
2 tablespoons cocoa powder or chocholate emulco (I used emulco)


Method :

1. Bring to boil, 3 cups water, agar-agar powder and sugar.
2. Using a blender, blend together bread, eggs, condensed milk, evaporated milk and the balance of 1/2 cup water.
3. Pour the blended ingredients into the boiling syrup mixture.
4. Add in the margarine or butter and stir till the mixture bubbles. Remove from heat.
5. Divide the mixture into two portions and add cocoa to one portion and leave the other one as it is. (*If you are using cocoa powder, then mix with a tablespoon of hot water to form paste).
6. To do the marble effect, spoon 2 tablespoons of plain colored mixture and top it with 2 tablespoons of cocoa colored mixture. Repeat the procedure. When you are half-way through, reduce to 1 tablespoon of each mixture per layer.
7. Chill in the refrigerator till set.
8. Cut and serve. Enjoy!

Bingka Telur in Happy Call

Ingredients :

3 nos eggs
1 cup pandan juice (I just add a few drops of pandan essence and green food coloring)
400 ml thick coconut milk
1 cup sugar
1/2 teaspoon salt
1 1/2 cup flour - sifted
2 tablespoon butter - melted
sesame seeds - I added

Method :

1. Place eggs, pandan juice, thick coconut milk, sugar, salt and 1 cup of flour into a blender and blend.
2. Add the balance flour and melted butter. Blend till sugar dissolved and the mixture is smooth.
3. Grease an 8 x 8"x 3" tin. Pour the mixture into the tin and bake in a preheated oven at 150 C for 1 hour or till done.



Note :

I had tried baking this kuih using my Happy Call. If using the pan of this size, I think it is best not to pour the whole mixture into the pan. I should have removed like a cup or two of the mixture. And when baking it, use slow fire and keep moving the pan around the burner so that the kuih will be baked thoroughly. After 20 minutes, you can flip over the pan and do the same to the other side. DO NOT OPEN THE PAN WHEN IT IS STILL BAKING. Baking time is about 30 to 40 minutes.

I am still not that familiar to bake things in the pan, I still need to learn... a lot more... ;)

Walaupun rupamu buruk, tetapi rasamu tetap menjadi pojaan hatiku!!!!
