Fresh Noodles

FRESH NOODLES

Ingredients :

6 cups plain flour
1 1/2 cups water
1 egg
1 tablespoon ash water (or edible lime water)
few drops of yellow coloring

Method :

1. Mix above ingredients into a mixing bowl. Knead for about 10 minutes. Dough should not be too soft.
2. Let dough rest for 1 hour.
3. Make into small balls. Roll flat and coat with flour.
4. Put into the pasta machine, the smooth part. Repeat trice.
5. Coat the thin piece into enough flour and put through the noodle cutter on the pasta machine.
6. Mix water with some salt and oil and bring to boil. Pour the noodles into the boiling water for about 5 minutes. Keep stirring to avoid noodles from sticking to each other.
7. Pour noodles into a strainer and wash with running tap water.
8. When cold, rub noodles with oil.
9. Ready to use.

Note :

Do not put any salt in the dough as this will spoil the pasta machine because pasta machines cannot be washed.

Pasta Aglio Olio with Pepperoni


PASTA AGLIO OLIO WITH PEPPERONI

Ingredients :

1/2 packet Angel Hair
15 pieces pepperoni
4 cloves garlic - chopped
1 teaspoon chillie flakes (add more if you want it hot)
1 tablespoon Waitrose Green Basil Pesto
1 teaspoon capers
black olives
salt - if necessary
a bit of water
olive oil

Method :

1. Boil angel hair pasta till al dente. Drained and keep aside.
2. In a skillet, add 1/2 teaspoon olive oil and add in the pepperoni. Stir fry for a few minutes. Keep aside.
2. Add enough olive oil in the same skillet. Add in the chopped garlic and fry till fragrant. Add in chillie flakes.
3. Add in the basil paste. *Be careful as oil will splutter!!*
4. Add in olives and caper. Stir for a while before the boiled pasta and a bit of water. Season with salt. Stir to mix.
5. Toss the pepperoni into the pan and mix well. Ready to serve.

LEMAH : kajian baru-baru ini menunjukkan gula yang terkandung di dalam madu adalah sangat membantu dalam mengembalikan kekuatan badan berbanding gula buatan. masyarakat yang mengambil madu dan serbuk kayu manis dengan ratio yang sama didapati lebih peka dan flexible. Dr. Milton , yang menjalankan kajian ini , mengatakan separuh sudu besar madu yang diminum bersama segelas air yang dicampur dengan serbuk kayu manis, jika diambil setiap hari selepas gosok gigi dan tengah hari (sekitar 3 petang) - akan mengembalikan kecerdasan badan dalam masa seminggu.

SEAFOOD PASTA AGLIO OLIO

Ingredients :

3 tablespoons extra virgin olive oil
4 cloves garlic - minced
1 teaspoon roasted chilli flakes
5 prawns - peeled and deveined
3 squids - cleaned and cut into rings
1 teaspoon capers
150g  angel hair
salt to taste

1 tsp chopped fresh parsley
grated cheese

Method :

1. To prepare the prawn stock, place the head and the shell of the prawns in a small pot and add 1/2 cup water. Bring to boil. Remove from heat and set aside.
2. Boil pasta angel hair till al dente, remove from heat and drain water. Rinse pasta under cold water and add a bit of olive oil to them so that they don't stick. Set aside.
3. In a skillet, heat about 3 tablespoons of olive oil. Saute the garlic and roasted chillie flakes till fragrant.
4. Add in the prawns, squids and capers. Add in the prawn stock.
5. Once the prawns start to change color, toss in the boiled angel hair and salt. Stir to mix. Remove from heat.
6. When serving, sprinkle some freshly chopped parsley and some grated cheese. Enjoy!

Pasta Carbonara Mushroom



PASTA CARBONARA MUSHROOM

Ingredients :

Spiral pasta ~ boiled
Olive oil
3 garlic ~ minced
Carrot ~ sliced
Young corns ~ cut to small chunks
Red pepper ~ cut to small pieces
Green beans ~ blanched and cut to small pieces
Button mushrooms ~ sliced
2 pieces beef burger ~ fried and cut to small chunks
3 pieces hotdog ~ blanched and cut to small chunks
1 can Prego Carbonara Mushroom Sauce
a bit of water

Method :

1. Heat olive oil and add in minced garlic. Fry till golden brown.
2. Add carrots and young corns. Stir well.
3. Add in red pepper, green beans and mushroom. Stir for another 1 or 2 minutes.
4. Then put in the beef burger and hotdogs. Let it cook for a few minutes.
5. Pour in the Prego Carbonara Mushroom Sauce and a bit of water as the sauce is a bit too thick. Mix well.
6. Finally add in the boiled pasta.

Cucur Pasta Kurma dan Ayam



CUCUR PASTA KURMA DAN AYAM

Bahan-bahan :

Pasta Milkflow star - direbus dan ditoskan
Daging ayam dikisar (ma guna minced chicken Ramly)
Tepung
Mozarella Cheese
Cheese Mayonaise
Bawang holland - didadu
daun bawang
cili merah - dipotong dadu
frozen mixed vege
lada benggala hijau - dipotong dadu
1 biji telur
garam secukup rasa
lada hitam secukup rasa

Cara :

1. Satukan semuanya di dalam mangkuk. Kacau sebati.
2. Panaskan kuali leper dan renjiskan sedikit minyak Zaiton.
3. Sudukan bancuhan ke atas kuali dan masak menggunakan api perlahan.
4. Terbalikkan cucur hingga kedua dua belah masak sekata.
5. Angkat dan bolehlah disajikan bersama sos cili atau apa-apa juga sos yang digemari.

Vanellis Pasta

I have always envied people who has the ability to cook something new, just by tasting the food. I honestly do not have that ability. What I am good at is to copy a recipe and try them according to what's written. Only sometimes, will I slightly adjust the recipe so that I don't have to go out of the house to get that particular ingredients. Haha... I am a very homely kind of person and I love my house. If it is not going out dating with Mr Hubby or once in a blue moon with friends, I'd rather stay cooped up in the house. Ahhh... heaven!

Oh ok, back to what I was saying in the first place, about these special people. The first experience meeting with this talented people was when we were in Sri Lanka. Kak Hasnah is the name. A Malaysian, following hubby who is working there. We went to this restaurant for a function. They served us a very nice appetizer. She took one and ate it. Then look at me and said, this is easy to do. *Jaw dropped*. She promised to make it when she's free and she did and it actually tasted the same and looked the same! I am in awe!

And for today's recipe, I got it from Maz of Ilham Dapur, who is now residing in Bahrain with her family. Another talented lady. She created this recipe after dining at one of the restaurants in Bahrain. Though I have never been to Bahrain and never tasted the food at that outlet, but I am sure it should be nice because the recipe that Maz gave is just yummy. Thank you Maz for sharing with us. Do go and visit more outlets and start creating recipes for us so that we don't have to travel all the way to Bahrain to taste the food! Hahahaha...

VANELLIS PASTA

Ingredients :

150g penne
1/4 cup chicken fillet - cut to small chunks
1/4 cup brocolli - slice thin
1/4 cup button mushroom (I used Ayam Brand)
1/4 cup capsicums (original recipe asked for only green capsicum, but since I love colors, I mixed green, yellow and red capsicum to the amount of 1/4 cup) - cut to 2 inch size match stick
2 to 3 tablespoons Bolognaise sauce (I used Kimball brand)
1 to 2 tablespoons mushroom soup powder (I used Campbell's Mushroom Chicken with crutons)
1/2 cup whip cream
1/2 cup mozarella cheese
chilli flakes - amount to your liking

Method :

1. Boil the penne with a bit of salt and a few dashes of olive oil till al dente. Drain the pasta and keep about 1 cup of the water used to boil the penne. This will be used to do the cooking.
2. Heat a flat wok. Add the brocolli, chicken chunks and 4 tablespoons water. Cook on high heat. When the chicken starts to change color, add in the capsicums.
3. Add in the penne and stir well. Add bolognaise sauce, mushroom soup powder and whip cream. Add water if it is too thick. Note : Do not add bolognaise sauce too much. Just enough to give it an orangish colour.
4. Finally add grated mozarella cheese and sprinkle some chilli flakes. Add salt and water if needed.
5. Ready to serve. Enjoy!

Pasta Aglio Olio

Ingredients :

1/2 packet Angel Hair
4 cloves garlic - chopped
1/2 teaspoon chillie flakes (add more if you want it hot)
1 1/2 tablespoons Waitrose Green Basil Pesto
10 medium prawns - peeled and deveined
3 calamari - Clean and cut the bodies into thick ring
1 teaspoon capers
black olives
salt - if necessary
a bit of water
olive oil

Method :

1. Boil angel hair pasta till al dente. Drained and keep aside.
2. In a heavy skillet, heat enough olive oil over medium high heat. Add in the chopped garlic and fry till fragrant. Add in chillie flakes.
3. Add in the basil paste. *Be careful as oil will splutter!!*
4. Add in calamari rings, olives and caper. Stir for a while before adding the shrimps and a bit of water.
5. Last but not least toss the angel hair into the pan and season with salt.

Vegeroni Spirals Carbonara

Finally, after 2 years , I managed to finish reading I Love You, Stupid by Melur Jelita. Not to say that the story is not interesting, but I don't really have the time to sit and read. Unless I decided to forget about the world and just be in my reading world, then only I think I would be able to finish faster. But that TWO YEARS does not mean 730 days ya. I am not THAT slowcoach! Hahahaha.... Two years here means 2012 and 2013! *wink*

I am relieved I've finised reading that book. Not only it answered most of the questionmarks, but also I don't have to carry a 1.126kg book everywhere I go!

Thank you to Melur Jelita for a book well written. Hmm one question.... What happened to Matt?

VEGERONI SPIRLS CARBONARA

Ingredients :

San Remo vegeroni spirals

3 garlic cloves - chopped
3 bird eye chillie (more if want it hotter) - minced
3 pieces chicken sausage - cut to small chunks
enough frozen mixed vegies
4 pieces canned mushroom - I used Ayam Brand (washed and sliced)
1 can Prego Carbonara (blue colored can)
3/4 can water (use the Prego can) blackpepper
olive oil

Method :

1. Bring a pot of water to boil. Add in a bit of oil and put in the vegeroni spirals. Boil it for 8 to 10 minutes or till al dente. Pour the pasta into a colander to drain out the water and set aside.
2. In another pot, heat olive oil, then add in chopped garlic and minced bird eye chillie. Stir till fragrant. Add a bit of water.
3. Add in the chicken sausages. Stir for 3 minutes then add the mixed vegies and sliced mushrooms.
4. Pour in the carbonara sauce, water and blackpepper. Let it simmer for a while and remove from heat.
5. To serve, place the pasta in a bowl and pour the sauce on top! Enjoy!

Baked Salmon Pasta


BAKED SALMON PASTA

Ingredients :

1 1/2 cups macaroni
1 onion - diced small
1/2 cup fresh shitake mushrooms - diced small
1/4 cup diced red capsicum
1/4 cup diced yellow capsicum
1/4 cup diced green capsicum
1/2 teaspoon chilli flakes
1 cup smoked salmon - flake it

2 tablespoons margarine
2 tablespoons flour
2 cups milk (depends on how thick you want the texture to be. More if you want it to be slightly runny)
salt
blackpepper

grated cheddar cheese - lots (I simply use whatever cheese available)



Method :

1. Boil the macaroni till soft. Drained and keep aside.
2. Saute onion and musrooms. Add in chilli flakes Once soft, add in the capsicums and salt to taste. Add in the salmon as well. Stir to mix. Remove from heat. Keep aside.
3. To prepare the roux : Melt margarine in a saucepan. Mix in flour and whisk on low heat. Slowly add in milk and whisk till smooth. Add salt and pepper to taste.
4. Pour the boiled macaroni into the prepared roux. Add in the salmon mixture. Stir to mix. (You can add grated cheese into the mixture if you like. I didn't)
5. Spoon enough mixture into the prepared silicone moulds. Grate generous amount of cheese on top.
6. Airfied it at 170 C for 10 minutes.
7. Ready to serve. Enjoy!


Note :

1mas2ra baked hers in a big casserole at 170 C for 30 minutes, or until the cheese has changed colour

Fettucine Alfredo Portobello

Fettucine Alfredo Portobello

FETTUCINE ALFREDO PORTOBELLO

Ingredients :

Fettucine ~ boiled until al dente; drain
Olive oil
3 garlic ~ minced
Mixed vegetable
2 pieces beef burger ~ cut to small chunks
3 pieces beef sausages ~ sliced
1 can Prego Alfredo Portobello Spagetti Sauce
enough water
Salt to taste - if necessary

Method :

1. Heat olive oil and add in minced garlic. Fry till golden brown.
2. Add beef burger chunks and sausages. Fry till cooked.
3. Add in mixed vegetables. Stir for another 1 or 2 minutes.
4. Then pour in the Prego Alfredo Portobello Spagetti Sauce and enough water. Add salt if necessary. Mix well. Let it simmer.
5. Finally add in the boiled pasta.

Sauce

FETTUCINE ALFREDO PORTOBELLO
Bahan-bahan :


Fettucine ~ direbus dan ditapis. Ketepikan
Minyak zaiton
3 ulas bawang putih ~ dicincang halus
Sayuran campuran
2 keping burger daging ~ dipotong dadu kecil
3 batang sosej daging ~ di potong setebal 1/2 sm
1 tin Prego Alfredo Portobello Spagetti Sauce
air secukupnya
garam jika perlu

Kaedah penyediaan :

1. Panaskan minyak zaiton dan masukkan bawang putih yang telah dicincang halus. Tumis hingga kekuningan dan naik bau.
2. Masukkan daging burger dan sosej. Goreng hingga masak.
3. Masukkan sayuran campuran dan kacau selama 1 hingga 2 minit.
4. Tuangkan sos Prego Alfredo Portobello Spagetti. Masukkan air secukupnya dan garam jika perlu. Biar merenih.
5. Masukkan fettucine yang telah direbus dan kacau sebati. Sedia untuk dihidangkan.

Prawn & Asparagus


MamaFaMi was busy as a bee yesterday. And behaved well too. I didn't spend much time in front of the laptop. Surprise surprise.... not to your surprise but to mine! Hehehe...

In the morning I prepared the tart shells dough for orders and kept it in the fridge. Then with the endless house chores, cleaning, washing, cooking so on so forth. In between, sent and fetch Syahmi from tuition. From the tuition place, went to do the groceries at a nearby shop, with Syahmi's assistance.

After Zohor, drove to the post office to drop the Express Mail envelope into it's box and straight to the clinic to get my monthly medication. Then off to The Summit, just me and Fatin, no Kak Ana this time. We had to drive round and round, for I forgot how many times, to find an empty parking. I almost gave up but then, if we're meant to be there, then we will. Above all, I am very happy that I am able to park my car nicely in the parking lot, both at the clinic and The Summit.
You know what, ask me to drive to where ever, I think I will manage, but then, when I think of the parking, that normally puts me off! Hahaha... I still need to work on my parking huh?

At The Summit, we went to MPH Bookstore first, to collect the story book that Fatin had ordered. Then off to Popular Warehouse Sale on the 4th floor. I didn't buy anything. Not that I don't want to, but when I think of all my one whole cupboard full of books and magazines, I'd better not add more! But Fatin bought a basketful of novels and surprisingly, plus this one....


Will I be tasting her pasta soon? Let's just wait and see....

And this is Mr Alex Goh's latest bread book that I bought at Popular Bookshop at Sunway last Sunday....


Anyway, let's move to the recipe I wanted to share. Got it from Rinnchan's Fotopages . A simple recipe this time. I had never cooked asparagus before and this is my first time. It was Syahmi who actually makes me want to try cooking and eating asparagus. Thanks Rinn for the very simple yet yummy recipe....


PRAWN AND ASPARAGUS

Ingredients
:

2 bunches asparagus
200g prawns ~ cleaned
2 cloves of garlic ~ chopped
1 fresh red chillie ~ sliced
1 tablespoon oyster sauce
1 teaspoon ground blackpepper
cooking oil
2 dashes of sesame seed oil
salt to taste

Method :

1. Heat the wok and add in oil. When oil is hot, add in garlic and fry till fragrant.
2. Add in prawns and fresh red chillie. When the prawns changed to lighter color, add oyster sauce and ground blackpepper.
3. Add salt and a bit of water if necessary.
4. Add in a few dashes of sesame seed oil.
5. Last but not least, add in the asparagus. Stir for a few minutes and remove from heat.

Having Fun...

Yeah right, I was having fun, like I've got nothing much to do.. Where else, there are tons of work to be done! Hahaha... Well, I am not a machine. I do need a break once in a while. Even machines need to be turned off once in a while so that it can sustain a longer life span! 

Had been trying to snap photos which will look lovely like most of the blogs but yeah, I just have to accept that my creativity is very limited. But hey, I am grateful though. At least my photos nowadays looks better than 10 years back! Hahaha... 

Speaking of 10 years back, that would be my Fotopages era. Unfortunately I can't seem to access my Fotopages anymore. Anyone out there knows what happened? I really need my Fotopages because all my memories of Africa were in there.... What must I do to get back my Fotopages? HELPPPP!!!!

Keropok Belinjau dan Thai Sweet Chillie. Had this for my dinner :) Diet? Oh tidak... reason being... malas masak!!!
