I am 5

Today, in 2007, a blog is 'born'. And that's me, MamaFaMi's Spice n Splendour ! At first, it is more like just a quiet blog, where I posted the recipes from my Fotopages , without any ramblings or grandma's stories. Surprisingly, a few of my visitors said, they missed my pot pet pot pet. That's when I started to write, a short one if not long. How I missed the good ol' days when writing is much easier for me. Nowadays, it's not only time which is not on my side but to think of something to write, do takes time. And I guess, my grammar has gone haywire too.

Anyway, I'd like to thank all my lovely visitors for your continuous support towards my blog. May God bless us all.. Thank you from the bottom of my heart....

Instant Chicken Tempura Foldovers

Assalamualaikum everyone!

It is 6th Ramadhan today. It means that we've fasted for 5 days plus now. Time flies. I felt like we've just started and the true fact is, it's almost a week now.

This morning I was listening to Radio ERA, while doing my morning walks. And yes, I am still walking during Ramadhan. So far, I hadn't miss much, only twice in 2 months' time. Good eh? Aja aja fighthing mama!!! Okay, back to Radio ERA, Johera was talking about missing sehri. Well, for us today, we didn't miss sehri but we woke up a bit too early from the usual time. Thank you to Miss Fatin! Gosh! She didn't sleep the whole night because she was doing her programming. It was 4 am when she woke me up. And me, without checking the time, came down and prepare for sehri. After we were done, when I looked at the clock, it was only 4.48 am. Grrrrr Fatinnnnnnnnn!!!!!! Normally we will wake up at 4.45am, and today, we were done eating by 4.48am! So moral of the story, never jump out of the bed without checking the time first! Huhuhu......

Just to share something simple and quick that you can prepare for iftaar. Especially for those who are lazy busy and who has limited time to prepare food for iftaar. I made these last Monday and will be making it again today, but using fish nuggets.



This is convenient especially for those who are rushing to go somewhere just after Iftaar. In my case, this is suitable for my son whose tuition classes starts at 8 pm. Once he broke the fast, he'll just pray Maghrib, grab these foldovers and jumped in the car and we'll drive him to the tuition centre. Now that the traffic is heavier compared to before, we had to start our journey earlier than before... be patient dik.. another few more months to go... we can do it!!! Phew.....

Anyway, this is how I go about doing the foldovers...

- Remove the tortillas from the packet.
- Heat a bit of oil on a grill pan
- Grill the tortillas 1 minute per side
- Remove from the grill


















- Fry the nuggets till golden brown
- Once cooled, slice to 1cm thick



















- Clean the vegetables and cut to bite size





















- On a piece of tortilla, spread the vegetables
- Toss the sliced chicken tempura nuggets
- Pipe some mayonaise
- Pipe some Thousand Island sauce
- Wrap the tortillas neatly.









And enjoy!!!

Apple with Cream Cheese Tart

I had a few red apples and granny smith apples screaming at me to end their misery! I surfed the internet to see what is the best way for me to finish the apples so that both parties will be happy! Hahaha... Thank you to Joy of Baking for the solution. I gave half the tart to my neighbour and it seems she loved it.


APPLE WITH CREAM CHEESE TART

Ingredients :

CRUST :

1 cup (130 grams) all-purpose flour
1/4 teaspoon salt
1/3 cup (35 grams) confectioners (powdered or icing) sugar
1/2 cup (1 stick) (113 grams) cold unsalted butter, cut into small pieces

FILLING :

One 8-ounce (227 grams) cream cheese, at room temperature
1/4 cup (50 grams) granulated white sugar
1 large egg
1/2 teaspoon pure vanilla extract

TOPPING :

1/4 cup (50 grams) granulated white sugar
1/2 teaspoon ground cinnamon
4 cups (1 liter) Granny Smith apples, peeled and cut into 1/4 inch (6 mm) slices (about 3-4 large apples)
1/2 cup (50 grams) sliced almonds



Method :

Apple Tart : Preheat oven to 450 degrees F (230 degrees C) and place rack in center of oven. Butter, or spray with a non stick spray, a 9 inch (23 cm) spring form pan.

Crust : In the bowl of your food processor, place the flour, salt, and sugar and pulse to blend together. Add the butter and pulse until dough just begins to come together. Pat the dough onto the bottom and about one inch (2.5 cm) up the sides of the pan. Cover with plastic wrap and place in refrigerator while you make the filling.

Filling : In a food processor process the cream cheese until smooth. Add the sugar and mix well. Blend in the egg and vanilla extract and process until smooth. Remove the crust from the fridge and pour in the filling. Return to refrigerator while you prepare the topping.

Topping : Combine the sugar and cinnamon in a large bowl. Toss the sliced apples in the sugar mixture. Spoon the apples evenly over the cream cheese layer and sprinkle with almonds. Place the spring form pan on a larger baking sheet to catch any drips.

Bake at 450 degrees F (230 degrees C) for 10 minutes. Reduce heat to 400 degrees F (205 degrees C) and bake for another 25 to 30 minutes or until the crust is brown, the apples are tender when pierced with a sharp knife, and the filling is almost set. Remove from oven and place on wire rack to cool. Sprinkle with confectioners sugar and serve at room temperature. Leftovers can be covered with plastic wrap and refrigerated.

Serves about 8-10 people.

MapMyRun and why I slept late! Ngeeee....

I had been doing morning walks for the past one month now, only missing twice. The first time was when I had to go to my son's school for the report card day and the second time, it was raining. I've read somewhere that it takes 21 days doing the same thing to develop the habit. So yes, after walking for 21 days, I just find it easier to get myself to walk in the mornings. Unlike previously when I walked for 3 days, stopped for another 3 days then continue walking and stopping and finally stopped ! But one thing that I am still unable to make it a habit is to not eat rice for 21 days continuously! Oh Allah, do give me strength. But then, I am now cutting on the amount of rice taken daily. Some days I even skipped rice! Aja aja fightning mama!!!

Thanks to my dearest sister for introducing me to this MapMyRun application on the cellphone. It developed my insterest to keep walking. MapMyRun will track our fitness activities. It will record our workout details, including duration, distance, pace, speed, elevation, calories burned, and route traveled on an interactive map. You can read more about it here.

And today, I am proud to say that I walked 6.45 km in 1 hour 22 minutes and 56 seconds! That's the furthest so far... And thanks to Kak Ana for the company. If I were to walk alone, I won't be walking out of my housing area. I am just not brave enough, just yet, eventhough my neighbourhood is considered safe but we'll never know... better be safe than sorry....

As mentioned in my previous entry, I had been sleeping late for 2 days, making cupcakes and brownies. Well, I'll post the photos of the end product. I just hope my dear customers will be happy with their orders.

Thank you Sally for leaving a comment on my entry. To answer your question, I used a tray with the cutters that can be bought at any bakery supplies shops. I will bake the brownies without the cutters. Once the brownies are out of the oven, I will just place the cutters on top of the brownies and press slightly into the brownies just to leave some lines on the surface as a guide. When the brownies are cool, I will cut it with a sharp knife to give a clear cut on the brownies. Hope this helps!

Sambal Ikan Bilis dan Petai

Yes, my blog had been idle for quite sometime. But never mind, I think, nobody noticed.. ahakss... selamattt!!!. Besides being busy with I don't really know what, I got carried away reading. And other than that, just being plain lazy. Lazy to switch on my laptop. And how can I update with my laptop switched off?? Oh never mind, don't bother to think of the answer as it won't come out in any examinations! Hahaha...

Anyway, I had been bad naughty last week. I slept late, 4 days in a row! Shhhh... please don't tell my hubby! 2 days doing cupcakes and brownies, and the other 2, can't stop reading! Why stop at 4 days? Because the next day, I had headache and I dare not even take my BP reading! Hahaha... But yesterday, I am on the right track again.. slept slightly early... 11.30 pm... err.. at least it is better than 2am right? Ngee......

Do you eat petai? If so, how do you like it, cooked or raw? I like it raw. But I just can't get myself to eat the skin though people said, it's good to eat with the skin. Anyway, this is my first time putting petai in my sambal after Hanita said that she longed to eat 'sambal ikan bilis dengan petai'.


SAMBAL IKAN BILIS DENGAN PETAI

Ingredients :

1 Holland onion ~ sliced
2 cloves garlic ~ sliced
4 tablespoons of chillie paste
salt to taste
3 tablespoonsTamarind juice
sugar to taste
zeal (aji-no-moto) - optional
dried anchovies
enough petai
cooking oil

Method :

1. Fry dried anchovies and set aside.
2. Heat oil in a wok. Add in the onion and garlic. Fry till fragrant and soft.
3. Add in the chilli paste. Stir-fry for about 3 to 4 minutes.
4. Add in tamarind juice and a bit of water if necessary.
5. Add in salt and sugar.
6. Add in the petai and cook for another 2 minutes.
7. Remove from heat and let it cool slightly before putting in the fried anchovies. Mix well.

Note : The amount is just roughly estimated. You can adjust the chillie paste according to how hot you want it to be. We like it hot and spicy to give us more Umph.....

What you can do if you have blood pressure problem

Thank you to Amelia of Amelia De-ssert for your kind email regarding my blood pressure. Let me just post it here for my future reference as I might delete the email by accident. Who knows, it might be of some help to others as well. Thanks again kawan...muahzzzz....

1. Reduce your salt
2. Reduce carbohydrate
3. Drink green tea
4. Drink at least 10 cups of water daily
5. Try to take whole meal bread
6. Take basmati rice or brown rice. For brown rice soak for 2 hours then steam it, taste better.
7. Drink star fruit or guava juice but do not store in fridge. Drink immediately cos it'll oxidize.
8. And don't forget to exercise, even go for a 1/2 hour walk is better than nothing.
9. Don't stay up too late, need sufficient amount of sleep.

Won't be posting any recipes in this entry, just photos of what I had done during my absence in the cyberworld.

Best Moist Chocolate Cake

Saw this wonderful recipe at Cute Oven, Small Kitchen owned by Nadz and decided to give it a try. And since then, I had made it trice. It's not only easy to prepare but deliciously good too! BEST MOIST CHOCOLATE CAKE

Ingredients :

2 cups flour
2 cups sugar
¾ cup cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
2 large eggs
1 teaspoon salt
1 cup buttermilk
1 cup cooking oil (I used Seri Murni)
1 ½ teaspoons vanilla essence

1 cup boiling water + 3 tablespoons nescafe granules
(You can use 1 Cup of strong coffee instead of the boiling water. Doing so intensifies the chocolate flavor. If you're making it for children you might want to stick with the boiling water.)



Method :

1. Preheat Oven to 300° F/ 150° C (This is not a typo! This is a slow bake chocolate cake recipe.)
2. Use Crisco Shortening to lightly grease and flour the 9 x 13 inch baking dish. (It's a one layer chocolate cake!)
3. Place all the ingredients except the cup of boiling water into a mixing bowl.
4. Mix at medium or medium high speed.
5. After about 1 minute add the 1 cup of boiling water. Then continue to mix until all ingredients are blended and smooth.
6. Pour into greased and floured baking dish.
7. Bake for 1 hour or until a skewer inserted comes out clean. (Cupcakes 22 - 23 min. Be sure to use cupcake liners.)
8. Remove from the oven and allow to cool before slicing.



Made this cupcakes to fulfill Cik Oni's order. Thank you Cik Oni. I had used the same recipe for the cupcakes.

Simple Cupcakes

SIMPLE CUPCAKES

Ingredients :

250g butter (I used Planta margarine)
210g caster sugar
4 nos eggs
2 teaspoons vanilla essence
290g self raising flour
4 tablespoons fresh milk
enough chocolate vermicelli (I added)

Method :

1. Cream butter and caster sugar.
2. Add eggs, one at a time and continue beating.
3. Add in vanilla essence.
4. Add in flour in 3 addition alternately with fresh milk, beginning and ending with flour.
5. Add in chocolate vermicelli.
6. Spoon in the papercups till 3/4 full.
7. Bake in a pre-heated oven at 170 C for 20 minutes or till golden brown. Please note, different oven may require different settings.
