Ingredients :

280 g butter (I used Planta margarine)
130 g caster sugar
270 g flour
70 g cornflour
70 g custard flour
1 teaspoon coklat emulco
chocolate vermicelli

Method :

1. In a mixing bowl, beat margarine and sugar until thoroughly combined.
2. Add sifted flour, cornflour and custard flour. Mix till combined.
3. Divide the dough into 2 portions. Add emulco to one portion and mix well.
4. Place the dough into the cookie press mould and press about 3cm long onto the baking tray.
5. Sprinkle with colored chocolate rice.
6. Bake in a preheated oven at 150 C for 20 minutes.
7. Leave to cool before storing in an air tight container.

Red Velvet Cake Classes

A very good day to everyone....

It had been such a hectic weekend for me. Infact, it started way before the weekend. I don't know what was I busy with but the next thing I know, a day has gone by. Time flies...

Anyway... thank you to these lovely ladies Amelia, Kak Noor, Amie, Zana and Mak Teh for leaving a comment on my previous entry. Thank you for your concern. The reason for me being tensed was because I had to whip some fresh cream! What's wrong with whipping fresh cream, you may ask. Well, all these while, whenever I whip the cream, it won't be fluffy. Easy said... it didn't turn out to be what it is supposed to be! That's why I ended up buying those in the cans! Hahaha.. there goes my 'dark secret'!

But I am grateful to have bunch of friends who are always willing to teach me. One of them is Mat Gebu. He told me to keep the mixer bowl and the balloon whisk in the fridge before using. And I did just that. Today, he said to use the non-dairy so that if we over-beat the cream, it won't do much harm. Oooooooo now I know!!!

What did you do with the fresh cream mama?
Well, thanks to Fadzlina for always torturing me with her Red Velvet cake orders. Told her that I am not good at whipping the fresh cream but she insisted. For her very first order, the topping wasn't stiff at all. I thought that would be the end of her ordering RV cakes from me, but I was wrong... terribly wrong! For this time, she repeated her order... A cake and a dozen cupcakes. Not only that, her officemate Fiza decided to join in as well. That explains the hair pulling photo in my previous entry! Hahahaha....

Hokkaido Chiffon Cupcakes - A KEEPER

I read somewhere in the internet that when a woman said she's going to sleep, she won't just go straight to bed but will divert here and there and doing these and that, before she finally goes to sleep. I totally agree with this because I am exactly like that.

For example yesterday, when I came back from sending my son to his tuition class, I saw these small patches of dried grass stuck to my car. Said to myself, let me just wash these few patches... then changed my mind and washed the whole car. About done with my car, these eyes of mine fell onto my daughter's car full of 'bedak sejuk'. So I thought of just, running the water onto the car... and the next thing I know, I was washing her car as well. Tired but satisfied to see two clean cars parked in my porch!

In the afternoon, my sister called and while chatting with her, I was cleaning the dressing table in my room and also my working table. Wallah Voila... by the time I finished talking to her... everything is nice clean and tidy...

In the evening, I meant to just reverse my car and park outside since hubby will be home before Maghrib and park his car in the porch. Then I saw the leaves on the floor and on the grass of our tiny garden, if it may be called one. And yes, I swept them clean...

And you know what..... I didn't plan for any of the above to happen... it just happened along the way.... good ey?!

Whenever I experimented a recipe, I won't repeat the same recipe many times in less than a month's time. I just love to explore new recipes. But this particular recipe, I've bake TRICE in less than a month's time. My daughter loves it, my mom loves it and I too love this cake! I didn't post it earlier because I can't seem to be satisfied with all the photos that I took. But then, if I were to wait for THE photo to appear, then this blog will be covered with spiderwebs everywhere! Hahaha...

HOKKAIDO CHIFFON CUPCAKES

Chiffon Cupcake
Ingredients :


2 egg yolks
Pinch of salt
20g corn oil
20g fresh milk
½ teaspoon Vanilla essence
25g cake flour

2 egg whites
40g sugar
¼ tsp cream of tartar

Method :

1. Preheat the oven to 170C
2. Use hand whisk to whisk egg yolk, salt until creamy. Then add oil, milk and vanilla essence.
3. Add in flour mixture into yolk mixture. Put aside.
4. Beat egg white and cream of tartar until big bubbles formed, then add the sugar a little at a time and beat until medium stiff perks formed.
5. Pour ½ egg white mixture into flour mixture and mixed well, then pour this into the rest of the egg white and mixed well.
6. Bake it for 20 minutes or until cooked.
7. Leave it cool. (I turned each and every cup upside down and leave to cool)


Custard Cream Fillings
Ingredients :

70g fresh cream (beat until stiff)
15g Instant custard powder
40g fresh milk

Method for cream:

1. Beat Instant custard powder and fresh milk until thick.
2. Pour the mixture into fresh cream, stir till well mixed.

How to assemble:

- Use a straw to make hole into the chiffon cupcake.
- Pipe custard cream filling into hole and stop piping as soon as you see cream excess out from the hole.
- Refrigerate it once done.
- Best serve when it is cold.

** Note : I didn't do the custard cream filling. I just piped the readymade fresh cream on top.

Soalan Lazim...

Soalan lazim yang kerap diterima oleh MamaFaMi ialah...

MAMA MASAK APA HARI NI?

Ish ish ish... kalaulah korang ni semua kenal betul siapa dia MamaFaMi yang sebenarnya.. mesti korang tak tergamak nak tanya soalan tu... ahahaha... MamaFaMi adalah seorang insan yang sangaaaatlah tak berapa rajin nak memasak. Tetapi kalau apa yang MamaFaMi masak tu dimakan dengan berselera sekali oleh si pemakan... maka akan membuak-buaklah kembali semangat nak memasak dalam diri ini... hihihi... hakikat dan realiti! Itu sangat pasti! Tapi kalau ler dah penat-penat paksa diri memasak dan orang makan macam nak tak nak je... mulalah datang mood nak boikot memasak!

Hari ni... mood suam kuku sebenarnya... tapi insyaAllah masak juga. Bersebab tu! Sebabnya, mak mama ada kat rumah... takkan nak biar mak kelaparan pulak kan. Kalau anak-anak, boleh juga mama auta kan... hahaha...

Jadinya, untuk sarapan.... thaaa dhaaa....



Untuk lunch..... ini jer......




Dinner mama dan hubby..... tapi taklah semuanya... mana-mana yang berkenan di qolbu je la....



InsyaAllah esok ada entry baru okay... ada resepi... ni mama bagi intai sikit je, apa yang sedang beratur untuk posing esok ye..... tunggu.......

Kuih Bakar Labu Bermadu

I bought half pumpkin from the shop a couple of days ago. I thought of making some pumpkin donuts out of it. But I can't seem to find the kerajinan time to do it. So before the pumpkin starts to rot and before I get some free lectures from my mom, I'd better do something. I started to google for easy recipes and wallah... this is one of them. Thank you to HaSue and Ros Jintanmanis for the recipe. I took the recipe from HaSue's blog.

The sweetness is just nice for me and also my regular food tester cum my neighbour, Saerah. Care to try... here's the recipe....


KUIH BAKAR LABU BERMADU

Ingredients :

2 cups flour
2 nos eggs
350ml coconut milk
2 tablespoons honey
3/4 cup sugar
2 tablespoons cooking oil (I used corn oil)
*1 1/2 cup mashed pumpkin ( about 180g )
1 teaspoon cinnamon powder
sesame seeds
black sesame seeds (optional)

* Note : I cut the pumpkin into wedges and steamed till soft without removing the skin. When soft, scoop the soft pumpkin using a spoon.

Method :

1. Grease the sides of a baking tray. Line the base with greaseproof paper. Set aside.
2. Into a blender, place flour, eggs, coconut milk, honey, sugar and cooking oil. On the blender till well mixed.
3. Add in the mashed pumpkin and cinnamon powder. Blend till smooth.
4. Pour into the prepared tin. Sprinkle with sesame seed and black sesame seeds.
5. Bake in a preheated oven at 170 c for 1 hour or till the surface turned golden.
6. When done, remove from oven and leave to cool before cutting and serve.
