Chocolate Rice Orange Muffin



CHOCOLATE RICE ORANGE MUFFIN

Ingredients A :

* 2 cups all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon bicarbonate soda
1 cup brown sugar
2 tablespoons chocolate rice
chocolate chips ~ for decoration (optional)
Items marked * are to be sifted twice

Ingredients B :

1/2 cup melted butter
1 cup orange juice
1 egg ~ lightly beaten
1 teaspoon orange paste

Method :

1. Preheat oven at 180C for 15 minutes.
2. Place ingredients A in a big bowl and mix well.
3. Make a well in the middle and pour in ingredients B. Using a whisk, mix the ingredients together.
4. Spoon the mixture into the muffin cups, 80% full.
5. Sprinkle some chocolate chips on top if desire.
6. Bake for 20 minutes.
7. Cool and serve.

Vadai




VADAI

Ingredients :

300 g dhall
1 onion ~ diced
1 fresh red chillie ~ diced
1/2 teaspoon fennel seeds
1 sprig of Curry leaves ~ finely sliced
salt to taste
oil for frying

Method :

1. Soak dhall for at least 4 hours but I soaked the dhall overnight.
2. Drain and blend three quarter (3/4) into a paste in an electric food processor. Leave the one-quarter (1/4) portion aside.
3. Combine the ground paste with the unground portion.
4. Add in onion, red chillie, fennel seeds, curry leaves and salt. Mix well.
5. Wet your hands and place a spoonful of mixture on the palm of your hand. Make into a round then flatten slightly.
6. Deep-fry in hot oil until crispy and golden.
7. Serve with fresh green chillie.

Blueberry Cotton Cheesecake



BLUEBERRY COTTON CHEESECAKE

Ingredients :

A
250 g cream cheese
50 g butter
100 ml fresh milk

Double boil ingredients A then leave it to cool.

B
60 g superfine flour
20 g cornflour
6 egg yolks
1/4 teaspoon salt
1/4 teaspoon blueberry coloring
1 teaspoon blueberry essence

Add ingredients B into ingredients A and mix.

C
6 egg whites
1/4 teaspoon cream of tartar
140 g sugar

Beat egg white till foamy and add cream of tartar. Continue beating and add sugar a little at a time. Continue to beat until the soft-peak stage. Fold in the mixture of ingredients A and B.

Pour the mixture into an 8 inch round pan, greased and layered with greaseproof paper. Bake in a pre-heated oven at 160 C using Baine Marie method, for 1 1/2 hours.

Gulai Pucuk Ubi



GULAI PUCUK UBI

Ingredients :

(A)
500g pucuk ubi
50g dried anchovies
400 ml water

(B)
2 onions
1 clove garlic
2 cm ginger
2 candlenuts
1 stalk lemon grass

(C)
Thick coconut milk from 1 coconut
salt to taste

Method :

1. Place ingredients A and B in a pot and simmer for 15 minutes.
2. Add thick coconut milk and salt to taste.
3. Leave to simmer for a few minutes and ready to serve.

Sponge Plain Cake




PLAIN SPONGE CAKE

Ingredients :

250g eggs (without the shells)
120g castor sugar
125g self-raising flour
50ml water
13g emulsifier / sponge cake stabiliser / ovallette
60g melted butter (cooled)
1 teaspoon vanilla essence (omitted)
1 teaspoon strawberry essence
a few drops of pink food coloring

Method :

1. In a bowl, place the eggs, castor sugar, self-raising flour and ovallette. Beat on high speed.
2. Add in water and essence plus the coloring.
3. Continue beating till light and fluffy.
4. Finally, fold in the melted butter.
5. Bake in a preheated oven at 180 C for 40 minutes.
