Chicken Soto

Last weekend, we were busy with Jom Raya activity.

1. Thank you to Kak Zuraidah aka Kak Lazni for the invite. She is my hubby's schoolmate and my senior. *wink* Her big table was full of food prepared by Kak Lazni herself. They were all delicious.
2. Thank you to Ida for inviting us to her lovely condo. But we didn't actually dine at her condo but the condo next door aka her 'second house'. Thank you for the lovely time spent with our kuncu-kuncu. So happening, only thing, we miss one of our good buddies right....
3. Thank you to Zai and her hubby Mr Aziz for having us last Saturday night. We enjoyed the chat, and I didn't realised it was raining outside. Infact it rained and stopped twice!!! Hahaha....
4. On Sunday, Ida Bakery and family came by our place. We had a lovely time with such sporting guests as Ida's family. I am very comfortable if my guests are such a sport as them. Thank you for coming and tasting all my cookies and food. Jangan serik datang lagi ye!

But the person that I must really thank is my dearest darling hubby. He is such a sport. He is always willing to go to friends' houses, be it my friends or his. Many of my friends, the hubby is not that willing to go with them to the wife's friend's house. I think I am just the lucky one...

CHICKEN SOTO

Ingredients :

1 piece cinnamon stick
2 pieces star anise
5 cardamons
5 cloves
1 onion * (* ground finely)
10 shallots *
6 garlic*
1 1/2 inch ginger *
4 pieces candlenuts *
2 tablespoons soup powder (I used Faiza brand) ** (mix both powder with a bit of water to form paste)
2 tablespoons kurma powder (I used Adabi) **
1/2 chicken
2 lemongrass - bruised
1 inch galangal - knocked
Enough water
3/4 cup thick coconut milk
1 stalk spring onion
1/2 cup crispy fried onion
cooking oil
Chillie pouch : Enough bird eye chillies wrapped in a clean white cloth.

To be served with :


Rice cubes - boil till harden. Keep aside
Meat balls
Hot soya sauce
Bean sprouts
Fried suhun
Shredded chicken meat
Spring onion
Crispy fried onion

Method :

1. Heat oil in a pot and add in cinnamon stick, star anise, cardamons and cloves till fragrant.
2. Add in the finely grinded ingredients. Stir.
3. Add in the soup and kurma paste, lemongrass and galangal. Stir till fragrant.
4. Add in chicken. When chicken is half cooked, add in enough water, coconut milk and chillie pouch. Let it simmer till the chicken is cooked.
5. Add in the spring onion, crispy fried onion and salt to taste.
6. Once the soup is cooked, remove the chillie pouch from the pot. Place the chillies in a mortar or blend finely in a mixer. Add enough soya sauce and some soto soup. Stir well.


BEEF BEGEDEL (MEATBALLS)

Ingredients :

2 large potatoes
1/2 kg minced beef
3 pieces cream crackers - blend finely
1 tablespoon beef curry powder
1 egg
salt to taste

1 egg
a dash of pepper
salt to taste
oil for frying

Method :

1. Clean the potatoes. Slice to 1/2 cm thick and fry. Pound the fried potatoes.
2. In a bowl, mix well the pounded potatoes, minced beef, cream crackers, curry powder, egg and salt to taste.
3. Take a bit of the mixture and shape into small balls. Flatten slightly. Arrange on a tray.
4. Heat oil in a wok. Beat egg, pepper and salt. Dip the meat balls in the egg mixture and fry till cooked. Remove from oil onto a kitchen towel. Ready to serve.

  8. I remember having great soto at kampung baru. The kedai is just next door to my friend house. I always wanted to try making soto ayam but never get to do it yet. Seeing yours makes me want to cook this right way. Thanks for sharing the recipe, Mama.
