Chocolate Cake

These past 5 days had been a hectic period for me. Having a full quorum at home, at times can be very handful. I had to be an "All-In-One" kinda person. Running and rushing here and there hoping to settle all that's been planned. Alhamdulillah I managed. Now I can sigh with relief and looking forward to a new week, hopefully a much relaxing one....

Yesterday, I had only planned to bake a box of brownies for my daughter to bring back to her hostel, upon request that is. While I was mixing the brownies, I just thought of baking some Chocolate Chips cookies for her as well. When the brownies was baking in the oven, and while I was making the cookies, I said to myself, why not try out the new muffin recipe that I came across while bloghopping that day. And so I did that too. After that, I prepared the garlic bread and mushroom soup for the kids, as per request. Done with that, I made fried rice for dinner though that time it was only 4pm. We skipped lunch as we had brunch at 11am.

That was what happened when mama is in her 'on-the-move mode'....otherwise.... you don't want to know!!! Hahaha....

Recipe to share today is this chocolate cake, taken from a book that I just bought and using a new tray too. I may have overbaked the cakes resulting to a slightly dry texture. In the book, they had baked the cake in one tray and not in these small cups. So the baking time should be less. Never mind, I learnt from my mistakes. Hoping not to repeat it again next time.

Favourite Chocolate Cake

FAVOURITE CHOCOLATE CAKE

Ingredients :

185g butter
3/4 c caster sugar
2 eggs ~ lightly beaten
1 cup self-raising flour
3/4 cup plain flour
1/2 cup cocoa powder
1 teaspoon bicarbonate of soda
1/2 cup milk

ICING (I didn't do this) :

30g butter ~ melted
2 tablespoons hot water
2 tablespoons cocoa powder
1 cup icing sugar

Favourite Chocolate Cake

Method :

1. Preheat oven to 180 C. Line a 21 x 14 x 7cm loaf tin with baking paper.
2, Using an electric beaters (I did it manually), beat butter and sugar till light and creamy.
3. Add eggs gradually, beating well after each addition.
4. Using a metal spoon, fold in sifted flours, cocoa powder and bicarbonate of soda alternately with milk. Stir till smooth.
5. Spoon mixture into the prepared loaf tin and smooth surface.
6. Bake in the oven till a skewer comes out clean when inserted into centre of cake. Leave in tin for 5 minutes before turning onto a wire rack to cool.

To make icing :

Combine butter, water and cocoa in a medium mixing bowl. Mix to a smooth paste. Add sifted icing sugar. Stir until all the ingredients are combined and mixture is smooth. Spread icing onto cooled cake and dust with icing sugar.
Note : I just drizzled some melted cooking chocolate onto the cake.
