Lemon Crumb Muffin


LEMON CRUMB MUFFIN
Source : SEDAP magazine (bil. 12)

Ingredients :

225 g flour
1/2 tablespoon baking powder
100 g sugar
1/4 teaspoon salt
2 nos eggs
50 g butter ~ melted
100 ml evaporated milk
1 teaspoon lemon juice
1 teaspoon grated lemon rind
25 g chocolate chips

Topping :

1 tablespoon butter
1 tablespoon sugar
2 tablespoons flour

Method :

Topping : Rub together all ingredients to form breadcrumbs and set aside

1. Sift flour and baking powder. Add in sugar and salt. Mix well using a whisk and set aside.
2. In another bowl, beat lightly the eggs, melted butter, evaporated milk, lemon juice and grated lemon rind.
3. Pour the mixture into the flour and mix using the whisk.
4. Add in the chocolate chips.
5. Spoon the mixture into the prepared muffin tin. Sprinkle the crumble on top.
6. Bake in a preheated oven at 190 C for 25 minutes. If you want the muffin to look glossy, brush some apricot jam on top once out of the oven.

    muffin pulak...kita ni teliur kt kuih bakar kt bwh nun sampai skrg x wat2 lgik...adeiii.. agaknya bln depan br sampai seru nk wat muffin..

    Kalau Lin kata soalan tak berapa bijak, tak pe, janji orang yang bertanya tu orang yang nak bijak sebab kalau tak, dia tak tanya! Hehehe... bekas aluminium tu boleh dibasuh dan diguna semula.     Hi Diana... cuba jangan tak cuba... Mama pernah buat homemade jam masa di Malawi dulu sebab kat sana, senang dan murah buah-buahannya such as mulberries, blackberries, strawberries... beli sekali banyak, pas tu mana yang tak habis, mama jadikan jam....
