Chicken Kung Pao
CHICKEN KUNG PAO

Ingredients A :
600g chicken fillets ~ diced
corn flour
salt
- Coat the chicken fillets with salt and corn flour and fry.
- Once cooked, remove from oil and place on the kitchen towel to absorb oil.
Ingredients B :
100g cashew nuts ~ fry with oil
30g dried chillies ~ cut into 1 to 1.5 inches long
2 white onions ~ diced
4 garlic ~ pounded
2 inches fresh ginger ~ pounded
1 green pepper ~ diced
3 tablespoons oyster sauce
2 tablespoons chillie sauce
1/4 cup water
cooking oil
salt ~ if needed
Method :
1. Heat a bit of oil in a wok and fry the dried chillies till crispy. Set aside.
2. Saute ginger and garlic till fragrant.
3. Add in the diced white onion.
4. Add in the green pepper, fried chicken, oyster sauce, chillie sauce and a bit of water.
5. When there's only little liquid left, add in the fried cashew nuts, mix well and remove from heat.
Note :
1. I didn't have any green peppers available that time, so I didn't put any.
2. I just pun a bit of chillie sauce and a bit of dried chillie so that it won't be too hot for the kids to be able to enjoy them
3. And a bit of tomato sauce to give it a more tangy taste.
