Pau Pandan


BAO DOUGH

Ingredients :

150ml water
1 tablespoon pandan emulco
A few drops of green food coloring
45g castor sugar
1/2 teaspoon salt
20ml corn oil
325 g pau flour
1/2 teaspoon baking powder
1 teaspoon instant dried yeast (Saf Instant)
1 tablespoon shortening

Bread Maker method :

1. Into the BM pan, pour in water, pandan emulco and green food coloring. Stir to mix.
2. Add in sugar, salt and oil.
3. Top it with sifted bao flour and baking powder.
4. Turn on the BM to dough setting. Once the flour is incorporated, throw in the shortening. Let the BM finishes it's task which will takes about 1 1/2 hour to complete. (Kneading and prooving).
5. Remove the dough from the BM pan and divide to 50g each. Make into round balls and let it rest for 10.minutes.
6. Flatten the dough and place a tablespoon of kaya filling and cover it. Place on a piece of greaseproof paper or a small piece of banana leaf.
7. Arrange in a steamer and let it rise.
8. After 10 minutes of leaving the pau to proof, you can start boiling the water for the steamer.
9. Once the pau has risen, steam for 10 minutes on high heat. Do wrap the steamer's lid with a clean cloth to avoid.water from dripping onto the pau.
10. Turn of the heat and let it stay about 5 minutes or so before opening the lid. Ready to serve.



PANDAN KAYA

Ingredients :

180ml coconut milk
55g sugar
10g cornflour
1 egg
1 tablespoon pandan emulco

Method :

Place all the above ingredients in a pot and keep stirring over medium heat till it thickens. Remove from fire and let it cool. Ready to use.

Burger Buns




BURGER BUN

Ingredients :

180ml chill water
1 teaspoon salt
2 tablespoons sugar
250g bread flour
50g all purpose flour
2 tablespoons milk powder
1 teaspoon instant dried yeast

40g margarine/butter

White sesame seeds

Bread Maker method :

1. Into the breadmaker pan, pour in the water, salt and sugar.
2. Top it with flour, milk powder and instant dried yeast.
3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine. Leave the bread maker to finish the cycle which will take about 1 1/2 hour or so.
4. Remove the dough from the pan and divide the dough into 6 equal portions.
5. Form each portion into a ball and arrange on a baking tray and place the greased rings. Spray with a bit of water. Leave to rise for another 30 minutes or so.
6. Sprinkle the top of the dough with enough sesame seeds. Brush with the mixture of milk powder and water.
6. Bake in a pre-heated oven at 180°C for 25 minutes or till golden brown
