Pasta Aglio Olio with Pepperoni


PASTA AGLIO OLIO WITH PEPPERONI

Ingredients :

1/2 packet Angel Hair
15 pieces pepperoni
4 cloves garlic - chopped
1 teaspoon chillie flakes (add more if you want it hot)
1 tablespoon Waitrose Green Basil Pesto
1 teaspoon capers
black olives
salt - if necessary
a bit of water
olive oil

Method :

1. Boil angel hair pasta till al dente. Drained and keep aside.
2. In a skillet, add 1/2 teaspoon olive oil and add in the pepperoni. Stir fry for a few minutes. Keep aside.
2. Add enough olive oil in the same skillet. Add in the chopped garlic and fry till fragrant. Add in chillie flakes.
3. Add in the basil paste. *Be careful as oil will splutter!!*
4. Add in olives and caper. Stir for a while before the boiled pasta and a bit of water. Season with salt. Stir to mix.
5. Toss the pepperoni into the pan and mix well. Ready to serve.

Vanilla Butter Cake

VANILLA BUTTER CAKE

Ingredients :

250g butter, soften
230g castor sugar
4 eggs
2 teaspoons vanilla essence
450g self raising flour
250ml fresh milk (I used Dutch Lady Full Cream Milk)
Chocolate chips

Method :

1. Preheat oven at 180 C. Bursh a deep 20cm round cake tin with melted butter or oil, line base and side with paper, grease paper. (I used foil, so no greasing is necessary)
2. Using electric beaters, beat butter and sugar in a mixing bowl until light and creamy.
3. Add eggs gradually, beating mixture thoroughly after each addition. Add essence and beat until combined.
4. Using a metal spoon, fold in sifted flours* alternately with milk. Stir until ingredients are just combined and the mixture is almost smooth.
5. Pour mixture into the prepared tin, smooth surface. Sprinkle with chocolate chips.
6. Bake for 45 minutes or until skewer comes out clean when inserted in center of cake.
7. Leave in tin for 10 minutes before turning onto wire rack to cool.

Note : If you wish to make a marble top cake, just reserve 4 tablespoons of the batter and a add a tablespoon of cocoa powder. Mix well. Spoon a few dollops of cocoa batter onto the vanilla batter and 'scribble' using a skewer.

Samprit Susu

Ingredients :

125g butter
125g condensed milk (I used SAJI brand)
230g cornflour
1/4 teaspoon rose essence (I added)
a few drops of yellow food coloring (I added)
sugar sprinkles

Method :

1. Mix butter and condensed milk using a wooden spoon.
2. Add rose essence and yellow food coloring.
3. Add cornflour to form a soft dough.
4. Take a bit of dough and put through the samprit cookie press.
5. Press onto the tray and sprinkle with sugar sprinkles.
6. Bake in a preheated oven for 12 to 15 minutes.
7. Remove from oven and let it cool before storing in an airtight container.
