Sugee Cake

Sorry... I am too busy to chat today and for these couple of days ahead. Just a quick update to let you know that I still exist in this world. Hahaha... just joking!

SUGEE CAKE

Ingredients :

250g butter, softened
220g castor sugar
125g self-raising flour
1 teaspoon baking powder
125g semolina flour
50 gm cashews, ground
1/3 cup evaporated milk
1 teaspoon vanilla essence
1/2 teaspoon rose essence
5 eggs plus 1 yolk, the whole eggs separated
Silvered almonds


Method :

1. Preheat oven to 170 C.
2. Stir semolina flour, self-raising flour, baking powder and nuts together in a bowl and leave aside.
3. Separate all the eggs. Cream butter and sugar till light and fluffy. Add the egg yolks one at a time. Add cold milk, vanilla extract and buttercream essence and mix well.
4. In another bowl beat egg whites till stiff. Fold in flour mixture into creamed mixture. Then fold in beaten egg whites gently until well mixed.
5. Pour into the prepared tins and sprinkle with silvered almonds.
6. Bake 170 C for 45 mins until skewer comes out clean.

Suamiiiii???



Assalamualaikum...

Ingatkan siang tadi nak update, tapi banyak pulak benda yang nak kena buat. Jadi tak sempatlah nak update kat sini. Malam ni tadi, sempat update kat blog lagi satu, Journey MamaFaMi. Sempat update 2 entry sebab tak de nak menceceh banyak kat situ. Dan lagi, tak payah nak alihbahasa. Senang sikit kerja. Hehehe... Kebetulan, dua-dua buku yang mama update, bertemakan SUAMI. Buku-buku yang mama update tadi ialah :

Chocolate Butter Cake

Hello everyone, I am back, as promised! I thought I was late to cook as Syahmi is supposed to go for his driving lessons at 1pm. With the piping problem in my kitchen, it really slowed down my work. But I am still grateful, even though the water flow is very very slow, at least I still have clean water to use for drinking and washing. Thank you Allah.

After racing against time (hahaha... dah macam sprinter pulak bunyinya...mama dah over dah ni...muahahaha...), I managed to cook in good time. When Syahmi came downstairs, he told me that today's lesson had to be canceled. Hmmm what else can I say...

Made these cakes last Friday, to serve my aunt and cousins who came by from Johor Baru. I gave one tray to hubby's cousin and the rest was enjoyed by my guests. And oh, I managed to send some to my dear neighbour Saerah too. So, thousand apologies in advance to those who has the intention to ask for a piece or two ya.... All gone dearies..... *wink* *wink*


CHOCOLATE BUTTER CAKE

Preparation time : 25 minutes
Baking time : 45 minutes
Makes one 20cm round cake

Ingredients :

150g unsalted butter
3/4 cup caster sugar
2 eggs, lightly beaten
1 teaspoon vanilla essence
1 3/4 cups self-raising flour
1/2 cup cocoa powder
3/4 cup milk

Method :

1. Preheat oven to moderate 180 C (oven temperature may vary). Brush a deep 20 cm round cake tin with melted butter or oil, line base and side with paper; grease paper.
2. Using electric beaters, beat butter and sugar in small mixing bowl until light and creamy. Add the eggs gradually, beating thoroughly after each addition. Add the essence; beat until combined. Transfer mixture to a large mixing bowl.
3. Using a metal spoon, fold in sifted flour and cocoa powder alternately with milk. Stir until just combined and mixture is almost smooth. Spoon the mixture into the prepared tin; smooth the surface.
4. Bake 45 minutes or until skewer comes out clean when inserted in center of cake. Leave in tin 10 minutes before turning onto wire rack to cool.

Note :

1. I made double the recipe.
2. I used Buttercup.
3. I didn't use the electric beaters. I just beat manually using a wooden spoon.
4. I didn't do the topping.

Baca jangan tak baca....

Selama ni, bila kata Mak Chu nak datang rumah mama, mama dengan 'bangga'nya akan beritahu kat dia, mama nak pulangkan novel-novel yang dia bagi pinjam kat mama. Memang selama ni, Mak Chu rajin membeli buku. Jadinya secara tak langsung... Mak Chu menjaga DEPARTMENT MEMBELI BUKU. Mama pulak, DEPARTMENT MEMINJAM DAN MEMBACA BUKU. Kau hader??? Hehehehe... Best kan dapat adik cam ni... hahahaha....

Okay, sambung balik cerita... sehari sebelum Mak Chu datang, mama akan carilah buku-buku yang hendak dipulangkan. Puas dicari, rupa-rupanya hanya SATU buku aje yang boleh dipulangkan. Yang lain BELUM SEMPAT baca! Hahaha... itu yang Mak Chu selalu gelakkan mama. Dia kata, mama ni eksyen je lebih.

Tapi tidak kali ini... mama dengan bangganya siap snap gambar dan tunjuk kat Mak Chu buku-buku yang mama akan pulangkan pada dia.... ce tengok ce...



Dan terselit gak satu buku Chokni... Tapi Chokni kata, tak payah pulangkan, mine to keep! Yahooo... terima kasih Chokni, terima kasih daun keladi, lain kali bagi lagi ye... hehehehe....


Mama baru uploadkan dua buah je dalam JOURNEY MAMAFAMI. Dah mengantuklah, nak tidur dulu ye....

Coney Dog II

"HEY MAKCIK!!!!"

"HEY NYONYA!!!! Kenapa you lari dari I? You simply cabut without saying goodbye!! 
Oppp... kejap.. kejap....Gong Xi Fa Cai eh to you and your family...
Okay... now can sambung marah you! Why you tak call before leaving Malaysia...."

...... etc etc etc and the conversation lasted for about half an hour. That was because my dear friend Bernice just arrived from Zambia a couple of hours before the family dinner during Chinese New Year eve. At least I still have a heart to let her rest. Ahahaha...

Actually I was soooooo excited and happy to be able to get in touch with Bernice again after she left Malaysia without saying goodbye about a year ago. Had been trying to get in touch with her to no avail. I knew Bernice when we were together in Malawi and since then, we had been in touch till last year. She told me, she lost her phonebook when her handbag was stolen before she left for Zambia.

"Okay Nyonya, your excuse is acceptable. After this, don't run away again okay!"

See how we addressed each other... Makcik and Nyonya! Hahaha.. When I was on the phone with her, I had to go upstairs to my room and close the door behind me or otherwise Mr Hubby will give me a weird kind of look... the look that says... are you fighting with Bernice? Ahahahaha....

Anyway, I hope after this we will stay in touch because I do treasure my friendship with all my friends.... F.R.A.N.C.E! (Friendship Remains And Never Can End!)

This recipe was meant to be posted a day after I posted the BUN recipe but time was not on my side. I got carried away doing I don't really know what! Thousand apologies ya!

Anyway, with that bun, I made this Coney Dog for my kids' dinner. Why made the buns? Because I am just too lazy to go to the shop to get some. And why made Coney Dog? Because I was just too lazy to cook rice! So you can see, how LAZY I am nowadays. Oh Allah, have mercy on me!

CONEY DOG

Ingredients :

2 cloves garlic - chopped finely
3 Holland onion - diced
1 teapoon chilli powder
400 g minced meat
3/4 cup tomato sauce
3/4 teaspooon blackpepper - crushed
1/4 cup water
salt to taste
sugar to taste
zeal/ajinomoto - optional
10-12 frankfurter rolls
10-12 frankfurters
Sliced cheese


Method :

1. Heat enough oil in a pan and add in garlic and onion. Fry till fragrant.
2. Add in chilli powder and stir for a while. Then add in the minced meat. Leave the meat to almost cooked.
3. Add in tomato sauce, crushed blackpepper, water, salt, sugar and zeal. Stir to mix and leave to cook.
4. Blanch the sausage and dry with kitchen towel.
5. Make a slit in the middle of the bun and place the frankfurter in the middle.
6. Spread enough coney sauce on top of the frankfurter. Sprinkle some cheese on top and microwave on high for about 30 seconds. Enjoy!

Bun

Hello everyone. I'm back. Sounds like I've been away to somewhere eh? The truth is, I am just at home during the long holidays for Chinese New Year. The only place that I went was to the driving range. Have I started playing golf? Oh no.... I was just there to accompany dear hubby and at the same time, enjoying reading my novel in peace... and the best part is, I can't fall asleep! Hahaha...

But when I've started on a book, I just can't put it down. Hence the silence in this space...

What am I reading at the moment? Cinta Tak Terucap by Imani Hatta.... can't wait to continue reading.... daa everyone......

BUN

Ingredients :

300ml full cream milk
1/8 teaspoon salt
30g caster sugar
350g high protein flour / bread flour
50g flour
50g milk powder
11g dried instant yeast
1/2 teaspoon bread improver
50g butter (I used margarine)


Method (Bread maker) :

1. Into the breadmaker pan, add in fresh milk, sugar and salt.
2. Top it with high protein flour, all purpose flour, milk powder, instant dried yeast and bread improver.
3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine. Leave the bread maker to finish the cycle which will takes about 1 1/2 hour or so.
4. Remove the dough from the pan and divide the dough into 10 equal portions.
5. Roll out each portion using a rolling pin. Then roll tightly like a swiss roll. Arrange in a baking tray and leave to prove till double the size.
6. Brush the proved rolls with milk.
7. Bake in a pre-heated oven at 180c for 25 minutes or till golden brown.
8. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

Banana Chocolate Rice Cake & SELAMAT TINGGAL

BANANA CHOCOLATE RICE CAKE

Ingredients :

150 g butter
200 g self-raising flour *
1/4 teaspoon bicarbonate of soda*(*sift together)
3 large eggs
100 g brown sugar
100 g ripe banana, mashed
100 g fresh milk
a few drops banana essence
1/3 cup banana - diced
50 g chocolate rice
Almond flakes


Method :

1. Pre-heat oven at 170 C. If using a baking tin, grease an 8 inch x 3 inch x 3 inch tin with a bit of butter and layer the base with greaseproof paper. Grease the paper too.
2. Beat butter and brown sugar till creamy. Add eggs one at a time and continue beating till fluffy. Add banana essence.
3. Lower the mixer speed and add in flour alternately with milk, starting and ending with flour.
4. Add in the mashed banana and fold using a spatula. Add chocolate rice and diced banana. Fold till the mixture is combined.
5. Pour into the prepared in. Sprinkle enough almond flakes on top.
6. Bake for about 40 to 50 minutes. Cake is done when a skewer inserted into the middle of the cake comes out clean.
