Apple Sharlotka

Why am I always lazy in the mornings? Is it because, psychologyly I am thinking that I have lots of time to spare? Or it's just that my 'engine' is not warmed up yet? Normally it will be after noon that I will start to be more active around the house. Don't tell me, I am still following Malawi time? Malaysia is 6 hours ahead of them! How can that be? It's been 5 years already, I'm back home... haizzz....

Anyway, that 'phenomenon' happened again yesterday. After 12 noon, I suddenly had this urge to cook and to bake! Hahaha... mama ini Cinderella siang kot.... For lunch, I cooked spagetti. Followed by pizza, then Apple Sharlotka. Not only that, I even cooked for dinner, a simple fried rice, much enjoyed by my dearest hubby. And the best part is, all the food didn't go to waste and was enjoyed by everybody. Alhamdulillah.....

It was Kak Wan Nita Ferial, the proud owner of Fadeliciouscake Blog who recommended this recipe to me. And since I had some granny smith apples in the fridge, I thought, why not give this simple recipe a try. Alhamdulillah it came out well and according to my neighbour, Saerah who had her share of this Apple Sharlotka, the sweetness is just nice. I made some adjustments to the adjustments made by Kak Wan on Alex's recipe. She had used only granulated sugar. But since she mentioned that she should have added more, so I decided to add in brown sugar instead of the extra granulated sugar. Thanks Kak Wan for suggesting this recipe and yes, I passed some to my neighbour okay... so, care to join the neighbourhood? Hahaha....


APPLE SHARLOTKA

Ingredients :

Butter or nonstick spray, for greasing pan
6 large, tart apples, such as Granny Smiths
3 large eggs
100g granulated sugar
60g brown sugar
1 teaspoon vanilla extract
125g all-purpose flour
Ground cinnamon, to finish
Powdered sugar, also to finish


Method :

1. Preheat oven to 350 degrees. Line the bottom of a 9-inch springform pan with parchment paper. Butter the paper and the sides of the pan.
2. Peel, halve and core your apples, then chop them into medium-sized chunks. (I cut each half into four “strips” then sliced them fairly thinly — about 1/4-inch — in the other direction.) Pile the cut apples directly in the prepared pan. (Alamak, kena peel ke? I didn't! Hahaha... hantam sajalah labuuu)
3. Meanwhile, in a large bowl, using an electric mixer or whisk, beat eggs with sugar until thick and ribbons form on the surface of the beaten eggs.
4. Beat in vanilla, then stir in flour with a spoon until just combined. The batter will be very thick.
5. Pour over apples in pan, using a spoon or spatula to spread the batter so that it covers all exposed apples. (Updated to clarify: Spread the batter and press it down into the apple pile. The top of the batter should end up level with the top of the apples.)
6. I sprinkle extra apple chunks on top.
7. Bake in preheated oven for 55 to 60 minutes, or until a tester comes out free of batter. Cool in pan for 10 minutes on rack, then flip out onto another rack, peel off the parchment paper, and flip it back onto a serving platter. Dust lightly with ground cinnamon.

  3. salam MF. I got granny smith in the fridge. been thinking how to get rid of it. thnx for the idea. will try do 2moro cos nadia's frens are sleeping over. maybe get them to bake it with Nadia. me as usual, mandoor!!! hehehe

    Hey, I love your pagi 'engine not warmed up yet'.
    Waa, just like my car now in winter....bila masuk, so sejuk, our warm breath freezes on the screen.

    Maybe you should get one of those clocks with music or song alarm, so bila wake you up, it plays 'Funky Town'...

    But I can think of several ways getting 'warmed up'...mandi warm water or have a hot shower...and singing 'bengawan solo'. Ha ha ha.
