Pandan Kaya Bread
PANDAN KAYA BREAD
Source : Mr Alex Goh
Ingredients :
(A)
300g bread flour
2 teaspoons instant yeast
45g sugar
1/2 teaspoon salt
1/2 tablespoon milk powder
(B)
1/2 egg (I used one whole small egg)
60ml coconut milk
1/2 tablespoon pandan juice
few drops green coloring
105ml water
(C)
20g shortening (I used margarine)
(D)
130g raisins (Oh gosh!!! I forgot to put these in!!!)
Topping
30g butter
30g sugar
60g plain flour
Method :
1. Mix (A) till well blended.
2. Add (B), mix to form a dough.
3. Add (C), mix to form a smooth dough.
4. Add (D), mix till well blended. Let it prove for 50 - 60 minutes.
5. Mix butter and sugar of the topping ingredients till well combined, then add plain flour and mix to form bread crumbs. Set aside or keep refrigerated.
6. Divide the dough into 15g pieces and mould into balls. Place half the dough balls in a greased loaf tin (L 20cm x W 10cm x H 8.5cm), then put the remaining dough balls on top of them. Makes 2 loaves.
7. Leave to prove for 45 minutes, then brush with egg wash. Sprinkle with topping.
8. Bake at 175 C for 25 - 30 minutes. Serve.
Note :I made half the recipe!

Wah bestlah Wanwma ada cita-cita nak buka kedai roti. Bolehlah ma joint venture kat dapur...tapi ma tak mau kerja menguli, membentuk ok...ahakss...memilih lak tu! Mama pun memang allergic tengok resipi roti dan gambar roti, mulalah semuanya nak buat, tapi tak tahulah sapa yang nak makan! But I think, I am more allergic to yeast kot sebab anything with yeast, mesti nak cuba!
