Beef Pepperoni and Olives Pizza

Hello everyone. It is past 11pm now. I am totally exhausted now. Mentally and psychically. And I am so looking forward to jump on my bed right now. But since I’ve promised myself to upload an entry today, I mustn’t break my promise.

Why am I psychically tired? Well today, I cooked Asam Pedas for lunch and dinner. Fatin had whatsapp me in the morning, saying that she’s coming home this afternoon after her class, just to release some stress. She had asked dearest mom to cook for her Asam Pedas and bake a pizza. Hmmm.. now who is starting to be stressed? Hahaha… just kidding! So mom, happily went into the kitchen, totally forgetting about her plan to do ironing.

Firstly, I cooked for Mr Hubby, Asam Pedas Ikan Parang. Done with that, I started to cook Asam Pedas Ikan Tenggiri for Fatin. While waiting for the mixture to cook, I went out to bring in the laundry, not realising that I didn’t put the fire on low. Hmmm I think, all of you can surely guess what happened then right. Yeahh… it got burnt! I had to prepare the ingredients again. Oh ohhh… this time, I can’t find the tamarind. I am pretty sure I had a new packet unopened. I went through the cupboards but couldn’t find it… up to a stage, I said to myself, if that packet decided to show itself after this, I will send is straight to the bin! Hahahaha…. I had to walk to the shop and get a packet of tamarind. Today is just not my day I guess!

Fatin wanted to go to Giant to get some stuff to bring back to her apartment. But I was expecting the LG Technician to come and fix our refrigerator at 3pm. When he didn’t turn up after 4pm, I gave a call to his office. And the lady said, Mr Technician wrote in the schedule, “after 7pm”. So I told Fatin, once I’m done in the kitchen, we’ll go to Giant. Luckily we haven’t leave the house because Mr Technician came at 4.45pm. It seems, the fan’s motor is not working well and had to be replaced.

Now… the mentally exhausted part…

Hubby bought a new iMac for me to use because the laptop that I am using is quite old and it is showing the ‘ageing sign’. Hahahaha… Well, you know, when things are new, we need time to meddle around to get use to it. I don’t really have much time to sit around and meddle. So, every time he is not around, I will turn on my antique laptop and will turn it off after using, before he knew it. Yeah yeah… naughty me, I know! But today, since I was busy the whole day… I had forgotten to turn off the laptop and who has to go into the computer room??? Oh yes, Mr Hubby. He didn’t say much, just one short, direct question…. MAMA, YOU ARE NOT USING THE IMAC? And dear mama started to have shaky knees! Muahaha… serves her right!

Anyway, she’s not 100% naughty okay. This entry was drafted and posted using the iMac fully. But only Allah knows what a hard time I was having just now. Practise makes perfect though. I am pretty sure, I won’t take that long to get use to this fella… *wink*

Oh me oh my, and somebody said she is mentally and psychically tired, but here she is, writing her Grandmother Story! Hahaha… MamaFaMi will always be MamaFaMi…

BEEF PEPPERONI AND OLIVES PIZZA

Ingredients :

For the base :

2 cups bread flour
1 teaspoon instant dried yeast (I used mauripan)
1 teaspoon milk powder (I used omega)
1 teaspoon castor sugar
1/2 teaspoon salt
1/4 teaspoon bread softener (I used bread improver, same amount)
165ml water (I think the amount should be less)
1 tablespoon cooking oil (I used extra virgin olive oil)

For the Topping :

Spagetti sauce in the bottle (I used Kimball traditional)
Beef pepperoni (Prima Brand)
Black olives
Mozarella cheese


Method :

1. Place all the ingredients for the base except olive oil, in a mixer bowl with dough hook attached. Turn on the mixer. Once the wet and dry ingredients incorporate, add in the olive oil. Continue kneading till a soft and shiny dough is formed. Make the dough into a big ball and place in a bowl, covered. Let the dough rise.
2. Punch the dough to release the air and roll to the thickness you wish.
3. Place on dough on a baking tray.
4. Prick the surface with a fork.
5. Grate some cheese onto the dough.
6. Spread the spagetti sauce on top.
7. Arrange the pepperoni on the sauce.
8. Arrange the olives on top of the pepperoni.
9. Grate with mozzarella cheese.
10. Bake for 25 to 30 minutes or till done.

How should I feel, when I hear someone said that I have not been forgotten despite the VERY slow updates in my blog, the vanishing act that I've performed on FB world and the way I hide myself from the real world.. well frankly speaking, I'm trully touched. Trully trully trully....

It really touched my heart when I read what Kak Wan Nita of Fadelicious Cakes wrote when we were whatsapp-ing yesterday night. Anyway I will not reveal our conversation and will keep it to myself. Something that can perhaps boost my mood to update more often, In Shaa Allah...

To be frank, I've always have doubt about myself... about the things that I posted in my blogs... about the recipes that I've tried... Well, to me, I can't find anything fantastic in these blogs of mine. The only thing that I've always been proud of showing...hok aloh, cam riak je bunyi dia kan? Eh mama bukan riak ok.. bangga je sikit... tak salah kan? are the photos of my brownies. Hahahaha... and most of the time, it is the same recipe!! Kak Wan said, maybe it's my mindset! How can I reset? Huhuhu...

I'm taking this opportunity to thank all my visitors, followers (if there's any) and friends for all your support. In Shaa Allah MAMAFAMI's BLOG will stay 'alive', even if the owner is no longer in this world. If it is not much to ask, please recite Al-Fatihah for me whenever I cross your mind. ROTI PAUNG LEMBUT

Ingredients :

500g high protein flour
50g milk powder
250ml chilled water
11g instant dried yeast (I used Mauripan)
120g castor sugar
a few drops of yellow food coloring
100g margarine


Method :

1. Gease all the baking tins thoroughly. I used vegetable shortening. Keep aside
2. Place all ingredents except margarine in a mixing bowl.
3. Fasten the dough hook onto the mixer and start kneading.
4. Once the ingrediets have just combined, add in the margarine. Knead till a soft and shiny dough is formed.
5. Remove from the bowl and rest the dough for about 10 minutes.
6. Divide the dough into a 27g balls. Shape it nicely and arrange in the prepared tins.
7. Cover the tins and leave the dough to rise till almost double the size.
8. Mix a bit of milk powder with a bit of water and brush lightly on top of the dough.
9. Bake in a preheated oven at 160 C for 15 to 20 minutes. Oven temperature and baking time may vary, depending on your oven.
10. Once baked, remove from the oven and onto a wire rack to cool.

Kuih Apam

Hmm, to answer the question in my previous entry....
This was what I had for Iftaar....

Yesterday, I experimented a new recipe. All because I felt sorry for my neighbour who tried making this kuih but the kuih didn't turn out nice and she's in a sulk.. The husband likes this kuih and she had hoped she'd be able to serve him the homemade ones.

So in order to not let her spirit of experimenting goes down the drain, I had tried making the kuih for her, but using a different recipe. And Alhamdulillah, I don't really have to sulk with the outcome, though, a lot has yet to be improved.

I passed to her the 'just-out-of-the-steamer' kuih with a message... "I am going to write this in my blog when I post this recipe NEVER JUDGE THE FOOD BY THE LOOK!"

And that is exactly what I am going to write here....

Though the look is not so inviting, but the taste is just yummylicious or if I were to write in Bahasa Malaysia... Walaupun rupamu herot berot, rasa mu tetap menjadi pojaan hatiku... hihihi...

KUIH APAM

Ingredients :

(A)
11g instant dried yeast (I used Mauripan)
1/2 cup lukewarm water
1 teaspoon sugar

(B)
500 g flour - sifted
3/4 cup sugar
2 cups water
a few drops of food coloring of your choice

(C)
Freshly grated coconut (just the white part)
a bit of salt

Method :

1. Mix (A) and keep aside till the mixture bubbles.
2. Place ingredients (B) in a blender. Add (A).
3. Blend till mixture are smooth.
4. Grease the tray with a bit of oil. Pour the prepared mixture into the tray. Cover and let it rise for 30 minutes.
5. Prepare the steamer. Steam the apam mixture for 40 to 50 minutes.
6. Serve the kuih apam with freshly grated coconut mixed with a bit of salt.

Note :

I think I let my kuih apam mixture rise a bit too long. It dropped in the middle when done steaming. The original recipe said to let it rest for 45 minutes. I think 30 minutes should be okay. Good luck!

What's for Iftaar today?

In sha Allah, I am fasting today. So far so good, though I only had a small amount of food the day before. And I had two slices of bread for sehri, with a mug of milk tea and also my medication. Alhamdulillah I am good.

Hmm, now what shall I have for Iftaar today? Any ideas?

Well, I had this for Monday's Iftaar....

Hish...don't let people make any speculations about the above statement, Mak Teh. I am not a writer... or otherwise I would have produced better 'stories' in this humble column of mine. ;) Hahahaha

But Mak Teh's statement is not totally untrue. Yes, a book is coming out, but it's not the book that I wrote, but the books that I've read. I have yet to upload those books in my other blog if time and my mood permits. *wink*

SERIMUKA HANIELIZA

Ingredients :

Bottom layer
2 cups glutinous rice - washed and soak for 3 hours
2 1/4 cup thin coconut milk
salt to taste

Method :
Mix together the above ingredients and pour into a baking tin, layered with cling film. Steam for 20 minutes or till cooked. Cover the steamer's lid with towel to avoid water dripping into the tin.

Top layer

2 cups thick coconut milk
1/2 cup pandan juice + green food coloring
1/2 cup sugar
3 tablespoons custard powder
3 tablespoons flour
1 large egg
salt to taste

Method :

1. Mix all the ingredients together except sugar. Stir to mix and put through a sieve. Add sugar and continue stirring.
2. Gently pour the mixture onto the bottom layer and steam for another 30 minutes.
3. Remove from steamer and leave to cool.
4. Cut using a plastic knife and ready to serve.

Brownies for Jid

Assalamualaikum to all you lovely people out there...

Hmmm... shall I say, it's good to be back online? I think I should not say that because I am not so sure for how long I will be 'back on air' this time. Though I have quite a number of reasons why I should be back, but all narrowed down to the word L.A.Z.Y, hence the 'blog full of cobwebs'!!!

Not only I am lazy to update my blogs, but I was lazy to turn on my laptop. And to make things worst, I am even lazy to turn on my oven. My oven, my mixer and all my baking stuffs are having such a wonderful vacation I guess! Hahahahaha....

What have I been doing all these while? What else.... besides doing the housework, I spent most of my time reading... mmmm that's another story as well. Though I've read quite a number of books, there is also NO updates in my other blog.

So to conclude.... i will blame it on L.A.Z.Y... hehehe....

Anyway, these were the latest 'products' from my lukewarm kitchen. Thanks to Jid for making my oven warm again... hope you are happy with the brownies.
