Asam Pedas Ikan Parang

Yesterday, I received an email from Kamelia Hisham the sister of Wan Hafidz aka abgbotak. The mention of abgbotak makes me recall those good old days in Malawi. He was active in his fotopages back then when he was still studying in the UK. His shots were all superb. But what made me remember him is the way he had teased me in one of his entries. In that particular entry, he was putting up some sort of an event (be it real or just joking, I am not so sure). He had listed his committee. And among them is MAMAFAMI! I was incharge of food! Hahahaha... where on earth did I fit in that committee! I am way in Malawi, Africa and they are in the UK. Hahaha... but that really made my day! Thank you Hafidz or shall I say Dr Hafidz for the cheerful memories that you've given to this ol' MamaFaMi. Just wondering, where could you be at this moment....where ever you are, may Allah bless you and your family.

And as for Kamelia, I am not sure if this recipe suits your hubby's tastebuds but I've learnt how to prepare this from my hubby's late grandmom. Of course the taste is not as lovely as his grandmom's cooking, but nevertheless, it's not disappointing... i hope! Hehehe...


ASAM PEDAS IKAN PARANG

Ingredients :

2 pieces ikan parang
6 shallots
2 cloves garlic
1/2 inch ginger
1/2 inch fresh turmeric
2 tablespoons chillie paste
1 teaspoon shrimp paste
1 teaspoon kerisik
enough tamarind juice
enough water
salt to taste
zeal ~ optional
tomato ~ quartered
3 pieces kaffir leaves
oil for cooking

Method :

1. Clean the fish with lemon juice, rinse and set aside.
2. Mince onion, garlic, ginger, turmeric, shrimp paste and kerisik to form paste.
3. Heat oil in a pot and add in the blended paste and fry till fragrant.
4. Add in chillie paste and continue frying. Add in kaffir leaves.
5. Pour in the tamarind juice and stir well. Add in the fish.
6. Let it boil. Flip over the fish.
7. When the fishes are half cooked, add more water.
8. Add in salt and zeal and let the fish cooked.
9. Add in tomato and let it simmer for a while.


ASAM PEDAS IKAN PARANG

Bahan-bahan :

2 keping ikan parang
6 biji bawang merah
2 biji bawang putih
1/2 inci halia
1/2 inci kunyit hidup
2 sudu besar pes cili
belacan sebesar ibu jari
1 sudu besar kerisik
air asam secukupnya
air secukupnya
garam secukup rasa
serbuk perasa - jika perlu
2 biji tomato - dibelah 4
3 keping daun limau purut
minyak masak untuk menumis

Kaedah penyediaan :

1. Bersihkan ikan dengan air asam, bilas dan ketepikan.
2. Tumbuk bawang putih, bawang merah, halia, kunyit, belacan dan kerisik hingga menjadi pes.
3. Panaskan minyak di dalam periuk dan masukkan pes tadi. Tumis hingga naik bau.
4. Masukkan pes cili dan goreng hingga wangi. Masukkan daun limau purut.
5. Tuangkan air asam jawa. Kacau rata dan masukkan ikan.
6. Biarkan mendidih dan terbalikkan ikan.
7. Bila ikan telah separuh masak, masukkan air secukup kuah yang diingini.
8. Perisakan dengan garam dan serbuk perasa. Biarkan didih hingga ikan masak.
9. Masukkan tomato dan biarkan didih sebentar. Siap untuk dihidangkan.

    And looking at your well taken pic, I can practically get the lovely scent of the spices, ingredients you used.

    This dis is a sure tiga pingan nasi lichin! Ada sambal belachan to go with it? Ha ha.
