Cempedak Butter Cake

What is the function of turning on hazard lights when driving? Well, it's supposed to be helpful. It should make the driver feels safer if he or she is driving slow in a rainstorm when the visibility is very low. And at the same time, alerting other drivers as well.

But yesterday evening, when hubby and me were on our way to the driving range at Kota Permai, we followed a car with hazard lights on, driving in the middle lane and the visibility was quite alright though it was pouring. She meant well by turning on the hazard lights, but what she doesn't know, she was holding back quite a long traffic behind her! The road was clear after we overtook that car!

Kak Fauziah, my neighbour gave me some lovely cempedak she brought back from her hometown last Sunday. Since I was too lazy to fry them, I decided to 'transform' the cempedak into cakes. I said to myself, just be bold, and give it a try, I'll never know the taste unless I bake and taste it myself! And alhamdulillah, I chose the right recipe. It turned out lovely to my taste. Thanks to Kak Fauziah for the cempedak and also for the feedback. Not forgetting to my loyal food tester, Saey. Thanks for the positive feedback! *wink*


CEMPEDAK BUTTER CAKE

Ingredients :

125g butter
3/4 cup caster sugar
2 eggs
1/2 teaspoon vanilla essence
200g cempedak flesh - diced
2 cups self-raising flour - sifted
1/2 cup fresh milk

Method :

1. Preheat oven to 170C.
2. Using the K beater, beat butter and sugar till light and creamy.
3. Add eggs one at a time, beating thoroughly after each addition.
4. Add vanilla and beat until combined.
5. Using a spatula or a wooden spoon, fold in sifted flour alternately with milk, starting and ending with flour.
6. Add in the cempedak flesh and fold for a few minutes.
7. Pour mixture evenly into a prepared tin.
8. Bake for 45 minutes. Cake is done when a skewer inserted into the middle of the cake comes out clean.
9. Leave cake in tin 10 minutes before turning onto wire rack to cool.

Hari itu kak rmh ada nangka cuba lah buat bingka..rasaya boleh tahan saja jika buat kek tak tau lagi la....hehe Mf...kita pun pernah kena situasi mcm tu juga..dalam hati bersabarlah sebab dia sorang yang bayar road tax lebih nak overtake tak boleh ...garisan berkembar ikut je lah main pak pak lang.

  5. woww..mama this is definitely my feveret..selalu kita beli cempedak masa tgh musim then simpan lam freezer..bila2 jer leh kuarkan utk guna wat muffin & kek..mmg terbaekk..harum semerbak bau cempedak satu umah masa membakor tuh..fuhhh!!

    1. Freezer mama sendat bagai nak rak. Dah tak leh nak sumbat-sumbat dah. So mama buat apa yang ada pada waktu semasa... ngeh ngeh ngeh. Di saat dan ketika ketika macam ni, barulah nak appreciate deep freezer yang pernah kami ada masa di Malawi dulu.. semua leh sumbat. Nak sumbat mama kat dalam tu pun boleh...hehe

    1. Adoi sister darling... I diserang penyakit la.... PENYAKIT MALAS. Then ar, my phone pulak tak mau link sama I punya gmail. I normally transfer my photos taken with the camera phone to my gmail. Habis tu, sudah tak ngam... I terus jadi malas! Tapi today I godak godak, can go through the other way... adoi.. orang dahlah malas, lagi bikin susah saja... huhuhu..

    1. mama, do u know anyone with kenwood major model yg lama dulu, tapi dah tak boleh guna? i wud like to buy the dough hook.. ours gone forever.. someone sudah hilangkan masa pindah randah dulu.. rasa not worth to order new one sebab ours tu pon dah lebih 20 year old.. hehehe.. dunno how long will it last ni.. tqs mama..
