Mee Goreng Rasakita

Assalamualaikum warrahmatullahi wabarokaatuh. Salam Jumaat yang barakah buat semua.

Hari ni mama nak buat promosi sikit. Haha... Dah rasa macam amoi promoter lak. Anak saudara suami mama ada beri pada mama, buah tangan dari sahabatnya, untuk mama cuba. Maaflah kerana mengambil masa yang lama untuk mencuba. Mama ni bukan boleh harap sangat. Lembab sikit. Tak apalah, bak kata pepatah orang putih, "better late than never". Alhamdulillah pagi ni, dah selamat mama rasmikan pes sambal tumis tu. Sebelum mama gunakan untuk memasak mee goreng ni, mama telah merasa dulu sambalnya. Mmmmm sedap dimakan begitu saja! Kalau nak buat sambal, hanya panaskan pes dan masukkan udang atau apa sahaja yang diingini. Sangat mudah, sangat cepat dan yang pastinya sangat sedap!

MEE GORENG RASAKITA

Bahan-bahan :

3 biji bawang merah - dihiris
1 biji bawang putih - dihiris
5 ekor udang - dibersihkan 1 ekor sotong - dibersihkan dan dipotong gegelang
sedikit air
sedikit kicap pekat
garam secukup rasa
250g mee kuning - dilalukan air dan ditoskan
1 pokok bak choy - dibersihkan dan dipotong
1 genggam taugeh - dicuci dan ditoskan
minyak masak

Kaedah penyediaan :

1. Panaskan minyak di dalam kuali dan masukkan bawang merah dan bawang putih yang telah dihiris. Goreng hingga wangi.
2. Masukkan udang dan sotong serta pes sambal tumis RasaKita. Kacau rata. Masukkan air, kicap pekat dan garam secukup rata.
3. Masukkan mee kuning dan gaul rata.
4. Masukkan sayur bak choy dan taugeh. Gaul rata.
5. Taburkan bawang goreng dan hirisan cili merah sebelum menghidang.

Daging Masak Merah

Ingredients :

500g tender beef - sliced thinly
5 tablsepoons tomato ketchup
5 tablespoons chillie sauce
turmeric
salt to taste
cooking oil

Ingredients : (to be sliced)

1 Holland onion
3 garlic cloves
3 cm ginger
2 fresh red chillies
2 fresh green chillies

Method :

1. Marinate the beef with salt and turmeric. Set aside.
2. Heat oil in a skillet. Add in the beef and stir fry till beef is tender.
3. Add in the tomato ketchup and chillie sauce. Mix well.
4. Add in the sliced ingredients. Stir to mix.
5. Once the beef is cooked thoroughly, remove from heat.
6. Serve with white rice. Enjoy!

Note :


This dish was prepared quite sometimes back. I thought I had added some red food coloring to the beef but I was not so sure! Huhuhu...

Phillips Airfryer Red Velvet Cupcakes

Remember this entry where I said I just could not decide between Phillips Airfryer and Tefal ActiFry. Well actually I didn't have to wait that long before I was shown what to choose. That very same day, after posting the entry here, I went downstairs to fold the clothes. My hands simply took the TV remote control and turned on the TV. And what channel sould be showing that time, but the Go Shop Channel. And what do they HAPPENED to be promoting that time? Yes... Phillips Airfryer! I guess my prayers been answered.

And for the first experiment, this is what I had tried.... I've reduced the baking time and the cupcakes were moist enough.

RED VELVET CUPCAKES

Ingredients :

1 1/2 cups flour
1 1/2 teaspoons cocoa powder
1/4 teaspoon salt
125g butter
1 cup sugar
1 teaspoon vanilla essence
2 eggs
1 tablespoon red food coloring
3/4 cup buttermilk (fresh milk mixed with 1 tablespoon vinegar)
3/4 teaspoon baking soda + 1 teaspoon vinegar


Method :

1. Sift flour, cocoa powder and salt into a bowl. Set aside.
2. In a mixing bowl of a cake mixer, beat butter, sugar and vanilla until combined.
3. Beat in the eggs, one at a time, beating after each addition.
4. Add in the red food coloring.
5. Alternately add flour mixture and buttermilk to egg mixture. Stir until combined.
5. Mix baking soda and vinegar. Add to batter, beat just until combined.
6. Scoop the batter into the prepared muffin cups lined with papercups to about 2/3 full.
7. Place the cups onto the Airfryer's basket.
8. Preheat the Airfryer to 160C.
9. Bake for 11 minutes. Remove from Airfryer and let it cool completely.
10. Decorate with icing of your choice.

Soft Marble Cake

My dear hubby can be funny at times. Yesterday, when he came back from the office, he said to me, "YOUR COUNTRY IS HOT". I was like... huh? And I asked him, who said that to you. He looked at me and said, "I am saying it to you". Hahahaha.... I asked him back," So my country is not the same as your country? Where do you come from? Malawi? Sri Lanka? Bangladesh?" He just laughed! And why is Bangladesh mentioned here? Because I remembered a friend of mine, the wife of hubby's friend once called Mr Hubby, Shah Rukh Khan! Hahahahaha... what a joke!

But these few days it's been really hot. With me fasting, making it more challenging. But this morning, this mad lady did gardening after hanging out the clothes to dry. Once done, she was sweating all over. Can't rush for the aircond in the room as she had to go file-hunting, instructed by the Big Boss aka Mr Hubby. It wasn't easy to find something that is not under your control. But alhamdulillah at last I managed to find it. And guess what, it all ended up with two nicely arranged cupboards.

SOFT MARBLE CAKE

Ingredients :

8oz butter (i used Planta Margarine)
4 tablespoons condensed milk (I used SAJI brand)
1 teaspoon vanilla essence
6 eggs (separate the egg whites and yolks)
5oz castor sugar
6oz flour
1 teaspoon baking powder
2 tablespoons cocoa powder

Method :

1. Cream butter, condensed milk and vanilla essence. Set aside.
2. Beat the egg whites to soft peaks. Lower the mixer's speed and add sugar a little at a time till finish.
3. Add egg yolk one at a time. Continue beating.
4. Add in the butter mixture into the egg mixture. Mix well.
5. Cut and fold flour into the batter. Divide the batter into two portions. Add cocoa powder into one portion and leave the other as it is.
6. Line the base of the baking tin with a greaseproof paper. Grease with a bit of margarine on the base as well as the sides.
7. Spoon 2 tablespoons of plain mixture onto the centre of the tin. Top it with 2 tablespoons of cocoa mixture. Repeat this about 4 times. Then spoon only 1 tablespoon of each mixture till done.



8. Bake in a preheated oven at 180 C for 40 minutes or till a skewer inserted in the center comes out clean. Remove the tin from the oven. Let it cool for 5 minutes before removing the cake to cool on a wire rack.

Pandan Pau

Ingredients :

1/2 cup lukewarm water (I added more. I used slightly less than 3/4 cup water)
a few drops of apple green food coloring
1/2 teaspoon pandan essence
50g (4 tablespoons) castor sugar
3g (1 teaspoon) instant dried yeast - (I used Saf Instant)
250g flour
2g (1/2 teaspoon) baking powder
20g (1 tablespoon) vegetable shortening - (I used Planta Margarine)

Filling of your choice - I used the ready made red bean paste

Method (Bread maker) :

1. Pour water into the breadmaker pan. Add sugar, green coloring, pandan essence and sprinkle the yeast on top.
2. Add in the sifted flour and baking powder into the pan.
3. Set the bread maker to just the kneading dough setting. When the dough is just combined, add in the margarine. Leave the breadmaker to knead the dough till soft and shiny.
4. Remove the dough from the bread maker pan, onto a clean working area. Let it rest for 10 minutes.
5. Divide the dough to 10 small balls, roughly weighing 45g each. Make into round small balls.
6. Flatten the first rounded balls and place the filling in the middle. Place the filled dough on a grease proof paper or better still, on a small piece of banana leaf. Arrange it on the steamer. Repeat this process till finish.
7. Let the dough rise till double the size.
8. Prepare your steamer and make sure the water is really boiling hot. Steam for 9 to 10 minutes and remove from heat. Open the lid after about 1 or 2 minutes later. Enjoy.



Note :

I am actually confused. When reading Rahel's tips, she said to steam in a really hot steamer. When I read another website for any tips and tricks to produce smooth pau, they said NOT to steam in a hot steamer. Totally the opposite. So I just followed what was stated in the recipe that I used.
Moral of this revealation : Do not ask me how to produce a smooth looking pau okay, because I am confused myself! Hahahahaa....

Crunchy Chocolate Chips Cookies


CRUNCHY CHOCOLATE CHIPS COOKIES

Ingredients :

(A)
250g margarine
160g castor sugar
1 egg yolk
1 teaspoon vanilla essence
1/4 teaspoon baking powder

(B)
230g flour
20g cocoa powder
100g chocolate chips
50g Nestum

Method :

1. Sift flour and cocoa powder. Set aside.
2. Cream margarine and sugar. Add in egg yolk and vanilla essence.
3. Add in Nestum and chocolate chips. Mix well.
4. Add in the sifted dry ingredients. Mix till well combined.
5. Spoon a teaspoon batter onto the baking tray layered with greaseproof paper. The cookies will expand slightly when baked.
6. Bake in a pre-heated oven at 165 C for 25 minutes or till done.
7. Leave the cookies to cool on the cooling rack before storing them in an air-tight container.

Easy Super Soft Cinnamon Rolls

Yesterday morning, something happened which makes me sad, that I shed tears. Am I being over-sensitive or my hormone is not stable at that moment, I just don't know. What I knew I was sad.

I lost one of my Vision pot! Yeah you may say, it's only a pot mama. You can always buy another one to replace it. But no, this is not JUST a pot. It was my wedding present from my beloved late aunt. And how long have I been happily married? 24 years. So has that pot been with us. It is even older than my first born! Though I take it with open heart, but the sadness is still there...

The night before, I had placed this plastic bottle of salted fish in the cupboard. Next to it was this small glass bottle. I must have not put the plastic bottle properly that when I opened the cupboard yesterday morning, it toppled and knocked the glass bottle out of the cupboard. And where should the GLASS bottle landed? Yeah right on the back of my Vision pot, hence the crack! Why wasn't it the other way round? If the glass bottle had knocked over the plastic bottle and the plastic bottle is the one which knocks my Vision, then I will still have my pot with me today. Well, that's fate. Accept it because there is nothing I can do...

I told my hubby and kids about it on our family whatsapp, and of course adding a bit of drama into it (:D:D:D) as well. My girl said, no worry mom, dad will replace it with a new one. Which dad quickly replied OK. But mama said, well, I had enough. No more Vision Pots now. Whatever's left, I will keep for now. I will re-use the ones I've been using before I took out the Vision set. Why do i sound so traumatized? Because I have lost THREE Vision Pots in less than a year's time! That's why! Huwaaaaaaaa.......

EASY SUPER SOFT CINNAMON ROLLS

Ingredients :

For the Dough:
1/4 ounce package yeast (I used Saf-Instant)
1/2 cup warm milk
1/2 cup warm water (I used iced water)
1/4 cup granulated sugar
1/3 cup unsalted butter, melted
1 teaspoon salt
1 large egg
3 to 3 1/2 cups all-purpose flour

For the Filling:
1/2 cup melted butter
1/2 cup brown sugar
2 Tablespoons ground cinnamon

For the Glaze:
3 Tablespoons unsalted butter, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
3 Tablespoons milk



Method :

For the Dough:
In a small bowl, dissolve yeast in warm water and set aside.

In a large bowl, or the bowl of your stand mixer fitted with the paddle attachment, mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Pour in yeast mixture. Mix in remaining flour, 1/4 cup at a time, until dough is easy to handle. If mixture appears too dry, add 1 tsp. water at a time, mixing well after each addition.

Knead dough in your mixer with the dough hook, or by hand on lightly floured surface, for 5 to 10 minutes. Place in a well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.*

Once doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle.

For the Filling and Baking:
Combine melted butter, cinnamon and sugar, spreading all over dough. Beginning at the longest (15 inch) side, roll up dough and pinch edges together to seal. Cut into 12 to 15 slices.

Coat a baking pan with nonstick cooking spray and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes.

When ready to bake, preheat oven to 350 degrees F. Bake for 20-25 minutes, or until golden brown.

For the Glaze:
Mix butter, powdered sugar, and vanilla. Whisk in milk 1 tablespoon at a time until the glaze reaches desired consistency. (If you like a thinner consistency glaze, add more milk.) Spread over slightly cooled rolls.

Moist Banana Cake with Cheese

As promised in my previous entry, today I will reveal the mystery of the missing bananas. Hehehehe....

When Fatin was at home during her semester break, she had asked for Banana Split. And as we all know, Banana Split is quite expensive and not that I can't assemble it myself. So being a stingy-in-a-good-way mom, I told her lets make our own Banana Split which she gladly agreed to because she is as stingy-in-a-good-way as the mom ...ke manakah tumpah kuah kalau tak ke nasi kannnn... jangan tumpah atas meja pulak, bazir!! Hahaha! We bought the ingredients but didn't find time to assemble our banana split. As days passed by, the bananas were way too soft to be assembled as banana split. In order not to let them go to waste, I've transformed those bananas into this lovely cake. And guess what, this recipe was shared by two guys! Talented guys! Thank you Mat and Syafiq. You guys are awesome! The cake is soft, moist and lovely. Worth trying.

So, the mystery is solved. I rest my case :D

MOIST BANANA CAKE WITH CHEESE

Ingredients :

60g soft brown sugar
1/4 teaspoon salt
1 teaspoon ovalette (sponge cake stabilizer/Quick 75)
3 large eggs
125g ripe bananas - mashed
a few drops of Banana Essence
115g flour *
1 teaspoon bicarbonate of soda* (sift together)
120 ml corn oil (you may use melted butter)
2 ripe bananas - diced
1/4 cup shredded cheddar cheese


Method :

1. Pre heat oven at 175 C. Grease an 8 inch round baking tin with butter. Place a greaseproof paper on the base of the tin and grease the paper as well. Set aside. *I used 2 rectangle aluminium foil casing.
2. Beat soft brown sugar, salt and ovalette till well mixed.
3. Add in eggs and beat at high speed till thick and creamy (the consistency of sponge cake mixture). Reduce the speed and add in mashed bananas and banana essence. Continue beating till mixture is well mixed.
4. Add sifted flour and baking powder, a little at a time. Mix using a spatula.
5. Pour in the corn oil (melted butter), mix well.
6. Finally cut and fold the diced bananas and shredded cheddar cheese.
7. Pour into the prepared tin and sprinkle more cheddar cheese on top.
8. Bake for 45 minutes.
9. Once done, remove from the oven. Leave the cake in the tin for about 5 minutes or so before removing it onto a wire rack to cool. Ready to serve. Enjoy!

Grape Split!

Hello everyone!

I think I have been over-using my brain today. And I feel like there are smoke coming out of my skull right now! 

What have I been thinking about? Well, thanks to Mak Chu for bringing up this topic. And thanks to Jun Yummilicious (oops... her blog is now locked it seems...huhuhu) for supporting the issue as well! 

I was thinking about Phillips Airfryer and Tefal ActiFry 2 in 1 Comparing is the better word. Read so many reviews, watch so may videos about both these products. I was like drained out and the head is starting to give me a signal, enough-for-today-mama! Yeah, so I stopped browsing....for now. I need to take a break and give my brain some brain freeze... so here we are.....


Erk....GRAPE split? What happened to BANANA?????
Well, that will be in my next entry ya....
Meantime, you guys enjoy the look of it while I indulge myself with the lovely taste! Oh so yummy.......... #feelinglovely (wahhhh mama dah pandai hastag tauuuu... ahaks)
