Seared Salmon with Sauteed Butterhead and Mushroom

I blamed MAK CHU for everything that had been happening to me these past few days! She is the one who dragged me into this, till I became addicted! Oh no no no... not that bad kind of addict. This is the good kind of addict! Hahaha... But to be addicted to this good kind of addict is quite hazardous.

I am addicted to LAURA VITALE's website!

What made me fall for her website?
1. I like to watch how she prepares her dishes. It looks so simple yet can make you drool!
2. She cares less of how perfect her end product looks like, but they do look good!
3. I like her bubbly character.
4. I like her kitchen and all her kitchen stuffs.
5. And finally, I like looking at her. To my eyes, she looks like Sandra Bullock and I like Sandra! Hahahaha...

And these past few days, I had been skipping my lunch. I know it is bad but I got carried away watching her videos and how she enjoyed her end product. Funny thing is, that makes me full! Hahahaha....

One of her recipes that I watched yesterday was Seared Salmon with sauteed spinach and mushroom. I was so eager to try out the recipe. With my neighbour Kak Ana, we headed for Giant Supermarket to get the stuffs needed. Unfortunately I can't find any baby spinach and cremini mushrooms. So I had to settle for fresh shitake mushrooms and butterhead salad instead of spinach. Yeah I know, butterhead is salad that should be eaten raw but hey, what choice do I have. That's all I can think about that time! Hahaha... Anyway, our dinner was good. Yummilicious and filling. Above all, it is easy to prepare and doesn't take long. Thank you Laura for this lovely recipe! Will surely try your other recipes too. Had quite a list in mind! *wink*


SEARED SALMON WITH SAUTEED BUTTERHEAD AND MUSHROOM

Serves 4

Ingredients :

4 (4oz each) Fillets of Fresh Salmon
10 oz of Cremini fresh Shitake mushrooms sliced
1 Tomato, chopped
6 oz of Fresh Baby Spinach Butterhead salad, washed and dried
3 cloves of garlic, minced
1 Tbsp of Balsamic Vinegar a squeeze of lemon juice
2 tablespoons of Olive Oil plus 1 tablespoon
Salt and Pepper, to taste

Method :

1. Add the oil and garlic in a large skillet with high sides and preheat it over medium heat, once the garlic is nice and sizzling, add the mushrooms and season with salt and pepper. Cook the mushrooms for 4 to 5 minutes or until they have cooked down, add the tomato and season a bit more with salt and allow it to cook for a couple minutes.

2. Turn the heat up to medium high and add the spinach and place a lid on the skillet and let it cook for a minute or two or until the spinach has wilted. Remove the lid and season with a bit more salt if you feel it needs it, add the balsamic vinegar and just mix everything together so it’s all mixed with the vinegar. Remove the veggies to a plate and cover it to keep warm, set aside.

3. In the same skillet, add another 1 Tbsp of oil and allow it to get nice and hot on medium high, season your salmon with salt and pepper on both sides and place them skin side down in the hot skillet. Cook for about 3 to 4 minutes on each side if your salmon is about 1 inch thick.

4. Set it on your cooked veggies and top with a little fresh parsley.

My dearest daughter Fatin has the habit of showing me photos of creative stuffs we can do with food. And this mama of hers is the kind who likes to challenge herself (within my limit that is because my creativity is very limited! And so is my patience! Hahahaha...). She is very well aware that I will probably try at least some of the things she sent me. Huhuhuhu.. am I that transparent!

So last month, when she invited her friends home to discuss about their Japan trip, she had asked me to prepare this cupcakes as their dessert. And since it is quite simple to do, yeah... why not. Since the photos that she sent does not have any recipes attached, so mama has to go recipe-hunting and I've decided to try the chocolate cake from Ayu @ Curlybabe's Satisfaction. Thank you Ayu for sharing with us. I only did the chocolate cake part. Perhaps next time, I will try baking the full set. I am sure it is yummilicious!

When I asked the girls for the feedback, they said the cake is nice except the icecream that we've scooped onto the cake doesn't go well with it. Blame Fatin for that! I had asked her to go and get a tub of vanilla icecream but she refused. She said, just use whatever is inside the freezer and yes, that day, the only icecream available in the fridge is the solero icecream! And it is sour! Hahaha... So ladies and gentlemen, if you wish to try out this way of serving, please choose the right flavour to go with the cake ya.


DEVIL'S FOOD CHOCOLATE CAKE

Ingredients :

2 cups all purpose flour
1/2 cup cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup granulated sgar
1/2 cup brown sugar
125g butter
2 large egg
2 teaspoons vanilla
1 cup lukewarm water
1/2 cup buttermilk (you can also prepare your own buttermilk by adding 1 teaspoon distilled white vinegar to 1/2 cup milk and let it stand for 10 minutes)


Method :

1.Warm your oven at 180C and line your muffin cups with cupcake liners. Since I am using the silicone moulds, I skipped this step.
2.Sift flour,cocoa powder, salt, bicarbonate soda in a bowl. Set aside.
3.Whisk butter and sugar and brown sugar until light and fluffy, add egg and vanilla and beat until combined.
4.Add the flour mixture in 3 additions alternating with water and buttermilk, beating on low speed until just combined. Scoop into the muffin cups.
5. Bake for about 30 minutes.
6. Press the top of the still warm cupcakes with the bottom of the cupcake mould. Leave to cool. Keep in an airtight container if you are not serving it right away.
7. To serve, scoop icecream of your flavour onto the hollow top of the cupcakes. Drizzle with some melted cooking chocolate and decorate as you wish. Enjoy!

Goodreads 2014 Book Challenge

What is CHALLENGE?

According to Dictionary dot Com, challenge is er... gosh, there are so many ways how they define challenge. You can read for yourself HERE.

If you asked me to describe CHALLENGE, to my ownself that is, well, all I can say is, it is something that invites unnecessary stress and tense to me. It is because, once I've challenged myself or being challenged, I will try my very best to conquer it. And if I managed to do that, then it will be sweet victory to me and the feeling of satisfaction is just so great!

This year, for the first time, I've joined the Book Challenge at GOODREADS. Thanks to Chokni for provoking me. She had challenged herself to read 26 books this year. And I've challanged myself to read 27, a book more than Chokni because I must be more than her in anything! Hahahaha.... penyakit gak ni!

So, since early this year, I had been trying hard to accomplish my goal. You must be wondering, why I didn't bother to fight against my sister, right? Well, she is not in our class! She is way way way ahead from us and there is no way at all, we can manage to win! She would challenge herself to a number of books, which is way way way more than 27, and not even half the year, she had read, double the number she had put in her challange!

Finally, on the 13th October, 2014, in the car, near the traffic light to my house, at approximately 3pm, I'VE COMPLETED MY 2014 BOOK CHALLENGE! If only I was not seated and straped at the car seat, only Allah knows what I will do at that particular moment! Hahahaha.... So yes, I am done this year, alhamdulillah.

To Chokni.... all the best. 2 more books for you to complete your challenge. You can do it! But bear in mind dear, I WON! Next year, we are still going to join the Goodreads 2015 Book Challenge. Chokni has decided to challenge herself to TEN books and me, of course, a book more, ELEVEN! Hahahaha... All the best to us!

Sweet and Sour Beef

Often when we lose all hope & think this is the end, Remember Allah and pray, it’s just a bend, not the end.' - Have faith and have a successful life.

One of the basic differences between Allah and humans is, Allah gives, gives and forgives. But the human gets, gets, gets and forgets. Be thankful in life...

SWEET AND SOUR BEEF

Ingredients A :

500g topside beef - sliced
1 teaspoon turmeric powder
salt to taste
2 tablsepoons cooking oil
5 tablespoons tomato sauce
5 tablespoons chillie sauce
water
Fresh tomatoes - cut to wedges
zeal (optional)
spring onions

Ingredients B (to be sliced) :

1 Holland onion
3 cloves garlic
1 1/2 inch fresh ginger
2 fresh red chillies
some green bird eye chillies

Method :

1. Marinate the sliced beef with salt and turmeric. Meanwhile prepare the other ingredients.
2. Heat the wok and add cooking oil. When oil is ready, add in the marinated beef. Cook till meat is tender.
3. Pour in the tomato sauce and the chillie sauce. Add water if the gravy is a bit too thick.
4. Add in the sliced ingredients. Stir. Add salt and zeal to taste.
5. Put in the tomato and give it a quick stir for a minute or two. Remove from heat.
6. Garnish with some spring onion and serve with plain white rice. Enjoy!

Garlic Rice

Ingredients :

1 cup rice (I used Basmati rice)
1/2 inch fresh ginger - bruised
3 cloves garlic - chopped
1 tablespoon cooking oil
1 stalk lemon grass
Enough water
a pinch of salt

Method :

1. Wash rice and rinse. Add ginger and enough water. Place on the stove on medium fire, It is much easier to use a rice cooker.
2. Heat cooking oil in a small pan. Add chopped garlic. Fry till golden brown and till fragrant.
3. Pour the garlic together with the oil into the boiling rice.
4. Add salt to taste and lemon grass.
5. Leave to cook. Enjoy.
6. I've served this rice with SAMBAL AYAM BERSANTAN

Cheesy Fried Bananas


CHEESY FRIED BANANAS

Ingredients :

A dozen of frying bananas - remove the skin and halved
Cheddar Cheese - I used Beqa brand

Batter :

1 cup rice flour
1/2 cup plain flour
1/2 tablespoon baking powder
1/4 teaspoon turmeric powder
salt to taste
1/2 cup fresh milk
1 medium sized egg
1 tablespoon melted margarine

Coating sauce :

1 tablespoon margarine
1 tablespoon condensed milk

Method :

To prepare the batter.
1. Sift rice flour, plain flour and baking powder into a bowl. Add in the turmeric and salt.
2. In a small bowl, crack the egg and add the cooled melted margarine.
3. Pour into the flour and stir. At the same time, pour in the milk as well, a little at a time till you get the right consistency. It must not be too thick or too watery.
4. Heat oil in a wok. Dip the bananas into the batter and fry till golden brown. Set aside.

To prepare the coating sauce :
1. Melt margarine in a small pot. Remove from heat.
2. Add in the condensed milk and a bit of grated cheese. Stir to mix.
3. Coat each piece of fried bananas with the sauce and arrange on your serving plate.
4. Grate some cheddar cheese on top. You can also sprinkle some chocolate vermicelli or grated cooking chocolate.
5. Enjoy.

Madu dan Kayu Manis - siapa pernah terfikir?


LEMAH : kajian baru-baru ini menunjukkan gula yang terkandung di dalam madu adalah sangat membantu dalam mengembalikan kekuatan badan berbanding gula buatan. masyarakat yang mengambil madu dan serbuk kayu manis dengan ratio yang sama didapati lebih peka dan flexible. Dr. Milton , yang menjalankan kajian ini , mengatakan separuh sudu besar madu yang diminum bersama segelas air yang dicampur dengan serbuk kayu manis, jika diambil setiap hari selepas gosok gigi dan tengah hari (sekitar 3 petang) - akan mengembalikan kecerdasan badan dalam masa seminggu.

SUKAR BERNAFAS : penduduk di Amerika selatan berkumur dengan satu sudu madu dan serbuk kayu manis dicampur dengan air suam , sebagai rutin harian pertama pada waktu pagi , bagi membolehkan pernafasan mereka sentiasa segar sepanjang hari.

KURANG @ HILANG PENDENGARAN : Pagi hari dan malam - madu dan serbuk kayu manis diambil pada sukatan yang sama boleh mengembalikan pendengaran.

SEAFOOD PASTA AGLIO OLIO

Ingredients :

3 tablespoons extra virgin olive oil
4 cloves garlic - minced
1 teaspoon roasted chilli flakes
5 prawns - peeled and deveined
3 squids - cleaned and cut into rings
1 teaspoon capers
150g  angel hair
salt to taste

1 tsp chopped fresh parsley
grated cheese

Method :

1. To prepare the prawn stock, place the head and the shell of the prawns in a small pot and add 1/2 cup water. Bring to boil. Remove from heat and set aside.
2. Boil pasta angel hair till al dente, remove from heat and drain water. Rinse pasta under cold water and add a bit of olive oil to them so that they don't stick. Set aside.
3. In a skillet, heat about 3 tablespoons of olive oil. Saute the garlic and roasted chillie flakes till fragrant.
4. Add in the prawns, squids and capers. Add in the prawn stock.
5. Once the prawns start to change color, toss in the boiled angel hair and salt. Stir to mix. Remove from heat.
6. When serving, sprinkle some freshly chopped parsley and some grated cheese. Enjoy!

Steamed Caramel Cakes

Madu dan Kayu Manis - siapa pernah terfikir?

SAKIT TEKAK : apabila tekak rasa tidak selesa , ambil satu sudu madu dan kulum sambil telan sedikit demi sedikit sehingga ambil. Ulang setiap 3 jam sehingga tekak hilang simptom sakit/ketidak selesaan.


JERAWAT : 3 sudu besar madu dan 1 sudu teh serbuk kayu manis paste. Sapukan paste ini di atas jerawat sebelum tidur dan basuhnya tika bangun keesokan pagi dengan air suam. Jika diamalkan selama dua minggu , ia akan membuang jerawat dari akarnya.


JANGKITAN KULIT :Sapukan campuranmadu dan serbuk kayu manis dalam ratio yang sama pada kulit yang terkesan , akan menyembuhkan ekzema , dan semua jenis jangkitan kulit.

HILANGKAN BAU BADAN : Pagi , sejam setengah sebelum sarapan pagi dan tika perut kosong , dan pada waktu malam sebelum tidur , minum madu dan serbuk kayu manis di dalam air suam. Jika diambil secara tetap, ianya akan mengurangkan berat walaupun pada mereka yang berlebihan berat badan. Jika minum secara tetap , ianya tidak akan membenarkan lemak untuk berkumpul dalam badan walaupun individu tersebut mengambil makanan yang tinggi kalori.


KANSER : Kajian terbaru di Jepun dan Australia mendedahkan bahawa kanser perut dan tulang telah berjaya dirawat dengan jayanya. Pesakit yang mengidap penyakit ini perlu mengambil setiap hari satu sudu madu bersama satu sudu teh serbuk kayu manis 3 hari sekali selama satu bulan.

STEAMED CARAMEL CAKE (Apam Gula Hangus)

Ingredients :

150g caster sugar
100ml hot water
70g margarine - melted
75ml evaporated milk
1 egg - lightly beaten
150g flour
1 teaspoon bicarbonate of soda (sift together with flour)
a pinch of salt
65g caster sugar

Method :

1. Prepare the caramel. In a pot, on low heat, melt 150g castor sugar till golden brown in color.
2. Remove from heat and carefully add in hot water, a little at a time. PLEASE BE EXTRA CAREFUL!!!! Stir.
3. Place the pot back on the stove, still on low heat. Boil the caramel for a few more minutes till it is completely melted and the syrup is ready. Leave to cool.
4. Prepare your steamer.
5. When the syrup is cooled, add in melted margarine, evaporated milk and egg. Stir well.
6. In a mixing bowl, combined the sifted flour, salt and 65g sugar. Make a well in the middle and pour in the syrup. Gradually incorporate the dry ingredients into the liquid.
7. Using a hand mixer, stir till you get a smooth and creamy batter.
8. Spoon into your favourite mould, 3/4 full. If you are using a plastic or tin moulds, grease lightly with cooking oil. I had used my silicone moulds, so no greasing required.
9. Steam for 13 to 15 minutes depending on the size of the mould used.
10. Serve with freshly grated coconut. Enjoy.
