Chocolate Soft Buns


CHOCOLATE SOFT BUNS

Ingredients :

480g high protein flour
50g milk powder
20g cocoa powder
250ml chilled water
1/2 teaspoon coffee emulco
11g instant dried yeast (I used Mauripan)
140g castor sugar
100g margarine (I used Planta margarine)

Topping :

sliced almonds
chocolate chips
butterscotch chips


Method :

1. Gease all 4 baking tins (6 inch tins) thoroughly. I used vegetable shortening. Keep aside.
2. Place all ingredients for dough except margarine in a mixing bowl.
3. Fasten the dough hook onto the mixer and start kneading.
4. Once the ingrediets have just combined, add in the margarine. Knead till a soft, elastic and shiny dough is formed.
5. Remove from the bowl and rest the dough for about 10 minutes.
6. Divide the dough into a 30g balls. Shape it nicely and arrange in the prepared tins.
7. Cover the tins and leave the dough to rise till almost double the size.
8. Mix a bit of milk powder with a bit of water and brush lightly on top of the dough. Sprinkle with sliced almonds, chocolate chips and butterscotch chips.
9. Bake in a preheated oven at 170 C for 15 to 20 minutes. Oven temperature and baking time may vary, depending on your oven.
10. Once baked, remove from the oven and onto a wire rack to cool.

Knock knock, who's there?

Last Monday night, I was in my room reading a book when there came a loud thud just outside the window by the bedside. Mr Hubby who was downstairs doing his office work, heard it too. I went to the window and push the curtain aside to see who had 'dropped' by.  And hello.... look who's here.....


I don't know how she got up there but one thing for sure, she doesn't know how to get down. I am not quite an animal lover but neither am I a hater. I just can't play around with living creatures besides human! Or otherwise, pity my kids!!! Hahahaha.... Mr Hubby tried to get hold of her, but she refused. The only way is to let her in the house on her own will. OMG...I LET A CAT INTO THE HOUSE!! It is so not me! Hahaha... but never mind, this is a totally different situation. 


When Miss Kitty, as we called her, came in and went downstairs, Mr Hubby quickly closed the window and went downstairs to look for Miss Kitty, while Mrs Wifey locked herself outside the house! Hahahaha... I GAVE IN TO A CAT! Hish!!! 

When Mr Hubby got hold of Miss Kitty and she looked calmer, Mr Hubby asked me to come in and take photos and video of our guest....from a distance that is. Hahaha... After about 10 minutes in the house, we opened the door and let her out...

Simplest Fried Prawns

When we went to Sabah last April, we brought home a few blocks of frozen prawns and I tell you, they are big and juicy prawns! Just by describing it, makes my mouth water! When we came back, hubby had asked me to fry the prawns the simplest way possible, with no extra 'accessories'! And Mrs Wifey, gladly obeyed to his command...  siapa nak menolak kalau disuruh buat kerja senang kan... hehehe...  Not having the exact proper recipe, I just follow what I feel like doing and this is the result.... Maybe it is not the recipe that makes it nice, but it's the juicy big prawns.... slurppp slurppppp....


SIMPLEST FRIED PRAWNS

Ingredients :

8 large prawns - cleaned
1 teaspoon turmeric powder
1/2 teapsoon fish curry powder
salt to taste
a bit of chillie paste

oil for frying


Method :

1. Marinate the prawns with all the ingredients and leave for about half an hour.
2. Heat a bit of oil in a skillet and stir fry the prawns just till the prawns changed color.
3. Remove from heat and ready to serve with 'sambal kicap'.
4. To prepare sambal kicap, slice some red chillie or if you want it more fiery, pound some bird eye chillies. Pour enough soya sauce and add sliced onion. Squeeze some lime juice and it's ready.

We had it with fried rice!

Teratak Riverview, Tanjung Malim, Perak

Mr Hubby and me were away last weekend. We went to TERATAK RIVERVIEW for team building. Hahaha.. just joking. It is more to self-esteem building for myself. Will tell you in a bit.

Actually Mr Hubby joined the reunion of his University. And he brought me along. After 30 years plus leaving the Uni, and this is the chance for  them to meet up. For this time, it is just meant for the guys only. It was such a pleasant scene to see how they hugged each other, joked around, laughed out loud and chatted. Once we reached the place, mrs wifeys will have to survive on their own. Make their own way around and befriends with the other wifeys, if they wish. Alhamdulillah I made new friends and had fun too.... 

Hi Kak Ana1, Kak Ana2,  Aida, Ros, Nazrin, Zainab, Kak Rohani, Dr Kamariah, Mazlina ... nice knowing all of you...panjang umur, insyaAllah jumpa lagi....

Actually this place is very good for team building programmes. These were among the many that had been here....


Okay now let me tell you why I said it is more to my SELF-ESTEEM BUILDING trip. I challenged myself to do this....

This was not me okay. This was one of hubby's friend taking his turn.

AND YES, I DID IT!!!! I DID THE FLYING FOX, 170M LENGTH. Good enough for a beginner like me. Hahaha...

Before doing the Flying Fox activity, we were given some briefings on safety equipment, how to wear them, and what we should and should not do. I was so anxious to know, what is the maximum weight that cable could hold. Hahahaha... When the instructor said that it can hold up to 2 tons.... well... I think I am a lot  lighter than 2 tons, at the moment! So yes, I am so happy and excited to do it. 

When we were geared up with the safety equipments, we have to cross the hanging bridge (in yellow) to get to the starting point which is way uphill. By the time we get to the top, we were quite out of breath. Rested a few minutes and I went first. Frankly speaking, when the instructor asked me to sit down for him to secure the lock, my heart started to pound. Then when he asked me to stand up and face the front, I was like...GULPPPP... AM I ACTUALLY GOING TO DO THIS??? But it was too late to turn back. I am all geared up, locked and just a push away. But I think, I managed to hide my fears brilliantly as the instructor asked me, you don't look scared at all! OMG, only Allah knows what is going on in this heart and mind of mine at that moment! Hahaha.... Then, when he asked me to be in the sitting position, legs off the platform, that's it! I AM ACTUALLY DOING THIS. With a light push, weeeeeeeeeeeeeeeeeeee I go! I CAN FLY! I CAN FLY! I CAN FLY!!!!!!! It was so much fun and thrilling at the same time. But it only last for less than 10 seconds. But the memories of that 10 seconds is so precious!

Vanilla with Chocolate Vermicelli Cupcakes


VANILLA WITH CHOCOLATE VERMICELLI CUPCAKES

Ingredients :

150g butter (I used Planta)
150g castor sugar
3 eggs
1 teaspoon vanilla essence
1/2 teaspoon strawberry essence
225g self-raising flour
1 1/2 tablespoon fresh milk

enough chocolate vermicelli to sprinkle

Method :

1. Cream butter and sugar.
2. Beat in egg, one at a time.
3. Add in vanilla essence and strawberry essence.
4. Cut and fold in the flour, lightly.
5. Add in the fresh milk and fold lightly.
6. Scoop a tablespoon of mixture into the paper cups to 3/4 full.
7. Bake in a preheated oven at 160 C for 25 - 30 minutes or till done.

The Mayonnaise Jar

When things in your life seem, almost too much to handle,
When 24 Hours in a day is not enough,
Remember the mayonnaise jar and 2 cups of coffee.

A professor stood before his philosophy class and had some items in front of him. When the class began, wordlessly he picked up a very large and empty mayonnaise jar and proceeded to fill it with golf balls.

He then asked the students, if the jar was full. They agreed that it was.

The professor then picked up a box of pebbles and poured them into the jar. He shook the jar lightly. The pebbles rolled into the open Areas between the golf balls. He then asked the students again if the jar was full. They agreed it was.

The professor next picked up a box of sand and poured it into the jar. Of course, the sand filled up everything else. He asked once more if the jar was full. The students responded with a unanimous 'yes.'

The professor then produced two cups of coffee from under the table and poured the entire contents into the jar, effectively filling the empty space between the sand. The students laughed.

'Now,' said the professor, as the laughter subsided,
'I want you to recognize that this jar represents your life.
The golf balls are the important things - family,
children, health, Friends, and Favorite passions –
Things that if everything else was lost and only they remained, Your life would still be full.

The pebbles are the other things that matter like your job, house, and car.

The sand is everything else --The small stuff.

'If you put the sand into the jar first,' He continued,
'there is no room for the pebbles or the golf balls.
The same goes for life.

If you spend all your time and energy on the small stuff, you will never have room for the things that are important to you.

So...

Pay attention to the things that are critical to your happiness.
Play With your children.
Take time to get medical checkups.
Take your partner out to dinner.

There will always be time to clean the house and fix the disposal.

'Take care of the golf balls first --
The things that really matter.
Set your priorities. The rest is just sand.'

One of the students raised her hand and inquired what the coffee represented.

The professor smiled. 'I'm glad you asked'.

It just goes to show you that no matter how full your life may seem, there's always room for a couple of cups of coffee with a friend.'

KUIH CARA BERLAUK

Ingredients :

1 cup flour
1 nos egg (grade A)
1 teaspoon ghee
1/2 teaspoon salt
2 cups water
a few drops of yellow food coloring

Beef Currypuff Filling

Garnish :

Finely sliced spring onion
1 red chilli - sliced

Method :

1. Place all the ingredients except for the filling into a blender and blend.
2. Put through a sieve into a jug.
3. Heat the kuih cara mould and grease with enough cooking oil.
4. Pour the batter into the mould, 3/4 full.
5. Spoon a generous amount of filling into the batter and cover the mould with a lid.
6. When batter is set and golden brown crust is formed at the base, remove the kuih from the mould.
7. Garnish with spring onions and sliced red chillie. Ready to serve.

Soft Plain Buns

Good day everyone! Yes, I slept late again. This time, I was aware of the time but I was so into 'digging' that I just let time pass by. I managed to retrieve another page of the the COOKIES THREAD. Alhamdulillah...

Well, to continue with yesterday's story, these are the other two things that I had made for my sister and her hubby. I used the recipe from the Roti Paun Lembut but added more sugar to it.


SOFT PLAIN BUNS

9. Bake in a preheated oven at 170 C for 15 to 20 minutes. Oven temperature and baking time may vary, depending on your oven.
10. Once baked, remove from the oven and onto a wire rack to cool.


Made these too for Mak Chu and Pak Chu. For the pastry, I bought the readymade Kawan Puff Pastry and used the fan setting in the oven when baking.

Wet Chocolate Cake (siaran ulangan)

Yesterday, I ACCIDENTLY slept late. The word accidently means not deliberately. Hahaha... I got carried away 'digging' the photos in my folders. And yesterday night till early morning, I was trying to recover the photos in the COOKIES THREAD. Alhamdulillah so far, all my effort didn't go to waste. Pray that I will manage to retrieve more photos ya....

By the time I put my head on the pillow, it was almost 2 am. I am sort of worried if I will fall asleep again after Fajr prayers but alhamdulillah I didn't. I had a few things to do and that will have to start early as the process takes quite sometime. I have to get all things done by 12 noon. Alhamdulillah I managed....just on time before Mak Chu and Pak Chu dropped by....

I made 3 things for them. One of them is this Wet Chocolate Cake, loved by my family. I made the whole recipe and managed to get a big cake. I gave some to Mak Chu and packed some for ANZ staffs since Mak Chu said they are dropping by that side too. And they really made my day. I felt so happy. Thank you ANZ for your kind words.

Puan Noriza was surprised when I told her that I didn't use butter but PLANTA Margarine when baking the cake. She asked me, how come the cake tasted so good. And I told her, it is because it is made with lots of love! Hahahahaha.... skema betul kan ayat kita tu Kak Lang. Hik hik hik...

I was taught to use PLANTA in our baking ever since I was young. Mom will get a big tin of Planta everytime the month of Syawal approaches. But as for me, I must have a big tin of Planta in my pantry throughout the year! I use Planta in most of my bakings and I am happy with it.

Okay, enough said... I might continue 'digging' for photos, or I might start reading a new book tonight. We'll see what I will do... or... don't be surprised if I just doze off to Dreamland! Hahaha... Good nite!

Mak oi... dah pukul 1.17 PAGI. Astaghafirullahal'azim mama! Noti noti noti!
Huhuhu.. tak perasan! Mama terleka dalam usaha untuk cuba masukkan balik gambar-gambar yang hilang. Mama guna laptop dan komputer untuk usaha ni. Kenkadang rasa macam computer hacker pulak. Hahaha... 

Alhamdulillah malam ni dapatlah retrieve balik gambar-gambar untuk thread cookies, mukasurat pertama terutamanya untuk entry yang ada resepi. Jenuh mencari dalam folder yang sarat barat dalam laptop ni. Cam nak senoneng pun ya gak! Hehehe. Selain dari laptop dan komputer, mama rujuk juga pada buku-buku yang mama print dari blog mama ni. Sekurang-kurangnya ia membantulah sikit sebanyak.


Okaylah, mama nak beradu dululah ye. Panjang umur, mama cuba masukkan lagi gambar-gambar yang hilang dek kerana ke'gatal'an tangan mendelete gambar dari dalam handphone! Itu pun kalau masih ada dalam simpananlah ye. Huhuhu... I 'VE LEARNT MY LESSON THE HARD...VERY HARD WAY!

Fried bitter gourd with eggs


FRIED BITTER GOURD WITH EGG

Ingredients :

1 bitter gourd
2 shallots - minced
2 clove garlic - minced
1 fresh red chillie - minced
1 tablespoon dried shrimp - soak and then pound
1/2 teaspoon Maggi Secukup Rasa (optional)
2 eggs - lightly beaten
salt to taste
cooking oil (I used corn oil)
Crispy fried onions - garnish

Method :

1. To prepare the bitter gourd, cut in half lengthwise, remove the seeds and cut on the diagonal into thin slices. Degorge the bitter gourd by sprinkling salt over the slices and placing them in a colander to drain for 15 minutes. Set aside.
2. Heat oil in a heavy skillet. Add in the minced shallots, garlic and chillie till fragrant.
3. Add in the dried shrimps and stir for a few minutes. Add a bit of water.
4. Add in the bitter gourds and stir till the bitter gourds are slightly soften.
5. Add in Maggi Secukup Rasa.
6. Pour in the eggs. Stir.
7. Season with salt if necessary. Garnish with crispy fried onion and ready to serve!
