Pasta Aglio Olio

Ingredients :

1/2 packet Angel Hair
4 cloves garlic - chopped
1/2 teaspoon chillie flakes (add more if you want it hot)
1 1/2 tablespoons Waitrose Green Basil Pesto
10 medium prawns - peeled and deveined
3 calamari - Clean and cut the bodies into thick ring
1 teaspoon capers
black olives
salt - if necessary
a bit of water
olive oil

Method :

1. Boil angel hair pasta till al dente. Drained and keep aside.
2. In a heavy skillet, heat enough olive oil over medium high heat. Add in the chopped garlic and fry till fragrant. Add in chillie flakes.
3. Add in the basil paste. *Be careful as oil will splutter!!*
4. Add in calamari rings, olives and caper. Stir for a while before adding the shrimps and a bit of water.
5. Last but not least toss the angel hair into the pan and season with salt.

Raintree Beach Resort, Tuaran, Sabah (1)

Early this month, I was away with Mr Hubby to Sabah. He had an event to participate and since he will be in Sabah for a couple of days, he decided to bring his bodyguard along... and that will be ME! At first, I was reluctant to tag along as the hotel rates there are quite high. I feel it is not worth it to pay such big amount for me to just stay in the hotel while he's away. Mr Hubby didn't give up that easily. We looked up for other possible hotels preferably the one by the beach so that I can do something else besides being cooped up in the room. Alhamdulillah, it was written that I will be going with him and yes, we managed to get a room at RAINTREE BEACH RESORT in Tuaran Sabah, formerly known as MIMPIAN JADI RESORT. 

We arrived on the 2nd April, 2014 midnight. Nothing much to see then but what I can see was the place was occupied. There was an event held there earlier that week. We had booked for a challet but since all challets were taken, we were given a villa instead without having to pay extra. Lucky! Lucky! Lucky! We stayed there for 5 days. Yeah right.. quite a long vacation for us!

Khao Niaw Ma Muang

HELLO!! I am back! No excuses to give… Just that I am glad to be back… ngeee….

That is to show how long I have not been online! Hahaha... actually the list does not stop there but if I continue writting, then you will think that I am exaggerating! Hahaha..

And today, 28th April, 2014... A VERY HAPPY BIRTHDAY TO MY DEAREST SIS LYNNE! Many happy returns of the day!

Enough of birthdays and anniversary's wishes. Let's move on to the recipe for today. And oh, before I forget, thank you to Miss/Mdm Yuhalini from The Star Online for featuring my recipe in their Kuali dot com. I am honoured. Thank you.

KHAO NIAW MA MUANG (PULUT MANGGA THAI)

Ingredients :

2 ripe mangos - peel and cut to your liking
250g glutinous rice - wash and soak overnight or at least 4 hour
100ml coconut milk + 1/4 teaspoon salt
2 pieces pandanus leaves

Sauce :

150ml coconut milk (I used M&S coconut milk)
150ml water
4 tablespoons brown sugar
1/4 teaspoon salt
2 pieces pandanus leaves
4 teaspoons cornflour mixed with a bit of water (thickening agent)

Method :

1. Pour the glutinous rice into a sieve to drain the water. Place in a tray and steam for 15 minutes.
2. Pour in the 100 ml coconut milk and mix well. Place the tray back into the steamer with the pandanus leaves. Steam for another 20 minutes or till done.
3. To prepare the sauce : Mix all the ingredients for sauce except cornflour mixture. Cook on slow fire till sugar dissolved. Then add in the cornflour till the sauce thickens. Remove from heat.
4. Serve the glutinous rice with mango and the sauce. Enjoy!
