Best Ever Light And Fluffy Dinner Rolls

OMG OMG OMG!!! I must have done something REALLY GOOD to deserve this DOUBLE JOY when I opened my email, after 3 days letting my laptop on 'vacation'. I received 2 emails from my ex-schoolmates. Marina was my school mate since we were in kindergarden (did you realise that Marina ;)). And Hafiza my best friend when we were together in MGHS till form 3. I even chose Fiza's birthdate to deliver my daughter! I guess it is not too late to wish you HAPPY BELATED BIRTHDAY FIZ! Thanks to both of you for making my day! I am so happy!!!

Secondly, I had been naughty yesterday. I didn't do much except sit and read and cried and smiled and be on Cloud 9. Hubby went golfing early in the morning. I skipped my morning walk but I didn't get back to sleep. Instead I kept reading THE WHOLE DAY. The story just got better towards the end, and I just can't put down the book. But at 3 pm, I had to put it down. Been crying too much and I was pretty exhausted. So I grabbed the broom and started to sweep the house. Not enough with that, I mopped the house too! Took in the laundry and fold the clothes, then took a bath and yes, I was emotionally stabled by then. Continued reading till 8.30 pm when I finally reached the last page! Phew... Finally it is over! Thank you to AcikLana for her Perempuan Yang Paling Aku Cinta! I will post the photo of the book and the synopsis in my other blog. And since I have a big pile of clothes to iron, l will leave you with this recipe.

My sister whatsapp-ed me this recipe and asked me to try it. The first time I tried with the original recipe of 1 1/2 cup water, it was quite messy and hard to handle. I can't adjust the water amount as I was using the breadmaker to do the kneading. The second time I made, I reduced the water amount to 1 1/4 cups and the dough is much easier to handle. But the taste remains. Thank you to Pat Kinnee and Mak Chu for the recipe.


BEST EVER LIGHT AND FLUFFY DINNER ROLLS

Ingredients :

4 cups all-purpose flour
1/3 cup sugar
1 teaspoon salt
11g instant dried yeast
1 1/4 cups water
1 egg
1/3 cup softened butter or vegetable shortening (I used margarine)


Pat's method :

Sift together two cups of the flour with the sugar, and stir in the yeast. With mixer at low speed, blend shortening or butter into the flour mixture. Add the hot water (the hottest it comes from your tap) all at once, with mixer running. Add the egg, and continue mixing.
Add in the remaining two cups flour to make a soft dough.
(At this point, change mixer beaters for dough hooks and let the mixer knead the dough for about ten minutes and then put it into an oiled bowl to rise.)

OR YOU CAN DO IT THIS WAY.

Knead lightly on a floured board and shape into a ball. Put into an oiled bowl, cover with a towel, and allow to rise in a warm spot until doubled, about two hours. Punch dough down. At this point it can either be refrigerated or shaped in rolls or loaves and allowed to rise a second time until doubled. Bake in a preheated 375 degree oven until barely brown.
May be frozen after baking and reheated to serve.


NOTE :

I used my bread maker to do the kneading job. As usual, place the liquidy ingredients first, then top it with the dry ingredients. Then the yeast. Start the breadmaker and when the dough is just combined, add in the margarine and leave the breadmaker to do it's job. All in, will take about 1 1/2 hour.
Remove the dough from the breadmaker and shape it into 20 small balls. Arrange in the lightly greased tray and let it prove for a while. Brush with milk powder and water mixture. Sprinkle with some sesame seeds. Bake at 200 C till golden brown. Remove from oven and brush with margarine.

SMOKED CHICKEN CHEEZY RISOLES

Assalamualaikum...

Lambat masuk hari ni. Hihi.. macamlah hari-hari pun masuk sini kan? Semalam pun ponteng tak masuk. Tak kisahlah, janji hari ni ada update...

Tapi hari ni, tak ada rancangan memasak ye. Jangan tak tahu, mama dah buat rakaman lagi dua rancangan memasak. Muahaha... kesian mama ni dok perasan sendiri kan, tapi tak pe lah, bukan kacau orang pun, saja nak syok sendiri... hehehe...

Anyway, hari ni, mama nak up-kan pasal RISOLES. Opss, bukan mama buat tapi geng sekepala mama belanja mama. Sedap oo risoles dia. Risoles ni sebenarnya kena deep fry, tapi kenkonon mama nak 'healthy', mama gunalah HAPPY CALL mama untuk 'goreng'. Kalau tak tahu apa itu Happy Call pan, boleh tengok gambar kat dalam entry ini.

Rancangan Bersama MamaFaMi - Episode 1

Yesterday, I spent most of my time, trying hard, REALLY HARD, to bring back the photos into my previous posts. But only in the APAM section, for a start. Alhamdulillah, managed to do so till almost midnight. Only a few photos, I can't actually figured out what it was. But worry not, those were the photos that has nothing to do with the recipe. I DO REALLY hope that I have enough strength and patience to do the same to rest of the postings... it's a really hard job. Huhuhuu... I learnt my mistake the HORRIBLE way! Huwaaaaaa..... I pray that none of you will go through this kind of experience!

Yesterday evening, when I was about to fry the egg noodle for mom's dinner, I just felt like taking the step by step photo, mainly to share with my girl since she is now staying in an apartment and no longer in a hostel. Who knows with this step by step photo, added with humour of course, will trigger her interest in cooking.... hahaha...

After I'm done tidying up the kitchen, I sat down and whatsapp with my girl. And here it goes....



I whatsapp these photos to my sister as well, and her response was...

"SERIOUSLY MAMA, YOU HAVE WAYYYYYY TOO MUCH TIME EH?"

Ahahahaha... I guess I have some short wires 'upstairs' due to too much head movements. Blame it on Amelia!!!!!

Apam Kampung

Two days ago, when I checked my email, I was confused when I read the comment by Amelia. She had mentioned Butter Cake. What butter cake???

So I went to my website and wallahhhh... there IS a RICH BUTTER CAKE entry! OMG OMG OMG...

I had put that entry in the queue to be posted but totally forgotten about it. Thank goodness, that entry was a complete entry, and presentable to be posted. At times I have the habit to just type the recipe in advance and left it in the draft box to be edited later. I guess I should stop doing that huh? Lesson learnt!

APAM KAMPUNG

Ingredients :

200g flour
50g rice flour
85g brown sugar
6g instant dried yeast + 1/4 cup water (stir to dilute the yeast)
1 cup water

Freshly grated coconut (just the white part) + a bit of salt (mix well)

Method :

1. Combine flour, rice flour and brown sugar. Mix well.
2. Add in the diluted yeast and stir.
3. Add water a little at a time and stir till smooth.
4. Grease an 8 inch tray with a bit of cooking oil. Pour the mixture into the tray and leave to prove for about an hour or till the mixture had rised well.
5. Prepare the steamer and steam the apam for 40 to 45 minutes. Cover your steamer lid with a clean towel.
6. Remove from the steamer and leave to cool before cutting.
7. Serve with the freshly grated coconut.

Langkawi 2013 - still day 1

Opps, such a long break after the first entry of Langkawi. Thousand apologies. I got carried away with the food entry and also an entry by accident... hahaha... maybe will write about that in my next post... just MAYBE, okay....

Let's not waste more time shall we...

I didn't snap many photos of the air show, from the top of Permandangan Indah. I took just a few using my phone's camera. So I will only post this one photo that is the best among the lousy-s! Hahahaha...



When the air show is over for that day, we checked into the hotel and Syahmi went straight to bed. Poor kiddo! The three of us went to the 5th floor of the hotel, to the rooftop cafe. We had these, among the few others....


Around 6pm, hubby brought us by the seaside to watch the sunset. Masya Allah, such lovely sight!



And of course... dinner... Alhamdulillah....

Rich Butter Cake

RICH BUTTER CAKE

Ingredients :

185g butter
3/4 cup caster sugar
3 eggs, lightly beaten
1 teaspoon vanilla essence*
1 1/2 cups self-raising flour*
1/2 cup plain flour*
1/4 cup milk
chocolate vermichillie (I added)

Method :

1. Preheat oven at 180 C. Bursh a deep 20cm round cake tin with melted butter or oil, line base and side with paper, grease paper.
2. Using electric beaters, beat butter and sugar in a mixing bowl until light and creamy.
3. Add eggs gradually, beating mixture thoroughly after each addition. Add essence and beat until combined.
4. Using a metal spoon, fold in sifted flours* alternately with milk. Stir until ingredients are just combined and the mixture is almost smooth.
5. Pour mixture into the prepared tin, smooth surface. Sprinkle with chocolate vermichillie.
6. Bake for 45 minutes or until skewer comes out clean when inserted in center of cake.
7. Leave in tin for 10 minutes before turning onto wire rack to cool.

What Mrs Busy Bee did...

Oh oh oh... I was the one saying it just now...
Hahaha... Thousand apologies to all...

I think I was struck by the hardworking angel with it's invisible arrow. I spent most of my time today in the kitchen. Baking and cooking. We will leave the baking part for later ya... psstt... new recipe coming okay... stay tuned... *wink*

Anyway, these were what Mrs Busy Bee cooked today. But can you believe it if I said, I haven't eaten any of them... time checked 21:05. Maybe after this...

FRIED RICE - for dear hubby

FRIED MACARONI - for mom to break her fast. But she had the fried rice too because she can never resist fried rice and so can't we! Hahahahaa...

FRIED EGG NOODLES - for my son...

Me? I am flexible... any leftovers will do.... makes me a happy lady!

Asam Rebus Kacang Panjang & HAPPY CALL

Honey... I'm home! What's for lunch?
If that is how my hubby would greet me IF he comes home for lunch, I don't think I will be this lazy! But sadly, he does not come home for lunch because the distance and the traffic made it impossible for him to do so.

But then, at this time, I have to cook for lunch because mom is with me, this month. So as lazy as I can be, I can't let my own mother starve! Hehehe... So these were our lunch for yesterday. Today, mom is fasting, so I will play cheat! Hai... bilalah mama nak insaf ni? Ish ish ishhhh....

SAMBAL IKAN GORENG


I was really happy when cooking this dish. Why? Because I had used the HAPPY CALL Pan that I bought a few months back to fry the fishes. I fried my fish with only 2 tablespoons of oil. Well, it is healthy enough to me rather than frying like how I use to fry before.



To prepare this dish, it is similar to how we prepare any other sambals, only I've added a stalk of lemon grass, bruised.

EGG OMELLETE WITH MAYONAISE


Normal way of preparing omellette plus a teaspoon of mayonaise... thaaa dhaaa....



ASAM REBUS KACANG PANJANG

Ingredients :

2 shallots
1 clove garlic
2 tablespoons dried prawns (soaked)
2 fresh red chillies
small piece of belacan (shrimp paste)
4 glasses of tamarind juice
10 stalks of long beans - cut to 1" length
salt to taste
zeal - optional

Method :

1. Pound or blend in the food processor, shallots, garlic, dried prawns, red chillies and belacan.
2. Put the pounded ingredient into a pot and add in the tamarind juice.
3. Once boiling, add in the long beans, salt and zeal.
4. When the beans are soft, remove from heat and ready to serve.

Mom used to cook this dish but she had used dried anchovies instead of dried prawns. Both tasted lovely and I don't regret trying Sha's recipe. Thank you Sha your sharing this simple recipe with us.

LANGKAWI 2013 - Hotel and Car Hire

I kept mentioning about my recent vacation in the past two entries but had never mentioned where we went to. So in this post, I will 'talk' about our 4 days packed vacation. When MamaFaMi's family goes for vacation, it will always be about activities, especially if that is our first time going to that destination. We will make sure that everybody is fit enough to go and be able to take all the 'challenges'. And who shall be the one who enjoys the most??? ME ME ME ME ME!!!! Hahahaha.... I think all my efforts of going walking every morning and trying to achieve that 10,000 steps per day, really helps. Infact, I think it HELPED A LOT!

Okay okay, enough bragging... we went to Langkawi recently. We left KLIA via MAS on the 28th morning and stayed in Langkawi till 31st Mac. Main reason for visiting Langkawi is to watch LIMA 2013. We touched down quite early and hopped into the hired car.

Since the LIMA 2013 was not opened to public yet, so we watched the air show from the lookout point, Permandangan Indah, the hill facing the airport.Though we had to stand in the hot sun, but I enjoyed it very much. I have always loved aeroplanes. Seeing it taking off and landing, just gave me the WOW feeling! I should be a pilot huh? Hahahaha... saper suruh tak belajar rajin-rajin! :P

When the airshow was over, we went to our hotel to check in and hoping to get some rest. Did we? Well at least the kids did, but not me and Mr Hubby! Remember what I wrote earlier on? When we go for vacation, it is all about activities! Hahaha... Well, here was where we stayed....

Muffins and muffins

Very clever of me! Two days before leaving for my previous vacation, I had bought a tray of eggs. Not the small tray but the big tray with 30 eggs on it! To finish 30 eggs in 2 days...you've got to be kidding me! Then why buy? The answer is "absentminded"! Can't find any better reason to give. Hahaha...

Anyway, in order not to let the eggs stay freezing cold in the refrigerator, I've decided to bake things out of it and distribute them among my sister, friends and neighbours. And these were what I managed to bake, despite the very short time I had. Only managed to finish packing for our vacation, almost midnight and we were off to the airport the next day by 6.30am. Complaining? Oh no, not at all. When it comes to vacation, MamaFaMi never complaints! Hahahaha....

I didn't realise that I've baked this recipe before. Only when I checked in my blog and compare it with my printout, just before updating this entry, that I know, I've baked it before! Anyway, this time, it's a simpler version, without the toppings. Nevertheless, the taste still remains the same... yummy!

COFFEE BREAKFAST MUFFINS

I am not sure if omitting the raisins will give a big impact to the taste or what but if not, then some adjustments need to be done to this recipe. Since I was running out of time, I just followed the recipe. In future, whoever wishes or taking the challenge to try out this recipe, please adjust the recipe to your taste, especially the sugar part.... trust me, it needed more... ;). Anyway I will just post the recipe here and will keep the source anonymous.


Ingredients :

3 cups self raising flour
1 cup brown sugar
1/2 cup raisins (I omitted)
2 tablespoons nescafe
2 eggs
80g butter, melted
1 1/4 cups milk
2 teaspoons vanilla essence

Method :

1. Preheat oven to 180°C. Prepare the muffin cups and layer with the paper liner.
2. Combine flour, sugar and raisins in large bowl.
3. Whisk together Nescafe and remaining ingredients, pour onto flour mixture, stir until just combined
4. Spoon mixture evenly into muffin tin, almost to the tip and bake for 20-25 minutes until cooked.
5. Cool slightly before removing from pans. Serve with cream cheese if desired.

The other cake that I had baked was a butter cake. That will be updated in my future entries ya. Till then, take care and have a nice day!
