Simple Banana Muffins

SIMPLE BANANA MUFFINS

Ingredients :

1 1/2 cups flour *
1 teaspoon baking powder *
1/3 teaspoon table salt *
3/4 teaspoon bicarbonate of soda * (sift ingredients marked *)
3 medium ripe bananas - mashed
1 tablespoon mayonaise
1 medium egg
a few drops of banana essence
3/4 cups soft brown sugar
1/3 cup corn oil

Method :

1. Preheat oven to 180 C. Arrange the papercups in a baking tray.
2. In a big bowl, add egg, brown sugar and mayonaise. Stir using a whisk till well mixed.
3. Add in mashed bananas, corn oil and banana essence.
4. Add in the sifted ingredients and mix just a few turnings. Do not overmix. Mixture may be crumbly.
5. Spoon the mixture, 3/4 full into the prepared cups.
6. Bake for 25 minutes or till done.

Chicken Pie


CHICKEN PIE

Ingredients :
Crust :

455g flour
2 teaspoons baking powder
227g margarine
1 egg ~ slightly beaten
6 - 8 tablespoons water (from the fridge)

Method :

1. Sift flour and baking powder in a bowl.
2. Rub in margarine to form bread crumbs.
3. Add in egg and mix well.
4. Pour in the cold water bit by bit till a soft and smooth dough is formed.
5. Divide the dough into 2 portion, one portion slightly more.
6. Roll thin the big portion and place at the bottom of the casserole.
7. Pour the filling, and arrange the boiled carrots, potatoes and eggs.
8. Roll thin the other portion of the crust and cover the filling. Decorate as you wish.
9. Brush with egg yolk on top and bake in a pre-heated oven at 200 C till golden brown.


Filling :

1 carrot ~ cleaned and diced
2 medium potatoes ~ cleaned and cubed
5 button mushrooms ~ sliced
2 eggs ~ boiled
1/2 Onion ~ sliced
2 garlic ~ minced
1/2 inch ginger ~ minced
Chicken fillets ~ diced
enough water
1/2 Chicken cube
black pepper ~ crushed
1 tablespoon soya sauce
Corn flour mixed with a bit of water ~ to thicken the gravy
Egg yolk ~ to brush on top
Oil for cooking

Method :

1. Boil carrots and potatoes with a bit of salt till tender.
2. Heat oil in a wok. Saute the garlic, ginger and onion till fragrant.
3. Add in the chicken chunks and enough water. The amount of water depends on how much gravy you prefer. Add chicken cube.
4. Once boiling, add in black pepper, salt and soya sauce for color.
5. Before removing from heat, pour in the cornflour mixture to thicken the gravy.

I realised that I've been neglecting my own blog for way too long. But I really don't have a choice. I had not tried any new recipes for like ages! I don't know where my baking mood's been hiding of late. But thanks to Badariah and Hanita for helping me to at least summon back my baking mood.

Hot Spagetti Carbonara



HOT SPAGETTI CARBONARA

Ingredients :

Spagetti

3 garlic cloves - chopped
3 bird eye chillie (more if want it hotter) - minced
a bit of chicken cube or 1 teaspoon chicken granules
1/2 holland onion - diced
4 pieces salami - cut to match stick size
2 hotdogs - cut to small chunks
enough frozen mixed vegies
1 can Prego Carbonara (blue colored can)
3/4 can water (use the Prego can)
olive oil

Method :

1. Bring a pot of water to boil. Add in a bit of oil and put in the spagetti. Boil it for 8 to 10 minutes or till al dente. Pour the spagetti into a colander to drain out the water and set aside.
2. In another pot, add oil and when it's hot, add in chopped garlic and minced bird eye chillie. Stir till fragrant and add in chicken granules and diced onion. Let onion turned soft.
3. Add in the salami and hotdog. Stir for 3 minutes then add the mixed vegies.
4. Pour in the carbonara sauce and enough water. Let it simmer for a while and remove from heat.
5. To serve, place the spagetti in a bowl and pour the sauce on top! Enjoy!

WHAT'S YOUR REASON TO THIS MATTER?
Err... I was not around... I went on vacation ma'am...

BUT YOU WERE AWAY JUST FOR 5 DAYS. WHAT'S WITH THE REST OF THE DAYS?
Errrr... I was busy preparing my son's stuffs for the new schooling year....

BUT YOU'VE DONE EVERYTHING BEFORE YOU LEFT FOR YOUR VACATION RIGHT?
Errrrrrr.... yes ma'am

SO WHAT ELSE DO YOU HAVE TO SAY?
Okay okay okay..... the truth is... I am just not in the mood to sit infront of the laptop. And 5 days internet free during the vacation is all it takes to take my mood away! Happy now!

HMMM MORAL OF THE STORY, NEXT TIME, JUST TELL THE TRUTH SO THAT I WON'T HAVE TO WASTE MY TIME ASKING SO MANY QUESTIONS!

POTATO TARTS

Ingredients :

5 medium sized potatoes - cleaned and grated
1 medium carrot - cleaned and grated
1 onion - diced
chopped spring onion
4 pieces crabstick - cut to small pieces
1/4 cup fresh milk
3 large eggs
enough grated Mozzarella cheese
enough salt
enough whitepepper
2 tablespoons cornflour


Method :

1. Place the grated potato and carrot into a big bowl and mix well. Squeeze the juice out. Add diced onion and mix well.
2. Beat eggs and add milk. Stir and pour into the potato mixture. Add spring onion, crabsticks and a handfull of cheese. Stir to mix well.
3. Grease the muffin pan with a bit of margarine. Spoon the mixture till full and sprinkle with more cheese.
4. Bake in a preheated oven at 190 C for 20 minutes or till cheese turned to golden color.
5. Remove from oven and serve hot with your choice of sauce or nice to eat on it's own. The choice is yours. Enjoy!
