MamaFaMi kembali ke FB? Briyani Rice & Beef Briyani

Hari ni nak menceceh dalam Bahasa Malaysia....

Habis tu buat apa tulis yang kat atas tu, huruf besar pulak tu!
Gini......

Tersebutlah kisah.... Beberapa hari yang lalu, masa mama bersembang dengan Mat Gebu, dia ada beritahu yang Ben ada buat entry untuk mama. Rasanya mama terlepas pandanglah tu sebab Ben ni punya entry, bukan main banyak lagi satu hari. Mama ni nak buat satu entry satu hari pun, sesak nafas! Jadinya mama pun jalan-jalanlah ke rumah Ben Ashaari. Jalan punya jalan, terberhenti kat sini.

Mama Rock eh Ben... ha ah, rock punya pasal, tu yang jadi berat tu... hahahaha.... Tapi yang paling tak tahan, soalan maut Ben tu.... "Mama, mana FB?". Ini tanya ikhlas ke perli ni... muahaha... ada ku kesah?

Sebenarnya, orang yang bertanggungjawab menjerumuskan mama dalam FB ni ialah si Ben Ashaari ni la.... Dia bagi baikkk punya promosi sampai mama leh cair! Sebenarnya betullah apa yang Ben promosi tu, tapi disebabkan mama yang silap kendali kemudi... terus tersasar dari landasan... sampai terlupa daratan! Hahaha. Tapi nasib baiklah cepat kembali ke pangkal jalan, itu yang membuatkan mama 'merehatkan' akaun FB mama sehingga suatu ketika yang sesuai.

Briyani Rice
BRIYANI RICE

Ingredients :

2 cups rice
1 chicken cube
enough water
salt to taste
1 inch of cinnamon stick
2 cloves
1 cardamon
1 teaspoon margarine
enough cooking oil
1/2 onion ~ sliced
1 small garlic ~pounded
a bit of ginger ~ pounded
1 1/2 teaspoons Briyani powder
1/2 cup milk

Method :

1. Wash rice and put enough water like cooking white rice.
2. Crush in the chicken cube into the rice. Add enough salt. Let it boil.
3. When it has started to boil, heat a bit of oil and margarine in a small pot.
4. Add in the spices and the sliced onion. Fry till brown.
5. Add in the pounded ginger and garlic.
6. Add in the Briyani powder and mix well.
7. Pour into the boiling rice.
8. Add in fresh milk, stir well and let the rice cook.
9. Garnish with fried sliced onion.

Beef Briyani
BEEF BRIYANI

Ingredients :

300g tender beef ~ boiled till tender
4 shallots ~ pounded
1 garlic ~ pounded
1/2 inch ginger ~ pounded
1 inch of cinnamon stick
2 cloves
1 cardamon
a bit of star anise
4 teaspoons (heap) Briyani powder
1 tablespoon tomato sauce
salt to taste
zeal (monosodium glutamate) ~ optional
3/4 cup fresh milk

Method :

1. Heat oil and margarine and add in the spices and pounded ingredients. Fry till fragrant.
2. Put in the briyani powder. Add the beef stock if any. Otherwise just add a bit of water so that it won't be too dry.
3. Add in the beef.
4. Add in tomato sauce, salt and zeal.
5. Finallly add in fresh milk and let it cook.

Note :
You may add boiled potato and tomato.

Congrats Nora & Deno / Sayur Campur ala Kjee

Last Saturday, we went to my relative's wedding in Johor Bahru at the Dewan Jubli Intan, Jalan Ayer Molek. It had been years since I went back to Johor Bahru. And it had been ages since I last meet most of my relatives (mom's side). We reached there around 12 noon. Not many guests had arrived that time. Mostly were relatives. And from my table, I was more interested to see who were in the hall rather than the delicious food served.

Time really flies... I am embarrased to say that some of them, I can barely recognised. Once, I was sitting at the reception area, this nephew of mine came and greet me, cheerfully. And I did not recognise him. I was saying to myself, hmmm such a nice guy to ask my whereabouts. After a while, when we were outside, waiting for the bride and groom to enter, I was with another niece of mine. And along came that Mr Nice Guy. I whispered to my niece, who is that guy and she said... kan Achai tu! OH MY GOD! Is it my eyes or he had changed? Well, the answer is... he had changed to a bigger size.... just like me... hahahaha... Sorry Chai, tak kenal masa Acai salam... sebab dah comel sangat... hehehehe....

To Nora Zainab Mohamed Ariff and Deno Aswal Abdul Rahman, congratulations on your wedding. Marriage is not only the beginning of a relationship but also the end of a life long search for the other half of your soul. May both of you live happy ever after....

SAYUR CAMPUR

Ingredients :

oil for cooking
garlic - chopped
dried shrimp - washed
enough water
French beans (kacang buncis) - sliced
Carrots - sliced
Potatos - cleaned, sliced and fried
Fresh red chillie - sliced
pepper
1 teaspoon thick chicken stock
1 teaspoon oyster sauce
soya sauce
sesame oil
1 teaspoon cornflour - mixed with 1 tablespoon of water

To garnish :

Crispy fried onion

Ingredients :

1. Heat a bit of oil in a wok and add in the chopped garlic.
2. Add in dried shrimp and enough water.
3. Add in the carrots and french beans. Stir for a while the the vegetables are slightly soft.
4. Add in the fresh chillie and potato.
5. Season with oyster sauce, soya sauce, thick chicken stock and pepper. Drizzle with a bit of sesame oil.
6. Just before removing from heat, pour in the cornflour mixture. Once the gravy thickens, remove from heat and sprinkle with crispy fried onion and ready to serve.

Apple Muffins

Hello everyone! I'm back! But still, can't write much because I am chatting with my close friend, Angelin in Toronto via skype. And being in a tired mode, my brain cannot just split into 2. I just can't think 2 things at a time... age is catching up on me huh? Haha...

Anyway, let me just skip the ramblings for today and go straight to the recipe to share okay...

I was cleaning the fridge and came across some green apples. Er.. by the way, my fridge can 'breathe' at ease now since I've cleared most of the 'congested' areas! Hahaha...

So I flipped through one of the books in my collection to see how I can 'dispose' the apples in a good way and at the same time enjoying it! I managed to give some to Saerah, Sherina and Ustazah Rohani. The feedback that I got, some said nice, some said ok and if you asked me, well, I'll say it's ok ok la......

Anyway, let me just share the simple to prepare recipe and you judge yourself...


APPLE MUFFINS

Adapted from : Food Lovers Bread & Muffin Book

Ingredients :

50g butter
2 apples
225g all purpose flour
2 teaspoon baking powder
75g brown sugar
1 teaspoon mixed spice (I used cinnamon powder)
1 large egg
150ml sour cream (I used plain yogurt)

To sprinkle :

brown sugar

Method :

1. Preheat the oven to 190 C. Line a 12 hole muffin pan with paper muffin cases.
2. Melt the butter. Peel, core and finely chop the apples.
3. Sift the flour and baking powder into a large bowl. Stir in the sugar, mixed spice and apples.
4. Put the egg, sour cream and melted butter in another bowl and mix together with a whisk.
5. Pour the liquid ingredients into the flour mixture and stir for a few seconds until just combined.
6. Spoon the mixture into the muffin cases. Sprinkle generous amount of brown sugar on top.
7. Bake in the oven for 15 to 20 minutes until the muffins are well risen and firm. Leave to cool on a wire reack.

Chinese Fried Rice

Sometimes, just a simple gesture by somebody, can make us happy. This morning, when I was driving into my car porch, from far, I saw this one Chinese uncle doing his morning walk. I thought he would just pass my house without stopping. But soon as I've parked the car, from the rear mirror, I saw him standing across the road opposite my gate. And when I came down from the car, he waved and with such a merry voice, greeting me GOOD MORNING. We just had a small talk before he continued his morning walk. That few minutes is just enough to make my day! Thank you Uncle.... nanti I belanja nasi lemak okay...

I fried Chinese Fried Rice this morning for breakfast. Took the recipe from Kak Liza's latest cookbook, 1 Hari 1 Resipi. Thank you Kak Liza for the easy to prepare yet yummy to eat recipe! I added a few ingredients to the recipe though.


CHINESE FRIED RICE

Ingredients :

3 cloves garlic - finely chopped
1/2 teaspoon black pepper
Carrot - clean and diced
French beans (kacang buncis) - cut to small pieces
1 fresh red chillie - sliced
Cabbage - cut
1/2 fish cake - sliced
1 large egg - lightly beaten
6 prawns - cleaned
salt to taste
2 cups rice
cooking oil

To garnish :
spring onion
red chillie

Method :

1. Heat oil in a wok and add in garlic. Stir till fragrant and add in black pepper.
2. Add in the carrots, french beans, fish cake and sliced red chillie. Stir for a few minutes and add in the egg.
3. When the egg is half cooked, stir all the ingredients and add in the prawns and salt to taste.
4. Lastly add in the rice and stir till well incorporated.
5. Remove from heat and garnish with spring onion and red chillie.

Pengat Pisang Mudah

Father's Day is celebrated on every third Sunday in June every year. Last Sunday was Father's Day. I take this opportunity to wish all fathers a Happy Father's Day. It's not only that particular Sunday is Father's Day. Everyday is Father's Day except last Sunday is extra special, specially dedicated to just fathers...

I miss my father.... Al-Fatihah...

PENGAT PISANG MUDAH

Ripe bananas - sliced thickly
Sugar - to taste
Enough water
1 cinnamon stick

Method :

1. In a pot, add sugar, water and cinnamon stick. Bring to boil.
2. Add in sliced bananas and let it simmer for a while.
3. Remove from heat and ready to serve.

Spaghetti Seafood Marinara

At times, when I do my groceries, this question will pop into my head. Does other people do the same as me, counting everything that I take? For example, if I wanted to buy prawns, not only will I choose the good ones and the large ones too, I will also count the numbers of prawns that goes into the plastic. I think I am allergic to numbers.

I can still remember, when I was much younger, I used to follow my mom to the market. And when the shopkeeper is calculating (using a calculator) the total amount, I, at the same time was doing mental maths and will be very proud enough if I win. Nobody knew what I was doing and nobody needs to know. It's just for my self satisfaction! Hahahaha...

So, is there anybody as weird as me, counting almost everything that is countable? Hahahaha.....

After looking at Nor Secubit Garam's photo of her Spaghetti Marinara, I paid a visit to Ayu's blog as Nor said she took the recipe from there. And after reading the recipe and found it very easy enough to prepare as it's similar to how I normally prepare my bolognaise, I went 'fishing' in my refrigerator and in my 'cute pantry'. Yes... it's MISSION POSSIBLE! I have most of the ingredients... and wallah... it's a right decision to make. Even my mom enjoyed her bowl of Spaghetti Seafood Marinara. Thank you to Nor for 'torturing' me with your photo and to Ayu for sharing this lovely recipe with us. I'll post the recipe according to how I had done it.


SPAGHETTI SEAFOOD MARINARA

Ingredients :

1 packet spaghetti
some olive oil
salt (I omit)
water
Boil all the above till al dente and drained

Sauce :

2 garlics diced/chopped
1 big onion diced
1 tablespoon chillie paste
1-2 tomato diced/chopped
1 carrot shredded diced
1 piece celery stick - sliced thickly
1 cube chicken stock
1 bottle Kimball Traditional spaghetti sauce + 1 bottle water (same bottle) or more
some medium prawns
some squids
1 small can button mushrooms slice
1 tablespoon dried oregano
1 tablespoon dried sweet basil
salt to taste
1/2 teaspoon of sugar
olive oil

* mozzarella cheese shredded sprinkle on top
* cheddar cheese shredded sprinkle on to
* parmesan cheese sprinkle on top
(* I didn't sprinkle any cheese on top as my mom doesn't eat cheese)

Fruit Pastry

Just now, I sat and ponder. In this 45 years of my life, what good thing that I had done? Had I been behaving? How good a Muslim am I? How much had I helped people in need? Am I a good wife to my dear hubby and a good mom to both my kids? Had I been a good child to my parents and a good sister to my siblings? A good friend to a friend?
.... Sad to say, I have no answer to any of the questions above...
... because I am just not perfect but working really hard to be one... insyaAllah.. please make duaas for me ya..

Thank you so much to my family members, MakcikKantin, Tina, Ummi Kuantan, Dolly in UK, Kak Jamilah and Ninie for your kind wishes via email, sms and personal call. I do appreciate it very much for your thoughts... I'm touched....

"eh, sedap pulak kek ni"... *wink* Allow me to re-post it here, the way I had prepared it. I had to substitute some of the ingredients according to whatever is available in my 'doremon cupboard'. Haha....

FRUIT PASTRY

Ingredients :

113g butter at room temperature
1 cup castor sugar
50g sour cream (I used plain yogurt)
1 teaspoon pure vanilla extract
1/2 teaspoon orange paste (I added)
Pinch of salt
1 teaspoon orange zest (I omit)
3 large eggs, at room temperature
210g plain flour
1 teaspoon baking powder
500g fresh fruits (I used strawberries, canned peach slices and Kiwi)

Method :

1. Place cuts fruits in a strainer and sprinkle with 2 tablespoons of sugar
2. Pre-heat oven to 350 degree F. Butter a baking pan.
3. Cream butter, sugar and sour cream yogurt together until creamy.
4. Add eggs one at a time and beat well. Add vanilla and orange paste. Continue beating.
5. Fold in flour and baking powder until everything combined
6. Pour batter into a baking pan and smooth the top. Place fruits on top
7. Bake for 50-60 minutes or until cake is done.
8. Cool and serve.

Singapore Hokkien Mee

I was racing against time these couple of days. Felt like 24 hours a day is not enough for me to get everything done without me feeling really exhausted at night and slept like a log! Hahaha... Anyway, alhamdulillah managed to get things done, by hook or by crook.

Found this recipe when I went bloghopping a few days ago and decided to give it a try. Thank you to Ayu Singapore for your scrumptious looking photo. And I can't agree more when you said that this recipe is indeed a keeper. Not only it's tasty but also easy to prepare. My apologies though, as I had to make a few changes here and there based on what I can dig out from my refrigerator. And thanks to Rasamalaysia too.


SINGAPORE HOKKIEN MEE

Ingredients :

250g Yellow Noodle (I used dried egg noodles, boiled till al-dente)
250g White thick rice vermicelli
400g Prawn
350g Squid - cut into rings
40g Celery
Carrots - sliced
2 tablespoons Maggi concentrated Chicken stock
Enough water - if necessary
3 Eggs
5g Chopped garlic

Seasoning:
1/2 tablespoon Fish sauce
1 dash Pepper
1 dash Sesame oil
salt to taste

Method :

1. Peel the prawn head and shell. Wash and boil for a while. Put through a strainer and reserve the stock.
2. Into a hot wok, add 1 tablespoon of oil, fry the garlic until fragrant. Add in egg and scramble.
3. Add in prawns and squid and stir till half cooked.
4. Add 1/3 of prawn stock, seasoning, carrots and celery till vegetables are tender. Add another 1/3 of prawn stock.
5. Add in yellow noodle and rice vermicelli. Cover wok to braise the noodles on medium low heat. (5 to 7 mins)
6. Add remaining stock, fry for 1 min and plate. Serve with sambal chilli and lime.

For the sambal, I just served with the readymade dried shrimp sambal.

Chocolate Chips Muffins (Mr Breakfast)

Imagine... having a house.... not too big... not too small.... but justtttt nice.. and a cosy one too... preferably the cottage style... on top of a hill, surrounded by nature, still green, full of fresh air and of course lovely scenery...

In the evenings... sitting outside with dear hubby, sipping a cup of tea with goreng pisang panas and enjoying the breeze and the sound of nature... mmm .. heaven on earth.......

Erk... potongggg la.. orang tengah berangan nih... hehehe...

Moral of the story : Jangan berangan pepagi buta! Ahahahaha....

Took this recipe from Izahdaut's blog after I can no longer bear to see her lovely looking muffins. When I was baking these muffins, I was actually hoping to get something similar to Izah's muffins but I guess I failed. Anyway, Izah had kindly passed me some tips which Nor Secubit Garam taught her. Maybe in my next experiment, I'll try to follow those tips. Thanks to all for sharing this recipe.

CHOCOLATE CHIPS MUFFIN

Ingredients :

2 cups all-purpose flour
1/3 cup light-brown sugar
1/3 cup sugar
2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup milk
1/2 cup butter -- melted and cooled
2 eggs - beaten
1 teaspoon vanilla
1 package (12 oz) chocolate chips
1/2 cup walnuts or pecans -- chopped


Method :

1. Preheat oven to 400 F. and grease up twelve muffin cups.
2. In a large bowl, stir together flour, sugars, baking powder, and salt.
3. In another bowl, stir together milk, eggs, butter, and vanilla until blended.
4. Make a well in center of dry ingredients; add milk mixture and stir just to combine.
5. Stir in chocolate chips and nuts.
6. Spoon batter into muffin cups; bake 15-20 minutes, or until a knife inserted in center of one muffin comes out clean.
7. Remove muffin tin to wire rack; cool 5 minutes and remove from tins to finish cooling.

Daging Masak Kicap Berempah Kari

Hihihi... I got carried away reading a Malay novel by Areila Sahimi entitled Baju Pengantin Mak Andam. You can read the synopsis here.

When I read a novel, I will always put myself as the main character in the book, hence the feeling of happiness, the sadness, the tears, the anger and everything that the character carries. Am I being :

a. over-react
b. over-sensitive
c. silly
d. all the above
e. none of the above

Got this recipe from Che Mat Gebu's blog. And since I don't really have all the ingredients he had used, I just cooked whatever I can dig out from my so congested fridge. I think if the fridge is able to speak, it'll scream at the top of it's voice.... RETURN ME BACK TO WHERE I BELONG ! Hahahaha.... But I guess, if it really can talk, I'll be the first to run out of the house! Imagine... a talking fridge... gulp... giving me goosebumps ! Hahaha...

DAGING MASAK KICAP BEREMPAH KARI

Ingredients :

450g topside beef - sliced thinly, wash and keep aside
1 cinnamon stick
1 star anise
1 tablespoon chillie paste
1 tablespoon meat curry powder
1 inch ginger *
2 garlic cloves *
4 shallots * (to be minced)
1 cup water
3 tablespoons thick soya sauce
1 tablespoon (level) sugar
1/4 teaspoon lemon juice
1 onion sliced
1 potato - peeled, washed, sliced and fried. Set aside.
1 celery stick
1 fresh tomato - quartered
cooking oil

Method :

1. Heat oil in a pot and add in cinnamon stick and star anise. Add in chillie paste, curry powder and the minced ingredients. Fry till fragrant.
2. Add in the sliced beef and let the meat cooked. Add in water and let it boil.
3. Add in thick soya sauce, sugar and lemon juice. Stir well.
4. Finally add in the sliced onion, fried potato, celery stick and fresh tomato. Let simmer for a while and remove from heat.
5. Serve with white rice.

Pucuk Paku Goreng Belacan

Have you ever felt yourself being like a GOOGLE SEARCH? If so, how do you feel?

I had always feel like I am a GOOGLE SEARCH. Not only to my family but also to my friends. At home, whenever someone can't find their stuff, they'll start asking...ma, did you see my 'this and my that' or... ma, did you remove my 'this and that' that I've kept in the cupboard. Oh my God... When I told them to look for it properly and using their eyes and not their mouth, they still couldn't find it. But when I asked them, where they last placed the stuff, and I looked at that spot, in less than 5 minutes, the thing is there... !

And with friends, they always ask me stuffs that actually I don't have any idea what's going on. But they know I'll provide them with answers and they are happy enough to accept it. For example, a friend will ask, why is this fellow driving like a crazy lunatic... and yes, she expects an answer... so I gave her one.... That fellow is in a hurry to go to the loo. She's happy with that... hahahaha....

Frankly speaking, it's tiring being a human google search!!!

PUCUK PAKU GORENG BELACAN

Ingredients :

1 bunch 'pucuk paku'
1/4 cup dried anchovies - soak for 5 minutes
3 shallots
2 garlic clove
5 bird eye chillie
2 fresh red chillie
1 inch shrimp paste (belacan)
cooking oil
salt to taste
zeal - optional

Method :

1. Clean the 'pucuk paku' and wash thoroughly.
2. Pound together dried anchovies, shallots, garlic, bird eye chillie, red chillie and shrimp paste.
3. Heat oil in a wok and put in the pounded ingredients. Fry till fragrant.
4. Add in salt and zeal.
5. Finally add in Pucuk Paku and stir till the vegetable soften.
6. Serve with white rice.

Ayam Lemak Merah dengan Carrot

Hi there! Anybody miss me? Ahahaha... as if! Doubt anyone actually realise that I had been missing from the blogging world for almost a week. Hahaha... Anyway, let me just tell you why I had not been around much....walaupun tak ada orang tanya, tapi sebab mama ni peramah, mama nak citer gak... tak kira....

Besides, being hectic with everyday's chores, I had not been cooking much. Didn't try any new recipes last week and I am out of source to post. But those were just excuses... the fact is, I got carried away watching YouTube. What did I watch? Penganten Remaja featuring Christian Sugiono as Fabian and Alyssa Soebandono as Amel. What actually attracted me to watch is Fabian *wink* *wink*. Hahaha... pecah ko rahsia mama... But frankly speaking, can't stand the annoying Eric and Bu Farida.... maaf pak, maaf bukkk.... hehehehee.... Thank God I'm done watching the movie and I think I am going to rest for a while. Had enough for the time being... And owh... I've finished watching Safa dan Marwah too... Alhamdulillah... I'm free now!!!

I can now sit back and enjoy my novel....Baju Pengantin Mak Andam.......

AYAM LEMAK MERAH DENGAN KAROT

Ingredients :

1/2 chicken - cut to 8 pieces
1 1/2 cups thin coconut milk
1 cup thick coconut milk
2 stalk lemongrass - bruised
1 carrot - sliced
1 dried tamarind skin

salt to taste
cooking oil

To be minced :

2 - 3 fresh red chillies
4 bird eye chillie
4 shallots
2 garlic
1 inch ginger
1 inci roasted dried shrimp paste

Method :

1. Heat oil in a pot. Add in the minced ingredients together with the lemon grass on medium heat and let the paste cooked.
2. Add in thin coconut milk and let it boil for a while.
3. Add in chicken and dried tamarind skin. Let the chicken cooked.
4. Add in salt to taste and carrots.
5. Pour in the thick coconut milk and stir for a while.
6. Remove from heat and ready to serve with plain white rice.
