Basic Chocolate Chip Muffins

BASIC CHOCOLATE CHIP MUFFINS

Ingredients:

2 cups all-purpose flour
1/3 cup light-brown sugar
1/3 cup sugar
2 teaspoon baking powder
½ teaspoon salt
2/3 cup milk
½ cup butter — melted and cooled
2 eggs – beaten
1 teaspoon vanilla
6 ounces mini chocolate chips (about half an average size bag)


Directions:

1.Preheat oven to 400 F. and grease up twelve muffin cups or put liners in them ( I prefer liners because it’s less messy that way).
2.In a large bowl, stir together flour, sugars, baking powder, and salt. In another bowl, stir together milk, eggs, butter, and vanilla until blended. Make a well in center of dry ingredients; add milk mixture and stir just to combine. Stir in chocolate chips and nuts.
3.Spoon batter into muffin cups, filling them as much as possible; bake 15-20 minutes, or until a knife inserted in center of one muffin comes out clean.
4.Remove muffin tin to wire rack; cool 5 minutes and remove from tins to finish cooling.

Potato Rolls

My oh my... had been busy as a bee...rasanya mama lagi busy sikit dari bee tu tau... So many things happened that needs my immediate action. Alhamdulillah I managed to get everything done right on time because like I've always said, I work best under pressure! Yes, that is totally not healthy, but I've never learnt my lesson. Why am I so stubborn. Oh ALLAH help me please!

For the past few weeks, I slept earlier than my norm. I'm out of this world before the clock strikes midnight. I am a good girl right! How can I not be? I am totally drained out by then! Even Ultraman needs to recharge his power! Haha...

So that explains my disappearance from the cyberworld...not from this world just yet okay. *wink*

Last week, my sweet neighbour Saerah passed me some rolls that she had freshly baked. Imagine this situation ya... your tummy is hungry and someone just happened to send you some freshly, sweet smelling rolls, right at your doorstep... how would you react? Yes... like a piranha! Hahaha.... Her rolls was lovely and I had asked for the recipe which she gladly emailed me. Can't bake it straight away as the recipe calls for some potato flakes which I don't have. So the next few days, I went to the bakery shop to get the flakes and was just too excited to try out the recipe.

Last Tuesday I set to work, with the intention to try out Saerah's recipe. Without checking her recipe, I just followed the recipe that I had copied down in my jot book that has potato flakes in it. After placing all the ingredients in the breadmaker pan, I started wondering, is this Saerah's recipe? Went on my email to check... goodness me, it wasn't. But I can't just smply throw the ingredients away. So I just carried on and that was not a wrong choice to make. The rolls are nice and soft. Many thanks to Foodbuzz and Kristen of Frugal Antics of a Harried Homemaker for sharing the recipe. I made half the recipe.

POTATO ROLLS

Ingredients :

1 cup milk
2 Tbsp sugar
2 tsp salt
1/4 cup butter
1 cup warm water
1 envelope yeast (or 2 1/2 Tbsp)
2 beaten eggs
1 cup instant potato flakes
4 1/2-5 cups flour


Method :

Heat milk, sugar, salt, butter and water in a microwavable bowl until butter melts. Let cool slightly. Add eggs and stir. Add the yeast and let a sponge form. Add the potatoes and then the flour. Knead about 8 minutes. Put in a greased bowl, cover and let double (about 1 hour). Punch down dough and divide into two halves. Make 12 balls out of each half and place in greased 9 inch pie pans. Cover and let rise 1/2 hour. Bake in a preheated 400 degree oven for about 20 minutes or until a deep golden brown. Brush with butter as soon as you remove them from the oven.

Note :

I used my breadmaker to do the job!

Orange Chocolate Chips Cookies

ORANGE CHOCOLATE CHIPS COOKIES

Ingredients :

300 gm of flour
1 teaspoon of baking powder
1/4 teaspoon of bicarbonate soda
170gm of butter
180gm of sugar
1 egg
2-3 tablespoons of chopped orange zest
1/2 cup of chocolate chips
5 tablespoon of orange juice

Method :

1. Cream the butter and sugar till creamy, then add in the egg.
2. Add in the zest and orange juice, followed by the mixture of flour, baking powder and bicarbonate powder which had been sieved first.
3. Pour in the chocolate chips and mix well.
4. Rest the dough for a while and shape the cookies.
5. Bake in preheated oven of 175 degrees celcius for about 15 minutes.

Oreo Muffins

Ingredients :

1 egg
1/2 cup milk
1/4 cup butter, melted
1 1/2 cups flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup chocolate chips
1 cup Oreos, crushed


Method :

1. Heat oven to 180 degrees C. Line the muffin tray with papercups.
2. Beat together the egg, milk and butter.
3. Stir in the remaining ingredients except the Oreos.
4. Fold in the Oreos; batter will be lumpy.
5. Spoon into prepared muffin tins and bake for 15 to 20 minutes.

Burger Rolls

T.H.E R.A.M.B.L.I.N.G.S

Here's the situation... you have nothing to serve for dinner. To cook, you're just too lazy. Then the thought of having burgers for dinner came to mind.

Beef burger, checked
Lettuce, checked
Tomato, checked
Chillie sauce, checked
Frozen chips, checked
Burger buns.... oh oh.....not available!

There are two suggested solutions to this problem....
1. Start the engine and drive to the shop and get some burger buns
2. Bake your own buns.
3. Buy the ready to eat burgers!!!

Which of the above will be your choice? Mind you, there are only 2 solutions given. Number 3 is not applicable!

I chose number 2.
Why?
Because I am lazy to go to the shop to get some burger buns. I'd rather torture my breadmaker to knead my dough and prepare the buns myself. I made 4 buns, just for the kids' dinner. Not much hassle in preparing, that's why I decided to bake them myself! *wink*

BURGER ROLLS

Ingredients :

110ml lukewarm water
1 tablespoon castor sugar
1/2 teaspoon salt
1/2 teaspoon dough softener
1 1/2 cups bread flour
1 1/2 tablespoons milk powder
1/4 teaspoon bread improver
1 teaspoon instant dried yeast
1 1/2 tablespoons margarine
Sesame seeds


Method :

1. Pour water, sugar, salt and dough softener into the bread maker pan. Top it with flour, milk powder, bread improver and yeast.
2. Set the breadmaker to Dough function.
3. Once the dough is just combined, add in margarine. Leave the Breadmaker to continue doing it's job. I just leave the dough for about 1 hour in the bread maker and it's ready to be shaped.
4. Divide the dough into 4 equal portions. Form each dough into a ball and rest for 10 minutes.
5. Flatten the dough slightly and place arrange on a baking tray.
6. Cover the buns and let it rise until double in size (it takes another 30 minutes, depends on the weather). Brush the buns with some egg wash and sprinkle with some sesame seeds..
7. Bake in a pre-heated oven at 180 C for 20 - 25 minutes or until golden brown.
8. Once out of the oven, brush with a bit of margarine. Place on a wire rack to cool.

Ben Ashaari Gegar Lagi

Kenapalah hari ni asyik nak tidur je. Betullah macam kata Kjee. Kita kena bangun pagi dengan aura gembira, kena senyum. Kalau bangun pagi tu dah lemau, seharian boleh lemau lagi teruk dari biskut masuk angin tau! Tapi kan, walaupun hari ini mama lemau, kerjarumah tetap beres dan keluarga tak kebulur pun. Tapi, menunya simple tahap dewa la. But then, bak kata Uncle Lee, apa yang penting, cook with love. Siapa yang setuju, sila angkat tangan macam saya.... hahahaha...

Eh, dah lari dari tajuk le plak! Ok ok, baru kejap ni mama parking kat blog dak Mat. Dia ada dok promote segmen jiran sepagar dia si Ben ni. Jadi sebagai tanda sokongan, mama pun joinlah. Nak bagi meriah je. Bila mama baca cara nak sertai segmen ni, senang aje syaratnya. Tu yang ter-rajin tu... Okaylah, bagi sesiapa yang nak join segmen Ben yang terkini, silalah ke SINI. Ce baca sendiri ye...

Oreo Cheese Cupcakes

Just wondering, is there any difference between baking for your own consumption and baking to fulfil orders?

For me, I don't really know why I always feel tensed when baking for others. But when baking, just to feed my curiousity, I am always at ease. Well, after thinking about it for a while, I came to a few conclusions.

1. I am not 100% confident.
2. I am scared of letting down those who had ordered from me, after looking at the photos that I had posted here. Just scared the taste or the look doesn't meet their expectation.
3. Lack of practise as I don't normally get orders. It's just once in a blue moon and all are just for fun sake and helping where ever I could.

So to those who had ordered from me before, I hope you're satisfied but if you're not, please accept my sincere apologies. I am just a human being and not perfect at all....erk..emo ler plak ha....

The latest order that I had done was for dear Puan Fadzlina. Thank you Ina for ordering and thanks to Fiza for delivering...

Psstt...want to know one of mamafami's secret? Well, she has a phobia to bake cheese cakes! That is why there's hardly cheese cakes recipes in her blog.

But recently, I had braved myself to overcome my phobia. I baked Oreo CheeseCupcakes after looking at all the yummy photos in so many blogs. It came out nice though I wonder, why mine doesn't look like theirs, at least, like Dr Inahar or like Kak Wan's of Resipi Citarasawan. Why those two blogs? Because I took the recipe from Dr Inahar's Blog who took hers from Kak Wan's Blog. See the connection? Hehehe...

Anyway, thank you dear ladies for sharing the recipe. Never judge the taste by the look okay. My cupcakes are delicious! Mind you...this statement is not BOASTING but CONFIDENCE.... hahaha...

OREO CHEESE CUPCAKES

Ingredients :

2 packets Oreo biscuites (1/2 for the base and 1/2 for the filling and topping, crushed finely. Remove the cream)
250g cream cheese (I used Tatura) - room temperature
30g butter
100g castor sugar
2 nos eggs
1 teaspoon vanilla essence
50g crushed oreo
1 tablespoon flour

To sprinkle : Crushed oreo


Method :

1. Pre-heat oven at 180 C. Line the muffin cups with papercups. Place a piece of oreo inside the papercups as the base. Set aside.
2. Cream the cream cheese, butter, sugar and vanilla essence. Add egg, one at a time and continue beating till smooth. Add in oreo crumbs and mix well.
3. Spoon the filling onto the prepared oreo base. You can use a piping bag too.
4. Sprinkle with Oreo crumbs and bake for 20 to 25 minutes. Leave to cool for at least 1 hour in the regfrigerator or better still, leave it overnight.

Syukur Alhamdulillah...

Just now at about 1.30pm, the postman (not the previous friendly one but a much younger one. Both are friendly though. Syabas Pos Malaysia!) rang the doorbell. When I saw what he was holding, I knew that my waiting has come to an end. And all my patience, finally paid off. I've received my other book, MamaFaMi's Spice n Splendour Volume 1.

Cream Puffs (Nasi Lemak Lover)

When you are running out of time, that's when things decided to go haywire! I hate it when that happens. But it happened to me last Sunday. Hubby made an adhoc plan to visit our friend at Sg Ramal. I told him, give me about an hour or so, to prepare something to bring along. In this short period, I have to think what to bake and bake it straight away. After some fast thinking, I decided to bake some cream puffs instead of muffins or cupcakes though that's the easiest to prepare in such short notice. But since I've always brought those stuff when visiting them, so I thought, something new would be nice.

Preparing the choux pastry is not a problem as I've done it before. By the time the chouxs are out of the oven, hubby was ready and looking restless. Oh oh... I don't really like it when someone's waiting for me! I didn't wait for the choux to cool. Just made a slit in the middle and piped some fresh cream. Piped 2 pieces and placed them on a plate, dusted with some icing sugar and started clicking here and there for my record....sempat lagi tu.... Logically, the puff is still warm, the fresh cream is cold, when warm meets cold, surely the cold one will melt right? So yes, that was exactly what had happened. Gosh... hate it! But luckily the mind can still work! Actually, forced to work! Hahaha... I just packed the ingredients to make some orange custard filling for the puffs and we were on our way. It was at my friend's house that I made the filling. Alhamdulillah, well enjoyed.

So to Sonia, thank you so much for sharing with us, this lovely recipe. Allow me to re-post here for my future reference ya. Thank you.... mmmm by the way Sonia, the name of your blog, makes me wish for Nasi Lemak now! Hahaha....

CREAM PUFF

Adapted from : Sonia's Durian Cream Puff

Ingredients :

100g butter
250ml water
a pinch of salt
150g flour (all purpose)
1/2 teaspoon vanilla essence
1/4 teaspoon baking powder
1 tablespoon sugar
2-3 eggs (I followed the original recipe which use 4eggs, but the batter became too watery, no choice I added more flour, so you need to adjust the eggs accordingly) - I used 3 eggs

For the filling, I just used the ready-to-use whip cream in the can.


Method :

1. Mix flour, baking powder,salt and sugar, set aside.
2. Heat butter in a pot (medium heat), once butter melted, add in water, mix well.
3. Add in flour mixture (no.1), vanilla, qucikly mix well ( about few seconds), turn off the heat.
4. Continue stirring flour until the dough mix well ( once you see shinning surface).
5. Transfer the dough to a mixer, set aside to let it cool down.
6. Once it cool down (dont need completely cool) , mix in the egg, and beat (using your mixer) the dough and eggs till mix well, less than 5mins.(the dough texture must not too soft or too hard, something like biscuit dough which you can easily shape it)
7. Place the dough in a pastry bag fitted with a tip. Pipe quarter-sized puffs about 1 inch apart on a baking pan.
8. Bake at pre-heat oven at 180C (original recipe 200c, too hot) for 25mins or until golden brown.
9. Cut the puff and pipe the filling (store in fridge when not use), and enjoy it.

Jemput-jemput stok ikan bilis

I had deactivated my Facebook account last 28th February, 2011. It's been like almost 1 1/2 months, I am FB-less. How's life without FB? Well, I'm fine by that actually, though the only thing that I miss so much are my list of friends, be it old or new..... especially those who always pop-in to say hi or leave sweet, sometimes naughty, but thank God not rude, comments on my wall. All those sweet lil' things that brought colors to my wall... that, I really miss....

Pstt... but yesterday, MamaFaMi was online on Facebook, for about 20 minutes! Did anybody realise? I bet not... because mama knows when to make her silent entrance! Hahaha...

Anyway, to those who kept asking, when will I be coming back to Facebook... the only answer that I can give, at the moment is..... only time can tell.... When I read the comments left in my blog or my email regarding my disappearance, it's kinda sweet actually.... some said, they miss the photos that I normally post on my wall (but that can also be viewed in my blog), some said, they miss my status... and even sweeter... some said, they miss my good morning and good nite wishes... huhuhu.... I heart all of you..... muah.....

Mama's been behaving like a sweet housewife today! She cooked for breakfast, she cooked for lunch, do the laundries, swept and mopped the house... all sparkling nice and clean.... It's VERY RARE to get mama behaving like this... Why mama? Hehe... because dear hubby is at home! Hahaha... pecah tembelang.....

Anyway, for breakfast we had Jemput-jemput Stok Ikan Bilis. And I can't deny, it tasted good this morning.... How come? Because I'm hungry! Hahaha...

JEMPUT-JEMPUT STOK IKAN BILIS

Ingredients :

2 cups flour
1 teaspoon baking powder
1/3 anchovies (ikan bilis) cube - mixed with hot water till dissolve
1/2 onion ~ sliced
salt to taste
enough water
cooking oil to fry

Method :

1. Mix well all ingredients except oil. Bater must not be too thick or too liquidy (liquidy? Is there any such word??? Hihihii!!!).
2. Keep aside for 15 minutes.
3. Heat oil. Take a spoonful of the bater and drop it in the hot oil. Fry till golden brown.
4. Ready to eat! Best eaten with Thai Sweet Chillie.

Note :

1. Anchovies cube can be substitute with dried anchovies. Firstly, soak some dried anchovies. When soft, pound it and add to the bater. It'll taste nicer.
2. You can also add chives and diced fresh red chillies to this recipe.

Yummy Donuts!

....her arms swung around and hit her long bladed knife.. The knife slid down the counter, pointed end downwards and managed to scrape along her shin. (If I wasn't graphic enough: The knife is brand new). As luck might have it, the pointy end did not do any damage, but the blade did cut a 5cm long gash on her shin, blood gushing out, soaked towels, down to the bone...

What is your reaction when reading the above statement?
When I read each and every world, it sent shivers down my spine. That was what had happened to dear Rima according to her hubby. Get well soon Rima and have enough rest....tak de makna si Rima ni rest... dia dah buat 2 biji kek lagi dalam pada sakit sakit tu....

Tried this donut... or doughnut... recipe from Rima's blog after reading what her hubby said about the donut she made. He said.. "Sedap Ma!"..... and I second him! The donuts are really marvelous, so soft, so yummy! Otherwise, I won't ended up eating just ONE donut....didn't get to eat more though I managed to get about 20 pieces from half the recipe. My kids, surprisingly can't wait to gobble them. And surprisingly too, they came back for more!!! Then it's CONFIRMED DELICIOUS! I just hope that my nephew and nieces and also Sae and family thinks the same. Thank you Rima for sharing the lovely recipe with us. Allow me to repost it here for my future reference..at least....


 YUMMY DONUTS

Ingredients :
(A)
500g high protein flour - bread flour
100g sugar
11g instant yeast
4 egg yolks
200 ml water

(B)
100g butter / margarine
1 tsp salt

White Cooking Chocolate - melted
Cooking chocolate - melted
Sprinkles

Method :

Stir ingredients A, knead until lumpy, add ingredients B, continue to knead until smooth elastic.
Rest dough for 10 minutes.. divide dough into several balls weighing 40g each.
Rest for a further 20 minutes.
Punch a hole through the middle, then fry until cooked. Drain. Chill.
Dip one side surface of the donut in the melted chocolate, sprinkle almond.
Place donut in fridge to harden chocolate..

Rima's way :
I dumped everything in my BM accordingly of cos.. click on ON and after one hr and 10mins my dough was done.. gave my dough a light punch and divided my dough into several balls.. let it sit for another 20mins bef punching a hold thru the middle of the donut.. fry till cook..

My way :
I used my breadmaker to do the kneading and proving job. Once the dough is done, I rolled it to about 1 cm thick and cut using a donut cutter. Arrange the donut rings on a floured tray. Let it sit for another 20 - 30 minutes (depends on the weather), then fry till golden brown.

Chicken Floss Bun

I slept late yesterday night....macamlah hari hari lain tidur awal, ye dak? hehehe.... It was almost 1 am that time. Before dozing off, I don't really know why I feel like checking the traffic summon via sms.

To check traffic summon, type POLIS SAMAN [Mykad number or car registration number] and send to 32728

When I keyed in my car registration number, this was what I got :
RM0.50 POLIS : WMN**** Terdpt 1 saman berjumlah RM 70 sehingga 07/04/2011. Saman terperinci taip POLIS SAMAN [no ic/no kend][emel] & SMS ke 32728
When I keyed in my hubby's car registration number, this was what I got back :
RM0.50 POLIS: WQF**** Tiada saman dikeluarkan sehingga 07/04/2011. Terima kasih.
Oh me oh my.... after reading those replies, my mind was like the film roll. Tried to figure out, where or when or who's summon could that be. It's not only me driving the car. Hubby drove the car quite often too. That's when the images of the number on my dashboard and the traffic lights color came to mind! Haha... I am not saying that I had never drove beyond the speed limit and I didn't say that I had never gone through orange and red light at the traffic lights... that's why I kept wondering... am I the culprit? But then, being MamaFaMi, after thinking about it for about 10 minutes, I dozed off nicely to dreamland.... ada haku kesah.....

This morning when I logged in at Myeg to check the summon, and keyed in hubby's mykad number, this is what I got :

No outstanding summons found
It seems, the summon that appeared on my handphone screen yesterday dawn was the previous owner's. Phew, what a relief! Alhamdulillah...

Yesterday evening, I tried another bread dough recipe. This time, it was from one of my many bread books collection. I made into Chicken Floss Bun. I made half the recipe and managed to get about 10 pieces and 5 of them went to Saerah my neighbour, as soon as the buns were out of the oven. My verdict, YUMMY! CHICKEN FLOSS BUNS

Ingredients A :

500g high protein flour
1 teaspoon instant yeast

Ingredients B :

60g sugar
1 teaspoon (5g) salt
1 teaspoon (5g) milk powder

Ingredients C :

1 (50g) egg
250g water

Ingredients D :

50g butter

I added :

1 teaspoon bread softener
1/2 teaspoon bread improver

Enough chicken floss
Enough mayonaise


Method :

1. Put ingredients A (and added ingredients) in mixer, and blend at slow speed for 1 minute. Then add in ingredients B, blend for 1 minute.
2. Add in ingredients C, blend at slow speed for 1 minute, then use medium speed to blend 5 minutes till dough-like.
3. Add in ingredients D and continue to blend 10 to 15 minutes, till the dough is shiny and springy.
4. Use cling wrap to cover the dough, allow to leaven for 40 to 50 minutes till dough size is doubled.
5. Punch down the dough and divide the dough into 50g each. Roll the dough into a ball and arrange in the baking tray. Let it rise.
6. Egg wash the buns and sprinkle a bit of water. Bake in a preheated oven at 180 C for 17 to 20 minutes.
7. Remove from oven and let it cool slightly. Brush with mayonaise and top it with enough chicken floss.
8. Enjoy!

Note :

I used my bread maker to do the kneading and the proving. *wink*

MY NEWBORN!

Huff... puff... huff.... puff....
I am gasping for air.... oh ALLAH help me....
I am sooooo excited... so happy that words can't describe...

My house door bell rang at about 4pm. I had the hunch that it must be Mr Postman bringing something that I had been waiting for.. ANXIOUSLY. When Syahmi went to answer the door, indeed it's the Mr Postman and not just any Postman but the friendly one. He had been sending things to my house quite a number of time before this. And today, he sent me something that made me extra happy. He brought me this..

Now I can roughly imagine how the authors of the books felt when they see their books published. Though I just printed this one copy for me to keep, the excitement to see your own work in a book is just satisfying enough. ALHAMDULILLAH.
