Coney Island Hotdog Sauce



Assalamualaikum and hello everyone.....
Jumaa mubaraq to all...

Yesterday was a very hectic day for me with such tight schedule. I was on my feet, the moment I opened my eyes in the morning right up till my bedtime! Still, my list-to-do doesn't seem to get shorter! I guess that's my punishment for wasting so much time when I was much younger, during college life to be precise. Wasting time in the sense that I don't benefit time to study hard, instead I just enjoyed my days, cleaning my room, listening to music and those sort of things. I hardly get out of campus area even on weekends. I was in ITM Shah Alam for 2 1/2 years and the number of times I went outing with friends, if I am not mistaken, was less than 3 times, that is excluding the trips to the bus station in Klang, to catch a bus back to Malacca. I am a homely kind of girl... and still am, if given a choice! *wink*

And yesterday, managed to prepare the brownies ordered by Yan and posted to her before 3 pm., before the collection time of Poslaju. Hope the brownies will reach her the way I had sent them! Thanks Yan. Pleasure doing business with you. I'll be right here waiting for the feedback. Meantime, I hope you'll enjoy those browmies as much as I had enjoyed baking them for you.

Around 3pm, dropped the kids to the tuition place and off to Selangor Specialist Hospital to get my first Cervarix dose since my papsmear result is clear. Alhamdulillah. Reached home around 5.30pm, managed to sweep the house and out again, to fetch the kids home. After Maghrib, out to send Syahmi to his tuition place and fetch him around 9.30pm. At home, the big pile of laundry was waiting to be folded! Endless endless.....but yeah... I'm happy... and that's what counts....

Anyway, let me leave you now with this new recipe that I've tried last week for Syahmi's lunch. Dug the recipe from Allrecipes. Thanks to Joan for sharing the recipe with us and I'll repost the recipe here, the way I had done it.


Joanie's Coney Island Hotdog

CONEY ISLAND HOTDOG SAUCE

Ingredients :

2 tablespoons butter
2 cloves garlic ~ chopped
1 tablespoon chili paste
450g minced meat
1 onion ~ chopped
1 ripe tomatoes ~ diced
1/2 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons butter
enough water

Method :

1. In large skillet melt butter over medium-high heat. Add in garlic. Fry till fragrant.
2. Add in chillie paste.
3. Add minced meat and tomatoes. Cook until the meat changes color.
4. Stir in chopped onion.
3. Stir in salt and black pepper. Add water to cover, and simmer until water is absorbed, stirring frequently, 10 to 15 minutes.

Not to disappoint you, my dear visitors, I'll share with you this lovely recipe that I've tried from Muna a.k.a Mrs Vogue's Fotopage. Thanks Muna for sharing the recipe and for simplifying the recipe for us. Hahaha.. I can still remember how I had to jot down the recipe in my own understandable language because when she first wrote the recipe down, it's quite confusing. That was because, she wasn't in her best mood. She was sad to send Elsa's friends back to Den Haaq. Am I right Muna? Anyway, I hope you don't mind me posting the recipe again here for others to try and also for my future reference. Thanks Muna!

Muna's Blueberry Muffins

BLUEBERRY MUFFINS

Ingredients :

3 cups flour
1 tablespoon baking powder
1/2 teaspoon bicarbonate soda
1/2 teaspoon salt
5 oz butter, softened
1 cup sugar
2 large eggs
1 1/2 cup plain yoghurt
1 teaspoon grated lemon peel (I didn't put)
1 1/2 cups frozen blueberries (I used blueberries pie filling)

Method :

1. Preheat oven to 175C.
2. Whisk together the flour, baking powder, bicarbonate soda, salt and set aside.
3. In a large mixing bowl, cream butter and sugar together until fluffy. Add eggs one at a time. Mix in grated lemon peel.
4. Into the cream mixture, add the dry ingredients alternately with the yoghurt until just incorporated.
5. Fold in the berries.
6. Bake until muffins are golden brown, about 25 to 30 minutes.
7. Set on wire rack to cool for 5 minutes. Remove muffins from the tin and serve warm.

Pizza Dough (Stephen Carroll)



Another pizza recipe that I've tried from Allrecipes with a good feedback from Syahmi. Thank you.


Pizza

PIZZA DOUGH

Ingredients :

7 g active dry yeast
10 g white sugar
590 ml warm water (110 degrees F)
30 ml olive oil
20 g salt
60 g whole wheat flour
755 g bread flour

Method :

1. In a large mixing bowl, dissolve yeast and sugar in the warm water. Let sit until creamy; about 10 minutes.
2. Stir the olive oil, whole wheat flour, salt and 4 cups of the bread flour into the yeast mixture. Mix in the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and put in a warm place to rise until doubled in volume; about 1 hour.
3. Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into three equal pieces and form into rounds. Cover the rounds and let them rest for about 10 minutes. Preheat oven to 425 degrees F (220 degrees C).
4. Use a rolling pin to roll the dough into the desired shape, cover it with your favorite toppings and bake at 425 degrees F (220 degrees C) for about 20 minutes or until the crust and cheese are golden brown.

Note :


1. I used my breadmachine to do the kneading right up to proving. The method is the same as all the bread/buns/rolls that I've made before.
2. For the sauce, I used this recipe but I omit the paprika and hotdog. Instead, I used the sliced beef peperoni that I bought from the Pasar Tani near my house. If I am not mistaken, it's Prima brand.

Chocolate Chip Muffins



A very good morning to everyone...
Assalamualaikum and here's hoping that everyone is in their best of health. May we be blessed in whatever we are doing, the good deed that is! I haven't got much to write today. And my weekends were spent just at home. Relaxing.... Are you sure mama? Mmmm...I guess so... hahaha...

Recipe to share...
Tried this recipe that I came across when browsing through AllRecipes. I am not sure what I was looking for but this recipe caught my eyes. Made a few adjustments after reading the reviews. The taste is just nice. Not too sweet and not to tastless. At least Iddin's mom and sister like this muffins. Thank you Janice and Allrecipes. Allow me to post it here, the way I had prepared it.


Chocolate Chip Muffins

CHOCOLATE CHIP MUFFINS

Ingredients :

2 cups all-purpose flour
1/2 cup white sugar
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/4 cup yogurt (I added)
1/3 cup vegetable oil
1 egg
3/4 cup mini semi-sweet chocolate chips

3 tablespoons white sugar
2 tablespoons brown sugar
chocolate roll for topping

Method :

1. In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt. Mix well.
2. In a small bowl, combine milk, oil and egg; blend well.
3. Add dry ingredients all at once, stir just until dry ingredients are moistened (batter will be lumpy.)
4. Fill cups 2/3 full.
5. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
6. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.
7. Cool 1 minute before removing from pan. Serve warm.

Bihun Singapore & Award from FiDa



BIHUN SINGAPORE

Ingredients :

600g rice noodles ~ soak till soft
200g prawns ~ cleaned
200g squid ~ sliced
Bok choy ~ cut to small pieces
1 carrot ~ cut thinly
3 tablespoons cooking oil
salt to taste
enough water

To be minced :

1 tablespoon blackpepper corn
1 shallot
3 cloves garlic

To garnish :

1 egg ~ made into omellette, slice thinly
2 fresh red chillie, sliced

Method :

1. Heat oil and add in the minced ingredients.
2. Add in prawns and squid.
3. Add carrots and cook till slightly soft. Add salt to taste and enough water.
4. Add in the soft rice noodles and stir.
5. When the noodles are nicely mixed, add in bok choy.
6. When serving, sprinkle the top with sliced omelette and fresh red chillie.

Black Beauty Chocolate Cake

Jumaa Mubarak to all my dear visitors.....



I had not been online on my Yahoo Messenger for quite a while. So to those who had been asking about my whereabouts, well, alhamdulillah I am fine. It's just that I am not in my best mood at the moment. And that explains the not-so-much writings in my entry as well.

Anyway, 2 days ago, when I listened to radio ERA in the evening while preparing for dinner, I heard Pak Nil's voice and was so happy to know that he's back on air. And yesterday in the Merisik Khabar segment, one of the callers had told Pak Nil about this young lad, Safwan Husaini, who's suffering from cancer. Let us make duaas for him to be strong to fight his battle. He's such a talented writer. You can read his writings here.

Recipe.....
Tried out this recipe last February. Somehow I had forgotten to update and only realised it yesterday when I wanted to clear my folder. Gosh, my folder is getting too messy now! Huhuhu.... Thanks to Mak Lang Azie for sharing this recipe with all of us. Allow me to post the recipe here...


Black Beauty Chocolate Cake

BLACK BEAUTY CHOC. CAKE

Ingredients (A) :

2 cups flour
3/4 cups cocoa powder
2 teaspoons bicarbonate soda
2 teaspoons baking powder

Ingredients (B) :

2 cups castor sugar
1 cup evaporated milk (I used fresh milk)
1 cup cooking oil or melted butter
1 cup lukewarm water
1 tablespoon chocolate emulco
3 eggs

Method :

1. Sift together all ingredients in A. Set aside.
2. Mix well all ingredients in B.
3. Pour ingredients B into A and mix well.
4. Bake in a preheated oven at 180 C for 50 minutes to 1 hour. Oven temperature and time of baking may differ.

Sloppy Joes

Just to share with you what Syahmi and me had for lunch yesterday.....



Found this simple recipe from Allrecipes. posted by Tamara. As usual, I did some adjustments to the original recipe according to whatever's available in my stock. Thank you Tamara for sharing this simple yet nice recipe with us. For those who loves tangy stuffs, will surely like this recipe. I'll post the recipe according to how I had prepared the dish.


Sloppy Joes

Sloppy Joes II

Ingredients :

450g minced meat
2 cloves chopped garlic
1/4 cup chopped onion
1/4 cup diced carrots
1 teaspoon yellow mustard
3/4 cup ketchup
3 teaspoons brown sugar
salt to taste
ground black pepper to taste

Method :

1. In a medium skillet over medium heat, heat oil and add in chopped garlic and onion. Fry till soft and add minced meat and diced carrots. Cook till liquid almost dried.
2. Add in yellow mustard, ketchup and brown sugar; mix thoroughly.
3. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.
4. Enjoy with hotdog bread, sliced in the middle.

Mandrin Orange Chiffon Cake

Mandrin Orange Chiffon

MANDRIN ORANGE CHIFFON CAKE

Ingredients :

(A)
1 3/4 cups self-rising flour
1/8 teaspoons of salt

(B)
6 egg yolks
1/2 cup of sugar
3/4 cup Mandarin orange (tangerin) juice/orange juice
zest of 1 orange
1/4 cup of vegetable oil

(C)
3/4 cup of sugar
6 egg white
1 teaspoon cream of tartar

Method :

1. Pre-heat oven to 325 degree F. Sieve all the (A) ingredient in a mixing bowl until well combined.
2. Mix ingredient (B) until well blended and then add in ingredient (A) and mix until smooth. Set it aside.
3. Beat ingredient (C) in mixer on high speed until stiff peak. It should not fall out when you turn the mixing bowl over. Fold 1/3 of the egg whites into the egg yolks mixture and continue to do so until egg whites is finish. Remember to fold in gently until well mixed.
4. Pour batter into ungreased 10" tube pan and bake for an hour or used a bamboo skewer to test the cake. Just insert the skewer into the center of the cake and it should comes out clean.5. Invert cake and let it cool complete in the pan. When is cool, loosen the edge of the pan and remove cake.

Segmen Geledah Dapur oleh Ben Ashaari




BEN ASHAARI ... nama yang kini meniti di bibir-bibir kebanyakan blog, tak kiralah blog masak memasak, blog ibu-ibu dan saknika maknika bloglah. Ini adalah kerana Ben rajin menjelajah. Cuma mama sedikit cemburu sebab Ben bijak mengatur masa dan strategi untuk membolehkan dia punya masa untuk membuat expedisi menjelajah tersebut. Semoga segala usaha murni Ben, mendapat keberkatan dariNya.

Pada mulanya, mama seganlah nak mempelawa Ben mengeledah 'rumah' mama ni. Maklumlah dapur mama hanya sekangkang kera tanpa hiasan dalaman yang debomb macam orang lain (tapi, alhamdulillahlah ada gak dapur kan kan kan!). Tapi disebabkan Ben telah sudi mencemar duli berkunjung ke rumah mama dan menjemput mama untuk bersama-sama memeriahkan 'karnival' geledah ni, jadinya, mama pun berbesar hatilah untuk ikut serta...

Pizza


Pizza


Hello everyone...

I had a very busy yet wonderful day today. And after all the excitements, I am totally drained out. Just a quick update on the page and I'm off... where to? Surely not to bed, because I am not going to miss watching Konsert Akademi Fantasia tonight!

Recipe.......PIZZA.
According to Mokwonik, the origin of this recipe is from Aunty Yochana. Tried also by Ummi and Ros JMC. Thank you to all for making this pizza possible.


Pizza Mokwonik

Dough:
(A)
200 gm. plain flour - sifted
1 tsp. sugar
1 tsp. Instant Yeast
1/2 tsp. salt
1 tsp. oregano

(B)

110 ml. water
1 tbsp. cornoil or olive oil

Toppings :

2 Tbsp. Tomato Paste
2 Tbsp. Maggi Chillie Sauce
200 gm. Ham - cut into small pieces ( i used minced meat)
some sliced Hot Dogs (i used 3 sausages-mokwo guan minced meat, sendiri cincang)
200 gm. canned pineapple - cut into cubes
1 Big onion - diced
1 tomato - sliced
1 capsicum - diced
250 gm. Mozarella Cheese ( mokwo gune parmesan cis je, sedap gak)
2 Tbsp. Garlic oil - fry some oil with some garlic

Method :

1. Mix (A) ingredients in a mixing bowl. Knead into a pliable dough.
2. Add in oil and continue to knead until very smooth.
3. Leave to rise until it doubles in volume for about 40 mins.
4. Punch down dough and shape it into a ball and rest for 10 mins.
5. Roll dough into a round shape - the size of your pizza pan. Use fork to prick holes onto the dough. Rest dough for 20 mins.
6. Half-bake the pizza dough for 10 to 15 mins. then remove from oven.
7. Spread tomato paste and chille paste onto the pizza dough.
8. Sprinkle some mozarella cheese on top and place all the remaining ingredients on top.
9. Sprinkle balance mozarella cheese on top and pour garlic oil over it.
10. Bake at 200C for about 20 mins. or till cheese turns golden brown.
11. Remove from oven and serve hot.

* You can use any topping you desire like prawns, tuna, cuttlefish rings and clams.

Kek Marble Trio (CMG)

How far will you go to help a friend? Different people may have different level of helpfulness. I think I once came under the level extreme. Why did I say that? Because I can still remember mak saying this to me....

Kau ni kalau pasal kawan, sanggup jual kepala....
Translation : For the sake of a friend, you're just too willing to sell your head (hihihi.. betul ke mama translate ni? Ala belasah je la!!! Ada korang kesah? Muahahaha...)

Well, to me, whenever someone asked for help, and if I am able to help, I will try to help till the maximum I can go. I'm just happy to see others happy with the little deeds that I had done. But then, I don't really like if the tiny deeds I had done, are to be mentioned over and over again or if being repaid. A sweet little THANK YOU is more than enough for me, to show that my effort is appreciated......And to all of you my dear visitors, I thank you for dropping by my blog. Thank you for your good deeds.....

RECIPE....I've tried this recipe last Sunday to bring over to my brother's house, the day he and mom were flying for Madinah. Just too happy to see the eagerness of my nephew and nieces to get their share. Makes all the effort worthwhile! If only their house is nearby, Allah knows what else I'd be baking! Hahaha...

Came across this recipe a long time ago but didn't try it out until that day. Why did I wait that long? I don't have the answer. But my thanks goes to the famous chef of Sedenak, Mr Mat Gebu. Bila sebut Mat Gebu, terasa macam nak pantun pulak...tapi pantun yang tak boleh dibawak masuk periksa ye... nayo kantoi....

Kek Marble Trio

KEK MARBLE TRIO
Source : Cik Mat Gebu

Ingredients :

300g butter
280g flour*
1 tablespoon milk powder*
1 teaspoon baking*(sift together all ingredients marked *)
5 large eggs
1 tablespoon ovalette (cake stabiliser)
250g castor sugar
50ml fresh milk
1 1/2 teaspoons chocolate emulco
1 teaspoon strawberry emulco
1 /2 teaspoon rose essence
a tint of pink coloring

METHOD :

1. Prepare an 8 x 8 x 3 inches cake tin. Grease the sides with butter and a bit of flour. Line the base with greaseproof paper.
2. Beat butter till pale in color. I beat manually. Add in flour, a little at a time till all flour are used and mixture is well mixed. Set aside.
3. In a mixing bowl (clean and dry), beat eggs and ovalette.
4. Add in sugar, a little at a time and continue beating on high speed till mixture is light and fluffy, like the chiffon mixture.
5. Reduce the speed and add in the butter and flour mixture, a little at a time.
6. Pour in the fresh milk and rose essence.
7. Divide the mixture into 3 equal portions. Add 1 portion with chocolate emulco. Another portion with strawberry emulco and a tint of pink coloring. Leave 1 portion plain.
8. Spoon 2 tablespoons of plain mixture onto the middle of the cake tin. Top it with 2 spoonful of pink mixture, followed by the chocolate mixture. Repeat the process until all the mixture are used up.
9. Bake in a preheated oven at 180 C for 40 to 45 minutes.

Note : Oven temperature and baking time may differ.

Chicken Cordon Bleu, Mashed Potato & Mushroom Gravy



A few days back, I received an unpleasant comment in one of my entries. A someone by the name of ELLE just wrote JALANG!!! (translation : BITCH). When I first read it, I was sort of angry and irritated. What have I done to deserve that title? But after a while, when I got back my senses, I just deleted the comment so that it won't scar my blog with that unpleasant phrase. I said to myself, if I see Elle's action as being a useless thing to do, why must I be like him/her? Then I will be someone useless as well. I should thank him/her for at least having a heart to visit my blog and again for taking his/her time to leave a comment. By doing just that, he/she has contributed at least 2 clicks in my blog. Thank you Elle, whoever you are... I am not sure it's a he or a she because when I clicked at the name, it seems he/she doesn't have a blog.... This action of mine, is what I call, taking something unpleasant, the positive way! Hahaha.... True or false... you tell me!

Yesterday, I was given an assignment by my Honey Bun Junior. Actually I was the one asking for 'trouble'. Hahaha... I had asked him, what would he like to have for lunch. And he said CHICKEN CHOP! Oh me oh my.... haven't tried any Chicken Chop recipe so far, though had been wanting to prepare it for quite sometime. So yes, I started my 'research' in the net. Came across a couple of recipes. I had to mix and match the recipes, according to whatever's available at home. Let me just thank these ladies and gentlemen for making this combo possible.....

Syahmi's feedback....with his dramatic face.... I thought he's going to say that it doesn't taste good, judging from the face mimic he gave me.... But then his face changed when he said... IT'S DELICIOUS MOM AND THE MASHED POTATO TASTED JUST LIKE BIG PLATE...our favourite Western Food Restaurant... and that makes the mom kembang sana sini happy and all the effort worthwhile!


CHICKEN CORDON BLEU

Ingredients :


2 pieces of chicken breast
2 sausages
2 pieces sliced cheese
salt
pepper
oyster sauce
flour
egg ~ lightly beaten
bread crumbs
oil for deep frying



Method :

1. Clean chicken breast. Wrap the sausage with the sliced cheese. Make a slit in the middle of the chicken and insert the wrapped sausage.
2. Rub the chicken with salt, pepper and oyster sauce. I marinate for 2 hours.
3. Coat the marinated chicken with flour.
4. Dip in the egg.
5. Roll into the bread crumbs.
6. Fry till golden brown.


MUSHROOM AND BLACKPEPPER GRAVY

Ingredients :

2 cups chicken or beef stock (I just dilute the chicken cube in enough water)
1/2 cup fresh milk (I used low fat milk)
crushed black pepper
2 inches celery stick ~ sliced
1/2 onion ~ diced
2 tablespoon sweet soya sauce (more if you want the color of the gravy to be darker)
1 tablespoon oyster sauce
1 tablespoon butter
1/2 can button mushroom ~ sliced (I used less because Syahmi is not into mushroom so much)
2 tablespoons flour ~ mix wit water (as a thickening agent)
salt and sugar ~ if necessary

Method :

1. Pour the chicken/beef stock in a pot. Add fresh milk, diced onion and sliced celery. Let it boil.
2. Remove from heat and put through a sieve. Place it back on the stove.
3. Add black pepper, soya sauce, oyster sauce, butter, button mushroom, salt and sugar. Stir.
4. Last but not least, add in flour mixture to the thickness you desire. Remove from heat.
5. Pour onto the chicken and mashed potato.



MASHED POTATO

Ingredients :


3 potatoes
Fresh milk (I used low fat milk)
Butter
finely crushed black pepper
a dash of salt

Method :

1. Wash the potatoes and boil till soft.
2. Remove the potatoes skin.
3. Mash the potatoes with the back of a spoon, together with milk, butter, black pepper and salt.
4. Scoop the mashed potato onto a serving plate and pour the gravy on top.

Chocolate Custard Muffins



Two days without any entry...
Two days of silence...
Two days MamaFaMi had been missing in action...

Wah... such a dramatic intro today! Hahaha... Sorry you guys, indeed I had been missing from my own blog these couple of days. Last Monday, I hadn't been at home much. In the morning, after dropping Syahmi at school, hubby and me went to my brother's house in Bangi. From there, we headed for KLIA to send my brother and my mom. They are performing their Umrah at the moment. Just received a text message from my brother, saying that they are getting ready to go to Masjid Nabawi to perform Fajr prayers. Gosh, I miss Masjid Nabawi. One of the loveliest memories about Masjid Nabawi....there was where Syahmi took his first step. At the age of 13 months plus, he just decided to get up on his feet and started walking! MasyaAllah... we were overjoyed! I guess my kids are the spieces who likes to give us surprises..... Like Fatin, she just decided that she wanted to walk on her 1st birthday! I can still remember the happy look on my mom's and my sister's face when they gave Fatin the moral support! Those good ol' memories....

Opps... back to my story.. from the airport, we went back home and perform our Zuhr prayers and out again accompanying hubby to Setapak. He wanted to go to a golf shop. From there, since Mak Chu's house is nearby, we stopped by her place and were there till past 6. Reached home almost, Maghrib. After Isya' prayers, without having dinner, we slept! Knocked out! Hahaha...

Then as usual, since Monday was my 'off' day, so Tuesday, double the workload! Hubby came back early from work yesterday evening and asked me to accompany him to the dentist. Yeah, another adhoc programme. Alhamdulillah, I am trained to these kind of situations and can adapt to it nicely... hahaha... So, I wasn't missing in action actually. In fact there were more actions happening in those two days of my silence......

RECIPE to share today is this muffin recipe that I came across at Izah's Blog. According to her, she got it from Nor's Blog. So thank you to both lovely ladies for sharing and promoting this recipe. Allow me to translate it and post it here for the benefit of others. Thank you......


Chocolate Custard Muffins

MUFFIN CHOCOLATE CUSTARD

Ingredients :
(A)

110 ml water
1 1/2 tablespoons cocoa powder
50g brown sugar
25g corn flour

(B)
35g butter
35g cooking oil
1 teaspoon vanilla essence
65g dark cooking chocolate
1 egg
50g castor sugar
75g flour
1 1/2 teaspoons baking powder


Chocolate Custard Muffins

Method :

1. Mix all ingredients A in a non stick pot and place it on low heat. Stir to form smooth paste.
2. Remove from heat, add in butter and dark chocolate. Stir.
3. Add in cooking oil, sugar, egg and vanilla essence.
4. Stir well until mixture is well combined. I didn't use mixer, just the wooden spoon.
5. Fold in flour.
6. Spoon the mixture into the muffin tins lined with papercups. Sprinkle with almond slice or any toppings to your liking.
7. Bake in a preheated oven at 180 C for 20 to 25 minutes.
