Bubur Asyura

Hello everyone...

I've been wanting to update the page since last Sunday but time is just not on my side at the moment, especially last week. There are many expected and unexpected events to attend to. But alhamdulillah managed to get through all the obstacles and am still breathing till today.... alhamdulillah....

Though I would love to write more, but I still have things to do and the dateline is this afternoon. So let me just post one of the many few recipes that I have tried lately. Read at Mat Teko Gebu's blog about 10 Muharram, where lots of important events took place. You can read more about it at here.

One of the things that people use to do during Hari Asyura is to prepare this porriage call Bubur Asyura. There are many versions of Bubur Asyura and I chose this one among all as I don't quite like sweet rice porriage. I found the recipe when I clicked at google search. Thank you to Acik Yarn from MyResipi dot Com who is so kind enough to share her mother's lovely and easy recipe. Allow me to share it here. Thank you.

BUBUR ASYURA
Source : Acik Yarn @ MyResipi dot Com

Ingredients :

2 cups uncooked rice ~ washed and rinsed
Enough water
Coconut milk from 1 coconut (1/3 thick coconut milk and 2/3 thin coconut milk)
2 shallots ~ sliced
1 inch ginger ~ sliced
salt to taste

To garnish :

10 shallots ~ thinly sliced, fry till golden brown
1 small bowl of ground nuts (fried or roasted)
5 pieces chicken fillet ~ coat with turmeric and salt. Fry till golden brown. Shred.
spring onions ~ sliced
3 eggs ~ made into thin omelette then sliced

Method :

1, Cook the rice with water, trice the amount from cooking normal rice. Stir frequently till it turned to porriage.
2. Add in sliced shallots and ginger.
3. Add salt to taste.
4. Add in thin coconut milk and stir.
5. Lastly, add in the thick coconut milk.
6. To serve, scoop enough porriage into the serving bowl. Top it with groundnuts, shredded fried chicken fillets, cripy fried onions, spring onions and sliced omelette.

Simply delicious!

Pau (Ian-ieza@MyR)

HO HO HO......
...sounds familiar? Of course huh.... Well, though I don't celebrate Christmas, but 'Santa' still is going to send me present. But my 'Santa' is not that chubby fella with white beard and striking red outfit. But my 'Santa' is a sweet lady by the name of Hazila...at least that's what she addressed herself in her blog The Small Kitchen. Do visit her blog for yummy delicious looking food spread... I had won the Counter Hit Contest that she had put up in her blog recently. Yes, this is my second time winning such contest after the first one at Kak Ina KL's Blog. I guess my luck is with numbers.... heppp....bukan nombor tikam ke nombor ekor ke aaa.... haram wooo.... Thank you so much Hazila for the fun. I am so happy to receive the prize but the most of all, the excitement of seeing the number 101010 appeared on my screen when I clicked at her website. Just can't believe it, but yes.... I am the lucky one!

That's the happy part of the day. Now let me write about the sad part. Yesterday at 4.50 pm, all the four of us head for KLIA. We wanted to meet Naseem and family who will be flying to Dubai. We were at the airport till it's time for them to check in. Two hours went by so fast that I felt we were only there for 20 minutes. At the gate, we hugged again, a long tight hug as if we don't want to let go of each other. When they had passed the gate, before heading for the escalator, again Naseem came by the side and give me another hug. I tried my very best not to burst into tears. I managed, but with great difficulty. I mustn't lie, but the eyes were blurry. From the escalator, we kept waving at each other. She kept looking back towards us while walking towards the Immigration. Even at the immgration counter, she's still looking towards our direction and waving. I stood there with such a heavy heart until she is totally out of sight...at the same time wondering, will I be seeing them again..... I miss you already mummy.......

Enough said. Just can't stop my tears from falling....

To end with, let me post this lovely PAU recipe that I took from Hazila's Kitchen. She had mentioned in her blog that she got the recipe from Ian-ieza@MyR. The pau is nice and I love it. Thank you Hazila and Ian-ieza for sharing it with us.... Allow me to re-post the recipe here for others to try....

PAU (Ian-ieza@MyR )

Ingredients :

100 g lukewarm water
73 g sugar
11 g instant dried yeast
60 g water
306 g superfine flour (I used all-purpose flour)
1/2 teaspoon bicarbonate of soda
1/2 teaspoon bread softener
1/2 teaspoon cooking oil
20 g vegetable shortening

Method :

1. Mix lukewarm water, sugar and instant dried yeast. Set aside for the yeast to ferment.
2. Pour the water into the Bread Maker pan, followed by the yeast mixture.
3. Top it with flour, bicarbonate of soda, bread softener and cooking oil.
4. Set the BM to 'dough' function. Once the dough is just combined, add in the shortening. Leave the rest to the BM.
5. Once the dough is double the size, punch down to release air. Divide into 30g balls. Let the dough rest for 10 minutes.
6. Flatten the dough and place the filling in the middle. Cover the filling with dough and place it on a piece of grease proof paper.
7. Arrange the dough in the steamer and let it rise to double the size.
8. Steam for 10 minutes.

Dates Cake

Kak Fatimah had asked me if I can bake a Date Cake. So I googled and found this recipe at MyResipi. Thank you eumora3179 for sharing this lovely recipe with us....

DATES CAKE

Ingredients :

200g dates - remove the seed
1/2 cup water
150g butter
125g sugar
3 eggs
*175g flour
*1 teaspoon baking powder
*1/2 teaspoon bicarbonate of soda (sieve together all marked *)
1 teaspoon vanilla essence

Method :

1. Steam the dates with 1/2 cup water till soft. Roughly 10 minutes. Mash it and set aside.
2. Beat butter and sugar till light and fluffy.
3. Add eggs one at a time and continue beating.
4. Add in vanilla essence.
5. Add in mashed dates. Mix well.
6. Fold in the sifted dry ingredients.
7. Pour into a well greased baking tin or lined with greaseproof paper.
8. Bake in a preheated oven at 180 C for 45 minutes.

Note :

In my first trial, I baked one recipe using a 9 x 9 in tin. I find it too shallow. On top of the cake, I sprinkle some sliced almonds.
When baking the second time for Kak Fatimah's order, I made double the recipe. I arranged some dates on top. Baked in the same 9 x 9 in tin for 1 hour. But when the cake cooled down, it dropped slightly in the middle. Not sure why...

Here are the orders from Kak Fatimah. Thanks akak for ordering....

Waffles (RecipeZaar)

Today, marks ONE YEAR, abah decided to leave us and be with his Creator. May his soul rest in peace. Al-Fatihah..... we miss you dearly abah.... You will always be in our hearts...forever...

Life had been so hectic this week. Am I complaining? Oh no, not at all. Infact, that keeps me moving rather than just stay glued to the laptop screen. Ikhlas ke cakap macam tu ma? Mmmm tak kot! Keh keh keh.... Actually I missed being infront of the laptop!

At times it's funny when my silence rise question marks to some. They'll apologise to me as if they are the cause of the silence, as if I were mad at them for some reasons. And not only one, but a few. Hahaha.... Don't worry gals.... nobody did anything wrong okay. It's just that I had been very busy with visitors at my house, visiting friends from far, orders (though not THAT much), this and that.... so worry not okay... Alhamdulillah I am fine and nobody must worry that they've done something wrong okay.... Big hugs to all....

I am actually in the middle of baking some cakes and cupcakes for Kak Timah. So let me just go straight to the recipe to share. Since I had visitors 3 days in a row, this gave me great opportunity to try out quite a number of new recipes. One of them is this one, which I had dug from RecipeZaar.... Everyone enjoyed it! Thanks to *Elaine* for posting the lovely recipe at RecipeZaar. Allow me to re-post it here...

Jimi Asmara

Some things are just too good to be true that you can't believe it's happening right infront of your eyes!!! Last Sunday, we went to KLIA to meet up with Naseem and family who flew in from Penang after a 3 days holidays there. I was so excited plus nervous plus impatient and everything, combined into one. It's like meeting your heart throb!! *wink* The moment I saw Zahra, Naseem's elderest daughter emerged from the Arrival Hall followed by the rest of the family members, I am pretty sure I wasn't dreaming that time. Until we hugged, a long hug, then only I am 100% sure I am not dreaming! Had to pinch myself in order to confirm it!

How can I not be excited. Thought I would never see them again because Malaysia and Malawi is very far. And for us to go there again, it's like almost impossible. Unless, somebody is willing to sponsor the whole family just for the air tickets, we will be more than happy!!! Anybody???? It had been two years since we left Malawi behind with loads of wonderful memories treasured deep in our hearts. And two years I had been without my close friends there whom are now just like my brothers and sisters. And to be able to meet at least one of them is such a blessing. But I got to meet the whole family. Syukur alhamdulillah......

We met up with them, just for a short 15 minutes as the hotel bus was waiting for them. But 15 minutes is better than never. Maybe hubby saw that it wasn't enough for me, he told Ishmael (Naseem's hubby) that we'll visit them at their hotel tomorrow. So yesterday, after hubby's niece and hubby left, we went to where Naseem and family are staying. Had a long chat (was it long mummy? Ummmm... I think 2 hours is nothing huh? We still have loads to talk about, things to catch up with huh?) and we left their hotel at 11.30 pm. That was because, we saw that they are tired after the KLCC tour and had to wake up early the next morning to get ready for Sunway Lagoon. Anyway, it was lovely meeting all of you again. InsyaAllah we'll try to meet up with you guys at least one more time at the airport. Oooooo I just dread that moment....wish it doesn't have to happen.... meanwhile, enjoy your time here and bring back lovely memories to Malawi.....

***************************************

Since I have a long list of chores to do, will go straight to the recipe for the day. It'll be a very short, easy and lovely recipe to share. Thanks to Ummi Kuantan and Mak Lang Azie for sharing the recipe with us.... It really quench the thirst and if you're familiar with F&N Fruitade, well the taste is similar minus the gas hence more healthy....is it? Hahaha... lu pikirlah sendiri......

Apom Potong

Salaam Maal Hijrah 1431 to everyone....

It was raining heavily just now.... and I have this verse singing repeatedly in my brain...

Rain rain don't go away
It'll be nice if I can sleep the whole day....

Hahaha.... I wish!!! I am in my L.A.Z.Y mode at the moment. It's been a while actually. But if I show you what I've ended up cooking (without any plans or whatsoever), you will definately say... mama is a liar. How can she cook all these when she's lazy. I don't really know how to explain it but it's true I am feeling lazy and I am tired of it already...it makes me feel lousy!

Yesterday, I had hoped thought we'd eat out. But hubby was so into his programming mission and showed no sign of leaving his laptop. I got the message! So in order not to let the household go into the starving mode, I had to do something. Ended up cooking these....

The same thing happened this morning. Before going to bed yesterday night, I was thinking of having nasi lemak for breakfast and would go out with hubby to get them. When I said to him, lets go buy the nasi lemak, he said ok but he didn't move an inch from his laptop! And me, just felt lazy to go on my own. So, like it or not, I ended up preparing the breakfast in my kitchen! Didn't snap any photos just now. We had, Nasi Goreng Belacan (I used the Seri Aji Perencah), keropok lekor goreng, Cheesey Chicken Rolls and Kuih Apom Potong. There you go... hahaha.. and mama said she's lazy! Hahaha.... Well actually, I wanted to clear the fridge as much as possible...

After Zohor, hubby had asked me, where shall we go. Told him that I wanted to go to IOI Mall to get something. He said okay. But then, neither of us moved a centimeter from our laptops. And now, the clock is showing 16.30 and we're still stuck at home! I guess we'll be stuck at home the whole day today. Why am I not surprised! Hihihi.....

Anyway, let me just share this recipe that I had tried recently, again, using my steamer. I am loving my steamer very much now. It's Kuih Apom Potong. Came across this recipe when I visited Kak Rusnah's Fotopages. It's so easy to prepare and tasted nice as well. Thank you Kak Rusnah for sharing the recipe. Allow me to translate it and post it in my blog so that many others could give it a try....

APOM POTONG

Ingredients :

For the syrup :
1 cup sugar
3 1/2 cups water
screwpine leaves ~ knotted
food coloring ~ I chose orange color

Boil the above ingredients till sugar dissolved. Leave to cool.

For the yeast :
1 1/2 tablespoons instant dried yeast
1/2 cup lukewarm water
1 teaspoon sugar

Mix the above ingredients and keep aside till the mixture bubbles.

To be sifted :
3 cups flour
1/3 cup rice flour

fresh grated coconuts (just the white part)
salt

Method :

1. Pour the yeast mixture into th flour.
2. Add in the syrup. Stir well and let it stand for one hour in a container covered with damp cloth or clingwrap.

Pizza Dough for Thin Crust Pizza

Yesterday, so many things happened, mostly, infact all are pleasant ones. I must have woke up on the right side of the bed or maybe I had been behaving well (have I??? *wink* *wink*). Hahaha.. Whatever it was, I had a nice day... alhamdulillah....

These were what made me happy....

1. I received my new 'treasure' via courier. What is it mama? Aa aaa..... be patient dearies.... I will only reveal it when I had actually use it okay.... let it be a sweet suspense.... hahaha...

2. The parcel that I had sent to Enoka had safely arrived at it's destination. Why so excited mama? Because this is the first time I am using SkyNet's 'pick up from home' service! Thanks guys for the job well delivered.. Actually I am more than relieved to know that the parcel had arrived as I am not so sure when Enoka and family will leave for Singapore.
Enoka dear, glad you like the little goodies that I've managed to get for you. If you want to find more, you can find them at the address that I have given you. Happy shopping dear!

3. I registered an account with Domino Pizza and managed to order Pizza online! Hahaha... maybe most of you will say....oh my gosh, this lady is still in Stone Age or what!!! We knew that ages ago. Yeah right, this lady had just emerged from the Stone Age era! Haha... Why did I go through this hassle? Because Syahmi had been asking for it. I ordered just a regular pizza for the first trial...which is not enough for my two hungry munchkins. So mama has to google in the internet to find a thin crust pizza recipe!

4. Baked the pizzas without much hassle and managed to serve to Syahmi's friend, Harith who came by to play with Syahmi.

5. Learnt about cropping photos from Maylique. She even gave me a few 'assignments' which are YET to be done! I only managed to do two of them. Result will be shown towards the end of the entry... Huhuhu...mengapa daku disiksa sedemikian rupa....

Enough report, now let's move on to my latest 'discovery'....chewah... Thanks to RecipeZaar for this thin crust pizza recipe. I had to adjust the recipe slightly to suit the bread maker's method. For the original recipe, please click at RecipeZaar Pizza Dough for Thin Crust Pizza entry

Pizza Dough for Thin Crust Pizza (Altered)

Ingredients :

3 cups all-purpose flour (may substitute whole wheat flour for 1 cup of the all-purpose)
8g dry yeast
1/4 teaspoon salt
1 cup warm water
1/2-1 tablespoon olive oil
cornmeal, for sprinkling (i omit)

Directions :

1. Mix a little sugar into the warm water.
2. Sprinkle yeast on top.
3. Wait for 10 minutes or until it gets all foamy.
4. Pour into a large bowl.
5. Add flour, salt, olive oil.
6. Combine.
7. Knead for 6-8 minutes until you have a moderately stiff dough that is smooth and elastic (add a bit more flour if you need to).
8. Cover and let rest for 20-30 minutes.
9. Lightly grease two 12-inch pizza pans.
10. Sprinkle with a little bit of cornmeal.
11. Divide dough in half.
12. Place each half on a pizza pan and pat it with your fingers until it stretches over the whole pan.
13. Try to make it thicker around the edge.
14. If desired, pre-bake at 425 F for 10 minutes (I don't always do this).
15. Then spread with pizza sauce and use the toppings of your choice.
16. Bake at 425 F for 10-20 minutes longer or until bubbly and hot.
17. Makes 2 12-inch pizzas.
18. If you don't want to use all the dough, you can freeze it.
19. Take a portion of dough, form into a ball, rub olive oil over it and place it in a freezer bag (the oil makes it easier to take out of the bag).
20. When you want to make a pizza, take dough out of freezer and allow to thaw before using.

Note : I just used the Bread Maker to do the kneading for me.

Assignments done so far, for Maylique to grade them.... Will I get a C or a D. Hopefully I didn't flunk! Hahahaha..... Otherwise, kena ketuk ketampi or maybe diri luar kelas! Kah kah kah.... never in my school life, had I been punished for flunking my exams but for forgetting to bring my excercise books, yes, but rest assure, it was less than 5 times okay! Anyway, it's just for experience sake... hahahaha...mama terror cover line!

Have a nice day!

Apam Marmar

Had been busy these couple of days. Plus not being in the fittest condition too. Took whatever vitamins and pills available to fight the virus but some manage to overpower my 'army'... leaving me feeling sick! Yes Uncle Lee, I took the Hor Yan Ho tea. I had the tea in my stock actually. Took the night tea, just plain tea without sugar or lemon added, hoping for a better result! But I guess, I lack of rest last week. So that explains....

Anyway, after baking those cookies for Alin, I had made some tart shells for Hazlina. Thanks Hazlina for ordering and hope you like them. Made a Banana Chocolate Cake for Watie's repeat order. Thanks Watie. Then only I started on the cookies for my abah's first hol. I had to make 100 pieces of cookies to be given out, plus 3 extra pieces for my nieces and nephew. At first, I had thought of a different design, a small flower with the word TERIMA KASIH written in royal icing, but then had to change it to a simpler ones as I was running out of time. I even had to ask Syahmi to help. He helped to paste the flowers onto the cookies and also cutting the ribbons for me. Thank you so much Syahmi for your help.... mama really appreciate it.... So these are the cookies for abah's hol....

Hubby had asked me to browse the Bonus Link website and see what we can redeem from the points we've collected. It's such a waste to loose the points just like that. After much browsing and thinking, I've decided to redeem for this electric steamer....

Used this steamer for the first time last week and I am so happy with the result. I guess I made the right choice in my redemption. I made this Apam Marmar which turned out to be so soft and nice. Got the recipe from Amal Hayati's Fotopage. According to her, she got it from K.Am's Blog. So thanks to both ladies for sharing the recipe with us....

APAM MARMAR

Ingredients : (Size 8 inch chiffon tin)

250 g self raising flour
200 ml coconut milk
170 g castor sugar
2 large eggs
1 teaspoon vanilla essence
1 teaspoon ovallette
a pinch of salt
Food coloring, green, pink, yellow

Method :

1. Place all the ingredients except food coloring in a mixing bowl.
2. Beat on low speed till the ingredients are well incorporated.
3. Increast to high speed and beat till fluffy and thick.
4. Divide to 4 portions. Add color to the 3 portions and leave the other one plain.
5. Grease the tin with butter. (I didn't grease my tin). Spoon each color on top of the other. Repeat till all the mixture have been used.
6. Steam for 45 minutes.
7. Leave to cool before cutting.

To Naseem and Family :
Takulandirani ku no ku Malaysia!
To Enoka and Family :
Welcome to Malaysia!

I hope both families will have a splendid time in Malaysia and return to Malawi with wonderful happy memories....

Have a nice day everyone!

I wanted to update the blog yesterday but was so busy with the laundry. Hadn't been doing my laundry for the past 3 days as I was busy with the cakes. The machine had to do the washing trice yesterday just because the weather was quite sunny. I am so happy to see my empty laundry baskets!

Didn't do much yesterday besides the laundry. Hadn't tried any new recipes as I am feeling rather tired. I think I need to rest to recover from the lack of sleep. Wah...alasan baikkk punya! But today I am planning to bake some cookies, fancy cookies to be precise. I wanted to try decorating them to put in the barakat packets for my abah's hol day ceremony. Time really flies. My First Fondant Cake...For Alin & Wizam

Tak do kojo cari kojo, ado kojo tocongang-congang tocungap-cungap!
That's how I describe myself at the moment. I had challenged myself to prepare a fondant cake for Alin's wedding. Alin is my hubby's late cousin's daughter. She's getting married today at 9.30am to Mr Wizam. I had promised Alin's mom to bake her the hantaran cupcakes and decorated it with fondant. Alhamdulillah managed to prepare those cupcakes without much problem, as I've done these kind of cupcake's deco a couple of times before. Here are the cupcakes for Alin's hantaran....

Now comes the story of my own created challenge. Since I don't have the experience of covering a cake with fondant, Daalia had been kind enough to coach me. She had asked me to bake a cake and go to her shop to do the decorating. I thought that was the best idea because in case I am short of the things needed to deco a fondant cake, I can just buy it straight away from her shop. I went to her shop at 9.30 pm. Didn't manage to go earlier as I was pretty busy that day. Stayed there till 4.30 am! Yes, you read right...4.30 in the morning! I managed to deco the cupcakes and half-way done with the cake! I think I am just too excited, which makes me stayed awake with no problem at all! Infact, when I reached home, I still took time to sleep! I slept only for 3 hours, then woke up to finish decorating the cupcakes ordered by Khatijah.

Note : The edible image is from Eleafrost website.
Thanks Khatijah for ordering with me. Hope you like those cuppies. Happy birthday to your darling Arina.

At 11.30 am, I went back to Daalia's shop to finish decorating my fondant cake. Finally done at 3pm. I am a very happy lady! I am satisfied with the end product and I think, all the time spent is worthwhile. My heartful thanks to Daalia and Diana for the coaching. May Allah bless you both.....

I proudly present to you my first fondant cake.....

Note : The fondant that I had used for this cake is from Daalia's shop. You can find many other bakery products at her shop. Just click at Bakery Product's website.
