Roti Canai Pedas

Don't really know what to do with your leftovers pharatas? Try this! Thanks to my mom!




ROTI CANAI PEDAS

Ingredients :

5 pieces leftovers pharatas/roti canai ~ shredded
5 shallots ~ minced
2 garlics ~ minced
3 tablespoon chillie paste (depends on how hot and spicy you want it to be)
salt to taste
tamarind juice
1 tablespoon sugar
2 eggs
Cooking oil

Method :

1. Heat a bit of cooking oil in a wok.
2. Add in chillie paste and fry till fragrant then add in the minced shallots and garlic. Stir.
3. Add in tamarind juice, sugar and salt.
4. Add in eggs and stir for a minute or two.
5. Add in the shredded pharatas/roti canai and stir to mix.
6. Ready to serve.

Lemon Chocolate Chips Cupcakes



LEMON CHOCOLATE CHIPS CUPCAKES

Ingredients :

1/2 cup butter
1/4 cup sugar
1 large egg
1/2 cup fresh milk
1/2 teaspoon baking powder
1 capful ( using the essence's cap) lemon essence (I used lemon paste)
1 cup Hongkong flour (I used all purpose flour)
1/2 cup large semi-sweet chocolate chips

Method :

1.Cream butter and sugar till fluffy
2. Add in the egg, mix well
3. Add in the milk, baking powder and lemon essence
4. Add flour a little at a time, mix well
5. Lastly add in the chocolate chips
6. Place mixture in 6 muffins paper cups and bake for about 15-20 minutes at 160 degrees. (I spooned the mixture into a sized 8 papercups (full) and I managed to get 12 pieces. I baked at 170 C)

Chocolate Bun


CHOCOLATE BUN

Ingredients :
Ingredients A :

500 g bread flour
30 g milk powder
20 g cocoa powder
100 g sugar
11 g instant yeast
1 whole egg

Ingredients B :

250 ml water
80 g margarine

Method :

1. Mix well ingredients A.
2. Add in water and knead till a soft dough is formed. (I called upon my antique but still reliable mixer to help me with this process!)
3. Add in margarine and knead again till soft and elastic.
4. Divide the dough into 50g balls.
5. Shape the dough to your liking.
6. Leave to prove till double the size.
7. Bake in a preheated oven at 180 degree celcius till golden brown.
8. Once out of the oven, brush some margarine on top.

Triple Treats Cookies


TRIPLE TREATS COOKIES

Ingredients :

250g butter (I used margarine)
1 cup soft brown sugar (take out 2 tablespoons)
1 cup walnut (roasted and chopped)
1 cup chopped almonds
1 cup chocolate chips
*1 cup self raising flour
*1 cup flour (I used 3/4 cup)
*1 cup corn flour (sift all the ingredients marked *)
1 egg yolk
1 teaspoon vanilla essence (I added)

Method :

1. Cream butter and brown sugar for 4 to 5 minutes.
2. Add in egg yolk and then vanilla essence
3. Add in chopped walnuts and almonds, alternately with the sifted flour.
4. Add in the chocolate chips.
5. Make small balls out of the dough and place them on a tray lined with greaseproof paper. If that's not possible. use a teaspoon. 5. Bake for 15 minutes in a preheated fan oven at 170 C

Karipap Kobis

* Kobis in English is Cabbage...




BUNGA KOBIS (DianaA)

Ingredients for skin :

300g flour ~ sifted
1 egg
75g ghee
enough water mixed with salt

Filling

Finely blend...
2 tablespoon ground corriander
1 tablespoon cummin
1 tablespoon fennel
2 garlic
3 cloves
2.5 cm ginger
2 cm cinnamon stick
salt to taste

300g minced meat
300g onion ~ sliced thinly
200g spring onion and chinese corriander (daun sup) ~ chopped
5 fresh red chillies ~ deseeded and sliced
50ml cooking oil
3 eggs
450ml cooking oil

Decoration

600g tomatoes ~ carved into flower
600g lettuce leaves


Method :

1. Skin :
Rub ghee abd egg with flour. Pour in salt water and knead till a soft and smooth dough is formed.
2. Divide the dough to 6 portions of different sizes...the second portion must be bigger from the first one, the third one bigger than the second one, so on so forth.
3. Filling : Heat 50ml cooking oil. Add the blended mixture and fry till fragrant. Add in minced meat with a bit of water. When cooked, remove from heat and put in the spring onion, chinese corriander, red chillies and stir well to mix. Set aside.
4. Slightly beat the eggs.
5. Heat 450ml cooking oil on medium heat.
6. Meanwhile, roll flat the smallest dough. Put the filling, pour a bit of beaten eggs in the middle and cover it. Fry till golden brown.
7. While that one is frying in the pan, roll flat the second dough. Put the filling in the middle and pour a bit of beaten egg. Then put the fried first dough on top of it and cover the whole thing. Fry again till golden brown.
8. Repeat the whole process with the remaining dough.
Note : It is a bit of a job, but it's worth it. My children and hubby loved them very much and so do I (come to think of it...why don't I love huh...hahaha!).

Rainbow Butter Cake

RAINBOW BUTTER CAKE

Ingredients :

250g butter
200g sugar
5 eggs
210g flour
1/2 teaspoon baking powder
1 teaspoon vanilla essence
* 1/2 teaspoon rose essence
* food coloring : pink, yellow, green, blue
(those marked with * are the ones I added)

Method :

1. Sift flour and baing powder, trice. Set aside.
2. Cream butter and sugar till light and fluffy. I did it manually.
3. Add in eggs, one at a time and mix evenly.
4. Add vanilla essence and rose essence and cream the batter till smooth and light.
5. Fold in the flour till well blended.
6. Scoop a small portion of the batter into 4 separate bowls.
7. Add in a bit of food coloring into each bowls. Fold in to mix it evenly.
8. Scoop 2 tablespoons of yellow color onto tu center of the baking tin.
9. Top it with 2 tablespoons of pink color onto the center of the yellow batter.
10. Do the same with the green and blue color and repeat the process till all the batter are used. 11. Bake in a preheated oven at 180 C for 45 to 50 minutes.

Daging Masak Lemak Cili Api


DAGING MASAK LEMAK CILI API (NEGRI SEMBILAN STYLE)

Ingredients :

½ kg topside beef ~ sliced thinly
2 lemon grass ~ bruised
20 pcs bird eye chillie
3 potatoes (I omit these as I don't have it at home)
½ inch fresh turmeric
1 or 2 cups thick coconut milk
1 cup thin coconut milk
1 piece turmeric leaf
salt to taste
½ cup water

Method :

1. Pound the bird eye chillie and fresh turmeric until a paste is formed.
2. Add the paste, lemon grass, beef and a bit of water in a pot. Cook till the beef is tender.
3. Add in thin coconut milk and water. Add in potatoes and turmeric leaf.
4. Let it simmer until the potatoes are soft. Pour in the thick coconut milk and salt to taste.
5. Once cooked, remove from heat.

Oh me oh my!!! I really took my time to collect all the awards that were passed to me. I am so sorry my dears. It doesn't mean that I don't appreciate them. God knows how thrilled and excited I am to receive them. But time is just not on my side lately. I had been busy...doing what? I am not so sure of! Hahaha... CHAPATI

Ingredients :

2 cups Atta flour (I used the mixed Atta flour ~ brown & white)
1 tablespoon Ghee/Butter/Margarine (I used margarine)
1 tablespoon cooking oil
Enough water
Salt ~ optional
Extra margarine

Method :

1. Place Atta flour in a bowl.
2. Rub in a tablespoon of Ghee/Butter/Margarine
3. Add water bit by bit until it becomes a soft dough and doesn't stick to the hand.
4. Add the cooking oil into the dough and knead till well combined.
5. The bread taste better if made few hours ahead. Make as many small balls as you can, as big as golf ball, flatten it and roll out.
6. Heat a non stick flat pan till really hot.
7. Before placing the bread on the pan, remove access flour, if any.
8. When you see the color of the bread changes to slightly darker color, turn over the other side. Gently, press the sides of the bread with a kitchen paper or a clean towel. Let the bread puffs up, then flip over, back to the first side.
9. Once cooked, remove from heat and brush a bit of margarine on top.

Note from Tillingtan :
Also when press, make sure you press on the sides first as it will encourrage the bread to puff up.

Muffin Brownies


BROWNIE MUFFINS

Ingredients A :

280g butter - melted
180g brown sugar
20g white sugar
70g cocoa powder
a pinch of salt

Ingredients B :

2 eggs ~ beaten
80g flour

Almond to sprinkle

Method :

1. Combine all ingredients in A in a pot and melt over slow fire.
2. Set aside to cool.
3. Add in the eggs into the bater and stir.
4. Add flour, a little at a time. Mix well.
5. Spoon the mixture into the papercups, 3/4 full. Sprinkle some almond chunks.
6. Bake in a preheated oven at 170 C for 30 to 40 minutes.
